Do you like my Cologne?by Mark Tichenor

It seems we’re past the point of glancing furtively up at the sky every time a cloud floats in front of the sun. There will not be any more snow this year. Well, not until August at least. These languid, pleasant sunny days call for beer of a different character. The heavy, strong brews that do so much to comfort dur-ing a raging snowstorm just don’t cut it when sitting on a sunny patio. For warm-weather beer inspiration, let us turn once more to our German friends. Specifically, let’s look at the western German city of Cologne (“Köln” to the Germans). The na-tion’s second-largest city straddles the Rhine River, and it’s banks are lined with shady beer gardens that offer Cologne’s official beer style: Kölsch. Kölsch is something of a mon-grel style, a fusion of old and new. Technically, it’s an ale, in that the yeast is bottom-fermenting and releases those yummy fruit and f loral compounds as it works.

However, it is fermented like a lager, stored in cool temperatures for an extended period of time. The result: a light-bodied, clean-tasting pale beer that maintains a subtle complexity. The term ‘Kölsch’ has been a protected appellation since 1997. This means by European Union law, no brewer outside the beer’s geographic region can call it Kölsch. In that sense, true Kölsch is only produced by thirteen breweries, mostly small concerns, in and around Cologne. Each producer has a different phi-losophy on how their beer should be. Some lean toward a softer, fruitier flavor profile, whereas oth-ers trend almost to a pilsner-like cleanliness of palate. The only regularly available true example in this area is Gaffel Kölsch, from Brauerei Gaffel Becker of Cologne. It presents as more aggressively hoppy than most (which goes a long way to understanding why Gaffel does well in the modern American beer market), but the hop essence floats on a substantial sweetness, with a pronounced malt spine. A glass of Gaffel at a sidewalk table on a hot day is sublime, and one will inevitably lead into the next. Reissdorf Kölsch also pops up in the area from time to time; it trades Gaffel’s more aggressive hoppiness for a cleaner, more bready flavor profile. Many American producers of

“Kölsch-style ale” would do well to try a sip of the real stuff from time to time; for it seems that on these shores, “Kölsch” has become a catchall term for extremely light, nearly flavorless ales. It’s the kind of descriptor that comes to mind when someone mentions ‘lawn-mower beer,’ quenching and easy to gulp, but not something you’d want to pair with dinner. It’s the same style devaluation that was inflicted on Pilsner back in the ’70s and ’80s, the stigma of which has only recently started to dissi-pate. Fortunately, some American craft brewers do get it, and their respect for the Kölsch style comes through in the examples they brew. The trend in the US is to view Kölsch as purely a seasonal style, so flavors often vary from year to year, and descriptions of past batches pretty much lack all relevance. One of the best things about Kölsch, is the broad spectrum of flavor you’ll find within the style, yet how perfectly it fits with this time of year. No matter what your palate, you can find a Kölsch for you, and it deserves a place in your beer refrigerator. Finding it is most of the fun.

In Other Beers Canandaigua, New York’s Naked Dove Brewing Company is going into Rochester Real Beer Week with a bang. The brewery already released BASWA Kölsch

(a commemorative beer for the Business Association of the South Wedge) to a select few establish-ments in Rochester’s hippest, most precious neighborhood. It’s worth seeking out; the guys from The Dove revere German brewing tradition, and this one has some awesome body and flavor. Look for it at The Tap and Mallet. Naked Dove is also releasing it’s official Rochester Real Beer Week beer, and their choice throws conventional wisdom on pleasing American palates out the window. Instead of going the preditable route with a gargantuan, over-hopped double IPA, The Dove is presenting Berliner Weisse, a light, prickly, very tart wheat ale brewed in the traditional style of, you guessed it, Berlin. Low in al-cohol but high in uncommon fla-vor, this one should confuse beer newbies, and hopefully provide some education as to just how broad the spectrum of beer flavor has been for the last century and a half. Look for the Berliner Weisse at the Rochester Real Beer Expo and at fine beer pubs citywide.
