• Hablar de eficiencia implica entrar en el tema de la producción de calor, que de por sí es un tema complejo y pertenece al campo de la bioenergética.
• Es imposible comprender la eficiencia separada de la producción de calor.• En forma simplificada se considera que parte de la energía metabolizable
(EM) consumida por el animal se pierde como calor (C) y parte se retiene (ER) como tejidos.
• Esto se expresa con la ecuación: EM = C + ER. • A mayor calor, menor eficiencia y viceversa.

EFECTOS DEL CALOR EN LA PRODUCCIÓN AVÍCOLA EN EL

• La respuesta a los cambios térmicos envuelve la expresión de ciertos genes y sus correspondientes familias de proteínas. Estas proteínas actúan como chaperones moleculares uniéndose a otras proteínas celulares, ayudando al transporte intracelular y al plegamiento de la estructura secundaria previniendo, de esta manera, la agregación de proteínas durante el estrés.
• Dentro de esta familia de proteínas se encuentra la HPS70 o proteína de choque térmico y tolerancia al estrés. La HPS70 está presente antes del estrés calórico; sin embargo, su síntesis ha sido detectada después de presentarse un estrés calórico (Parsell y Lindquist, 1994). Yahav et al. (1997) reportan una estrecha correlación entre la inducción de estas proteínas y un aumento de la termotolerancia en pollos barrilleros.
• Igualmente, se han realizado estudios sobre las proteínas desacoplantes (UCP). Estas proteínas, como lo indica su nombre, están implicadas en el DESACOPLAMIENTO DE LA SÍNTESIS DE ATP DE LA FOSFORILACIÓN OXIDATIVA. En mamíferos, a nivel del tejido adiposo pardo (TAP), se ha detectado una UCP específica (UCP1). En aves, cuya composición corporal no incluye TAP, recientemente fue caracterizada la UCP aviar (avUCP), homologa a la UCP1, supuestamente involucrada en la termogénesis facultativa del músculo.
• En pruebas realizadas por Taouis et al. (2002), se obtuvo una reducción significativa de la expresión de la avUCP en músculos de pollos de 5 días de edad aclimatados a 40°C por 24 h. Figura siguiente :

VISION DE FUTURO:Dr Peter Ferket, professor of poultry science, North
Carolina State University:
1. Computerised knowledge to optimise poultry nutritional programmes. Examples of this are simulation modelling, which would measure how potential changes would impact flock performance, risk measurement and holistic analysis.
2. Replacement of ingredients. In the US, the list of alternative feed ingredients is not very long, Ferket said, but new ingredients are becoming more important due to the growth of biofuels. Many research projects, he said, are being conducted on using distiller's dried grains with solubles (DDGS).

3. The enhanced nutritional value of feed by enzyme supplementation. The more enzymes are studied, "the more we will understand" how they operate under different situations and combinations. Feed enzymes have the potential to reduce effects of antinutritional factors, render nutrients more available for digestion and absorption, increase energy value of feed ingredients and allow for greater flexibility in feed formulation, thus reducing formulation costs and modulating or stabilising gut microflora.
4. Nutritional effects on gut ecology. "We'll see lots of research" on gut health, Ferket said, and its linkage to productivity and overall health. He noted that the enteric ecosystem consumes 20% of the dietary energy, has a protein turnover rate of 70% per day, contains more than 70% of the immune cells found in the body and there are 10 times more bacterial cells in the gut than in all the cells of the chicken. The focus will be on what nutritional strategies can modulate intestinal microflora and promote gut health.
5. Nutritional modulation of gut health. One question researchers will be looking at, Ferket said, is: "How do we define and measure gut health?"
6. Pronutrient synergy. Potential synergistic effects of pronutrients on gut health include inflammatory response reduced, protective barrier enhanced, microbial ecology stabilised and nutrient absorption function improved.
7. Feed science and nutrient stabilisation. Improved pellet quality will increase efficiency, Ferket noted.
• What's responsible for the dramatic increase in productivity? In Ferket's view, 85% to 90% is due to improved genetics, with 10% to 15% because of changes in nutrition and management
8. Neonatal and perinatal nutrition. He said that in 1957, the incubation/neonate stage represented 25% of a broiler's life, but in 2009, it's 50%. Genetic growth potential depends on early nutrition. This includes nutrient uptake, environmental stress, disease resistance and the development of immunity and stable gut microflora.
• The following dietary factors affect enteric development, he said: butyric acid and other organic acid derivatives, nucleic acid and yeast-derived products, organic trace minerals, essential oils and prebiotics and probiotics. Ferket also said that in ovo feeding increases the energy status of embryos and hatching chicks.
9. Nutrigenomics. Epigenetics, he says, is defined as any heritable influence on gene activity that does not involve a change in DNA sequence.
10. Epigenetic programming. The critical periods of epigenetic programming, Ferket said, are breeder development and perinatal development.
In addition to these 10 ideas, Ferket stated that four trends will occur in poultry nutrition:An increased focus on production efficiency;
Biosecurity and food safety;Environmental stewardship; and
Animal welfare and health.

Es un equivalente a los productos vitamínico-minerales que se venden en farmacias, para humanos: ej. Supradyn, Berocca, Centrum, etc.El uso del "núcleo" es importante porque aporta todo aquello que puede estar en falta en los ingredientes que componen la ración, ya que los mismos han sido procesados y/o almacenados y pierden muchas de sus cualidades naturales.

FORMULACION al MINIMO COSTOEn la producción de alimento balanceado, se utiliza como herramienta la Formulación
de Mínimo Costo resuelta mediante la programación lineal, la cual:
a) No garantiza el aporte total de nutrimentos de una dieta, porque ‘no toma en cuenta la variabilidad de los nutrimentos en los ingredientes, la solución a esto es la propuesta de Formulación Estocástica y la de Margen de Seguridad, pero éste enfoque no maximiza las utilidades del productor.
b) Utiliza niveles de nutrimentos prefijados (recomendados por los estándares de las, en el caso de aves, estirpes de pollo o por los reportes de NRC, 1994) para maximizar la producción pero no maximiza las utilidades
c) Su función objetivo es minimizar el costo de la fórmula y por lo tanto, no garantiza obtener las máximas utilidades.

formulación econométrica ya que escoge niveles variables de nutrimentos (en función de los precios del mercado) que maximizan la utilidad de los productores.

ECONOMETRIA• The concept of set “requirements” for nutrients, such as amino acids, is
now considered to be outdated since animals respond to nutrients and therefore expected responses should be considered when setting feed specifications.
• Responses to dietary energy, protein and amino acids should be evaluated to determine an economical optimum, since there is a distinct diminishing return as dietary nutrient density increases.
• This diminishing return is further complicated by the constraints the broiler faces with respect to feed intake resulting from the environment, management, disease challenge, feed form, feed composition and feed nutrient density itself.

• Enteric disorders are one of the most important groups of diseases that affect poultry, continuing to cause high economic losses worldwide due to increased mortality rates, decreased weight gain, increased medication costs, and increased feed conversion rates. Several pathogens (viruses, bacteria and parasites) are incriminated as possible causes of enteric disorders either alone (mono-causal), in synergy with different other microorganisms (multi-causal), or with non-infectious causes such as feed and/or management-related factors (Table 1). Under field conditions, however, it is difficult to determine whether the true cause of enteric disorders in poultry is of infectious or non-infectious origin
• It has been known for many years that supplementing poultry feed with antibiotic growth promoters (AGPs) improves the performance of livestock. The effect of AGPs on gut flora results in improved digestion, better absorption of nutrients, and a more stable balance in the microbial population. As a result, intestinal disorders are reduced. However, AGPs can also increase the prevalence of drug-resistant bacteria.
• • Based on the "Precautionary Principle", the EU placed a complete ban on the use growth-promoting antibiotics in the feed of food producing animals
in January 2006. The impact of the ban has been seen on the performance (body weight and feed conversion rate) as well as on rearing husbandry (wet litter and ammonia
• level), animal welfare problem (foot pad dermatitis) and general health issues on the birds (enteric disorders due to dysbacteriosis and clostridial infections).
• Bifidobacterium
• Clostridium perfringes (EN)• in its subclinical form the disease is much more financially damaging for the producer. The commonly
observed symptoms of the disease vary with the age of birds.• NE is a complex, multifactorial disease with many unknown factors influencing its occurrence and the
severity of outbreaks. In particular, sporadic outbreaks of NE can occur frequently in farms where antibiotics are not used as growth promoters or coccidial infections are not controlled, the husbandry practice is not strict, and diets based on viscous grains with animal protein sources are common
• Further factors are the consumption of diets high in energy, protein and fish meal, as well as wheat-based diet.
FITOGENICOS• Phytogenic compounds, including herbs, spices and essential oils, have been gaining tremendous attention in human health as well as animal feeding
programs during the last few years. Their use has a long history in human consumption as flavors, fragrances and medicines. Their beneficial effects have been shown in a vast number of scientific reports pertaining to their antimicrobial, antifungal, antioxidant and many other biological activities. Nowadays, these compounds have been used more and more frequently as animal feed additives. In deed, a growing number of scientific and field reports show that these compounds exert substantial performance-enhancing effects in animals (Kroismayr et al., 2008a; Windisch et al., 2008). Hence, phytogenic substances are considered to be well accepted by consumers due to their natural character and proven efficacy. Figure 2 illustrates the three general features of phytogenics, which make them attractive in animal nutrition
IMUNIDAD
• Not only the extremely insufficient feed intake (general energy and protein deficiency) alters immune functions, but also the ingestion of quantitatively sufficient, but unbalanced rations.
• The protein-energy malnutrition (PEM) is the primary factor in affecting immune response. Interpretation of the related data is difficult, because generally there is an accompanying vitamin and/or mineral deficiency, too (see human Kwasiorkor, Tanner and Taylor, 1965). Moreover, the commonly occurring secondary infection not only weakens the immune system further, but also worsens the general body condition.
• Most of the knowledge of this field derives from epidemiological studies, because results of the experiments, investigating the effect of a single nutritional factor on the immunity, are difficult to extrapolate to the complex situations of the real life.
