EFECTUL ANTIOXIDANT AL UNOR ALIMENTE FUNCȚIONALE CU
MIERE

REZUMAT
Obiectivul principal al acestei lucrări a fost controlul calităţii unor alimente funcționale
din miere. Probele analizate au fost: miere cu cafea (Caf), miere cu scorţişoară (Sc), miere cu
chimen (Ch), miere cu merişoare (M), miere cu afine (A), şi miere cu afine şi merişoare (AM).
Calitatea mierii utilizată ca bază la prepararea acestor produse a fost de asemenea evaluată
(proba P). Determinările fizico-chimice analizate la aceste produse au fost: umiditatea, pH şi
aciditatea liberă şi hidroximetilfurfural conform metodelor Comisiei Internaționale a Mierii.
Activitatea antioxidantă şi concentraţia în polifenoli totali a fost determinată după metoda Meda,
2005. Rezultatele au arătat că umiditatea, pH şi aciditatea liberă, hidroximetilfurfural sunt în
concordanţă cu limitele impuse de Directiva Europeană 2001/110/EC. Polifenolii totali au
crescut de la 43mg acid galic/100g honey în proba P până la o medie de 250 mg acid galic/100 g
produs în celelalte probe studiate. Activitatea antioxidantă a crescut de 3-7 ori după adaosul de
plante uscate în miere.
In concluzie adaosul diverselor plante în miere nu afectează parametrii fizico-chimici şi
îmbunătăţeşte efectul antioxidant al produselor îmbogăţind valoarea nutritivă a acestora.

ABSTRACT
The main objective of this paper was quality control of honey-based functional foods:
honey with coffee (Caf), honey with cinnamon (Sc), honey with caraway (Ch), honey with
cranberries (M), honey with blueberries (A), and honey with blueberries and cranberries (AM).
Honey used as base for preparation of each sample was also evaluated (P). Physico-chemical
analysis performed for these products were: moisture, pH and free acidity,
hydroxymethylfurfural according to the methods of the International Honey Commission.
Antioxidant activity and total polyphenols were performed according to Meda, 2005. Results
have shown that the moisture, pH and free acidity, hydroxymethylfurfural of sample P1 are
according to European Directive 2001/110/EC. Total polyphenols increased from 43mg gallic
acid/100g honey in sample P to an average of 250 mg gallic acid/100 g product in the other
products. Antioxidant activity increased 3-7 times after addition of dried plants into honey.
In conclusion addition of various plants to honey increases the polyphenolic content and
enhances the antioxidant effect of the products enriching its nutritional value.
