    I.TNG QUT VBT DINH DNG:

    1.Tm quan trng ca bt dinh dng:

    Dinh dng l g?Dinh dng l qu trnh cung cp nng lng t thc n v chuynha nng lng trong t bo nui dng c th.

    cn nu chn. Cch chia ny phthuc vo quy trnh chbin cc sn phm bt dinhdng chng ta c thha tan lin hoc nu chn. Ngy nay, sn phm bt dinhdng ha tan n lin ang chim u thtrn thtrng do tnh tin dng ca n. Bncnh , mt ssn phm bt dinh dng chcn ha tan vi nc lnh cng btu xut hin.

    II.NGUYN LIU:1. Nguyn liu c ngun gc t ng vt:

    a. Qa trnh ngm ht

    Trong qu trnh ngm ht, nc dn dn ngm vo bn trong ht. Nhc nc m htu mi trng ln. Khi ht u trng ln th cc phn tc tnh lng cc stncng vo cc lin kt ca cc phn tc trong ht u gm: protein, lipid, glucid,cellulosethng qua hai giai on.

    3.2.2Thuyt minh quy trnh

    Trn: Ta tin hnh trn bt ng cc, mch nha, du thc vt trong thit btrn. Bsung thm nc vo, ng thi gia nhit ttln khong 700C tin hnh hhatinh bt. Thi gian hha khong 15 pht.     Phng php nho trn:Qu trnh nho trn bt bao gm 3 bc:

    Bc 1: xy dng cng thc nho trn. Ty theo tng loi bt dinh dng cho cc itng khc nhau m c cng thc nho trn khc nhau. V dbt dinh dng dnh chongi gy th khi phi trn phi c tlsa bo, cc loi bt, ng c tlthch hp,

    bt dinh dng dnh cho ngi n king th thnh phn sa bt phi l sa gy phi trnvi cc thnh phn khc theo tlthch hp.

    Bc 2: chun bnguyn liu: gm phi trn cc phgia thnh cc dng thch hp c thtrn u vo khi bt nho. Qu trnh ny bao gm ha tan cc mui v cc phgia tan trong nc thnh mt dung dch gi l nc trn bt. Cn lu l nc trn bt

    Cc thng scng ngh:

    Qu trnh nho trn bt trong sn xut bt dinh dng thng chdin ra trong 20 400C. Nhit thay i ty theo cht lng bt nguyn liu v tnh cht lu bin ca btnho. i bt nho c khung gluten kh tt, nhit khi bt nho duy tr 400C. Cni vi loi bt nho c mng gluten yu th nhit nho thp, 25 300C.Trong thigian 30-40 pht
