El mercado de los Estados Unidos de Norteamérica representa el 90% del destino de los quesos de pasta dura, esto se debe a la existencia de una cuota de acceso preferencial asignada a la Argentina por el gobierno norteamericano, de aproximadamente 7000 tn de quesos duros “tipo italiano”. Ante la insuficiente información sobre las propiedades reológicas del queso Goya, se estimó conveniente realizar este estudio que incluyó a las 5 empresas que elaboraron dicho producto en el año 2002 Las propiedades reológicas de un queso pueden ser determinadas a través del análisis sensorial descriptivo cuantitativo (QDA) y/o a través del análisis instrumental por medio de un analizador de textura. METODOLOGÍA / DESCRIPCIÓN EXPERIMENTAL Queso Goya Las hormas analizadas fueron suministradas por las 5 empresas argentinas elaboradoras de este tipo de queso durante el año 2002 y se encontraban dentro del periodo de consumo establecido [1] (tres meses de maduración). Durante el periodo de análisis las hormas se conservaron a 5 1 ºC. Análisis de textura con un panel sensorial El Análisis Sensorial de la textura se realizó mediante un panel seleccionado y entrenado [3][4][5] , integrado por 12 personas de INTI. Se utilizó la técnica “Análisis Descriptivo Cuantitativo” (QDA) [6][7] Se emplearon escalas crecientes de 1 a 7 para expresar la intensidad percibida en cada propiedad de textura. La textura del Queso Goya. Comparacin entre el mtodo sensorial y mtodos reolgicos.

INTRODUCCIN

El queso Goya es un queso de pasta dura, cuyo contenido de humedad se encuentra comprendido entre 27-35% y la materia grasa entre 25-39% (semigraso) y 40-59,9% (graso)[1]. Se presenta en el mercado con un mnimo de tres meses de maduracin en hormas cilndricas de faces planas de perfil ligeramente convexo, cuyas medidas son aproximadamente de 23 cm de dimetro y 10 cm de altura.

El mercado de los Estados Unidos de Norteamrica representa el 90% del destino de los quesos de pasta dura, esto se debe a la existencia de una cuota de acceso preferencial asignada a la Argentina por el gobierno norteamericano, de aproximadamente 7000 tn de quesos duros tipo italiano.

Ante la insuficiente informacin sobre las propiedades reolgicas del queso Goya, se estim conveniente realizar este estudio que incluy a las 5 empresas que elaboraron dicho producto en el ao 2002

Las propiedades reolgicas de un queso pueden ser determinadas a travs del anlisis sensorial descriptivo cuantitativo (QDA) y/o a travs del anlisis instrumental por medio de un analizador de textura.

El perfil sensorial de textura consiste en el anlisis individual de las propiedades a travs de un panel entrenado de evaluadores.

Para poder realizar las determinaciones instrumentales de textura se han desarrollado numerosos mtodos, siendo el Texture Profile Analysis- TPA y el de Compresin Uniaxial a desplazamiento constante los de mayor importancia para quesos de pasta dura y semidura[2]

El objetivo de este trabajo es obtener datos sobre las propiedades de textura del queso Goya y comparar el mtodo de Anlisis Sensorial con los mtodos instrumentales para la determinacin del perfil de textura.

El aporte innovador de este estudio consiste en la obtencin y publicacin de informacin muy especifica sobre las caractersticas de uno de los pocos quesos argentinos que hacen referencia a un lugar geogrfico de nuestro pas y adems de poder diferenciarlo eventualmente de otros quesos, con el mismo nombre, elaborados en otras partes del mundo.

METODOLOGA / DESCRIPCIN EXPERIMENTAL

Queso Goya

Las hormas analizadas fueron suministradas por las 5 empresas argentinas elaboradoras de este tipo de queso durante el ao 2002 y se encontraban dentro del periodo de consumo establecido[1] (tres meses de maduracin). Durante el periodo de anlisis las hormas se conservaron a 5 ( 1 C.

Anlisis de textura con un panel sensorial

El Anlisis Sensorial de la textura se realiz mediante un panel seleccionado y entrenado[3][4][5], integrado por 12 personas de INTI. Se utiliz la tcnica Anlisis Descriptivo Cuantitativo (QDA)[6][7]

Se emplearon escalas crecientes de 1 a 7 para expresar la intensidad percibida en cada propiedad de textura. Los panelistas trabajaron en forma individual con un nmero de 3 muestras por sesin, analizando cada muestra por cuadruplicado.

Antes de realizar la evaluacin, las muestras fueron estabilizadas, durante 1 hora a 14-16C y fueron presentadas dentro de una caja de Petri cerrada, cortadas en forma de paraleleppedo de 1,5x2x7 cm.

Las muestras se identificaron con nmeros de 3 dgitos elegidos al azar y el cdigo utilizado fue diferente para cada ensayo.

El Perfil Sensorial de Textura comprendi las propiedades de: Elasticidad: aptitud de la muestra de queso de recuperar rpidamente su espesor inicial despus de haber sido comprimido y deformado. Firmeza: resistencia que presenta la muestra a un pequeo desplazamiento de las mandbulas. Friabilidad: aptitud que presenta la muestra de generar numerosos trozos desde el principio de la masticacin. Deformabilidad: facilidad que presenta la muestra situada en la cavidad bucal para deformarse de forma sucesiva o estirarse antes de romperse. Adherencia: trabajo que es necesario realizar con la lengua para despegar un producto pegado en el paladar y los dientes.

Anlisis de textura con mtodos instrumentales

Las determinaciones instrumentales se realizaron en un Analizador de Textura TA-XT2i (Stable Micro Systems).

Para la obtencin de las curvas Tensin -Deformacin, se utiliz una velocidad de desplazamiento constante de 0.8 mm/s.

Se utilizaron probetas cilndricas de queso de 14 milmetros de dimetro por 18 milmetros de alto, termostatizadas a 15C 2C. Las muestras se analizaron por quintuplicado.

a) Compresin uniaxial a desplazamiento constante[2][8][9];El mtodo consiste en comprimir una probeta de queso mediante un plato descendente a velocidad constante, hasta un nivel de deformacin superior al punto de fractura. Los parmetros reolgicos a medir a travs de este mtodo son: El Mdulo de deformabilidad (MD), estimado como la regresin lineal de la parte inicial de la curva, la Tensin o Esfuerzo (f), la Deformacin (f), la energa (Wf) a la fractura. En la Figura 1 se esquematiza una curva de compresin y se identifican los parmetros reolgicos obtenidos.

b) Texture Profile Analysis (TPA)[2][10]:El mtodo consiste en someter a la probeta de queso a un doble ciclo de compresin a desplazamiento constante.

Se realiz el ensayo evaluando dos tasas de compresin distintas (20%[11] y 25%[12]). Los parmetros a medir a travs de este mtodo son: la firmeza dada por la fuerza mxima registrada durante el 1 ciclo de compresin (F1), la Fuerza mxima registrada durante la compresin en el 2 ciclo (F2), el Trabajo registrado hasta F1 (W1) y el Trabajo registrado hasta F2 (W2). Luego se calculan las siguientes relaciones: Cohesividad[2][10] (Trabajo durante el 1 ciclo de compresin dividido el trabajo realizado en el 2 ciclo de compresin (W1+W3/W2+W4), la dureza estimada como el cociente F2/F1, y el grado de elasticidad[13] calculado como el cociente porcentual entre el trabajo recuperado (W3) sobre el trabajo total (W1+W3) en el 1 ciclo de penetracin. En la Figura 2 se esquematiza una curva de TPA y se identifican los parmetros reolgicos obtenidos.

Anlisis de resultados:

Se utiliz el Anlisis de Varianza de un factor (ANOVA) para determinar si existen diferencias significativas para cada propiedad entre las muestras. Luego se procedi a calcular, mediante el test de Tukey, la Mnima Diferencia Significativa [MDS = q;I;n-I. Raz (CMD/J)]

Se utiliz un (= 0.05 en todos los anlisis.RESULTADOS Y DISCUSIN

En la Tabla 1 y en el Grfico 1 se presenta los valores de textura obtenidos para el Anlisis Sensorial del queso Goya.

Por intermedio del Anlisis Sensorial se diferenciaron dos grupos (a, b) en las propiedades de firmeza, elasticidad, deformabilidad y adherencia, no pudindose encontrar diferencias en la propiedad friabilidad.

En la Tabla 2 y en el Grfico 2 se presentan los valores de textura obtenidos para el queso Goya segn el ensayo instrumental utilizando el mtodo de compresin uniaxial.

Por intermedio de la Compresin Uniaxial, se diferenciaron cuatro grupos (a, b, c, d) en los parmetros de esfuerzo, deformacin, mdulo de deformabilidad y trabajo a la fractura.

En la Tabla 3 y en el Grfico 3 y 4 se presentan los valores de textura obtenidos para el queso Goya segn el ensayo instrumental utilizando el mtodo TPA a una tasa de compresin del 20% y del 25%.

Por intermedio del anlisis TPA 20%, se diferenciaron tres grupos (a, b, c) en los parmetros de F1, F2, F2/F1. Cuatro grupos (a, b, c, d) en el grado de elasticidad y no se pudo encontrar diferencias en la cohesividad.

Por intermedio del anlisis TPA 25%, se diferenciaron tres grupos (a, b, c) en los parmetros de F1, F2. Dos grupos (a,b) en el grado de elasticidad, cohesividad y F2/F1Discusin y Conclusin

Los datos obtenidos sobre los atributos de textura del queso Goya servirn para reconocer mejor a este producto.

Los valores obtenidos a travs del mtodo de compresin uniaxial para el queso Goya son similares a los valores presentados por R. Castaeda y Col[9]en el ao 2002.

Cuatro de los cinco quesos analizados (G1, G2, G3 y G5) poseen caractersticas similares respecto a su textura.

La muestra G4 que recibi el valor ms bajo en las propiedades sensoriales de firmeza y deformabilidad, tambin recibi los valores ms bajos en los parmetros instrumentales de mdulo de deformabilidad, trabajo, esfuerzo y deformacin a la fractura (compresin Uniaxial), Fuerza 1, Fuerza 2 y F2/F1 (TPA). La misma muestra recibi el valor ms alto en la propiedad sensorial elasticidad, esta tendencia concuerda con el valor ms alto obtenido del parmetro grado de elasticidad (TPA 20% y 25%). Estas relaciones para la textura entre propiedades sensoriales e instrumentales concuerdan con estudios realizados por otros autores[2][15][16]El mtodo de compresin uniaxial permite diferenciar un nmero mayor de muestras, dicho mtodo es el que posee mejor resolucin.

La utilizacin de tasas de compresin de 20% y 25% no produce cambios en la resolucin del mtodo TPA.

Los mtodos instrumentales para el anlisis de textura presentan la ventaja de ser reproducibles, y de poder utilizarse rpidamente con independencia del panel de anlisis sensorial.
