Gallos Ventanas | $15
Don Rafael Yglesias Castro, Costa Rican ex-president from 1894 to 1902. Given that don Rafael was known as “el gallo”, one of the cooks had the brilliant idea: to place a bean in each of the tortillas, to make it seem like an eye and that the folded tortilla looked like a gallo (rooster). The idea was a complete success and people would order a gallo” or a “gallito”. It is clear that ever since, the folded tortilla with beans, even without the eye, started to be called “un gallo”.The term “gallo” became highly popular in the country and even at some point lost the tortilla: people started calling a small portion of food, mainly of rice, beans and salad, with something as “un gallo” or “un gallito”. It is not unusual that in the countryside someone is invited to eat “un gallito”, which may or may not be served with a tortilla.

Gallos Ventanas | $15
Don Rafael Yglesias Castro expresidente de Costa Rica de 1894 a 1902. Dado que a don Rafael se le conocía como “el gallo”, alguna de las cocineras tuvo una brillante idea: a cada una de las tortillas con frijoles le pusieron un granito de frijol entero para asemejar un ojo y que la tortilla así doblada se pareciera a un gallo. La idea fue un éxito y la gente pedía que le dieran “un gallo” o un “gallito”. Es claro que, desde entonces a la tortilla doblada con frijoles, aún sin el ojo, se le empezó a conocer por antonomasia como “un gallo”.El término gallo pasó a ser ampliamente difundido en el país, e incluso en algún momento se perdió la tortilla en algún lado: la gente empezó a llamar a una porción pequeña de comida, principalmente de arroz, frijoles y ensalada, con algo más como “un gallo” o “un gallito”. No es inusual que en el campo se invite a alguien a que se dé una pasadita por la casa para que “se coma un gallito”, el cual a la larga ni siquiera se acompañará con tortilla.
