PROCESSING FLOW CHART 製造工程図
① 原料解凍 Defrosting Raw Materials
機械・設備 FACILITIES, EQUIPMENT, MACHINERY, TOOLS
1) CHILLED STORE HOUSE = Enough raw material quantity for 1day processing. It means at least 20MT plus. チルド庫
2) Stainless cage, same as photo the right one. = 10 – 20 pieces. 鉄の骨枠

1) Putting raw materials 1 night before processing. 前の日の晩にチルド庫に原料を搬入
塩水製造室 SALT WATER MAKING ROOM
機械・設備 FACILITIES, EQUIPMENT, MACHINERY, TOOLS
1) STAINLESS WATER TANK X 3 (different salt contain) 塩水層 3つ
2) WATER PUMP for supply to each tap. 天井までくみ上げるポンプ
3) Water pipe 配管

1) Mixing ice water & Salt(natural) by hand 塩・氷水混ぜ合わせる。
② 1 次加工室 1ST PROCESSING ROOM (COMMON PROCESSING)

1) Enough room for 30-60 workers, TABLE for 6 persons x 5~10 十分な広さの作業室、30-60名の作業員、テーブル当り 6名×5-10テーブル
2) Ice salt water tank 塩冷水タンク
3) TOOLS board, knife, stick(guts off), etc まな板、包丁、内蔵除去ドライバ等

Defrosting in ice salt water tank again, then separating by hand as photo. 解凍風景
Head off 頭部切断
→
1st, making line by knife, then taking out guts by special tool. 内蔵除去作業風景
→
Cut = Making fillet by special board & knife, then taking off remain of guts by spoon. 三枚おろし、残余内蔵除去

③ 2次加工室 2nd PROCESSING ROOM (COMMON PROCESSING)

1) Enough room for 60-120 workers, TABLE for 6 persons x 10~20 2次加工は 60名~120名の作業員。テーブル当り 6名×10-20テーブル

Cutting = trimming Head side, back side, belly side, making beauty. 修正作業
Brushing & taking off skin by salt water. 2 skins Black & white. After taking off both skins, it’s easy to take off bone. 腹部黒幕除去、洗浄
Taking off belly bone.腹骨取り
Washing by salt water, then selecting (to value added item or freezing) 塩水最終洗浄、塩水濃度5%

Taking off small bones 小骨取り、ピンボーン抜き
Using ACTIVA and forming. 結着粉使用(味の素社・アクティバ、ACTIVA)

みりん干し製品 Value added item (3) SOAKING MIRIN & MAKING DRY

1) VERY IMPORTANT FACILITIES (A) CHILLED ROOM FOR SOAKING (B) LAW TEMP., DRYING MACHINE = DRY ROOM.
重要な設備:A チルドルーム B 冷風乾燥机
2) SEASONING RIQUIED must be imported from JAPAN, WHITE SESAME
使用材料:日本製みりんと白ゴマ

Soaking in chilled room, - DRAIN, - coating by sauce, - putting on stainless net, - sesame topping – drying room, freezing.
チルドルームでみりん漬け→みりん液切り→上塗り→乾燥ステンレス網に配列→ゴマ振り→冷風乾燥→冷凍
④ 凍結・パッキング FREEZING, PACKING (COMMON PROCESSING)

1) STRONG POWER FREEZER = spiral freezer 強力冷凍:スパイラルフリーザー(-45℃以下)
