I. NGUYN LIU 1. Nguyn liu chnh: 1. 1 Tht heo S dng tht nc mng hay nc thn lnh ng (m < 1%) cho dy chuyn sn xut lp xng; tht sn mng, sn vai cho dy chuyn sn xut tht ln hm ng hp; v thit i lc tch xng lnh ng (tht nc chim khong 85%, tht m chim khong 15%) cho dy chuyn sn xut jambon hun khi. 1.2. M ln S dng m bo qun lnh M sch, kh, c mu trng sa hoc hi pht hng, khng c mi i kh chu. M c vai tr tng i quan trng trong vic to nn tnh cht cm quan tt cho sn phm. 2. Thuyt minh quy trnh sn xut tht ln hm ng hp 2.1 Tan gi - Tin hnh: Nguyn liu c tan gi trong phng tan gi c nhit 15 16C, m khng kh 60 70%. Thi gian tan gi khong 8 12h. 2.2 Lm sch - Tin hnh: nguyn liu c lc sch gn, loi b nhng ch bm gip, t mu bng phng php th cng. 2.3 Ct ming. - Tin hnh: tht sau khi lm sch c cho vo my ct thi, ct thnh nhng ming nh. Kch thc ming tht khong 50x50x20 (mm). - Thit b: Chn my thi ming tht ca cng ty Hankook Fujee Hn Quc, k hiu FD 300.

2.10 In date v dn nhn - Mc ch: hon thin - Tin hnh : Lon sau khi bo n s c a qua thit b in date. Ti y mt t nhn thy hnh nh lon lp tc b phn in phun s hot ng. Tip , lon c bng ti chuyn n b phn dn nhn.
