El Mercado de San Ildefonso, entre Malasaa y Chueca, es el primero. 18 puestos monotemticos de comida para llevar espe-cializados en productos gourmet ocupan ahora el que fue el primer mercado de abastos de la capital.

Visitors to Madrid are spoilt for choice when it comes to tapas. However, until recently, street food was simply not on the menu. The San Ildefonso Mar-ket, located between Malasaa and Chueca on the site of the capitals earliest grocery market, is the first of its kind, with 18 single-theme takeaway food stalls specialising in gourmet products.

In Mexico, the fight against deforestation has a new ally. The Mexican company Cronology turns PET plastic bottles into a type of paper called Petapel. According to the companys founders, the technique is 15% cheaper than other paper manufacturing pro-cesses and helps reduce logging, conserve water, and, as a business, inspire ecological consciousness through our products.

El parque ha sido di-seado por Dante Ferreti, ganador de tres scars por sus trabajos como director artstico en Sweeny Tood, El Aviador y Hugo. The old Cinecitt studios in Rome, where legendary films such as Ben Hur and Quo Vadis were made, has been converted into a new theme park called Cinecitt World. The park has been designed by Dante Ferreti, winner of three Oscars for his work as artistic director in Sweeny Todd, The Aviator and Hugo.

Die ehemaligen Filmstudios von Cinecitt in Rom, in de-nen so berhmte Filme wie Ben Hur oder Quo Vadis ge-dreht wurden, sind zu einem neuen Erlebnispark namens Cinecitt World geworden. Las dos primeras irn desde el centro hasta Greenwich y Hackney. Se estima que en 2016 la red se ampliar con 24 ms.

Getting around the streets of London by bike can be a daunting and occasionally dangerous task. After a number of fatal accidents, the Mayor of London re-solved to build two cycle lanes that will allow cyclists to travel around the city safely. The first two lanes will run from the city centre to Greenwich and Hack-ney and there are plans to expand the network with the addition of 24 more cycle lanes in 2016.

Es kann schwierig und manchmal gefhrlich sein, mit dem Fahrrad durch die Straen Londons zu fahren. i tuvieras que completar la serie de palabras Arquitectura y Barcelona, no hay duda de que lo primero que se te vendr a la cabeza ser Modernista. Este estilo de finales del xix y principios del xx, de carcter orgnico e inspirado en las formas naturales, es lo ms conocido de la ciudad Condal y su arquitecto estrella, Antoni Gaud. Pero sabes qu? En la arquitectura local hay vida fuera del Art Nouveau.

Si se quiere viajar al pasado lo mejor es irse al Barrio Gtico. Epicentro de esa antigua ciudad romana conocida como Barcino, an pueden encontrarse restos de la muralla que protega a la poblacin hasta finales de la Edad Media. Entre lo ms destacado de esta arquitectura de la ciudad est la catedral del siglo xiii, en la plaza de la Seu, con su claustro de cuatro galeras gticas rodeando un esplendoroso jardn donde pueden encontrarse ocas. Y la del Rei, que alberga el Sal del Tinell, una sala de columnas macizas donde dicen que Isabel y Fernando recibieron a Cristbal Coln a su regreso de Amrica.

Asked to think of a word that goes with architecture and Barcelona, the first thing to come to most peoples minds would be Modernism. However, theres more to the citys architecture than Art Nouveau.

For those looking to travel back in time, the best place to go is the Gothic Quarter. There visitors can still find traces of the wall that protected the population of this ancient Roman city, once known as Barcino, until the end of the Middle Ages. Highlights include the 13th century cathedral in the Pla de la Seu, with its cloister of four Gothic galleries surrounded by a magnificent garden with its own geese, and the Plaa del Rei, which is home to the Sal del Tinell, a hall whose large stone pillars are said to have formed the backdrop to Isabella and Ferdinands reception of Christopher Columbus on his return from America.

Fr eine Reise in die Vergangenheit begibt man sich am besten in den Barrio Gtico, das gotische Viertel. Es war einmal das Zentrum der ehemals rmischen Stadt namens Barcino. Noch heute finden sich dort berreste der Mauer, die die Bevlkerung bis Ende des Mittelalters schtzte. Hervorzuheben ist die Kathedrale aus dem 13. Jahrhundert am Platz Pla de la Seu mit ihrem Kreuzgang aus vier gotischen Galerien, die einen prachtvollen Garten umgeben, in dem man Gnse sehen kann. Und der Platz Plaa del Rei, an dem sich der Sal del Tinell, ein wuchtiger Sulensaal, befindet. Hier sollen die Katholischen Knige Isabel und Fernando Christoph Kolumbus nach seiner Rckkehr aus Amerika empfangen haben.

Avanzando por esa lnea temporal, no hay nada mejor que visitar edificios de un estilo poco reconocido en Barcelona: el racionalismo. Sus postulados estn basados en la funcionalidad, utilidad, simetra y plasticidad como patrones estticos y que rechazaban el ornamento vano de flores, plantas y dems que adornaban las construcciones modernistas. Edificios como las casas Masana, de Ramn Revents y construidas en 1930 cerca de la Plaa Espanya; o la casa Vehils Vidal, de Domingo Verdaguer y erigidas en 1936, cerca de la avenida Portal de lngel, son solo algunos de los ejemplos que se pueden encontrar pateando la ciudad.

Ms contemporneos son el MACBA, en pleno Raval y construido por Richard Meier; la torre Agbar, de Jean Nouvel; la Torre de Collserola, de Norman Foster o el Auditori de Rafael Moneo, adems de barrios enteros como la Vila Olmpica, en el antiguo barrio industrial del Poblenou, delante del mar. Con todo esto no resulta raro que Barcelona sea la sede de la Fundacin Mies van der Rohe, nico gran premio europeo de arquitectura y que demuestra que hay vida despus del modernismo.

Travelling forward in time, those with an interest in architecture should not miss buildings designed in a style for which Barcelona is less famous: Rationalism. Rationalist architecture values functionality, usefulness, symmetry and adaptability as aesthetic criteria, eschewing vain ornamentation. Buildings such as Ramn Revents Casas Masana (1930), near the Plaa Espanya, or Domingo Verdaguers Casa Vehils Vidal (1936), just off Avenida del Portal de lngel, are excellent examples.

More contemporary architecture can be found at Richard Meiers Barcelona Museum of Contemporary Art (MACBA) in the Raval district, Jean Nouvels Torre Agbar, Norman Fosters Torre de Collserola and Rafael Moneos Auditori, as well as districts such as the Vila Olmpica in the old industrial area of Poblenou. With such a wealth of architecture, its no wonder that Barcelona is home to the Fundaci Mies van der Rohe, the only major European architecture award. There can be no doubt there is life beyond Modernism.

Ein paar Schritte weiter auf der Reise durch die Zeit sollte man Gebude eines Stiles besichtigen, der in Barcelona weniger Beachtung findet: der Rationalismus. Dies zeigt, dass es ein Leben nach dem Jugendstil gibt.

Ese mismo color es tambin prota-gonista en sus 79 habitaciones, apos-tando por la sobriedad y la elegancia. Molduras de madera blanca combinan con cabezales y butacas de cuero. Y unas lmparas metlicas terminan de dar ese toque elegante y novedoso.

El doctor Livingston y sus colegas no encontraran mejor lugar para descan-sar de sus mticos viajes.

Who has never dreamed about being one of those intrepid explorers who travelled the world during the times of our grand-parents? That same spirit of adventure can be breathed at the H10 Montcada after its refurbishment.

Located on the Via Laietana, this bou-tique hotel has a new interior design. One of its most outstanding features, along with the inspiration of the voyages of yester-year, is the white colour of its bedrooms and restaurant.

Globes and maps can be found along-side Chesterfield sofas and armchairs that are an invitation to dream of long voy-ages. The restaurant now offers different spaces, with an area decorated as a li-brary, a new buffet and white walls that create a bright, restful atmosphere.

That same colour also features strongly in the 79 bedrooms, with their restrained, elegant look. White wood mouldings with leather headboards and armchairs. Me-tallic lamps give a final, innovative touch.

Doctor Livingston and his colleagues would never have found a better place to rest after their legendary voyages.

Das Boutique Hotel in der Va Laieta-na wartet mit einem neuen Interieur auf. Es zeichnet sich durch die weie Farbe in Zimmern und Restaurant aus und erinnert an die Reisen von damals.

In der Lobby finden sich Weltkugeln und Landkarten neben Chester Sofas und Armsesseln, die dazu einladen, vom Reisen zu trumen. Das Restaurant bietet nun verschiedene Rume mit einem als Bi-bliothek gestalteten Bereich, einem neuen Buffet und weien Wnden, die eine helle und ruhige Atmosphre schaffen.

Dieselbe Farbe dominiert auch in den 79 Zimmern und vermittelt Schlichtheit und Eleganz. Zierleisten aus weiem Holz har-monieren dort mit ledernen Kopfteilen an den Betten und ledernen Sesseln. Metallene Lampen ergnzen das Design und sorgen fr einen eleganten und neuartigen Touch.

Doktor Livingstone und seine Kollegen knnten keinen besseren Platz finden, um sich von ihren legendren Reisen zu erholen.

SIts not often we stop to take a closer look at the things we see every day. Just ask someone from Madrid whether they have noticed this monument has two completely different faces.

King Philip III came up with the idea for this iconic Madrid landmark during the second half of the 16th century to commemorate the arrival of his wife Margaret of Austria. The original design was simple and two centuries later, when Charles III (notorious for his love of pomp) ascended to the throne, he decided to demolish it and put something much more ostentatious in its place.

Horrified at the state of the capital, which he described as nothing short of a pigsty, the king formed a council of trusted individuals tasked with changing its public image, including the Marquis of Esquilache. His mandate saw the construction of the Cibeles and Neptuno roundabouts, Hospital San Carlos (now the Museo Nacional Centro de Arte Reina Sofa) and the Botanic Gardens. All this led history to award him the title of Madrids best mayor, even though this may be far from the truth.

Finding the gateway to the city, which now stands in the centre, too modest for his tastes, he commissioned a new larger and more ornamental structure. Two different designs were submitted by the Italian architect Francesco Sabatini. Unable to choose between them, Charles III accepted Sabatinis suggestion that both should be used, one for each side of the Alcal Gate.

The west side has two columns with angels and lions heads to symbolise prosperity. The east side has 10 columns, accompanied by four children representing justice, prudence, temperance and strength.

Das Denkmal war sehr einfach gestaltet und als zwei Jahrhunderte spter der hochtrabende Karl III. an die Macht kam, beschloss er, es abzureien, um am selben Ort ein wesentlich prachtvolleres Modell bauen zu lassen.

Der Monarch war entsetzt ber die Zustnde in der Hauptstadt, die er als wahren Schweinestall bezeichnete. So umgab er sich mit zahlreichen Mitarbeitern seines Vertrauens, wie dem Minister Esquilache, um das ffentliche Bild der Stadt zu wandeln. In seiner Amtszeit wurden die Monumentalbrunnen Fuente de Cibeles und Fuente de Neptuno, das Krankenhaus Hospital San Carlos - das heute das Reina Sofa Museum beherbegt - und der Botanische Garten angelegt. Daher wurde dieser Knig in der Geschichtsschreibung zum "besten Brgermeister Madrids", ohne dass er das auch nur im Geringsten gewesen wre.

Das damalige Stadttor, das sich heute mitten im Stadtzentrum befindet, war ihm zu bescheiden und so gab er ein neues von grerem Ausma und mit wesentlich mehr Verzierungen in Auftrag. Der italienische Architekt Francesco Sabatini legte ihm zwei verschiedene Entwrfe vor. Da es ihm unmglich war, sich fr einen der beiden zu entscheiden, ordnete Karl III. schlielich an, dass jeder Entwurf auf einer Seite der Puerta de Alcal umgesetzt werden solle, was ihm Sabatini selbst vorgeschlagen hatte.

Die Westseite hat zwei Sulen, auf ihr finden sich Engel und Lwenkpfe als Symbol fr Wohlstand. Die Ostfassade weist zehn Sulen auf, oben finden sich vier Kinder. Diese symbolisieren Gerechtigkeit, Besonnenheit, Migung und Strke.

El rey Felipe III fue quien ide este smbolo de Madrid, cuando a mediados del siglo XVI decidi conmemorar con su construccin la llegada de su esposa, Margarita de Austria. El monumento contaba con un diseo muy sencillo, as que cuando el grandilocuente Carlos III lleg al poder, dos siglos despus, decidi derribarla para poner en su lugar una versin mucho ms vistosa.

El monarca estaba escandalizado con el estado de la capital, a la que calific de autntica pocilga, y se rode de varios colaboradores de confianza para cambiar la imagen pblica del lugar, como el ministro Esquilache. Bajo su mandato se construyeron la glorieta de Cibeles, la de Neptuno, el Hospital San Carlos -que hoy es el Museo Reina Sofa- y el Jardn Botnico. Por eso la historia bautiz a este rey como el mejor alcalde de Madrid, sin ser l nada de eso.

La puerta de entrada de la ciudad, hoy en pleno centro, le pareci modesta en exceso, as que encarg una nueva de mayores dimensiones y con muchos ms ornamentos. El arquitecto italiano Francesco Sabatini, otro de los ntimos aliados del rey, present dos propuestas distintas. Ante la imposibilidad de decidirse por una de ellas, Carlos III termin por ordenar que cada una de ellas ocupara una cara de la Puerta de Alcal tras la sugerencia del propio Sabatini.

El lado oeste est compuesto por dos columnas y aparecen en l ngeles y cabezas de leones como smbolo de prosperidad. La fachada este cuenta con diez columnas, acompaadas de cuatro nios que representan la justicia, la prudencia, la templanza y la fortaleza.

Esa combinacin de lo clsico y lo moderno se aprecia tambin en la zona del lobby y el bar situados en la planta baja, donde una nueva biblio-teca, grandes sillones de terciopelo y lmparas de hierro forjado conviven en armona con las columnas de piedra originales del edificio, una gran chi-menea y la escalinata de piedra que conduce al antiguo ascensor de hierro y madera an en uso.

Changing things so that everything stays the same. That is one way of looking at the in-depth refurbishment carried out on the H10 Villa de la Reina in Madrid, con-verting it into a boutique hotel.

Standing at number 22 on Gran Va in Madrid, the majestic early 20th-century faade is the same as it always has been. However, inside, the renovation has creat-ed an interior design that seeks to highlight the buildings most attractive features and give a warm feel to all areas of the ho-tel, combining classic elements with more modern touches.

The 74 rooms now offer lighter shades and rich materials, such as leather head-boards. The restaurant, Las Infantas, offers a more up to date, bright and spacious design, reminiscent of the kitchen in a pri-vate home.

This combination of classic and contem-porary can also be seen in the lobby and bar on the ground floor, where a new li-brary, large velvet armchairs and wrought iron lamps are in harmony with the build-ings original stone columns, a large fire-place and the stone staircase that leads to the antique iron and wood lift, still in use.

uerteventura se narra en piedra. Los yacimientos de esta isla, durante siglos poblada por civilizaciones que fueron inconscientes de la existencia del resto del planeta, cuentan en captulos de roca las etapas de su existencia.

Solo hace falta un vistazo a las incisiones para entender que la historia aqu es grfica. La ms nutrida de todo el archipilago: el momento en que se produce el poblamiento de la isla, el periodo de desarrollo de la cultura aborigen, los aos de la conquista y penetracin europea, lo que pas despus de eso Los cientficos que estudian los enigmas de esta tierra flotante se valen de los diferentes grabados de distintas eras que se fueron descubriendo a lo largo y ancho del territorio.

Aunque los primeros fueron hallados a finales del siglo XIX, fue a partir de la dcada de los 80 cuando las lneas de investigacin se dispararon gracias a la masiva aparicin de pistas.

The story of Fuerteventura is told in stone. The island was populated for centuries by civilisations that were unaware of the existence of the rest of the planet, and their history is told in chapters of rock.

Just a look at the islands engravings helps us to understand that history here is made in images, and it has one of the richest stores in the Canaries. Every stage here has its incisions: the period when the island was being populated, the development of aboriginal culture, the years of European conquest and colonisation, and the recent past. Scientists who study the enigmas of this floating land pay close attention to the carvings from different periods that have been discovered all over Fuerteventura.

Although the first engravings were discovered in the late 19th century, it was only from the 1980s onwards that they have been systematically identified, catalogued and studied.

It was local residents who brought attention to the carved footprints of the Betancuria Natural Park in 2007. These images are perhaps the most important found so far, along with

The Las Palmeras apartments are lo-cated 300 metres from the beach in Cor-ralejo, a fishing village in the north of the island, near the Dunas de Corralejo Nat-ural Park. Its wonderful beaches of fine sand and its clear waters make the park a unique natural space and one of the many reasons why Fuerteventura was declared a UNESCO Biosphere Reserve.

The complex has 200 studios and 60 apartments with kitchen, balcony or ter-race and full bathroom. It has a garden area and large-sized swimming pools, as well as a tennis court and a multi-sports area. There is also a buffet restaurant and four bars.

os futuristas, esa vanguardia artstica italiana, crean que la mquina era claramente superior al hombre. Pero no hay manera de que la belleza de la machina y el homo se reconcilien?

En Roma, en la antigua Central Termoelctrica Giovanni Montemartini, han encontrado la forma.

En este espacio, situado en la calle Ostiense y perteneciente a la red de Musei Capitolini, estatuas y frisos clsicos de dioses y hombres dialogan con las mquinas de la primera central elctrica pblica de Roma, inaugurada en 1912. Una superviviente, por lo tanto, de un siglo con, entre otras cosas, dos Guerras Mundiales y un boom inmobiliario.

La central cerr a finales de los aos 60 y durante una dcada durmi la pesadilla de la decadencia. En los 80, alguien pens que a lo mejor tena algo que decir sobre la historia de Roma y fue despertada de su mal sueo, aunque todava estaba lejos de alcanzar su actual esplendor.

Fue en 1997, simplemente por necesidad, cuando un gran grupo de obras clsicas lleg a sus salas. Los trabajos de restauracin de los Musei Capitolini, principalmente en el Palazzo dei Conservatori, en el Museo Nuovo y en el Braccio Nuovo, obligaron a trasladar parte de sus piezas. Y unas cuantas acabaron en la Central Termoelctrica, donde se dispusieron entre las calderas, turbinas, motores y dems parafernalia propia de la produccin de energa.

The space, which is located on Ostiense Street and forms part of the Musei Capitolini network, houses a collection of classic statues and friezes depicting gods and men, juxtaposed alongside the machinery of Romes first public power plant, which opened in 1912.

When the plant closed at the end of the 1960s, it lay dormant and fell into decline for a decade. However, it was not until 1997 that a large number of classical works came to be exhibited in its rooms out of necessity. Renovation work for the Musei Capitolini museums, which mainly affected the Palazzo dei Conservatori, the Museo Nuovo and the Braccio Nuovo, meant it was necessary to rehouse part of the collections. A number of pieces found their way to the power plant, where they were displayed among boilers, turbines, engines and other electricity generating paraphernalia.

L Das mechanische Rom Die Futuristen, diese italienische Knstler-Avantgarde, glaubten, dass die Maschine dem Menschen ganz klar berlegen sei. Doch ist es nicht mglich, die Schnheit der Maschine und den Menschen miteinander zu vershnen?

Im ehemaligen Thermoelektrischen Kraftwerk Giovanni Montemartini in Rom ist dies gelungen.

In diesem zur Gruppe der Kapitolinischen Museen gehrenden Raum in der Via Ostiense stehen klassische Statuen und Friese von Gttern und Menschen im Dialog mit den Maschinen des ersten stdtischen Kraftwerks von Rom, das 1912 eingeweiht wurde.

Das Kraftwerk wurde Ende der 60er Jahre geschlossen und war dann ein Jahrzehnt lang dem Verfall preisgegeben. 1997 hielten aus purer Raumnot eine groe Anzahl klassischer Werke in seinen Rumen Einzug. Die Restaurationsarbeiten in den Kapitolinischen Museen, vor allem im Konservatorenpalast, im Museo Nuovo und im Braccio Nuovo, machten es ntig, einen Teil der Werke auszulagern. Und einige davon gelangten in das Kraftwerk, wo sie zwischen Kesseln, Turbinen, Motoren und weiterem Zubehr fr die Stromproduktion ausgestellt wurden.

In the exhibition, entitled Machines and Gods, mythology represented by ancient sculptures and significant archaeological discoveries dating from the Republican period all the way to the end of the Roman Empire was exhibited side-by-side with machinery from the early 20th century.

The result was so fascinating that, even though the exhibition arose out of the urgent need to find a solution to the difficulties created by the renovation work, a decision was taken to convert the old power plant into a museum, and make it the permanent home of the most recent acquisitions of the Musei Capitolini network. A place where man and machine really do go hand in hand.

Die Ausstellung nannte sich Maschinen und Gtter. Hier vereinigten sich Mythologie in Form von antiken Skulpturen und kostbaren archologischen Fundstcken aus der Zeit von der rmischen Republik bis zum Ende der Rmischen Kaiserzeit mit der Mechanik des beginnenden 20. Jahrhunderts.

Obwohl dies aus einer Notlage heraus entstanden und nur als bergangslsung gedacht war, war das Ergebnis so interessant, dass man beschloss, das ehemalige Kraftwerk zu einem Teil der Kapitolinischen Museen und zum stndigen Ausstellungsort der neuesten Ankufe dieser Museumsgruppe zu machen. Ein Ort, an dem Mensch und Maschine sich die Hand reichen.

La muestra se titul Mquinas y Dioses y en ella la mitologa, representada por esculturas antiguas y valiosos hallazgos arqueolgicos que iban desde la poca republicana hasta finales del perodo imperial de Roma, se daba la mano con la mecnica de principios del siglo XX. El resultado fue tan interesante que, aunque haba nacido como una idea de urgencia y para salir del paso, se decidi que la antigua central deba convertirse en un museo capitolino por derecho propio y ser la sede permanente de las adquisiciones ms recientes de esta red de museos.

Las instalaciones del spa cuentan con una piscina dinmica con camas de burbujas, cascadas cervicales, jacuzzi o duchas con aromaterapia, entre otros servicios de relajacin.

La carta de tratamientos, por su parte, incorpora las ltimas tendencias estticas como el lifting facial japons Kobido o regenerantes antiedad con vitamina C. Masajes holsticos tan exclusivos como el masaje con caracolas de mar, foulard o piedras preciosas tambin forman parte de sus nuevos servicios, as como la inauguracin de una nueva zona de relax donde el cliente podr disfrutar de una seleccin de infusiones.

En la preparacin de los platos se emplean muchas especias que permiten puntualizar sabores, as como verduras y hortalizas que distinguen texturas y tonos, adems de decenas de ingredientes autctonos.

Tras esta cocina se esconde una tradicin milenaria. Emplea ingredientes y tcnicas culinarias que sorprenden por sus muchas posibilidades creativas, capaces de convencer, incluso, a los especialistas en nutricin, quienes estn empezando a recomendar sus ingredientes en diferentes dietas.

These cuisines are thousands of years old, and use foods and culinary techniques that offer countless creative possibilities. They are also winning over experts in nutrition, who are now starting to recommend ingredients typical of Eastern gastronomy.

H10 Hotels is well aware of the positives of Oriental cuisine. In June 2012 its first restaurant in this category, Sakura, opened at the H10 Lanzarote Princess, creating an Asian space within the hotel. Today there are two possibilities:

They have an open grill where the chef can demonstrate his skills and his mastery of grilling techniques in front of diners. They offer a unique tasting menu with a selection of sushis, soups, fish, meat and desserts.

os sbditos de su graciosa majestad siempre han sentido cierto complejo de inferioridad en lo que a gastronoma patria se refiere. La sombra de sus vecinos al otro lado del canal es alargada y ante este hecho poco, o muy poco, puede hacer el mejor de los sunday roast. No obstante, los siglos de presencia britnica en el suroeste asitico fomentaron la incorporacin de platos remotos al recetario british. Poco a poco, el paladar de los britnicos se fue acostumbrando a la cocina especiada de la India, y hoy un buen puado de esas recetas se han ganado su propio puesto de honor en el recetario de la Prfida Albin, donde no falta el pollo tikkamasala. De origen indio, su vnculo con la cultura gastronmica inglesa es ya tan slido como el Eurotnel. De hecho, su popularidad es tal que se cuenta que hasta Robin Cook, un exministro britnico de Asuntos Exteriores, bautiz al tikkamassala como el verdadero plato nacional de Gran Bretaa.

Subjects of Her Majesty the Queen have always felt a certain inferiority complex when it comes to their native cookery. France has cast a long shadow when it comes to food, and the traditional Sunday roast cannot muster a full reply to all the glories of the country across the channel. However, centuries of British presence in South Asia has meant that the islands inhabitants have gradually become used to the spicy cuisine of India, and a number of recipes from the sub-continent have made their way into the hearts, and onto the plates, of the British. One of the most important is Chicken Tikka Masala. Of Indian origin, its link to British cuisine is as solid as the Channel Tunnel. In fact, Tikka Masala is so popular that it was described by the former UK Foreign Minister, Robin Cook, as a true British national dish.

At the H10 Lanzarote Princess on Playa Blanca, in the Canary Islands, 90 percent of the guests come from the UK, and so there is a strong Asian presence on the menu. Wenn es um die heimische Gastronomie ging, hatten die Untertanen Ihrer Majestt immer schon einen gewissen Minderwertigkeitskomplex. Der Schatten, den die Nachbarn auf der anderen Seite des Kanals werfen, ist gro und dagegen kann auch der beste Sunday roast nur sehr wenig ausrichten. Doch die Jahrhunderte britischer Prsenz im Sdwesten Asiens lieen exotische Gerichte Eingang in die britische Rezeptesammlung finden. Mit der Zeit gewhnte sich der britische Gaumen an die wrzige Kche Indiens und heutzutage haben eine ganze Reihe dieser Rezepte einen Ehrenplatz in der Gastronomie des Perfiden Albions erhalten, zu denen auch das Chicken Tikka Masala gehrt. Die Verbindung dieses ursprnglich indischen Gerichtes mit der gastronomischen Kultur Englands ist bereits so solide wie der Eurotunnel. Tatschlich ist es so beliebt, dass angeblich sogar Robin Cook, ein ehemaliger britischer Auenminister, das Tikka Masala als das wahre Nationalgericht Grobritanniens bezeichnete.

Con ms de 20 aos de experiencia al frente de cocinas de toda Espaa y un ao y medio dirigiendo los fogones del Sakura y el buffet del H10 Lanzarote Princess, este fantico de la gastronoma, mitad ecuatoriano mitad canario, se confiesa un devoto de la cocina asitica. Mientras estaba estudiando en Guayaquil, mi maestro, Ricardo Bot, me abri las puertas de esta cultura. Ese hombre me hizo descubrir un nuevo mundo, y el pollo tikkamasala es uno de los primeros platos que aprend.

Estrictamente hablando, tikka es la forma en que se elabora el pollo: deshuesado y macerado 24 horas con especies y yogur. Masala hace referencia a la combinacin de hierbas literalmente significa "mezcla de especias" que han de ser muy picantes. De todas maneras, antes de cocinarlo, preguntamos a los comensales sus preferencias y en funcin de esto ponemos ms o menos pimienta de cayena. All donde va, Carlos siempre ha encontrado huecos en la carta para dejar el sello picante de las especias indias, y este pollo tikkamasala es el mejor ejemplo. El jengibre, el curry, el pimentn y la cayena forman un puente indestructible entre dos mundos que ya son uno. Y muy intenso. Dios salve al picante.

dishes. If I were to describe what this dish meant to me, I would say: a perfect combination of freshness and intensity, explains Carlos. With more than 20 years of experience in restaurants around Spain, and a year and a half at the helm of the Sakura and the buffet at the H10 Lanzarote Princess, this food devotee, half Ecuadorian and half Canarian, confesses his love of Asian cuisine. When I was studying in Guayaquil, my teacher, Ricardo Bot, opened the door for me onto this culture. That man introduced me to a new world, and Chicken Tikka Masala was one of the first dishes I learnt.

Strictly speaking, tikka is the way in which the chicken is prepared: it is taken off the bone and left to marinate in spices and yoghurt. Masala refers to the combination of spices, it literally means a mixture of spices which should be very hot. However, we do talk to diners when we take their order, and we vary the amount of chilli that goes in depending on their preferences. Wherever he has worked, Carlos has always found a little corner on the menu for some Indian spices, and Chicken Tikka Masala is one of his favourites. Ginger, curry, paprika and chilli make for a mighty bridge, a very intense one that has crossed from one world to another. The Roast Beef of Old England has been joined by a new dish.

Der Gastronomie-Fanatiker, halb Ecuadorianer, halb Kanarier, der auf ber 20 Jahre Erfahrung an der Spitze von Kchen in ganz Spanien zurckblickt und seit eineinhalb Jahren die Herde des Sakura und das Buffet des H10 Lanzarote Princess leitet, bezeichnet sich selbst als einen Anhnger der asiatischen Kche. Als ich in Guayaquil studierte, ffnete mir mein Lehrer, Ricardo Bot, die Tren zu dieser Kultur. Dieser Mann lie mich eine neue Welt entdecken und Chicken Tikka Masala war eines der ersten Gerichte, die ich lernte.

Genau gesagt ist Tikka die Art, wie das Hhnchen zubereitet wird: das Fleisch ohne Knochen wird 24 Stunden in eine Marinade aus Gewrzen und Joghurt eingelegt. Masala bezieht sich auf die verwendeten Gewrze, die sehr scharf sein mssen wrtlich bedeutet es "Gewrzmischung". Wir fragen unsere Gste auf alle Flle vor der Zubereitung nach ihren Vorlieben und nehmen dementsprechend mehr oder weniger Cayennepfeffer. Wo immer er auch ist, gelingt es Carlos, die scharfe Note der indischen Gewrze in die Speisekarte aufzunehmen, und das Chicken Tikka Masala ist dafr das beste Beispiel. Ingwer, Curry, Paprikagewrz und Cayennepfeffer bilden eine unzerstrbare Brcke zwischen zwei Welten, die bereits zu einer zusammengeschmolzen sind. Einer sehr intensiven. Gott schtze die Schrfe.

1. Macerar durante 24 horas el pollo deshuesado y troceado con sal, pimienta, vino blanco y yogur.

2. Sellar el pollo en el horno o en la sartn.

3. Saltear en la sartn junto con la cebolla y el pimiento verde.

4. Aadir ajo, jengibre, mantequilla, pasta de tomate y nata.

5. Agregar agua y la mezcla masala (canela, jengibre, curry, pimienta picante, cayena). Ligarlo todo entre 5 y 7 minutos.

6. Emplatar junto con una racin de

arroz basmati (hervido y pasado por la sartn) y aadir cilantro.

1. Macerate deboned and cubed chicken with salt, pepper, white wine and yoghurt for 24 hours.

2. Part cook the chicken in the oven or in a pan.

3. Stir fry the meat in a frying pan with the onion and the green pepper.

4. Add garlic, ginger, butter, tomato paste and cream.

5. Add some water and the masala mix (cinnamon, ginger, curry, pepper and chilli). Cook together for 5 to 7 minutes.

6. Serve with basmati rice (that has been boiled and lightly fried) and add chopped coriander.

1. Die Hhnchenstcke ohne Knochen 24 Stunden in einer Marinade aus Salz, Pfeffer, Weiwein und Joghurt einlegen.

2. Das Hhnchen kurz im Ofen backen oder in der Pfanne anbraten.

3. Mit Zwiebel und grner Paprika in der Pfanne sautieren.

4. Knoblauch, Ingwer, Butter, Tomatenmark und Sahne hinzufgen.

5. Wasser und die Masala-Mischung (Zimt, Ingwer, Curry, scharfer Pfeffer, Cayennepfeffer) hinzufgen. Alles 5-7 Minuten einkochen lassen.

6. Mit einer Portion Basmatireis

anrichten (den gekochten Reis zuvor kurz in einer Pfanne anbraten) und mit Koriander garnieren.

rick Lane es el mercadillo dominguero y calle de tiendas emergentes preferido de los londinenses, as como la alternativa perfecta y -de momento- no explotada a Camden Town. Aqu, el domingo deja de ser un da de descanso para convertirse en el ms importante y ajetreado de la semana. A lo largo de esta calle y en los alrededores, decenas de puestos callejeros venden muebles, msica, ropa, comida y todo aquello que se pueda imaginar. Brick Lane es vida, arte, modernidad y multiculturalidad.

El trmino urbanstico de calle a Brick Lane se le queda muy corto. Su longitud hace que resulte necesario dividir el mercado en dos partes diferenciadas: Upmarket, por si vas en busca de comida o ropa, y Backmarket para aquellos que solo quieren curiosear puestecillos variados y llenos de trastos.

Los puestos de comida inundan las calles y no hay plato que no puedas degustar en Brick Lane. Malasia, Brasil, Etiopa, Japn cualquier pas tiene su representacin con un buen men a base de productos tpicos. Solo en The Boiler House Food Hall se concentran 30 puestos de comida asitica.

As well as being the perfectand so far relatively undiscoveredalternative to Camden Town, Brick Lane is home to a Sunday market and some of Londons most popular up-and-coming shops. The street and its surrounding area are lined with stalls selling everything from furniture and music, through to clothes, food and just about anything else you can imagine. Brick Lane is a place where life, art, modernity and multiculturalism meet.

The streets length means the market is divided into two different parts: Upmarket, for those looking for food or clothes, and Backmarket for those who prefer to hunt for bargains among a wide range of stalls and bric-a-brac.

The abundance of food stalls is such that no nationality goes unrepresented: Malaysia, Brazil, Ethiopia, Japan Countries from across the globe are represented with tempting menus of traditional products. The Boiler House Food Hall alone is home to some 30 Asian food stalls.

Los amantes de la moda y el diseo tambin pueden saciar su apetito en las tiendas del mercadillo. Numerosos diseadores emergentes hacen gala de sus creaciones y compiten por la atencin de los transentes.

Aun as, entre tiendas y puestos, todava pervive el viejo barrio que huele a curry con restaurantes y comercios que recuerdan a los de Bombay. La razn es que en esta zona se concentra la mayor parte de la comunidad bengal de Londres; de ah que, hasta hace no mucho, Brick Lane fuera ms conocido como Banglatown.

Modernos, artistas y londinenses vidos de encontrar nuevos lugares y sitios que frecuentar dan vida a este barrio. Tampoco hay que olvidar que este vibrante mercadillo no surgi de la nada y que tiene sus orgenes en el Brick Lane Market que, ya en el siglo XVII, se dedicaba a la venta de frutas y hortalizas que abastecan a la comunidad juda que resida en la zona.

Fashion and design enthusiasts can also satisfy their appetite in the shops at the market, where emerging designers show off their creations and compete for the attention of passers-by.

Yet among the profusion of shops and stalls, the scent of curry lingers in the air, a reminder of restaurants and shops redolent of Bombay. Brick Lane is home to Londons largest Bengali community and until recently was better known as Banglatown.

The place buzzes with people who are keen to get with the times, artists and Londoners looking to discover new haunts. Also, it shouldnt be forgotten that the origins of this vibrant market date back to the 17th century Brick Lane Market, which was once home to traders selling fruit and vegetables to the areas Jewish community
