Featured this week Peach
The peach is the fruit of the peach tree, native of China. The peach tree
can measure from 5 to 8 m. The peach is a fleshy fruit which contains
an oval and ligneous pit (core) 3 cm in length. The edible skin of the
peach is more or less thin, yellowish and fluffy and is full of antioxi-
dants. It is thus preferable to consume the peach with the peel. It is im-
portant to wash peaches well, just like all fruits, before consuming
them. Peaches keep for approximately three days at room temperature,
and a little longer in the refrigerator. Avoid piling up and wash them
before consuming. Peaches lend themselves well to canning and freez-
ing. However, remove the pit, which gives a bitter taste.
Peach is delicious when eaten plain and can be well accompanied in
duck, calfs liver, and crab. It can also be cooked, dehydrated, canned,
candied (confit) or frozen. Because of the velvety texture of its flesh, it
can be easily reduced into a cream to make sherbets, Bavarian, ice
cream.
How to peel a peach? Dip 20 seconds into the boiling water then 5 sec-
onds in ice water and peel.
