Intown e’ sempre stato un magazine dal forte spirito internazionale. Indissolubilmente legato alle città do-ve siamo di�usi, ma sempre gettando l’occhio oltre confine, alla ricerca d’i-spirazione e creatività. In questa nuo-va veste editoriale abbiamo deciso di sottolineare ulteriormente questa no-stra voglia di interagire globalmente, inserendo contenuti tradotti in lingua inglese, ma anche contenuti esclusi-vamente in lingua cinese e russa, le lingue di questa nostra nuova Italia globalizzata. Una scelta dettata principalmente dall’idea che le grandi metropoli ita-liane come Milano e Roma sono or-mai oggetto di interesse costante di stranieri con origini varie e spesso lontane e quindi ci è sembrato giusto avvicinarci a loro parlandogli diretta-mente nella loro lingua per raccontar-gli al meglio il nostro mondo.
At Intown we have always looked be-yond the national borders of Italy for in-spiration and ideas.Even though our magazine has always been closely associated to the cities in which we are distributed (Milan and Rome) we have always favoured an in-ternational prospective, as we know our readers are global by definition. The next logical step for us was to insert English as a second language to broaden our audience. But our new editorial con-cept has taken this a step further and we have also added original content in Rus-sian and Chinese.From now on our readers from all over the world will be able to interact with us in English and for those many visitors who come to Italy from Russian or Chi-na you are know close to our thoughts and you will always be inspired by read-ing the pages of Intown.

From neon colors to pastel shades, passing through the infinite hues of the ubiquitous green, elected color of the year by the Pantone Color Institute, a kaleidoscope that involves any kind of material, such as fabrics, metal, lac-quered wood, light, and marble. Experimentations carried out by the great names of international design, as well as young emerging talents, where fantasy, personalization and uniqueness reign supreme. This is also true for the new collections created by the CreativeLab of Jannelli&Volpi: the “Jwall 1001 Glance” line works on graphics inspired to the expressive power of color, through abstract drawings, whereas the “Jwall 1002 Pandora” line borrows real-life elements and decorations, freely mixing natural sugges-tions and city visions. In this case, the support materials are extremely interesting, since they have a clear tactile value: “Quartz” for a shiny and mirror e�ect, “Juta”, similar to woven canvas, and “Cuoio”, a rough leather-like solution with sound absorbing properties. alla luce e al marmo. Sperimentazioni firmate dai grandi nomi del design internazionale ma anche da giovani emer-genti, dove la fantasia, la personalizzazione e l’unicità la fanno da padrone. Come nelle nuove collezioni ideate dal CreativeLab di Jannelli&Volpi: se la linea “Jwall 1001 Glance” lavora su grafiche ispirate alla forza espressiva del colore, attraverso disegni astratti, la linea “Jwall 1002 Pandora” prende in prestito elementi e decorazioni dalla vita reale, mescolando liberamente suggestioni naturali e visioni cit-tadine. Particolarmente interessanti in questo caso i ma-teriali scelti come supporto, dotati di una chiara valenza tattile: “Quartz”, per un e�etto brillante e riflettente, “Juta”, dall’aspetto tessile di tela intrecciata, e “Cuoio”, soluzione ruvida ad e�etto pelle con proprietà fonoassorbenti. Colo-ratissima anche la collezione “Bikini Wood Chairs” di Werner Aisslinger per Moroso, composta da sedute minimaliste, mutanti nel colore, alla quale si accompagna il progetto del divano modulare “Bikini Island”, sempre per Moroso, pensato per scenari domestici in continua evoluzione, dove lo spazio e la sua organizzazione cambiano secondo le esigenze, accompagnato da una serie di elementi integra-bili. They are accompanied by the project of the modular sofa “Bikini Island”, for Moroso as well, conceived for ever-evolving house settings, where space and its organization change according to the need; it includes a series of items that can be integrated in it. The project presented by Segis, instead, is more intimate; “Twin” is a two-seat sofa by Bartoli Design, with a high back upholstered in thermo-printed material, comfortable to the touch. Speaking of upholstery, “Cubo” is the armchair created in 1957 by Achille and Pier Giacomo Castiglioni to synthesize a new way of sitting, produced today by Meritalia. An important reissue, that celebrates two masters of the 1960s, the golden age of Italian design. Jumping over time and culture we get to the bright-colored new items by Sawaya & Moroni and B-Line: the first one, that bears the signature of Zaha Hadid, is “Kuki”, a sculpture armchair that is a triumph of curves, the distinctive feature of the architect of Iraqi descent. The second is an idea of Karim Rashid, who, with “Gemma”, got inspired by the shape of a gemstone, creating a seat with an ironic feel that, due to its material and its vocation, can be used indoors or outdoors. For the ones who prefer the softness of pastel colors, a special mention goes to

the furniture line “Toshi” by Luca Nichetto for Casamania, a collection of sideboards that recall the mosaic decora-tions of some buildings in Tokyo. Very appealing are also the color combinations presented by Poltrona Frau with the “Montera” seat by Roberto Lazzeroni, which is able to

Adapting to the current moment, that requires rigor and simplicity, MDF Italia entrusted Bruno Fattorini & Partners with the task of reinterpreting and modernizing “Minima”, the historic aluminium bookcase; the result is a new and more functional product called “Minima 3.0”, where 3 represents the basic elements that compose the system: shelf, frame, and containers. Finally, a short visit to Euroluce, the biennial exhibition dedicated to the world of lighting, with the fun table lamp “Blom” by Andreas Enges-vik for FontanaArte, that allows to adjust the quantity of light thanks to two petals that softly embrace the di�user and, rotating on the base, can shield and customize the luminous flux.

87 年在 Navigli 运河地区的第一家餐馆,在那些年代,中餐还没有得到多少人的需求和知晓,在开始几年的情况怎样 ?
我和我全家是把中餐带给米兰的首家之一。我们是一家具有高质量传统的餐馆。当时人们对中餐都感到好奇,刚开始时是会觉得中餐是很不同的。品尝有民族特色菜肴的习惯是从 90 年代开始。Navigli 运河地区的环境确实是特别有利的。
您是自己创业的吗 ?
第一家Mr. Gao 餐馆的构思是家庭式的。这是一种常见的方式,在这基础上我们随后开始了其它的餐饮业。
您觉得米兰是您的城市吗 ?
当然是,我在这里居住的时间比在中国要长,我在这里上的学,我的许多朋友都是米兰人。中国华侨是非常团结的,我们,尤其是第二代子女,我们是东方与西方的融合。
哪里是您最喜欢去的地方 ? 哪些区域 ? 哪些商店、餐馆、博物馆、公园。
我爱上了 via Feltre 地区,我选择了这一地区,在 2003 年开了一家 NU 日本餐馆,在这里我买了住房,并且实现了我的最后一个计划,就是 NU Hotel 酒店。我认为这是一个绿化很好的地区,在附近有 Lambro 大公园,是新鲜空气的肺腑,在这里能使我忘记充满狂乱的城市。我喜爱 Armani、Hogan 品牌,我喜欢时装和米兰的时装街。由于我的餐馆事业,我很少有时间到外面去吃饭,我喜欢去发现那些小酒馆,可以品尝他们的特色菜肴。

全米兰都值得参观: 首先是 navigli 运河地区,那不仅是米兰夜生活场所,尤其是达芬奇智慧在这里的实现: 城市由运河水道分开,来到这地区是最让我吃惊的事情之一。然后,米兰是艺术城市,教堂,最后的晚餐,当然还有夜生活场所。可以满足任何需要。
您的餐馆提供的是风味美食,您喜欢意大利菜肴吗 ?
当然。我喜欢意大利面食,我经常在家里自己烧。不是偶然的,我的最后一家是 NU Italian Restaurant 意大利餐馆,就是正中的意大利菜肴。

A.A. 答: 除了环保之外,我认为还有 “责任”: 生物或者生物动力的证书是很好的,但是更要紧的是,我们从大地获得某物 (能源、原材料) 还要留给他人。从那些水平较低的公司企业开始就应该明白这一理念。

Andrea Berton: Polenta e vongole, tradizione romagnola o marchigiana?Paolo Cevoli: Penso romagnola, il piatto è di mia nonna Aurelia, soprannominata Nina. Mia madre ha imparato tutto da mia nonna e dal ’57 al ’90 cucinava in quella che era la pensione dei miei genitori, la pensione Cinzia di Riccione. Menu fisso. Fino agli anni ‘60 i ristoranti non erano come oggi, colpa dei francesi che hanno introdotto il menu… tanta roba da buttare via.AB: infatti il problema di tanti ristoranti, anche in Riviera, è che hanno una proposta talmente ampia e lunga che è im-possibile che riescano ad avere il prodotto fresco e realizza-to nel modo giusto. È un aspetto che non dovrebbe esistere in un ristorante: o hai 40 persone in cucina o devi fare una proposta di qualità, la quantità non serve a niente.PC: se vengo a casa tua a cena, mangio quello che c’è, la mamma ti dice “oggi c’è questo!”. Una volta era “giovedì gnocchi, sabato trippa”, nella pensione Cinzia si mangiava quello che c’era.AB: il cliente percepisce nel piatto la cura della preparazio-ne, purtroppo tra gli anni ‘70 e ‘90 i ristoranti “davano da mangiare”, invece non deve esser cosi, si va al ristorante per star bene. PC: il mangiare è il dono che uno fa di sé, non è solo dire
Andrea Berton: Clams with polenta, a dish from the tradi-tion of Romagna or Marche?Paolo Cevoli: I think from Romagna; my grandmother Aurelia, called Nina, used to prepare it. My mother learnt everything from her, and from 1957 until 1990 she cooked in my parents’ pension, Pensione Cinzia, in Riccione. Fixed-price meals. Until the 1960s, restaurants were di�erent from today; it’s the French’s fault, because they introduced menus… and a lot of stu� ends up in the garbage.AB: As a matter of fact, the problem that many restaurants have, in the Riviera as well, is that they have such a wide and long menu that it is impossible for them to have fresh products, prepared in the right way. This shouldn’t happen in a restaurant; either you have 40 people working in the kitchen, or you have to choose quality. Quantity is useless.PC: If I came to your house for dinner, I would eat what you’d serve me. Mothers always say: “Today, we are going to eat this and that!”. In the past, on Thursdays we used to eat gnocchi, on Saturdays tripe; at the Pensione Cinzia, one used to eat what there was to eat.AB: In a dish, the customer feels the attention one pays to the preparation; unfortunately, from the 1970s to the 1990s, restaurants used to “feed” people, but this isn’t the way it should be. One goes to the restaurant to feel well.PC: Eating is a gift we give to ourselves, it’s not just saying “I eat because I’m hungry”; conviviality is important, the personal aspect is really strong, and we Italians are very good at this.AB: It’s our main feature and we have to enhance it and support it. The things we do with passion evoke feelings. For example, I went to see Paolo’s show, La penultima cena (The penultimate supper), and it was incredible, because he, alone, managed to engage the whole audience; if you’re not passionate about it, you cannot do that. The same goes for cuisine: the customer meets a person and understands the great enthusiasm he puts into cooking.PC: We do the same thing, but in di�erent fields, right? In both cases, it’s entertainment, something extra. People won’t starve if they don’t come to your restaurant for dinner, and the same applies to theater… However, it’s a pleasure to do it, because it means meeting someone. I give myself to them and bring them into another world.AB: Cooking is the same: you have to engage customers. You do it by talking, I do it with my dishes.PC: We share the same secrets. First of all, ingredients; if they’re not good, you can only solve the problem with mayonnaise or cream! It’s the same for me; my ingredients are things. I take things that are before everybody’s eyes, but I create a world people can enter. I create a soap bubble around the whole audience, and it takes nothing (a phone ringing, an ambulance) to make it pop. The third import-

Se le cose vengono fatte con passione trasmettono sensazioni; per esempio quando sono andato a vedere lo spettacolo di Paolo, La penultima cena, è stato incredibile perché lui da solo è riuscito a coinvolgere tutto il pubblico: o lo fai con passione o non puoi farlo. Questo vale anche per la cucina: il cliente incontra la persona e capisce che dietro c’è un grande entusiasmo nel realizzare i piatti. PC: facciamo la stessa cosa, ma su fronti diversi, vero? È sempre un intrattenimento, un qualcosa di più. Non è che se la gente non viene a mangiare da te muore di fame, così come andare a teatro… Eppure son cose che fanno piacere perché sono un incontro con una persona. Io mi do a loro e li porto in un mondo.AB: la cucina è uguale: devi riuscire a coinvolgere il cliente; lui lo fa con la dialettica, io coi piatti.PC: i segreti sono gli stessi. In primis la materia prima, se non parti dalla materia prima buona, la risolvi solo con la maionese e la panna! Uguale per me. La mia materia prima sono le cose: tu prendi cose che sono sotto gli occhi di tutti ma costruisci un mondo nel quale fare entrare la gente. Creo una bolla di sapone nella quale prendo tutto il pubblico e basta un niente (un telefonino che squilla, un ambulanza) a farla scoppiare. La terza cosa importante è la passione, uguale per me e per lo chef. Tanti chef lavorano per se stessi.AB: il cliente devi tenerlo sempre coinvolto. Bisogna coinvolgerlo nel messaggio che gli trasmetti nel cibo, deve provare delle sensazioni. Quando assaggi un piatto devi ricordartelo, deve rimanerti impresso, come uno spetta-colo. Il ricordo significa che hai lasciato un segno. L’aspetto umano del lavoro è questo.PC: Quale è il ristorante che ti ha colpito di più?AB: due ultimamente, da Massimo Bottura, fantastico, e da Massimiliano Alajmo a Venezia al ristorante Quadri. Eccezionali. PC: per me invece è stata l’esperienza nel Monastero di Camaldoli coi frati, in un bosco sopra Cesena. Mi ha colpito per il contesto in cui si mangiava, la sacralità del cibo e l’en-fasi sull’atto del mangiare. La domanda è: perché mangi? Perché ti preparo da mangiare? Io ho iniziato a lavorare nella ristorazione nel 1983. Con Marco, il proprietario del Grand Hotel di Rimini, ho fatto il giro di tutti gli hotel

They’re both great.PC: I would pick something I experienced in the Camaldoli monastery, with monks, in a wood above Cesena. The

Marco voleva aprire un fast food all’italiana, mi ha detto: “ti voglio mettere a capo di questi fast food”, son stato sei mesi a Miami, alla Burger King university. E alla fine lo abbiamo fatto, questo fast food.AB: io sono arrivato dallo chef Marchesi a Milano e gli ho chiesto di provarmi, che avrei iniziato subito. Il giorno dopo ho iniziato, ho fatto un mese senza stipendio, poi sono stato assunto e sono rimasto tre anni e mezzo. C’erano Oldani, Cracco, eravamo tutti li.PC: la mia idea sarebbe quella di fare un locale in silenzio totale, dove tutto serve alla funzionalità del cibo. Mangiare è “guarda quello che la mamma ha fatto solo per te”, questa esperienza della pancia, della testa, della mamma che ti fa i maccheroni non c’è più. Un locale dove spegni il cellulare e mangi in un tavolone in silenzio come alle elementari: mentre mangi e parli butti giù aria e non apprezzi, come andare a uno spettacolo e parlare. Io ti ho fatto una cosa e perché tu non l’apprezzi?

I started working in the restaurant industry in 1983. Marco, the owner of Rimini’s Grand Hotel, and I, made a tour of all American hotels, to see how they were run. I was 25. Marco wanted to open an Italian-style fast food restaurant, and he told me: “I want you to manage it”. I spent six months in Miami, at the Burger King university. And we opened it, eventually.AB: I went to see chef Marchesi in Milan, and asked him to let me serve a trial period; I would have started immediate-ly. I started the day after, worked there a month and a half without any pay, then he hired me and I stayed there for three years and a half. There were Oldani, Cracco, we were all there.PC: My idea would be opening a completely silent restau-rant, where everything is aimed at the functionality of food. Eating means “Look what mom prepared just for you”. Today, this stomach and mind experience, the idea of mom preparing macaroni for you, doesn’t exist anymore. A place where you turn o� your phone and eat at a large table, qui-etly, like in primary school; if you eat and talk, you swallow air and you don’t enjoy it, it’s like going to a show to talk the whole time. Today, my brother Giulio and I run the company that has belonged to our family for generations; we inherited our sense of hospitality from our mother, Emanuela Barboglio, one of the Franciacorta pioneers, who al-ways wanted to make people live the vineyards and the cellar as an integral part of the territory.This approach becomes a reality 365 days a year, thanks to dozens of oc-casions connected with enology and gastronomy, that liven up the holiday farm Quelli che il vino, also through the homonymous Wine Club (www.quellicheilvino.it). A virtu-al space we created to involve our admirers, as well as anyone who’s interested, in the world of Franciacor-ta and in our more private world, the one of Il Mosnel, with specific events, special bottles or simple thoughts and pictures.From this point of view, we are con-stantly looking for new languages to describe wine, such as the words of Stefano Ca�arri or the photos by Francesco Orini, that since 2010 have been interpreting our products with their sensitivity on the company’s website. E ancora, considerando la Franciacor-ta un vero e proprio scrigno, abbiamo invitato in azienda Benedetta Barzanò (benbar.it), un’artista che intreccia bronzo, oro, argento e pietre per creare gioielli unici. Per noi Benedetta ha creato una linea di gioielli ispirati alle nostre cuvée e sabato 1 e dome-nica 2 giugno terrà quattro laboratori per mostrare in diretta come nascono questi capolavori. Parallelamente si potrà scoprire in cantina come na-scono i nostri capolavori in bottiglia… come il Franciacorta DOCG Extra Brut Millesimato EBB, frutto del mo-sto di cinque nostri vigneti eccellenti e di una fermentazione di oltre 30 mesi, una cuvée ra�natissima che abbiamo dedicato a nostra madre.

For example during Franciacortando, a spring event organized by Strada del Franciacorta, that this year will take place on June 1st and 2nd. A very valuable occasion to let people know about the excel-lence of Franciacorta’s territory and products. This year, among the many scheduled events, we decided to o�er other experiences, in addition to our wines. For example, Musica in vigna, a guided tour through our vineyards, close to our cellars, that will end with an aperitif in the rows, listening to live jazz music. Glasses will be filled with Franciacorta Brut and Franciacorta Satèn Millesimato.Furthermore, thinking of Franciacor-ta as an authentic treasure chest, we invited to our farm Benedetta Bar-zanò (benbar.it), an artist that creates unique jewels by weaving bronze, gold, silver, and stones. Benedetta created a jewelry line for us, inspired to our cuvées, and on Saturday, June 1st, and Sunday, June 2nd, she will hold four laboratories to show live how her masterpieces are made. At the same time, in the cellar, you will be able to discover how we create our bottled masterpieces, such as the Franciacorta DOCG Extra Brut Millesimato EBB, resulting from the must of 5 excellent vineyards of ours, after a fermentation of more than 30 months; an extremely refined cuvée that we dedicated to our mother.

“Our tailor’s shop was born from an ambi-tious ideal, typical of the 1970s: a life’s savings invested in sewing machines, needles, threads and creativity. That’s how my family founded Sartoria Rossi in the heart of Tuscany, in Val di Chiana. The suits, with their labels, would leave the tailor’s shop and go upstairs, where our boutique is still located, with its terrace overlooking the countryside (which our customers love). Today, the style of Sartoria Rossi has made its way to other cities, with exclusive boutiques directly connected with the main tailor’s shop. Marciano della Chiana still hosts the headquarters, and, above all, the only production site.”
What does it mean to be a “contemporary tailor’s shop”?In my opinion, being a tailor is wonderful. If I were not born to be an entrepreneur, I would have liked to be a tailor [he laughs, Ed.]. On our side, we have the expertise of masters of tailor-ing, who grew in the tradition of workshops, but also worked in the companies of the Arezzo area that dealt with tailoring on a global scale [Lebole, Ed.]. Our garments are tailor-made, but we have organized our work in order to be able to make a bespoke suit in five days.Who is your typical customer?Someone who cares about his appearance, because he thinks it reflects his personality.What would you consider the core values of the company?Before being a company or a brand we are a family. Ours is a wonderful profession, we sell what we produce and we follow directly all we do from conception through to after sale service.

Cosa significa essere una “sartoria con-temporanea”?A mio avviso il mestiere del sarto è bellissimo. Se non fossi nato imprenditore vorrei essere un sarto (sorride, ndr). Noi abbiamo dalla nostra l’esperienza dei maestri sarti cresciuti nella tradizione della bottega, che però hanno lavorato nelle aziende dell’aretino che facevano confezione a livello mondiale (Lebole, ndr). I nostri capi sono di manifattura sartoriale, ma abbiamo impostato il lavoro in modo da riusci-re a fare un abito su misura in cinque giorni. Qual è il vostro cliente tipo?Chi ha a cuore la sua immagine perché la consi-dera lo specchio della sua personalità. Quali sono i valori alla base dell’azienda?Prima di essere un brand o un’azienda, siamo una famiglia. Il nostro è un lavoro bellissimo, produciamo quello che vendiamo e lo seguia-mo dalla progettazione alla post vendita senza delegare a nessuno.

Laufen ha presentato il suo nuovo progetto per il bagno durante

Kartell by Laufen presented the new bathroom project during
an opening party in its flagship store, in via Turati, where gathered
many personalities from the design world, as well as other well-
known people such as Marta Marzotto and Claudio Luti, president
of Cosmit and CEO of Kartell. An evening with music that organized
by Pisa Orologeria and Rolex, that among jewelry, watches and
design, they welcomed many popular personalities, such as Filippa
Lagerback, her husband Daniele Bossari (3, in the picture with Chi-
ara Pisa), and Elio Fiorucci. To celebrate the collaboration between
Ron Gilad, Molteni and Salvatore Ferragamo, an exclusive cock-
tail party took place in the designer’s new showroom, in Palazzo
Ferrania. For the occasion, the venue hosted the latest creation by
the Israeli designer, the cabinet 45° Vetrina.

Parks ha cercato di raccontare molte storie,

che però devono essere compresi meglio di
