The wine list at Core by Clare Smyth embraces everything Clare and the team love about wine from old, fine and rare to young, new and exciting. Our cellar is home to wines that are already firm favourites, vintages to return to time and time again as well as a host of fresh discoveries waiting to be tried; an authentic reflection on the wine world today.
Our team are entirely dedicated to exceptional wine and hope to offer a list that excites every palette. We are proud of the depth that has been meticulously built into the collection, matching Core’s food and service with our shared dedication to excellence.
We appreciate the uniqueness of every bottle and wish to commend the hard work of their production. We strive to do justice to all those involved from the growers, to the winemakers and the barrel crafters. Many dedicated hands were responsible in bringing these wines to our door, and to your table.
To see the vineyards, feel the soil, taste the grapes, and talk to the producers – this is something you can’t find in wine books. We travel regularly to wine regions and as sommeliers, we are the connection between the winemaker and the consumer. Each opportunity for our guests to experience the provenance of individual wines fuels our enthusiasm and gives us the chance to share our passion for wine.
We love an inspiring quote, and sometimes a drawing can speak volumes where words can confuse. We have quite a comprehensive list, but we hope that you find it pretty easy to navigate and hard to put down.
We aim to provide the highest level of service but without the pretence. We want you to have fun, and we want to make it personal, tailored to you and your time with us.
It doesn’t matter if you don’t know your Cabernet from your Carignan. In fact, that’s even more exciting for us because we then get to act as your guide and hopefully share something new.

The 1980’s brough great changes and a move to quality table wines from varieties like Chardonnay
2017 Saint-Péray Les Figuiers, Bernard Gripa, Rhône Valley FranceBased in Mauves, Gripa is one of the old-line domaines in the heart of the original St-Joseph appellation with vines in Mauves and Tournon. The Gripa family have been winemakers here since the 17th century with Bernard commencing bottling of the domaine’s own wine in 1974.

We love our Champagne at Core. Quite simply, because Champagne continues to be the envy of the world’s sparkling wine producers. Ok, so Champagne sales have taken a hit from Prosecco recently, while English sparkling wine producers are rightly shouting about their usefully high acidity levels as the Champagne region warms up. But Champagne still rules, especially when it comes to ageing. That said, the big Champagne houses are being challenged by a new wave of producers who prefer to wear a pair of jeans than a sharp suit; who might farm organically, and focus on single vineyard and single grape variety wines. Cue the Champagne grower. The rise of the grower-producers has revolutionised this generation in the region. Top Champagne is no longer the exclusive realm of the big players. While single vineyard is the new vanguard, with deliciously complex cuvées from trailblazing terroiriste growers taking the wine world by storm.

Getting your head around Burgundy’s classification system
Ok, deep breath. There are general appellations, such as Bourgogne Rouge, and regional appellations, such as Chablis. Village wines come next, naming the best villages, such as Meursault. Next up is premier cru, the second-best vineyard within each village – the village comes first on the label, like Meursault-Charmes. Finally, grands crus, the top wines in Burgundy, from the top vineyards.

Talk to any Burgundy buff and it won’t be long before the word ‘terroir’ crops up. The term, bandied around the wine world, carries so much meaning and weight, and refers to all the natural elements – the geography, the geology and the climate, which together with the winemakers’ skills creates a unique vintage. But just when you’ve got your head around that, up pops the word ‘climat’, which is unique to the wines of Burgundy. Climat is a precisely delineated vine plot, with its own microclimate, and specific geological condition, shaped by human cultivation over centuries. The Gallo-Romans grew vines here. In the Middle Ages, monks carved up their vineyards into tiny patches, marking their boundaries with dry-stone walls. Along the Côte de Nuits and the Côte de Beaune, home of the greatest Burgundies, there are more than 1,200 such sites, clustered around villages, methods passed down from generation to generation – and this, in a nutshell, is what makes Burgundy so special.

Ringing the changes in Bordeaux So you thought things hadn’t changed much in France’s most famous and largest wine region? Think again. There have been fundamental stylistic shifts in the region’s wines over the last few decades. Thanks go in part to the simultaneous rise of the consultant and the wine critic (we’re thinking of you, Michel Rolland and Robert Parker Jr). Their influence was – still is – massive, prompting an opulence in the wines not seen before. Who cares how these new super-ripe wines age? Not the public, certainly, who don’t want to wait three decades to drink it. Yes, the region still lives and dies by the 1855 classification that ranks its top properties, but nearly everyone not at the top thinks this is now past its expiration date. And there’s a growing number of earnest producers making laudable wines at artisan level, who are now farming with an eye on organics, and who revere the freshness and integrity that once made ‘claret’, as us Brits like to call it, so beloved.

Did you know that there are vineyards along virtually the entire length of the Rhône River, from its source in the Swiss Alps to its mouth near Marseilles? The variety of wines is staggering, unsurprisingly. In wine terms, the valley is split into the northern and southern Rhône. The vineyards in the north, some of the oldest in France, are etched into the mountainside on narrow terraces at dizzying gradients, with the great majority of wine being made from the Syrah grape. The region’s most famous wines are the deep-flavoured, long-lived reds of Hermitage and the generally more fragrant and delicate Côte-Rôtie. The southern Rhône, meanwhile, is more user-friendly (more boozy, too – we’re looking at you, Châteauneuf-du-Pape). You can thank the openly fruity character of the Grenache grape, which rules here. And the change in scenery – it’s the gateway to Provence, think olive trees, lavender and cicadas.

Is Barolo the new Burgundy? The land of wine, that’s what the Ancient Greeks used to call Italy. And for good reason – there are vines everywhere, from the foothills of the Alps to the tiny Italian island of Pantelleria off the Sicilian coast. But it wasn’t until the Second World War that Italy really started to catch up. Now Italy’s top wines rival the best from Bordeaux, with serious reds – and even whites – coming out of pretty much every region. Though to really understand Italy’s wines, it’s best to think of it as a group of regions, rather than a single country. Its greatest reds? Barolo, say many – and it’s to where many a Burgundy nut now heads when they run out, lured by Nebbiolo’s structure and tannins. Like Burgundy, multiple producers may own small parcels within famous vineyards here; but unlike Burgundy, the best Barolo vineyards are not ranked as premier or grand cru, though this is always under discussion. It’s no surprise then that vineyard prices are creeping up.

What’s so super about Super Tuscans?
It might sound like a Marvel super hero, but it’s a term used to describe a red wine from Tuscany that may include the use of non-indigenous grapes, particularly Merlot, Cabernet Sauvignon and Syrah. It was born out of frustration at the slow-changing Italian wine laws as the more creative winemakers started to experiment. But change the law they did, in 1992. Nowadays Super Tuscans command high prices – so yes, why not call them wine heroes.

Well, it’s a question of grapes – vitis vinifera grapes, to be exact, of which there are thousands of varieties, native to the Mediterranean, and grown for centuries in countries such as France, Italy, Spain, Germany, Portugal, et al. The grapes were brought with settlers during (and after) the age of exploration, to New World countries such as the United States, Australia, South Africa, Chile, Argentina and New Zealand. Nowadays they regularly beat Old World equivalents in blind tastings, thanks to Steven Spurrier and the Judgement of Paris.You might notice that the majority of our New World wines are from Australia, the United States and South Africa. This is because we think some of the most exciting winemaking is happening there right now. Plus, our head sommelier, Gareth Ferreira, knows more than most about the latter, as he happens to hail from the South Africa.So we hope you will join us on our journey, whether to the Pacific Ocean-influenced hills of the Santa Maria Valley in California’s Central Coast, or to the open skies and gum tree-lined roads of south Australia’s Clare Valley, or to the maverick winemakers causing a stir in Swartland.

Rot is a good thing
Some of the world’s best wine is sweet wine – fact. If you don’t believe us just see what happens when you whisper the words ‘Château d’Yquem’ into a wine lover’s ear. Some sweet wines are sweet just because they are made with ultra-ripe grapes (known as late harvest wines); others are made with something called noble rot, or botrytis cinerea, to give it its proper name. In the right kind of weather (moist, misty mornings, followed by warm, sunny afternoons), the airborne fungus dries out the ripe grapes, substantially increasing their sugar content and acidity, adding glycerol (that luscious, syrupy feel in the mouth), plus a host of new flavours. The downside is the grapes have to be picked by hand because they don’t all ripen this way together. The best botrytized wines include those from Sauternes in Bordeaux, Germany’s Trockenbeerenauslese and Beerenauslese, Austria’s Burgenland, Tokaji in Hungary, plus a line-up of special bottlings from all over the world.
