Thecreativeenergyoflocalpeople,inharmonywithnature,canalsobeexpressedthroughfood,tasteandflavours.Avariedandvibrantalpineregion,Gorenjskaisrichinmountainpastureswherecattle,sheepandgoatsgrazeinthesummerandmilkisprocessedintocheeseandotherdairyproducts.Uniqueamongthemismohant,acheesevarietyfromBohinjwhosedistinctivesmellandpiquanttasteisachallengeforeventhemostcreativeamongculinaryinnova-tors.

GorenjskabuiltthefoundationsofSlovenianandEuropeanapiculture.Beekeepers'offeringsincludeseveraltypesofhoneyandotherapiculturalproducts.Somebeekeepersstillmakemeadusingtheoldestwrittenrecipeavailable,whichwaspublishedinJanezVajkardValvasor’s‘TheGloryoftheDuchyofCarniola’in1689.ThedevelopmentoftourismandmountaineeringinGorenjskaraninparallelwithEuropeantrends,andresultedinthecreationoflo-caltouristcentres,e.g.Bled,BohinjandKranjskaGora.Intermsofhistoricaldevelopment,whichisreflectedinthearea’sculinarycharacter,GorenjskawasmorethanjustameetingpointbetweenSloveniaandtherestoftheAlpineregion;thankstoitstrafficandtransportroutesandtradingpractices,theregionwasattheforefrontofdevelopmentandprogress.Inthe18th century,forexample,tradersfromBohinjwouldsellmeltedbuttertoTrieste,andalsoVenice,andevenhadtheirownrepresentativeintheseparts,whichservestoillustratethecharacterandscaleoftheregion’seconomicandcommercialactivityinpastcenturies.

Incooking,aswellasinmanyotherfields,theexperienceacquiredintheAlpineandMediterraneanareashasblendedseamlesslywiththeknowledgeandinnovativecapacityoflocalinhabitants.Variousfoodshaveacquiredtheircharac-teristicuses,which,tothepresentday,continuetoformlocallyandregionallyspecificculinarytraditions.Ratherthanattemptingtocompileanall-inclusivelistoftheregion’sdishes,thiscataloguepresentsthefoodsandbeveragestypi-callyassociatedwiththe17municipalitiesintheregionofGorenjskaalongwiththeircontemporaryculinarytraditionsandthemainhighlightsoftheirculinaryheritage.Thesedishes,however,arenotmuseumexhibits.Tothisday,theyformpartofdailyfoodandfestivemenus,atinnsaswellastop-notchrestaurants,butmostimportantlytheycontinuetoinspirenewinterpretationsandfusionsoflocalandregionalflavours.

Afewyearsago,themunicipalityofŠkofjaLokacompiledalistofthearea’ssignaturedishesandrecipes,whichwereadaptedtosuitthecontemporarytasteandeatinghabitsandarenowavailableinthetown’spubsandrestaurantsun-deracommonname‘Okusiloškegapodeželja’(TastetheŠkofjaLokaCountryside).Moreimportantly,restaurantsandinnsnowpurchaselocally-sourcedseasonalfoodsfortheirmenus.‘OkusiRadol’ce’(TasteRadol’ca)isanothernewandincreasinglypopularculinarybrandinGorenjska.Thetenrestaurantsunitedunderthisbrandofferacombinationofgenuinehomemadefoodpreparedusingsuperiorinnovativemethods,andthefinestlocalingredients.TasteRadol’carestaurantscanbeidentifiedbyspecialstickers;TasteRadol’cadishesonthemenuaremarkedwiththelogodepictingtheCarniolanbee.InBled,severalrestaurants,innsandhotelshaveunitedundertheprojectof‘OkusiBleda’(TasteBled),committedtodevelopingarecognizableculinarybrandthatreflectscontemporarytrendsandconnectslocalprovidersintheirefforttooffertouriststhebestofBled’scuisine.Thebrand‘Bohinjsko’(FromBohinj)identifiesdish-esandfoodsqualifyingforageographicalindicationsandensureshighqualityofpreparartionandservice.Inadditiontoculinaryhighlights,thebrandisalsousedforcertainfoodstuffs,artsandcraftsproducts,andevents.

Titova torta,orTito’s cake,whichisnamedafterJosipBrozTito,thelegendaryPresidentoftheYugoslavRepublic.Thecakeconsistsofseverallayersofcornflourdoughlavishlyspreadwithreddishplumjam.Thejamalsocoverstheoutsideofthecake.Incertainparts,theterm Titova torta was used to denote cornbread.ThenaturalenvironmentofthesmallhamletPlaninapodGolico,situatedat933to1000mabovesealevel,isinstarkcontrasttotheurbancharacterofJesenice.TheroadwindingthroughthehamletrunstowardsMtGolica(1835m),whichisbest-knownforitsstunningviewsanddaffodilsinthespringtime.InPlaninapodGolicoyoucansamplevarioustypicaldishesofthispartofGorenjska.
