    Chocolate

    Chocolate is a raw or processed food produced from theseed of the tropical Theobroma cacao tree. Cacao has beencultivated for at least three millennia in Mexico, Central andSouth America, with its earliest documented use around 1100BC. The majority of the Mesoamerican people made

    chocolate beverages, including the Aztecs, who made it into abeverage known as xocoltl(/o.ko.lat/), a Nahuatl wordmeaning "bitter water". The seeds of the cacao tree have anintense bitter taste, and must be fermented to develop theflavor.

    Cocoa solids contain alkaloids such as theobromine and

    phenethylamine, which have physiological effects on thebody. It has been linked to serotonin levels in the brain. Someresearch found that chocolate, eaten in moderation, canlower blood pressure. The presence of theobromine renders ittoxic to some animals,especially dogs and cats.

    Etymology

    The word "chocolate" entered the English language fromSpanish. How the word came into Spanish is less certain, andthere are multiple competing explanations. Perhaps the mostcited explanation is that "chocolate" comes from Nahuatl, thelanguage of the Aztecs, from the word "chocoltl", which

    many sources derived from the Nahuatl word "xocoltl"(/o.ko.lat/) made up from the words "xococ" meaning souror bitter, and "tl" meaning water or drink. However, asWilliam Bright noted the word "chocolatl" doesn't occur incentral Mexican colonial sources making this an unlikelyderivation. Santamaria gives a derivation from the Yucatec

    Maya word "chokol" meaning hot, and the Nahuatl "atl"meaning water. More recently Dakin and Wichmann derive itfrom another Nahuatl term, "chicolatl" from Eastern Nahuatlmeaning "beaten drink". They derive this term from the wordfor the frothing stick, "chicoli".

    Obesity risk, the major concern that nutritionists have is that even

    though eating dark chocolate may favorably affect certain

    biomarkers of cardiovascular disease, the amount needed to have

    this effect would provide a relatively large quantity of calories,

    which, if unused, would promote weight gain. Obesity is a significant

    risk factor for many diseases, including cardiovascular disease. As

    a consequence, consuming large quantities of dark chocolate in an

    attempt to protect against cardiovascular disease has been

    described as 'cutting off one's nose to spite one's face'.

    Acne, there is a popular belief that the consumption of chocolate

    can cause acne. Various studies seem to show that this is the case

    for high glycemic index foods in general, though the question is still

    being studied. Milk is known to cause acne, including any which is

    mixed with chocolate.
