Phn loi Theo h thng phn loi Tyson Roberts, c ba sa thuc h Pangasiidae, ging Pangasius, loi P. bocourti. Thnh phn ha hc ca ng vt thy sn gm c: nc, protein, lipit, gluxit, vitamin, khong gluxit trong ng vt thy sn thng rt t v tn ti di dng glycogen . Protein ny khng tan trong nc, trong dung dch kim v trong dung dch mui c nng ion cao. Protein m lin kt km gi tr dinh dng hn so vi cc protein cu trc v protein tng c v protein m lin kt kh b thy phn di tc dng ca Enzyme pepsin v Tripsin. Proteni trong tht c chim khong 17,4% n 18,4% khi lng ca c. 1.3.2. Cht bo - Lipid Cht bo l cu t nng lng ln, l cht ti mt s Vitamim (A, D), l cht xy dng t bo v trao i cht. Gluxit trong c khng phi l cht t trng ch c polysacarit vi lng nh trong gan v cc phn khc. 1.3.5. Cc hp cht trch ly cha Nit. Cc cht trch ly cha Nit l nhng cht cha Nit phi protein c kh nng ha tan trong nc v c khi lng phn t thp v chim khong 9-18% tng lng Nit trong cc loi c xng. Cc cht trch ly cha Nit c quan tm nhiu bi v chng nh hng n cc tnh cht nh mi v, trng thi cu trc, dinh dng, s h hng ca nguyn liu sau thu hoch. Cc cht trch ly cha Nit gp phn vo s h hng ca nguyn liu thy sn. Cht trch ly cng cao kh nng h hng cng nhanh. + TMAO (Trimethylamin oxit): l thnh phn c trng v quan trng ca nhm cht cha Nit phi protein v c trong tt c cc loi c bin nhng c nc ngt TMAO ch cha mt lng t hoc khng c. Hm lng TMAO trong m c ph thuc vo loi, ma v v mi trng nh bt. + Axit amin t do: chim khong 0,5-2% trng lng c tht. Cc axit amin t do ny gp phn to nn mi v c trng ca nguyn liu thy sn. Lng axit amin t do cng nhiu th vi khun gy h hng pht trin cng nhanh chng phn hy axit amin thnh sn phm cp thp: NH3, H2S, Indol, Skatol Ngoi ra c mi hi thi kh chu v c kh nng gy ng c cho ngi tiu dng. Trong s cc axit amin t do, quan tm nhiu n Histidin. Histidin c nhiu trong cc loi c c c tht . Histidin c th b vi sinh vt kh nhm cacboxyl hnh thnh c t Histamin. + NH3: c trong c tht ca c ti vi mt lng rt t v c mi khai c trng. Khi c cn ti hm lng NH3 thp nhng khi c b n thi th hm lng NH3 c hnh thnh nhiu do vi sinh vt phn hy cc hp cht nh ur, axit amin v cc thnh phn khc. VSV Axit amin cao th cht lng ca c cng km. 1.3.6.
