THE SWEET TEMPTATION FROM NEW YORK
Preparation:
Knead all ingredients to a medium soft dough. Use cold
water! Fold in 0,200 kg puff paste shortening on 1,000 kg
dough weight in 4 single layers (short resting time in bet-
ween).
Do not laminate under 10 mm! Roll out the dough to ap-
prox. 6mm, cut as donut and set on fermentation. Be-
fore deep- frying allow to rest dough pieces on dry air
approx. 20 minutes.
Fill Bougel with cream and finish as desired.
Dough:
10,000 kg wheat flour
2,000 kg BougelMix (2543)
3,600 kg water (approx.)
1,800 kg eggs
0,500 kg fresh yeast
0,600 kg oil
18,500 kg dough
Processing:
Mixing time: 5 - 6 minutes at low speed
2 - 3 minutes at high speed
Mixer: Spiral mixer
Dough temperature: 22 - 24 °C
Resting time: 20 minutes
Scaling weight/piece: 0,050 - 0,070 kg
Deep - fry Temp.: 170 °C
To deep - fry: 0,5 / 0,5 / 2 / 1 -minutes
Cream:
1,000 kg water or milk
0,400 kg Monaco (2447)
1,400 kg Cream
Mix water or milk and Monaco on medium speed for
approx. 4 minutes.
Flavour cream as desired.
