Ingredients:2 tablespoons butter1 small onion, chopped1 green bell pepper, chopped1 tomato, chopped4 eggs2 tablespoons milk3/4 teaspoon salt1/8 teaspoon freshly ground black pepper2 ounces shredded cheese

Directions:Melt one tablespoon butter in a medium skillet over medium heat. Place onion and pepper inside skillet. Cook for 4 to 5 minutes, stirring occasion-ally, until vegetables are just tender.

While the vegetables are cooking beat the eggs with the milk, 1/2 teaspoon salt and pepper.

Remove the vegetables from heat, transfer them to another bowl and sprinkle the remaining 1/4 teaspoon salt over them.

Melt the remaining 1 tablespoon butter (in the skillet just used to cook the vegetables) over medium heat. Coat the skillet with the butter. When the butter is bubbly add the egg mixture and cook the egg for 2 minutes or un-til the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Continue cooking for 2 to 3 minutes or until the center of the omelet starts to look dry.

Sprinkle the cheese over the omelet and spoon the vegetable mixture into the center of the omelet. Using a spatula gently fold one edge of the om-elet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts to your desired consistency. Slide the omelet out of the skillet and onto a plate. Cut in half and serve.

Eggs make a great nutritious breakfast. They are very versatile, from simple boiled eggs, to a vegetable omelet or just regular scrambled eggs. Some people fear eating too many eggs be-cause of its high cholesterol content, but studies have shown no increase in heart dis-ease. Some studies have actually shown a decrease in heart attacks and strokes.

Here are five reasons to eat eggs for breakfast: 1. Eggs are a great source of protein. They contain all essential amino acids that are necessary for optimum health, with a better balance of the amino acids relative to other protein sources. In fact some experts believe that eggs have the most perfect bal-ance of amino acids.

2. Eggs keep us full for longer. A study compared two groups of people. One group had eggs for breakfast and the other group had bagels, they both consumed equal amounts of calories. The group that had the eggs showed a greater amount of satiety, be-ing able to go longer periods without food, compared to the group that consumed the bagels.

3. Eating more eggs for breakfast helps

us eat less for lunch. Studies following peo-ple who ate protein for breakfast showed they unknowingly ate less for lunch, when compared to those who ate carbohydrates and starches for breakfast.

4. Consuming more eggs aids weight loss. Studies show those people eating more eggs experience a greater amount of weight loss then those who don’t eat as many eggs.

5. Eggs are packed with nutrients, they are like natures multi vitamin. Among oth-ers they include the full spectrum of B vi-tamins. They are especially high in choline, which is essential for proper brain function and is great for the nervous system. Free range eggs also contain Omega 3, another critically important nutrient.

Yet, surprisingly, the Gadol was unusually stubborn and said, “When I was a young child, I overheard my father talk-

ing to my mother late one night. ‘What’s going to be with our Chaske’le? I don’t have a cent with which to pay his melamed, and he wants to send him home. Happily, my mother replied that we still have one pos-session that could be sold- the bricks of the oven that warms our home. Let’s take it apart, and sell brick by brick. True, we will be cold, but Chaske’le will be filled with the warmth of Torah.’ When I heard those words, I vowed that I will fulfill my moth-er’s wishes. For a mother like mine who was ready to live in the cold, should I not have some mesirus nefesh and go to shul to say kaddish on her yahrzeit, even if it means stepping out in the cold?”
