Welcome to The Rocks Aroma Festival, proudly presented by Sydney Harbour Foreshore Authority.
As experts source, roast, blend, pour and teach, you’re invited to savour an unbelievable month of coffee in The Rocks.
There will be an evolving artwork painted in coffee, hands-on workshops and demonstrations, and a competition to crown the best local brew. You’ll find many delicious reasons to keep coming back to The Rocks throughout July.
It all leads up to the day that thousands of cups are filled, sampled and sipped as the main event fills the streets with roasters, baristas, coffee machines, food and music on Sunday 26 July.
Aroma is one of the many fantastic events Sydney Harbour Foreshore Authority supports in The Rocks every year. The Authority is committed to supporting small businesses and underscoring The Rocks as a foodie destination. We are proud that our outstanding events attract millions of visitors and provide an important contribution to the NSW economy.

COFFEE CONNOISSEURS
Australians are learning to appreciate coffee as we do fine wine, writes Debbie Elkind.
Since European migrants introduced us to our first taste of espresso in the 1950s, Australians have embraced the bean. The more we learn, the greater our expectations.
“We’re currently riding a huge wave of coffee knowledge,” says Boris Georgiou, ASCA Barista Judge and part owner of Compagnon Coffee Co, a specialty coffee roasting company.
“Just as people used to drink ‘red’ or ‘white’ wine, but now recognise and appreciate different varietals and growing regions, such as a Barossa Shiraz, so our appreciation of coffee has developed.”
“Coffee cherries from different places have unique tastes,” explains Georgiou. “Coffee from Kenya, for example, will characteristically taste quite fruity with high notes of peach and rhubarb, whereas a coffee from Ethiopia has strong plum notes and a coffee blossom aroma that is almost like jasmine.” “This morning we cupped some coffees from the El Salvador Cup of Excellence. One had a really unique malty sweetness with notes of cloves and currants.”
BREW TRENDS Georgiou discusses his favourite alternative brew methods, which are a great way to experiment with brewing techniques and appreciate the uniqueness of single origin coffees.
Pour Over Coffee Coffee is extracted by pouring hot water over ground coffee in a paper
filter. This method brings out subtler flavours and is suited to a lighter roasted coffee.
AeropressHot water is poured over the coffee and then pressure is applied manually to force water through the coffee bed and filter. This method offers more variables to experiment with and can therefore bring out more flavour characteristics.
Cold Drip CoffeeAn apparatus slowly drips cold water through coffee over a matter of hours. This process extracts a different ratio of sugar, oil and acids, resulting in a filter style coffee with a viscous composition and a low acidity and bitterness. Suited to light or medium roast coffee.

Back behind the glittering Sydney Harbour and Opera House sails, down one of The Rocks’ charming cobbled laneways, lies La Renaissance Patisserie and Cafe – a little French jewel set in grand Sydney surrounds.
La Renaissance is renowned for its exquisite cakes and pastries and its coffees are no less outstanding. In 2014, the cafe won the Aroma Cup Industry Choice award for its brews made with beans from boutique roaster, The Little Marionette.
“La Renaissance is one of the longest standing French patisseries in Sydney,” says Jean Michel Raynaud, Executive Chef and part owner. “It has always been owned and managed by passionate professionals who are committed to remaining true to the traditions of French Patisserie whilst modernising and improving.”
Raynaud recently published his first cookbook, The French Baker, a guide to French-style baking in the home kitchen. At La Renaissance you’ll find all those irresistible French classics, from gateaux and milles feuilles to macarons and croquembouche.
“We apply the same attention to detail and care to our coffee that we apply to our cakes. We have a young team of baristas that absolutely love what they do and are incredibly knowledgeable about the finer points of making coffee. Our coffee roaster, The Little Marionette, have
the best beans I have ever tasted, aromatic and strong, without a hint of bitterness.”
“We love what we do and we have a great product to work with,” says Head Barista, Anne McDonald. “Little Marionette is one of my favourites when it comes to coffee. I am fortunate to work with this great product and I guess the Industry agrees!”
McDonald, a New Zealander who was working in Christchurch before finding a new home in Sydney, loves working in The Rocks.
“There are times when I am on my way in to work and I look around and think, wow, how lucky am I to work in such a great location? There is a real community spirit here that you would not expect from a big city and it is great to be a part of it.”
Or, as Raynaud puts it, “I love the fact that, much like our patisserie, The Rocks is a dynamic and progressive precinct, which has managed to remain strongly rooted in its historic context. It is unlike any other place in Sydney.”

As the streets overflow with everything you love about coffee, you’ll find more than
50 coffee and gourmet food stallholders, food trucks, vintage and specialty coffee carts.
There’ll be latte art competitions and demonstrations, pop-up bars and cafes, roving performers, an evolving artwork
painted in coffee, a photography exhibition and a speciality coffee lab.
Plus, you can shop at The Rocks Markets, sample espresso martinis and hot chocolate
from street stalls, and vote for your favourite local pour in the 2015 Aroma Cup.

Judged by the Australian Specialty Coffee Assocation, this event is not to be missed.
