THe COmpAny

Winery Ausonia is located in Abruzzo, on the “Teramane hills”, an area with denomination of controlled and guaranteed origin (DOCG). It consists of 11 hectares of vineyard, about 400 olive trees, 1.5 ha of forest and arable land. The entire company, consisting of a single structure, is located at 270 s.l. protected to the West from Gran Sasso mountains and exposed to the East to the positive atmospheric effects of Adriatic Sea, so it’s easy to go in few kilometers from Gran Sasso mountains to the sea.The hillside location offers a ventilated climate, dry, with good temperature changes between day and night; this is an optimal condition for growing vines. The soil is mostly clay with a good component of silt, this al-lows the soil to retain moisture for long periods, allowing the plants to withstand long periods of drought. The vineyards are planted in rows, Guyot system, except for Trebbiano, that grows in Abruzzo’s pergola, with plants about 30 years old. The company applies an attentive eco-sustainability viticulture, non-chemical weed control is practiced, it prefers treatments with sulfur and copper, that if necessary are supported by biological control. The vineyards are completely replanted to protect the soil from erosion. The winery is surrounded by vineyards, and it’s equipped with the latest technologies for the vinification of the grapes, for the refining and storage of wine, remaining firmly convinced that a great wine requires grapes of high quality and a great human commitment. Stuffen Bean CurdMix minced meat with cornstarch, tbsp. minced scallion and ginger. Dig a hole from the bean curd and stuff a little minced meat in. Fry bean curd and pour more water, then add soy souce, water, wine and sugar to cook for 10 min. till thicken. Remove the bean curd to a plate. Thicken remaining sauce with cornstarch, and pour it on the bean curd, then sprinkle a dash of carrot and parsley before serving.

铁板烧肉类用酱油、酒、糖、蒜末、各适量白芝麻料腌泡20分钟, 备用。豆芽菜用奶油及椒盐混合, 以锡箔包装, 备用。在铁板上倒入色拉油, 将所有材料放在铁板上煎烤, 包锡箔纸的豆芽菜直接置于铁板上烤。调和一个蛋黄、酱油、糖、各适量醋料, 做为沾食之用。

Teppanyaki Marinate the meat with soy souce, wine, sugar, minced garlic, white sesame seeds for 20 min. Mix bean sprouts with butter and salt, then wrap them in tinfoil. Pour some oil over the iron plate, fry all of the in-gredients on it, bake the tinfoil stuff on the iron plate. Mix 1 yolk, soy souce, sugar and vinegard well for dipping.

豆豉蒸排骨 小排骨洗净,用淀粉和酒稍腌,置于盘内。用 3匙油炒香 3粒蒜头、末1大匙葱、1大匙豆豉料,随即加入1大匙酒、1½大匙酱油;糖、少许胡椒粉料,再倒于排骨之上,放入锅里蒸约20分钟, 可依个人喜好撒些葱花及辣椒。

Steamed ribs with soy bean Clean the ribs, marinate in cornstarch and wine for minutes. Fry 3 garlic, 1 tbsp. chopped scallion, 1 tbsp. soy bean in 3 tbsp. oil till fragrant, add 1 tbsp. wine, 1 ½ tbsp. soy souce, su-gar and pepper, then pour the sauce on ribs and put them in steamer for 20 min. Sprinkle chopped scallion and pepper before serving.

montepulciano According to wine experts, Montepulciano d’Abruzzo is often a deeply colored wine with pepper and spice notes. It can be described as “rustic” and is less pronounced when the wine is paired with food.The wines is aromatic, tannic and with low acidity.According to Italian wine experts, Montepulciano d’Abruzzo can be highly aromatic with earthy notes and black berries and have inky-purple color with a thick, almost syrupy mouthfeel.

Montepulciano蒙代普奇亚诺是意大利中部最重要的葡萄品种之一。在意大利葡萄品种中,它的酸度较低,拥有更甜腻、温和的口感。这种酒不必达到陈酿就可以给味觉带来乐趣,搭配食物的能力也是一流,所以经常是小型聚会和看好莱坞碟片时的杯中之选。Montepulciano品牌的质量逐渐得到人们的认可,甚至还受到了世界葡萄酒鉴赏专家的好评。

Cerasuolo The rosé style of Montepulciano d’Abruzzo is labeled as Cerasuolo which means “cherry-red” and relates to the deep color the wine gets even with very brief skin-contact with the highly pigmented skins of the Montepulciano grape. Cerasuolos tend to be medium-body and rather hearty for an Italian rosé with aromas of orange peel, cinnamon, strawberry and dried cherries.

Trebbiano Is the second most widely planted grape in the world.It gives good yields, but makes undistinguished wine at best. It can be fresh and fruity, but does not keep long. Its high acidity makes it important in Cognac production. Also known as Ugni Blanc, in particular in France, it has many other names reflecting a family of local subtypes, particularly in Italy and France.

pecorino Native to Marche and Abruzzo, it is low-yielding, but will ripen early and at high altitudes. Pecorino wines have a deep, rich, aromatic and nutty character. It turned out to be a bold white wine, with distinctive “exaggerate” hues that make it more similar to red wines: strong sugar content highlights the alcohol percentage, which is always higher than 13°, a good body and highly acidic. Thus this wine is surprisingly long-lived, powerful and pleasantly sharp.

Simone Binelli is the owner and the oenologist of the Company. After an experience of 6 years as pharmacist, he decided, following his passion for wine, to graduate in the Department of Viticulture and enology of Florence University. In 2006 year, he started to manage the agricultural part of his Company; from 2011 year, he is engaged in the wine-making with trusted professionists.

Francesca Lodi is Simone’s wife. She is has a degree as mechanical engineer, but she decided to support husband’s dream to plant the grape in Abruzzo, so she went to Abruzzo with her husband and theirs son. She is engaged in the administration of the Company and the retail shop.

parnassius Apollo This is a mountain butterfly in fact you can find it on the major mountain ranges of Europe and Asia to Siberia; in Scandinavia it arrives almost to sea level; in Italy lives on the Alps and Apennines and is also localized in Sicily and Madonie. It flies on the sunny slopes of flowery meadows or offshore (also up from 700 to 3000 meters high).

euchloe AusoniaThe name of the company is Ausonia (Euchloe), because this butterfly is very diffused in company’s environment, but is rare in Italy. My father noted soon this butterfly’s flight, as he is entomology for passion and also a great support of our new work experience. to show all our respect to him, we decided to choose for our wines the names of the butterflies that live in this beautiful Italian region, Abruzzo. This decision is symbolizing the relation with our grape wine, the nature and our surrouding.

papilio machaon It is a butterfly of the family of Papilionidae, mostly tropical family, of which only 9 species are also in Italy. It is widespread throughout temperate Europe, North Africa, Turkey, The temperate Asia, goes so far till Japan. Machaon prefers dry meadows, flowery land, the steep, overgrown roads, edges of woods, meadows and flowering hills, from the plains up to 1800 m.

Montepulciano d’Abruzzo is a red Italian wine made from the Montepulciano wine grape in the Abruzzo region of east-central Italy.

Montepulciano d’Abruzzo was classified as Denominazione di origine controllata (DOC) in 1968; a separate Denominazione di origine controllata e Garantita (DOCG) for wine produced around Teramo.

Montepulciano is produced in all four provinces of Abruzzo L’Aquila, Chieti, Pescara and Teramo with the southern fertile province of Chieti producing the largest total quantity of wine. The mountainous province of L’Aquila is noted mainly for the dry rose labeled as Cerasuolo produced in the DOC. The most favorable vineyards are planted in the northern provinces of Pescara and Teramo with the later having its own DOCG designation above Montepulciano d’Abruzzo.
