Count Your Beans
Some of the healthiest foods come pack-
aged in small sizes. One cup of beans pro-
vides about a quarter of our daily intake
of protein, half of our required fiber and
several key energy-producing nutrients,
including magnesium, folate, potassium,
iron, thiamin and riboflavin. Red, kidney
and pinto beans have very high levels of
antioxidants compared to almost any
other food (yes, even the mighty blue-berry). Plus, beans have little to no fat and
no cholesterol.
