ABSTRAK
Batang pisang mempunyai serat yang sangat tinggi sehingga dapat digunakan dalam
berbagai industri seperti farmasi dan makanan. Pemanfaatan serat batang pohon
pisang dalam pembuatan granul instan merupakan salah satu inovasi yang dapat
memberikan nilai tambah. Sejauhmana serat batang pohon pisang dapat dimanfaatkan
akan dipelajari melalui penelitian formulasi granul instan serat batang pisang yang
berasal dari Pisang Raja (Musa paradisiaca L.). Penelitian ini dilakukan dengan 3
formula dengan berbagai variasi konsentrasi serat batang pisang. Hasil uji kesukaan
menunjukkan bahwa formula kedua adalah formula yang lebih disukai. Uji kualitas
granul instan menunjukkan semua formula telah memenuhi persyaratan. Hasil uji
nilai nutrisi formula kedua ialah protein 19,46%; lemak 4,78%; karbohidrat 62,27%;
serat 23,18% dan natrium 0,83%. Hasil uji masa simpan pada suhu ruang (T=25˚C)
adalah 20 hari.

ABSTRACT
Banana stem containing a very high fiber and it can be used in various industries
such as pharmaceuticals and food. The benefit of banana stems in manufacture of
instant granules are innovation to increasing number of the recommended dietary
allowance. This study is showed that how are the banana fiber can be applied in
instant granule formulation. The formulations of instant granules is derived from
Musa paradisiaca L.This research was made to three formula by varying the
concentration of banana fibers. The results of hedonic test shows that second formula
was the most favorite formula. The test of quality instant granules show that all
formula have fulfilled the requirements. The nutrition value of second formula
product were 19.46% protein; 4.78% fat; 62.27% carbohydrates; 23.18% fiber and
0.83% sodium. The test of produce storage at room temperature (T=25˚C) can
storage in 20 days.
