    SummarySummaryFluorescence spectroscopy has been used to identify

    and assess the quality of vegetable oils, as well as to discern olive oils of different origin and contents such as extra virigin, pomace, salad mix of olive oils and vegetable oils. A new set-up for fl uorescence spectroscopy has been used using low cost LEDs and optical fi bers for 90 detection which allows for a variety of excitation wavelengths to be used. A relation between the oxidation products and the intensity of the fl uorescence peaks has been found in the case of multiple treatment of traditional for Bulgaria oils such as sunfl ower and soybean. A correlation between the contents of tocopherols, pigments and carotenoids for nontraditional oils as those from melon, pumpkin, and white thorn seeds.

    Key words: fl uorescence, vegetable oils, oxidation products, non-traditional oils pumpkin, melon and white thorn.
