Raised in a family withfood-forward parentssuch as mine, who

served dinners comprised ofCaprese salad, ravioli, gnocchi,rack of lamb with rosemaryand watercress soup, dishessuch as macaroni and cheeseseemed surprisingly exotic. Iprobably can count on onehand how many times mymom served this old-fash-ioned American classic. To be

honest, as a kid, macaroni andcheese made its rare appear-ance out of a box when, forsome reason, my mom was ona business trip, and my dadand I were left to fend for our-selves (my dad possessesvery few cooking skills, but Ilove him regardless).

Yet, over the years, I’ve grownaccustomed to this “comfortfood,” especially during college.When dorming, Easy Mac kind

of became a staple. However,other than Easy Mac and mac-aroni and cheese out of a box,my palate knew no trace of au-thentic macaroni and cheese —that is, until recently.

Priced at $24.95 per per-son (party of four or more re-quired), this eight-coursefeast begins with a refreshingDuck Salad with OrientalDressing, featuring a bed ofsalad adorned with meatymorsels of duck, won tonstrips and bits of sweettomato splashed with a

The dining experience thenbuilds up with a decadent ap-petizer comprised of Shrimpand Scallop Wrapped in Ba-con, followed by Live Dunge-ness Crab — Country Style,that’s doused in a sauce in-fused with pork, black bean

Seafood Village’s executivechef So Shu Chen relocatedto the Islands in 1990, and hasheaded the kitchen at therestaurant for the last fouryears.

“I was trained in Hong Kongin 1978 and learned every-thing from a famous chefthere, who was rankedamong the top 10 chefs inHong Kong at the time,” Chenexplains. “He was my mentor.”

To add to this elaboratemeal that’s available upon re-quest for dinner and all daytoday (Mother’s Day) from 11a.m. to 2 p.m. and from 5 to10 p.m., Chef So also cooksup an assortment of sauteedseasonal vegetables and ChefSo’s mouthwatering HouseFried Rice, a signature familyfavorite mixed with pieces ofpork, shrimp, egg, greenonions and a slew of special

It’s not often people combinethe ideas of Chinese food andhappy hour, which is a shame.

The very nature of manyChinese specialities make thecuisine a natural match for beer,wine and cocktails. If there is atraditional downside to the idea,it’s that many Chinese restau-rants lack the full bars neces-sary to create such an option, atleast that used to be the case.

Jade Dynasty in Ala MoanaCenter is trying to change that no-tion with the creation of new sig-nature drinks created by the staffat Southern Wine & Spirits. Thecocktails match a menu that fea-tures items both new and familiarat reduced happy hour prices.

The drinks — Jade Martini,Lotus Blossom, Golden DragonMartini and Lucky Mango Mo-jito — are all priced at $5, andwere created to add some Chi-nese culture to standard cock-tails. The restaurant also has re-cently brought in plum wineand sake to round out its col-lection of beer and wine. Also,ask about the pupu and drinkcombo specials.

Which appetizer to savor withwhat drink is a matter of personal

choice, though it would be diffi-cult to find a better match with acold after-work beer than BeefTendon ($4.95). This new menuitem features cuts of beef tendonthat is braised for three hours,mixed in a sauce of vinegar,sesame oil, chili sauce and shoyu,and chilled before serving. Theresult is a spicy, chewy, mild beef-flavored appetizer that is tasty,but not too filling, leaving roomfor more beer.

Another good, and new, cock-tail match is Lobster Crackers($2.75). If you are thinking ofpink, green and yellow shrimpchips — don’t. These actuallyhave texture and flavor. Thelarge, crunchy crackers are made

with tapioca starchand mixed with eggsand lobster flavoringto produce a cleanand simple flavor thatwon’t overpower anychoice of beverage.

If you’re not in themood for the newmenu items, the oldstandards still get thejob done. SteamedPork Dumplings($2.75) are still moist

and tasty, Salt and Pepper FriedTofu ($2.75) is light and mildmaking it a good match for anyof the new cocktails.

If there is one favorite amongthe reduced priced appetizers itis Snow Mountain Char Siu Buns($2.75). Sweet and savory, themini baked manapua is soft andflaky with a tender dome sup-ported by a firm crispy base.They come three to an order andif that’s not enough, you knowwhat to do.

Hong Kong is one of my favoriteplaces on earth, and one of myfavorite things about it is Hong

Kong-style milk tea.Consisting of black tea and evapo-

rated milk or condensed milk, it’s adrink that just brings instant joy to me.

Recently, a co-worker told me shetasted the best milk tea bubble tea atHI Sandwich & Drink in Aiea, so, ofcourse, I had to try it, and I’m happy Idid.

But the Vietnamese fast-foodrestaurant has a lot more to offer thanjust milk tea. There’s a long menu ofsmoothies in 27 different flavors servedwith black pearl, color or grass jelly; 10different types of Bubble Tea; variousdesserts; and other drinks. There alsoare sandwiches served with Frenchbread or croissant, and vegetarian op-tions.

Among the popular items are Pa-paya Smoothie withBlack Pearl ($4.95, 24ounces) made withfresh papaya, vanillaice cream, cream,sugar and blendedwith ice; ShreddedPork on French BreadSandwich ($6) withcarrots, white onion,parsley and cucumber;and HI Special dessert($4.50, 16 ounces) fea-turing color tapioca,color jelly, jackfruit, co-conut jelly, longan, redbean, mung bean, co-conut milk, sugar andhalf & half.

Each menu item is

made-to-order, so customers can al-ways ask for more of one ingredient,less of another or substitutions. Ownerand chef Kim Nguyen along with herhusband Nhut Thai opened the restau-rant last December, in addition toneighboring Pho Five-O, which theyopened in 2008.

“I always liked to cook at home formy family,” says Nguyen on her reasonfor opening a restaurant. “And I like tomake things that are healthy. Even mysmoothies, I like to make fresh.”

Synonymous withsummer and blush-ing with deep red,

now is the time for straw-berries. And SeanSantiago, general manag-er at Gyu-Kaku inWindward Mall, is excitedto share them with you inthe seasonal HomemadeStrawberry Cream Pie($6.50).

“I’ve been waiting all year tobring it back,” says Santiago.

The non-baked pie has ahand-pressed grahamcracker crust filled with

cream cheese, crème fraiseand lemon juice and zest,and a topping of freshstrawberry slices. For thefinishing touch: a home-made balsamic caramel.“We just do a little bit of adrizzle to balance out thetartness of the lemon andthe strawberries,” explainsSantiago. “I wish we couldput it on everything.”

After grilling up and de-vouring perfect bites of

marinated yakiniku-stylemeats and vegetables, fin-ishing with the StrawberryCream Pie will take you tocloud nine.

“It’s a nice, cool, cleancompliment to the mealbecause it does use freshfruit, and when you dotaste it there’s a lot oflemon juice and lemon zestand it just comes right offthe tongue,” says Santiago.

And you can take hisword for it.

“Between myself and theownership group, we’vegot about 45 years ofrestaurant experience all

put together,” he adds. SoSantiago knows how you’dlike to end your meal. Heand the other managersare the only staff whomake the pies fresh. Therecipe is a replication of(and improvement upon) asimilar treat Gyu-Kaku’sowner delighted in while onvacation.

Leave room and experi-ence the ying-yang balanceachieved in this slice. It’s asnice as pie. The slightcrunch of the crust holdsup against the fluffy creami-ness of the filling. Tangylemon and crème fraise en-tice when paired with sweetcream cheese and straw-berries. The balsamic vine-gar, mellowed with caramel,adds complexity and spiceto the whole.

“You’d have a hard timesharing it, because you’dprobably want to eat mostof it,” says Santiago. In fact,the pie is so well received,Gyu-Kaku customers haveasked to purchase entirepans to take to parties.

Serving up a variety of Asianfoods — primarily drawing onChinese and Japanese influ-

ences — with a little local inspiration,Asian Mix has more than 70 dishes tochoose from.

We cover a lot of different things,”says Daniel Leung, who co-owns therestaurant with the head chef. “Peoplecome in and they may eat Chinesefood, or a Japanese bento, or ramen,or maybe a local favorite lunch plate— you can get all of that here.”

Asian Mix celebrated its one-year an-niversary last week. Leung explainsthat the restaurant has spent the lastyear on a constant quest to stock themenu with quality items that are pop-ular with customers.

We continually work on changingthe menu, and we keep adding on(more items),” he says. 

One item that is surely here to staybecause of its immense popularity isSalmon Bento ($6.95), which features

salmon raised in Chile.“We tried many different salmon in

the beginning, and it turned out thatthis is the best one, so we will stick toit,” he says.

“The salmon is lightly salted and verysoft,” he adds. “And it is the same qual-ity every time we make it.”

Leung says the bentos are especiallyconvenient for customers who wantto grab a quick, yet quality and fillingmeal to go.

“They don’t have to really wait forthe bento at all — they just pick up,pay and go,” he explains.

Many of Asian Mix’s meals providequick dining options without compris-ing quality. Chicken Katsu ($7.95; minisize for $5.95), which is served withrice and macaroni salad, is a perfectexample of that.

“That is one of the best-selling itemshere,” Leung says. “It is a generousportion.”

With the summer months on theway, parties and potlucks are fast ap-proaching, too.

Asian Mix offers a variety of partytrays, including Lo Mein ($18 per tray),which features Japanese yakisoba.Customers can order the tray vegetar-ian style, which features cabbage andgreen onion, with the option of addingadditional vegetables by request. Or,customers can choose to add meatfrom a selection of chicken, barbecuepork or beef.

“We have found that the Japanese

Before opening Asian Mix last year,owner Daniel Leung ran anotherrestaurant — a more formal sit-down

establishment — for years. But he wanted to create a place forpeople to get both quality and convenience.

“We wanted to offer good-quality food to take home,” Leungsays. “People are so busy, and here they don’t have to cook, theyjust stop by.”

Leung first started working in the restaurant industry as a serv-er, as a way to put himself through high school and college. Whilestudying architecture in college, Leung’s friend asked him to helpset up his restaurant and assist with some of the building plans. Intime, Leung ended up becoming one of the shareholders of therestaurant.

“It is hard work, but I enjoy it,” he says of the restaurant business.“You meet a lot of people every day.”

Leung also enjoys theprocess of continuallyserving his customers— and designing hismenu around what willplease their palates. Inthe past year, Asian Mixalready has revampedthe menu a few times.

“We keep trying tomake things better andbetter,” Leung says.“You try to serve food tocustomers that you feelgood about — and sellsomething you thinkeverybody likes.”

yakisoba is best made with lo mein for a party tray,”Leung says. “The texture — even when it gets cold —doesn’t change. It is always nice and soft.”

For another convenient party option, BBQ Pork($9.50 per pound) provides a ready-to-go dish thatmakes a good addition to any meal. The honey-roastedpork is served a la carte, and customers also canchoose to add a side of rice for $1.

For a sweet ending to your meal, Asian Mix offersvarious puddings for dessert.

“Mango Pudding is really popular,” Leung says. “Wehave been serving a lot every day.”

Spinach Quesadillafeatures roasted chickenbreast with mozzarellacheese, pickled onionsand cilantro in a spinachtortilla. It is served withhouse made guacamole,pico de gallo and a sidesalad.

The two other items on its spe-cial menus are tacos: SmokedPork Taco and Shrimp Taco. Bothare served atop a white corn tor-tilla, along with a side salad.

“We have started serving snowice just in time for summer,” saysTaba.

“It’s all homemade, and wecreated a lighter one that’sstill tasty,” explains owner KitYiu. “Some crème brulee iskind of heavy.”

Yiu explains that the crèmebrulee is served a la carte andalso is available with the four-course meal.

Sun Tan Banana ($4.95;add ice cream for $1.50) putsa new spin on bananas fosterand features crispy bananawith whipped cream.

“We had this for more than12 years,” Yiu says. “Every-body loves it. It’s crispy onthe outside, and it’s not tooheavy.”

He says it’s a popular dishbecause it’s refreshing, yet

crunchy, and it goes well withvanilla ice cream.

Crepes Suzette ($6.95)features flambé crepes withcaramelized sugar, zests oforange and Grand Marnier.

“It’s a new hit now,” Yiusays. “Once a customer triesit they have to come back andorder it. They always leaveroom for Crepes Suzette.

“We light the GrandMarnier in front of customers,so it burns off the alcohol,and it gives flavor to thecrepes.”

Kit n Kitchen also preparesa homemade syrup for thisdish, made with orange,sugar and butter.

strong traditions in the distinctstyle of dining in which cus-tomers grill their own meatsand vegetables at the table.Luckily for Hawaii’s hungryconsumers, Heijouen has com-bined the two savory traditionsinto one ultimate yakinikuexperience.

Located on Kapahulu Avenue,the eatery is the first Americanventure for Heijouen, a popularchain of restaurants in Japan,which offers a unique blend ofJapanese and Korean dishes.

“Yakiniku’s already a popularthing in Japan … so (the owners)wanted to find a way to make ittheir own,” says manager HiroshiShimada.

Diners may sizzle things upwith a slew of grilling options,not the least of which is a sump-tuous selection of meat. Beef

Fine Kalbi ($9.80) and Beef FineOutside Skirt ($9.80), for exam-ple, present premium cuts ofshort rib and skirt steak, respec-tively. Each portion is hand-se-lected by head chefs ToukairinMasamoto and Junya Ya-

mamoto, who pay attention todetails such as marbleizationand freshness for a flavorful andjuicy piece — every time.

Thick Cut Beef Tongue($10.80) also is a must, as it’smarinated in a shio sauce withsalt, pepper and sesame oil. Un-like other yakiniku establish-ments, Heijouen is known for itssubstantial slices of meat, andbeef tongue is no exception.Shimada suggests savoring thechewy, yet tender, dish withlemon dipping sauce, a perfectcomplement to the salt-basedseasoning.

Masamoto and Yamamoto,

who have both worked at Hei-jouen locations in Japan, aremasters at finding subtle ingre-dients to pair excellently withthe meat’s natural flavors. Asweeter, soy-based tare mari-nade or spicy miso sauce bringeach fillet to life on the grill,while lemon and tare dippingsauces are mandatory for dunk-ing before each bite.

In addition to grill-able grinds,the menu is full of a la carteitems to round out your meal.Among the most popular areAssorted Kimchi ($7.80), madewith cabbage cucumber anddaikon, or Choregi Salad($7.80), topped with a slightlyspicy, Korean-style dressing.

Heijouen Chige ($9.80) — aKorean stew made with tofu,kimchi, shishito (sweet pepper),shrimp, egg and more — is a tra-ditional way to end your meal.

“With the Japanese style, howit normally works is you haveyour appetizers, then thetongue and other meats. Thenyou usually end with either asoup, or a noodle dish such asramen,” explains Shimada. “Sothis is something that wouldcome out toward the end.”

As many families gather todayto celebrate and show thanksto the mothers in their lives,

Terry Kakazu, co-owner of HASRBistro, reflects with a particularly joy-ful heart.

“My mother was the reason why Istarted this place,” says Kakazu, refer-ring to her successful European-American, family-style restaurant.

After immigrating to Hawaii,Kakazu’s mother, Young Ok Oh,opened her own restaurant, Young’sHouse of Fine Foods, the first of manyto come. As a young girl, Kakazu re-members helping her mother with therestaurant’s daily operations.

“Since I was 12 years old, I have beena restaurateur,” explains Kakazu. “Thefood business has always been a partof my childhood.”

Fast forward many years later andKakazu now approaches the one-year

anniversary of her newest culinaryventure, HASR Bistro, a quaintcountry-style bistro in downtownHonolulu. “We offer fine diningquality and dishes but in a casualsetting with reasonable prices,” saysKakazu.

After the opening of her thrivingwine store HASR Wine Company in2005, Kakazu decided to dedicate herrestaurant with the same name, whichstems from an acronym meaning“highly allocated, spoiled rotten,”Kakazu explains,

“People would call me that becausethey knew I could get access to cer-tain wines that nobody else could.”

The bistro features an array of tra-ditional European dishes, from risottoto pasta to slow-cooked meats andseafood. Led by renowned chef Rod-

ney Uyehara, HASR Bistro utilizes rich,concentrated sauces to provide boldflavors.

“We grow our own herb gardenright outside the restaurant,” saysUyehara. “So, at any given time, wehave unlimited access to culinarygems such as chives, thyme, tarragon,rosemary and fresh mint.”

Standout dishes include Osso Buco($18) lunch entree, a dish composedof braised Wisconsin veal cheeks witha Hamakua mushroom risotto in anatural glaze sauce. For dinner, thechef recommends ordering BraisedShort Rib ($26) entree, which featuresa similar risotto alongside a pesto-crusted bone marrow.

Seafood lovers will appreciate therestaurant’s daily specials, which of-tentimes feature a special catch of theday. For something year-round, thebistro’s Seafood Pan Roast ($28) of-fers scallop, prawn, crab, calamari,mussels, clams and fish in a chili saf-fron tomato cream broth.

“We cook everything a la minute,meaning to order,” says Uyehara. “In-stead of pre-making certain parts ofthe dish, we begin the process as soonas the order comes in, which allowsfor vastly better quality of food andmulti-layered flavors.”

In addition to lunch and dinner,

HASR Bistro also offers appetizersand small plates from 2:30 to 5:30p.m. The restaurant regularly hostscomplimentary wine tasting events,as well as live music by entertainerssuch as Dave Toma and Gail MackDuo. Diners may purchase any winefrom HASR Wine Company and bringit to the bistro with no corkage fee.

Although located in the heart ofdowntown Honolulu, HASR Bistropromises diners a completely new din-ing experience.

“When you come here, you mo-mentarily forget where you are andget transported to another Europeancountry or Napa Valley,” saysKakazu. “It’s comfort food at its ab-solute best.”
