Two BEarS markET

On my continued search for great food here in Daegu, I was directed by a co-worker to try “Two bears Mar-ket.” On the back side of Sueseong Lake (where the coffee shops are), make a left instead away from the lake, then go down about 100 meters, it will be on the right (see the map for a pin). Two bears Market is the best Southern American bbQ in all of korea. 대구에서 맛있을 음식을 계속 찾던 중에 동료가 “투 베어스 마켓” 에 가보라도 추천해주었다. 수성못 뒤쪽으로(카페들이 몰려있는 쪽에서 더 들어가서) 가서 왼쪽으로 난 길을 따라서 100미터 정도를 가면 오른쪽에(지도의 핀 참고) 오른쪽에 가게가 있다. 투 베어스 마켓은 한국 최고의 미국 남부식 바비큐를 판매하는 곳이다.

After Maria and I had our first experience, we had to go back and speak to the manager Lee kwon Woong [email protected], 053-764-1600 to let our Compass readers know about this awesome restaurant. Mr. Lee told us that “Two bears Market” opened June 2015, by owner Do Hyoung Hwan. The owner, who was born in Daegu, went to America to make the menu. He lived with his friend and over the next two years, he visited famous bbQ stores like Dinosaur bar-b-que and Dallas bbQ. He wanted to make a store about bbQ here in Daegu. He made the menu and recipes in New york

with his friend, who graduated from french culinary school. Together, they own three restaurants: the ba-gel Doctor’s, katsura (a Japanese restaurant), and Two bears Market. He has been cooking and making new menus for over 21 years. He opened his first restaurant when he was 24 years old and has a lot of experience with restaurants. 마리아와 함께 처음 방문한 뒤에 컴퍼스 독자들에게 이 멋진 식당을 알려주기 위해 다시 한 번 가서 매니저인 이권웅씨와([email protected], 053-764-1600)와 함께 인터뷰를 해 보기로 했다. 이 매니저님은 “투 베어스 마켓’이 2015년 6월에 오픈했으며 도형환씨가 운영하는 곳이라고 했다. 도 사장님은 대구에서 태어나 메뉴를 만들기 위해 미국으로 갔다고 한다. 친구들과 함께 2년간 살면서 Dinosaur Bar-b-que와 Dallas BBQ 같은 유명한 바비큐 식당에도 가보았다고 한다. 그리고 대구에 바바큐 식당을 열고 싶어했는데 프랑스에서 조리학교를 나온 친구와 함께 뉴욕에서 메뉴와 레시피를 개발했다. 현재 그 친구와 함께 식당 세 개를 운영하고 있다고 한다. 베이글 닥터스, 가츠라(일본식), 그리고 투 베어스 마켓이다. 21년이 넘도록 요리를 하고 새로운 메뉴를 개발한 것이다. 그의 첫번째 식당은 24살 때 열었고 많은 경험을 얻도록 해 주었다.

Two bears is not a franchise, yet. Now, it is the only one in korea. Do Hyoung Hwan knows that people in Daegu are very sensitive about taste and cost. He has traveled the world to find new items for the menu. That is why extra care goes into preparing the menu items. It takes two days of smoking and seasoning the meat, with a rub, in a building just two doors down. Meat is brought in from around the world. The baby back ribs are from Spain, the spare ribs and pulled pork are from the U.S., the brisket is from Australia, the shrimp is from Thailand, and the lobster is from Canada. fresh bread, homemade fries, and pickles are made from scratch. 투베어스 마켓은 프랜차이즈가 아니다. 한국에서 단 한군데 밖에 없다. 도사장님은 대구 사람들이 맛과 가격에 매우 민감하다는 것을 알고 있다. 그래서 메뉴에 올릴 새로운 아이템을 찾기 위해 세계를 여행한다. 이 것이 바로 메뉴를 준비하는데 드는 정성이다. 훈제를 하고 고기에 양념을 바르고 바비큐는 만드는데는 이틀이 걸리는데 두 건물 건너에 있는 건물에서 진행되는 작업이다. 고기는 외국에서 공수해 온다. 베이비 백립은 스페인에서, 다른 스페어 립과 풀드 포크는

The interior is from the U.S. and the Ameri-can music helps to transport you to the U.S. Two bears has state of the art menus. Each table is equipped with a computerized menu for self-service ordering. Every item on the menu is on the screen, just pick what you want and put it in the basket, double-check your order, then hit send. your order goes to the kitchen and in no time at all, you receive your order - A restaurant of the 21st century. 투 베어스 마켓 안으로 들어가면 마치 미국으로 간 듯 한 느낌이 든다. 식당 전체가 미국의 식당 같다. 인테리어 자재 역시 미국에서 가져 왔고, 미국 팝이 미국으로 온 듯한 분위기를 만들어 준다. 투 베어스는 굉장히 멋진 메뉴판을 가지고 있다. 각 테이블에는 셀프 주문을 할 수 있는 기기가 갖춰져 있다. 모든 메뉴가 스크린

에 떠 있고 원하는 것을 골라 장바구니에 넣으면 주문을 재확인 한 후 전송 버튼을 터치하면 된다. 즉시 주방으로 주문이 전달 되고, 곧 음식이 나온다. 정말 21세기의 식당이다.There is covered seating outside, with three four-top tables if you want to enjoy the outside weather. In July, they are adding a dart board. They offer beers in the bottle and on-tap. There is a winter menu and a spring menu. The top sellers are the bbQ family combos (my favorite), the beef patty tower, and the lobster roll. The clam chowder is the best I ever had. The combos are made for two, four, six, and eight people. They give you a lot of food. 바깥의 날씨를 즐기고 싶다면 덮개가 씌여진 의자와 테이블이 있다. 7월에는 다트 보드도 가져다 놓는다. 맥주는 병으로 즐기거나 탭을 걸고 마실 수 있다. 겨울 메뉴과 봄 메뉴가 따로 준비되어 있기도 하다. 가장 많이 팔리는 메뉴는 BBQ 패밀리 콤보이다(필지가 가장 좋아하는 것이다.), 비프 패티 타워, 랍스터 롤이다. 클램 차우더는 먹어본 것 중 최고였다. 콤보는 2인용, 4인용, 6인용, 8인용이 있는데 푸짐한 양을 제공한다.

Two bears Market is open from 12 noon to 3 pm (weekdays 20% off, only at this time) and from 5pm to 2 am. At 10:30 pm they change to a smaller menu. They are very busy on the weekends and holidays. The restaurant can hold over 100 people. If you post about Two bears Market on facebook, Twitter, or Instagram, you get a 5% discount and a free soda with five likes. 투베어스 마켓은 오후 12~3시(주중에는 이 시간대에 20% 할인을 해 준다.), 오후 5시~새벽 2시까지 문을 연다. 오후 10시 30분부터는 간단한 메뉴만 판매한다. 주말과 공휴일에는 매우 붐비는데 100명까지 수용 가능하다. 페이스북, 트위터, 인스타그램에 투베어스를 올리면 5% 할인과 무료 음료를 제공한다.

Mr. Lee set up a container by the front door that has coupons that you can use as soon as you arrive, for combos, drinks and Ade. I asked Mr. Lee what he wanted the reader to know. Tucked away down a backstreet you will find down-town a hidden gem of Daegu’s restaurant scene. It is an Italian Pizzeria known as ‘zione’, which specialises in food from the pizza-mad city of Naples, Italy. 대구 동성로의 어느 뒷골목 대구 동성로 음식점의 숨은 보석을 소개한다.이탈리아 피자 레스토랑인 ‘지오네’는 이탈리아의 나폴리가 뜨겁게 사랑하는 이 음식을 전문으로 하는 곳이다. 바로 피자이다.

Tricky at first to find, this restaurant offers reasonably priced dishes that are a marvel to see and a delight to eat, once the compulsory food photographs have been taken. 처음 방문하면 찾기 조금 힘든 곳이지만, 지오네는 합리적인 가격에 음식을 제공한다. 보기에 좋고 맛은 더 황홀하며, 한번쯤 의무적으로 사진을 찍을 법한, 그런 음식이다.

zione was once an old korean house that has now been transformed into a bustling Neapolitan Pizzeria. It is a large restaurant, with a sizable open kitchen and a dining area, that has enough seating to cater to both larger groups and couples. The restaurant has an adjoining ornate patio-garden where you can sit and enjoy anything from Sorrento Style Lemon Chicken to Shrimp Risotto, or a buffalo Cheese Margherita Pizza.

The ambience of the place is quite charming, with light pouring in through all directions and kind staff that will not leave you waiting. zione is situated 50 meters west of the fire station in downtown, as you would go to Daegu’s famous bar street (대구 중구삼덕 1 가 26-3 지오네).

zione is a new addition to the restaurant scene, but has quickly become one of Daegu’s favourites, with many returning happy customers. In fact, it is so popu-lar that they recommend that you either come early or book ahead, as the restaurant is very busy after seven o’clock. 최근에 문을 열었지만 단시간 내에 대구가 가장 사랑하는 음식점 중 한 군데가 되었으며 많은 행복한 단골손님들이 있다. 사실 인기가 굉장히 많은 곳이라 7시 이후에는 매우매우 바쁘니 더 일찍 가거나 예약을 미리 하고 가길 추천한다.

Jatae, the owner and head chef, started his love affair with Neapolitan food sixteen years ago when he first visited Naples. He was inspired by their use of fresh

market ingredients, carefully sourced cheeses, and stone hearth baking, all of which he has incorporated into his restaurant. 구자태 오너쉐프는 6년 전 처음으로 나폴리를 방문했을 때 나폴리 음식과 사랑에 빠졌다. 그 쉐프는 신선한 시장의 재료와 조심스럽게 만든 치즈를 사용하는 것과 돌로 만든 오븐으로 굽는 것 등에 영감을 받았고, 이 모든 것을 그의 음식점에 적용시켰다.

zione’s philosophy is simple: to create an environ-ment, in which the people of Daegu can enjoy healthy, delightful dishes, inspired by his travels, in a fami-ly-friendly atmosphere. 지오네의 철학은 단순하다. 손님들이 구 쉐프가 여행에서 영감을 받아 만든 건강하고 맛있는 음식을 즐길 수 있는 환경을 만드는 것이다. 가족들이 이용하기 좋은 공간에서 말이다.

Jatae’s dream started fourteen years ago with a restaurant called Little Italia, situated a stone’s throw away south from Debecmall and the stage, in the downtown Daegu area (대대 대대 대대대 45-1대대). both restaurants boast an open kitchen and a light modern décor, which is reminiscent of an Italian bistro. 구쉐프의 꿈은 4년 전 , ‘리틀 이탈리아’라는 레스토랑으로 시작되었다. 대구백화점과 그 앞의 광장을 기준으로 남쪽인데 매우 가까운 곳에 위치하고 있다. (주소 : 대구 중구 공평동 45-1번지). 리틀 이탈리아와 지오네 모두 오픈 키친이며, 이탈리안 비스트로를 연상시키는 가볍고 모던한 인테리어로 꾸며져 있다.

Little Italia is a cosy and personal restaurant, where the customers and Sanguk, the new chef and Jatae’s colleague, can communicate freely to find what the best dish is to tantalise your taste buds. Little Italia is a feature in the foreigner, acting, and musical communi-ties, with patrons from numerous walks of life enjoying their time there.

So the horrendously humid Daegu summer has finally arrived and I (like many of you) constantly find myself exhausted by this weather. The combination of this humidity and zero wind is really draining, but what can we do to help regain some of that energy? I’ll let you in on a little and not very well kept secret in korea…..eat Samgyetang.몹시도 불쾌하게 습한 대구의 여름이 드디어 다가왔다. 필자는(여러분들 대부분처럼) 계속해서 이 날씨에 무척이나 지쳤다. 이 습도에 바람 한 점 없는 날은 정말이지 영혼까지 빨려 나가는 것 같다. 하지만 다시 힘을 내보려니 무엇을 할 수 있을까? 조금 힌트를 주자면 한국에서는 그렇게 비밀도 아니다. 삼계탕이 답이다.

Samgyetang is a warm soup that contains a whole young chicken, garlic, rice, scallions and spices (in-cluding jujube and ginseng). It’s very popular in korea to eat this dish on the three hottest days of summer (sambok 삼복), these days are referred to as Chobok (초복), Jungbok (중복) and Malbok (말복). Some restaurants will also serve ginseng wine (insamju) as a free bonus.삼계탕은 어린 닭 한 마리, 마늘, 밥, 파, 대추, 인삼을 넣은 따뜻한 수프 종류이다. 한국에서는 여름 중 가장 덥다는 날(삼복)에 매우 인기가 있는 음식이다. 삼복은 초복, 중복, 말복이라고 한다. 몇몇 식당은 인삼주를 무료로 제공하기도 한다.

Recently I was feeling particularly exhausted by this oppressive heat and decided to join some friends and visit a specialty Samgyetang restaurant in the natural medicine area located downtown. The menu only fo-cused on Samgyetang and I chose the option that also included some mushrooms. 최근에 특히 이 숨 막힐 듯한 열기에 더 지친다고 느꼈기에 몇몇 친구들과 함께 한약재와 함께 요리하는 시내의 한 삼계탕 전문점에 갔다. 메뉴는 삼계탕 하나였고 필자는 버섯을 더 넣어 서 시켰다.

The first thing that grabs your attention with this soup is the chicken, even a small chicken looks pretty im-pressive stuffed into soup bowl. Another thing to be aware of is the bones, you are going to have to decon-struct your chicken to remove the bones in another plate. five minutes of amateurish chopstick meat/bone removal later and I’ve worked hard enough to finally start eating this dish. Despite the sheer amount of meat in the soup I found the dish to taste quite light and re-freshing. It wasn’t salty or heavy at all. The rice cooked inside the chicken added just enough carbs to help gently fill you up. 삼계탕에서 눈길을 사로 잡는 것은 바로 닭이다. 작은 닭이라고 해도 속이 가득 찬 채로 그릇에 담겨져 있어서 놀라웠다. 주의할 것은 닭뼈이다. 다른 그릇에다가 닭을 해체하고 뼈를 발라내야 한다. 서투른 젓가락질로 5분 동안 고기와 뼈를 분리해냈고 드디어 삼계탕을 먹을 수 있게 되었다. 닭고기의 양에도 불구하고 삼

계탕은 꽤 가뿐하고 힘을 북돋아주는 맛이었다. 짜거나 묵직한 맛이 아니었다. 닭 속에 들어 있는 밥은 배가 든든할 정도로 탄수화물을 보충해 주었다.

Surprisingly for a seemingly intimidating and loaded soup the flavors were subtle and blended well together leaving me refreshed and ready to get back out into the………delightful Daegu weather.놀랍게도 겉으로 보기에 살짝 겁을 주고 알차게 꽉 찬 이 음식의 맛은 미묘하게 조화를 이뤘고, 상쾌한 느낌과 함께 대구의 날씨를 즐거운 마음으로 받아들일 수 있게 해 주었다.

So, don’t be afraid to tackle this dish and embrace your inner animal to tackle this dish. you might just find the summer a smidge more tolerable! 그러니 삼계탕을 한 번 먹어 보는데 주저하지 말고 여러분 안의 숨겨진 짐승적인 본능을 받아들이도록 해라. 여름을 참는데 조금 더 도움이 될 것이다!

Here is a Samgyetang recipe you can try at home:아래에 집에서 삼계탕을 해 먹을 수 있는 조리법을 남겨둔다.

InGrEDIEnTS (20)Soup• 1 young chicken (2 to 3 pounds) May substitute for 2 cornish game hens• 1 teaspoon sesame oil• 4 red dates (Chinese or Korean jujubes)• ginseng rootlets• 1/2 inch fresh ginger• 6 cloves fresh garlic• salt• pepper• 10 cups water

Stuffing• 1/2 cup sweet rice• 8 ginko nuts, shelled• 2 fresh ginseng roots• 1/2 small white or yellow onion• 8 cloves fresh garlic• 8 red dates (Chinese or Korean jujubes)

Garnish• 2 scallions or green/spring onion• 2 eggs

• Remove and discard ginger, then add garlic, jujubes, and ginseng rootlets. Cook for an additional thirty minutes, adding water as needed to maintain 1/2 the original volume.• Add sesame oil five minutes before end of cooking.• Fine chop the scallions/green onions. Garnish each serving with egg strips and green onions. Serve hot, adding salt and pepper to taste.

만드는 법• 물이 깨끗해질 때까지 쌀을 씻고 30분 정도 불린다. 그리고 물을 버린다.• 닭의 안팎을 깨끗이 씻고(닭똥집과 간은 원하는 대로 사용하거나 버리면 된다. 안팎으로 소금으로 (문질러) 간을 하고, 15분 동안 그대로 둔다.• 인삼은 씻고 작은 뿌리를 다듬는다(작은 뿌리를 버리지 말고 탕을 끓일 때 사용해라). 그리고 먹기 좋은 크기로 자른다.• 양파를 슬라이스해서 썰고 반으로 자른다.• 생강을 씻고 얇게 저민다.• 모든 재료들은 닭 안에 넣는다.(만약 닭을 두 마리 사용한다면 준비한 재료를 똑같이 반으로 나눠 넣으면 된다.) 그리고 아래 구멍을 막는다. (실로 묶거나 꼬지를 꽂으면 된다.)• 흰자와 노란자를 분리하고 각자 작은 그릇에 담는다. 노른자를 가볍게 풀고 약간 노릇해질 때까지 굽고 뒤집은 다음에 다시 노릇해질 때까지 굽는다. 그리고 가느다랗게 지단을 썬다. 흰자도 같은 과정으로 요리한다.• 닭은 솥에 넣고 닭이 잠길 때까지 물을 붓는다. 센 불에 끓이고 필요하면 기름과 거품을 걷어낸다.• 중불로 낮추고, 생각 슬라이스를 넣는다. 뚜껑을 덮고 한 시간 정도 끓인다• 생강을 빼 내고 마늘, 대추, 인삼뿌리 등을 넣는다. 다시 30분 정도 끓이고 국물이 1/2이 되도록 물을 계속 보충해준다. • 요리가 끝나가기 5분 전에 참기름을 첨가한다.• 파/양파를 다진다. 계란 지단과 양파를 고명으로 그릇마다 올린다. 뜨거울 때 내고, 기호에 따라 소금과 후추를 넣어도 된다. 재료 (20)삼계탕• 영계 한 마리 (1~1.5kg) 미국의 영계 2마리 정도의 양• 참기름 1 티스푼• 대추 4개• 인삼• 생강 한 쪽• 마늘 여섯 쪽• 소금• 후추• 물 10컵 닭 안에 넣을 것• 찹쌀 1/2컵• 은행 8개• 인삼 2뿌리• 양파 1/2개• 마늘 8쪽• 대추 8개 고명• 파 혹은 양파 2개• 계란 2 개

INSTRUCTIONS• Put rice in a bowl and rinse until water runs clear. Cover with water and soak for 1/2 hour. Drain.• Clean poultry inside and out (use or discard gizzards and liver as you wish).Lightly salt (rub) both the inside and outside, and let stand for fifteen minutes.• Wash ginseng root then trim the rootlets (do not discard, save for soup). Cut into bite size pieces.• Slice onion, then cut slices in half.• Wash and thin slice the ginger.• Put all stuffing ingredients into the cavity (Divide stuffing evenly if using 2 game hens), and close flaps over the cavity (sew with thread or use a skewer).• Separate egg yolks from whites and place in separate small bowls. Lightly whip yolks together. Spread whipped yolks in frying pan and cook until lightly browned, flip and repeat with the other side. Remove from pan and cut into narrow strips. Repeat with whites.• Place poultry in a heavy pot and cover with water. bring to a full boil over high heat, skimming oil and foam as needed. • Reduce heat to medium, add ginger slices, cover and cook for one hour.

Looking for something different to do in Daegu? Do you want a unique experience? How about visiting the new local raccoon cafe called Racoona Matata? That’s right; korea has outdone itself once again. One of the many unique things about korea are the many themed cafes that you can enjoy. So, what can you expect once you get there?대구에서 뭔가 다른 것을 찾고 있는가? 독특한 경험을 해보고 싶은가? 그렇다면 ‘라쿠나 마타타’라는 라쿤 카페를 가보는 것을 추천한다. 그렇다. 한국을 그들만의 놀라운 일을 다시 해냈다. 한국에 대한 수많은 독특한 것들 중 하나는 테마 카페들이 많다는 것이다. 이 곳에 간다면 무엇을 할 수 있을까?

As you walk up the flight of stairs to the 2nd floor, you can’t help but notice the colorful animal paintings on the wall. Immediately after arriving, you can see where the raccoons are kept. As soon as you walk into the café, you are met by 2-3 curious but friendly dogs. The raccoons will be closely behind chasing them. If you look up around the café you will see the ceiling ramps that extend over the café. you have a wide range of drinks you can choose from. These drinks include Cof-fee, Tea, Ade, and Soda. However, if you are hungry, you can also order a light snack such as Tteokboki, but you might not be the only one who wants a quick bite if you know what I mean. 2층으로 올라가면 벽에 컬러풀한 동물 그림을 보게 될 것이다. 그리고 도착하자마자 바로 라쿤이 있는 곳을 볼 수 있다. 카페로 들어서면 두 세 마리의 호기심 가득한 개가 반겨준다. 라쿤은 개들 뒤에 바싹 붙어서 따라다니기도 한다. 카페 안을 둘러보면 카페 전체 천장 부분으로 길이 만들어져 있는 것을 볼 수 있다. 그리고 마실거리의 메뉴가 다양한데 커피, 차, 에이드, 소다 등이 있다. 그러나 허기가 진다면 떡볶이와 같은 간단한 간식도 있다. 하지만 카페에서 빨리 음식을 먹어버리려고 하는 사람은 혼자가 아닐 것이다. 이 말이 무슨 뜻인지 눈치채셨는가?

There are also a few rules you must follow while at the café. first, you should not pick the raccoons up by yourself. The raccoon I met was very playful but harmless. Second, you can pet them, but be gentle! Don’t grab their tails and remember, these are animals so if they feel threatened, they will defend themselves. Third, you can feed them! you can feed them by tossing the food in front of them, or if you are brave, you can let them take the food from your hand. However, once you look around the café, you will see that the employees will put a handful of food on the table for them to eat. be patient, it gets very entertaining when the dogs try to steal some! The final rule is to wash your hands after petting them. There is also hand sanitizer for you to use as well. So, how do you get to Racoona Matata?

카페에는 카페 내에서 반드시 지켜야 할 몇 가지 규칙이 있다. 먼저, 라쿤을 들어올리면 안 된다. 내가 만난 라쿤은 굉장히 활동적이지만 해를 끼치지 않는 동물이었다. 두 번째로, 라쿤을 쓰다듬어도 되지만 부드럽게 쓰다듬어야 한다. 꼬리를 잡으면 안 된다. 라쿤은 동물이기 때문에 위협을 받는다고 느낀다면 스스로를 보호하려 들 것이다. 세 번째로, 라쿤에게 먹이를 줄 수 있다! 라쿤 앞에 먹이를 던져주거나 용감한 사람들은 손에서 먹이를 가져가도록 할 수도 있다. 그런데 카페를 둘러보면 카페 직원들이 라쿤이 알아서 먹도록 테이블 위에 사료를 둔 것을 볼 수 있다. 인내심을 가지고 지켜보면 개들이 그 음식을 조금 훔쳐 먹으려고 할 때 꽤나 재미있는 장면을 볼 수 있을 것이다. 마지막 규칙은 라쿤을 만지고 손을 씻어야 한다는 것이다. 손소독제도 준비되어 있다. 그렇다면 이제 라쿠나 마타타에 가는 방법을 알려드리겠다.

Racoona Matata is near kyungpook National Universi-ty’s North Gate entrance (kNU). you can get to kNU by bus or taxi. Unfortunately, there are no direct subway lines that will get you to kNU. However, you can take bus 706 from banwaldong station across from Star-bucks. The trip should take you about 30min and will drop you off at kNU North Gate. Once there, you will cross the street. There is a baskins Robbins in front of you. you will go left and continue walking until you

come to Café Pascucci. Once there, turn right and continue walking down the street. The Racoona Mata-ta is on your left above the Chicken king. So, if you love the taste of slow roasted coffee and a unique experi-ence with furry creatures, then the Racoona Matata is for you. Just guard your coffee!

The atmosphere was electric with hundreds of people flocking to what is the biggest night market in korea. The Seomun night market is truly a night to experience everything from food to culture and performance. The seemingly endless line of food vendors creates a daunting task of trying to decide what to eat. After having done a full tour I decided to hit the longest lines with the promise of the best food at the end. 한국에서 가장 큰 야시장이 어떤 것인지 보기 위해 수백 명의 사람들이 몰려든 열광의 현장이었다. 서문시장 야시장은 음식에서부터 문화 및 공연까지 모든 것을 경험할 수 있는 그런 밤을 선사했다. 음식 가판대의 끝이 없어 보이는 줄은 무엇을 먹을지 결정하려는 일을 더 어렵게 만들었다. 무슨 음식이 있는 지 충분히 둘러보고 가장 긴 줄 뒤에 서기로 마음 먹었다. 결국 긴 줄은 가장 맛있는 음식이라는 의미이니 말이다.

Arming myself with a plate of Vietnamese spring rolls I took my place at the longest queue in the market. Insert classic cliché: it was worth the wait. The Indo-nesian stir-fry noodles were bursting with flavor and yet carefully balanced at the same time. Next I began to make slow but steady progress in the line for deep-fried ice cream. These foods are only a snippet of the huge variety on offer. And while being able to sample

such a wide assortment of foods and flavors is incredible, the best part of this experience is that you are able to watch the creative process of cooking unfold before you.베트남 스프링롤을 들고 시장에서 가장 긴 거리에 자리를 잡았다. 흔하디 흔한 한 마디를 하자면, 기다릴 가치가 있었다.인도네시아의 볶음 국수는 맛들이 어우러져 맛이 한데 폭발하는 듯 했지만 동시에 맛의 균형이 잘 잡혀 있었다. 다음으로는 속도는 느렸지만 계속 줄이 길어지는 아이스크림 튀김을 먹었다. 수십 가지 음식 중에 정말 유일한 음식이었다. 다양한 종류의 음식들을 시식할 수도 있고 다 맛있었지만, 야시장의 음식의 최고는 바로 앞에서 음식을 하는 과정을 지켜볼 수 있다는 것이다.

Having fully satisfied all my cravings I decided that it was time to head home but the live hip-hop show, which had just begun on the center stage, made me turn right back around. A crowd soon gathered and with it the atmosphere completely changed - it felt as though I had been transported

to a live concert. There were special guest perfor-mances including a korean-American who, unsurpris-ingly, was very well received. If big crowds of people dancing and jamming to hip-hop aren’t your thing then a quick walk to the end of the market will find you mu-sical buskers playing some more classical pop. 먹고 싶은 음식을 실컷 먹고 나서 집에 가려고 했지만 메인 무대에서 막 힙합쇼가 라이브로 펼쳐지고 있었고, 가려던 나를 붙잡아 세웠다. 사람들이 곧 몰려들었고 이에 분위기도 완전히 바뀌었다. 마치 라이브 콘서트로 누가 나를 옮겨놓은 듯한 기분이었다. 반응이 좋았던 한국계 미국인을 포함해서 특별 게스트의 공연도 있었다. 만약 많은 사람들이 춤을 추고 힙합음악에 어울리는 것을 좋아하지 않는다면 시장 끝 쪽으로 얼른 걸어가서 좀 더 차분한 팝을 연주하는 길거리 공연을 즐길 수도 있다.

If the hustle and bustle of the night market becomes too much or you are just looking to explore further you can simply step into the traditional Seomun market. Here you will find all the ajumma’s and ajusshi’s who are escaping the rush of the night market. you can of course indulge in more traditional korean food options and perhaps do some late night shopping – this would be a good time to stock up on korea’s famously cute, character socks.

시끌벅적한 야시장이 벅차다면 혹은 그냥 좀 더 돌아다녀보고 싶다면 서문시장 안으로 들어서면 된다. 여기서 야시장의 야단법석통에서 도망쳐 온 아줌마, 아저씨들을 볼 수 있다. 물론 서문시장의 좀 더 전통적인 음식들로 배를 채울 수도 있고 늦은 밤에 쇼핑을 즐길 수도 있다. 유명한 한국의 귀여운 캐릭터 양말을 사놓을 수 있는 때이기도 할 것이다.

Perhaps the best part of this market, especially if you’re a traveller on a budget, is that entrance to the market is free. This leaves all your spending money for the numerous food stalls or to donate to a talented busker. There is something on offer for everyone which makes it the ideal spot to enjoy with a group of friends. So if you are trying to de-cide what to do on a hot summer night in Daegu, head to the Seomun night market and cool down with some fresh sugar cane juice, shaved ice or some deep fried ice cream. 야시장에서 가장 좋은 부분은, 특히 당신이 적은 예산으로 여행 중이라면, 바로 야시장이 무료라는 것이다. 그래서 다양한 음식에 돈을 투자하고 재능있는 길거리 뮤지션에게 기부를 할 수도 있게 해 준다. 모든 사람들이 각자 즐길 수 있는 것들이 있어 친구들과 여럿이 함께 즐길 수 있는 이상적인 장소이기도 하다. 그래서 만약 대구의 무더운 여름 밤에 무엇을 할 지 고민이라면 서문시장 야시장으로 가서 신선한 사탕수수 주스와 빙수 혹은 아이스크림 튀김으로 더위를 식혀보자.

onE oF DaEGU’S BEST FESTIValS rETUrnS ThIS JUlY

Almost a year ago, I wrote a review of Daegu’s Chimac festival and I’m very excited to see what they have in store for us this year. I’m a huge fan of korean fried chicken and am a big supporter (haha) of the local craft beer scene - this festival is one of my favorites and I’m already planning to go at least twice!약 1년 전, 필자는 대구의 치맥축제에 대한 리뷰를 썼다. 그리고 올해, 이 축제에서 관람객을 위해 준비한 다양한 것을 다시 즐길 수 있다는 생각에 매우 들떠 있다. 필자는 한국 후라이드 치킨을 정말 사랑하며 지역의 수제 맥주 팬이기도 하다! 이 축제는 필자가 가장 좋아하는 축제 중 하나이며 벌써 적어도 2번은 가보겠다고 계획을 세웠다. This year’s festival will be held from July 27th-31st and will be primarily located at the Duryu Park baseball Stadium, but attractions are located throughout the park and city (admission is free).

올해의 치맥축제는 7월 27일부터 31일까지 열리며 두류공원 야구장에서 메인 무대가 열린다. 하지만 축제는 대구 시내의 여러 곳과 공원 전 구역에 걸쳐서 열린다.(입장료 무료) The word Chimac comes from combining ‘chicken’ and ‘macju’ (the korean word for beer). There will be over 100 chicken and beer vendors this year, including sev-eral craft beer stalls. Last year, I was able to try craft beers from kabrew, Trevier, Craftworks, Hand and Malt brewing, Platinum, Weizenhaus and Whasoo. 치맥이라는 말은 치킨과 맥주가 합쳐져서 만들어졌다. 이번에는 100개가 넘는 치킨과 맥주 가판대가 설치될 것이며 여기에는 수제 맥주 판매대도 포함되어 있다. 작년에는 카브루, 트레비어, 크래프트 웍스, 핸드 앤 몰트 브루잉, 플래티넘, 바이젠 하우스, 화수 등에서 만든 수제 맥주를 맛볼 수 있었다.

Just like last year, there will be numerous performanc-es at various locations in Duryu park, ranging from tra-ditional music, to k-Pop, Jazz, and the ever-so-popular EDM party: 전통 음악에서부터 K팝, 재즈, 언제나 인기있는 EDM 파티까지, 작년처럼 두류 공원 곳곳에서 다양한 공연도 펼쳐질 것이다.

The Premium zone will be located at Duryu baseball Stadium again, and it will be the main stage for the aforementioned EDM and k-Pop parties - this area is also where I found the best chicken last year. The 2.28 Parking lot will be the primary location for jazz and pop, while the Outdoor Concert Hall will host the family zone, where visitors can experience wind instrument and folk music performances. festival organizers are even opening a ‘Cool Summer Cool Party’ at Duryu swimming pool, as part of this year’s festivities.두류 야구장에는 프리미엄 존이 다시 설치될 예정인데 앞서 언급했던 EDM과 K 팝 파티의 메인 무대가 될 것이다. 이 곳은 필자가 작년에 최고의 치킨을 찾았던 구역이기도 하다. 228 주차장은 주로 재즈와 팝의 무대가 펼져칠 것이고, 야외음악당에는 패밀리존이 설치되어 방문객들이 관현악과 포크 음악을 즐길 수 있게 될 것이다. 올해 축제의 일부로써 두류수영장에서는 ‘쿨 섬머 쿨 파티’ 도 열린다.

I still recall roughly around this time last year, sitting in my apartment in korea and pondering which tropical destination I should venture to for my summer vaca-tion. One of the best things about living in korea is the ease of access to Southeast and East Asian countries due to their geographical proximities. I wanted to pick a special country that would be memorable for a life-time, and that turned out to be bali Island in Indonesia. It was a place I could only dream about years before, a place so far from my home country in Canada, but much more accessible by a 6-10 hour flight from Seoul, depending on the amount of layovers in between. 작년 이 맘 때 쯤을 떠올려 본다. 집에서 여름휴가를 가기 위해 열대지방의 어느 곳에서 모험을 해 볼 지 곰곰이 생각하고 있었다. 한국에서 사는 것의 장점 중 하나는 지리학적인 이유로 동남아시아와 동아시아의 나라에 가기가 쉽다는 것이다. 평생 동안 잊혀지지 않을 특별한 나라를 고르고 싶었기에 인도네시아의 발리섬을 선택하게 되었다. 이 곳은 고향인 캐나다에서는 무척이나 멀어서 몇 년 전에는 꿈만 꿀 수 있었던 곳이었다. 하지만 서울에서 환승 시간에 따라 6~10시간만 날아가면 갈 수 있는 훨씬 가까운 곳이다.

bali is special, not only because it is a stereotypical “fun in the sun” destination as advertised on glossy magazines of gorgeous beaches stretching out for miles, but for its rich culture in the performances, art-works, and can I just say babi Guling (roasted pork) is one of the best cuisines I have ever tasted? On our first day in bali, me and 2 other friends explored the cultural capital “Ubud”, where Julia Robert’s “Eat Pray Love” was filmed. It was everything I had imagined and more. Seeing the lush rice terraces and taking a tour of coffee plantations made me feel like I was on an exotic film set. Our private driver, whom only charged 500,000 rupiah (roughly 45,000 won) for 12 hours a day, showed us various scenic spots, with our last stop ending at the “Tanah Lot Temple” to watch the sunset. We happened to catch the flight of bats at dusk, flying over the crashing waves, which set the mood for one of the most ethereal moments I have ever experienced. Tanah Lot Temple is built on a giant rock, literally surrounded by ocean waves all around. Tourists can wander around night stalls for souvenirs and food, or take a walk to the temple at their leisure.

발리는 특별하다. 반질거리는 잡지 지면에 광고된 수십km 넘게 펼쳐진 해변처럼 전형적인 “태양 아래의 휴식” 의 대명사라는 것 이 외에도 몸으로 즐길 거리와 예술이 넘쳐나고, 바비 걸링을(구운 돼지고기)를 평생 먹어본 음식 중 최고라고 해도 될는지 모르겠다. 발리에서 보낸 첫 날, 필자와 두 명의 친구들은 예술의 수도하고 하는 “우붓”을 돌아보았는데, 이 곳은 줄리아 로버츠가 “먹고, 기도하고, 사랑하라”를 촬영한 곳이다. 내가 상상했던 것과 그 이상의 것들이 있는 곳이었다. 푸르게 펼쳐진 테라스 논을 보고, 커피 농장 투어를 하자 마치 어느 이국적인 영화 세트장에 들어와 있는 듯 한 기분이었다. 하루에 12시간 동안 50만 루피아(대략 4만5천원 정도)를 주고 고용한 개인 운전사는 다양한 그림과 같은 풍경을 보여 주었고, 마지막으로는 일몰을 보기 위해 “따나 롯 사원”으로 갔다. 땅거미가 질 무렵에 박쥐들이 날아가는 것을 볼 수 있었는데 박쥐들은 부서지는 파도 위를 날아갔다. 그리고 그 때의 파도는 그 동안 겪어봤던 최고의 순간들과 같은 분위기를 연출해 주었다. 따나롯 사원은 거대한 바위 위에 지어져 있고, 말 그대로 바다의 파도에 둘러싸여 있다. 여행자들은 기념품과 음식을 파는 야시장을 둘러볼 수 있고, 아니면 사원을 걸어 다니며 시간을 보낼 수도 있다.

Another extremely memorable location was the “Ulu-watu Temple”, easily accessible by car, but remember to come early for the sunset as the road is plugged with traffic of other tourists trying to catch this sunset! I have seen many sunsets over the course of my life, but none has been as spectacular as the Uluwatu sunset. That clique phrase “it took my breath way”, described me taking a few silent moments by myself to take in the whole view. The roaring waves crashing against a giant cliff, on top of the endless horizon of the Indian Ocean seeming to stretch to the end of earth, was one of the most beautiful things I have ever seen. Located inside the temple is also the famous bali “kecak Dance” performance, which we paid 150,000 rupiah (roughly 10,000 won) to see. The show is held everyday at sunset time, which is 6:00pm. It was an intriguing and spectacular show of traditional balinese dancing, chants, and fire performances. At end the day, me and my friends enjoyed a savory seafood dinner right on Jimbaran beach. Tourists get to choose the seafood of their choice, and have it freshly grilled for them while they sit down and enjoy live music by the beach. It was the best dining experience of my life!

평생 잊지 못할 또 다른 장소는 “ 울루와투 사원”이었다. 차로 쉽게 갈 수 있지만 일몰을 보러 오는 다른 여행객들의 차 때문에 도로가 엄청 막히니 일몰을 보려면 일찍 가야 한다. 이제껏 수 많은 일몰을 보았지만 울루와투의 일몰만한 것은 없었다. “숨이 멎는 듯 했다” 라는 식상한 표현이 그 몇 분 간의 조용한 침묵의 순간 동안 전체 풍경을 바라보는 필자를 표현하는 가장 알맞은 말이었다. 지구의 끝까지 펼쳐져 있는 듯한 인도양의 끝없는 수평선 위에서. 으르렁거리는 파도가 거대한 절벽에 부딪히는 장면은 이 세상의 가장 아름다운 것 중 하나였다. 사원 내부에는 발리의 유명한 “케칵춤”을 볼 수 있었는데, 15만 루피아(약 1만원)을 내고 보았다. 이 공연은 매일 6시쯤, 즉 일몰 시각 즈음에 펼쳐진다. 발리의 전통적인 춤, 챈트,불 퍼포먼스가 어우러진 매우 흥미롭고 스펙터클한 공연이었다. 하루가 끝나갈 무렵 친구와 함께 짐바란 해변에서 해산물을 저녁으로 먹었다. 해산물 종류를 선택하고바다 바로 옆에 앉아서 라이브 음악을 즐기는 동안 신선하게 구워져 나오는 음식이었다. 내 인생 최고의 저녁식사였다.

Towards the end of our bali trip, we hit up the infamous “Potato Head beach Club” due to excellent reviews, which is located in Seminyak beach. It is easily walkable from the beach side as it sits right above the waters, or from the opposite end from the Seminyak shopping street. We ended up spending half a day in there, lounging in the sun and enjoying laughs and drinks in the infinity pool, which was complete with a built-in bar where tourists can purchase drinks while in the water. The infinity pool, built a few feet from the shoreline of Seminyak beach gave me the illusion that I was floating above the waters. I really recommend spending some time checking out bali’s various beach clubs- a few others are “ku De Ta” and “W bar”. Re-member to go early in the day to reserve a good spot!

발리여행의 끝이 다가오자 우리는 핫하다는 후기로 소문난 세미냑 해변의 “포테이토 헤드 비치 클럽”에 갔다. 물 위에 있는 곳이라 해변쪽에서나 세미냑 쇼핑거리의 반대편 끝에서 쉽게 걸어갈만 했다. 그 곳에서 하루 반나절을 보냈는데 태양 아래서 느긋히 있기도 하고 인피니티풀(역주 : 시각적인 효과로 수영장이 바다나 호수에 연결된 것처럼 보이게끔 하여 끝없이 펼쳐진 듯한 착각을 일으킴)에서 웃고 마시며 시간을 보냈다. 인피니티풀에는 물속에서 관광객들이 술을 마실 수 있도록 빌트인 바가 있었다. 그리고 셍미냑 해변의 해안가에서 조금 떨어져서 만들어져 있고 마치 물위에 떠있는 듯한 착각을 하게 했다. 발리에 가서 다양한 비치 클럽에 한 번쯤 가보길 권한다. 다른 유명한 클럽 “쿠 데 타”와 “W 바” 등이 있다. 일찍 가서 좋은 자리를 맡아라.

Overall, my experience in bali was truly unforgetta-ble. The amount of views I took in, spectacular sun-sets I enjoyed, and wild monkeys I had the chance to photograph up close in the “Monkey forest”, gave me the perfect mix of the summer vacation vibes was looking for. There are so much more things to do beyond checking out bali’s beaches, and I promise you that even though bali is a bit far compared to other Southeast Asian tourist spots, the memories you take back with you will be inked in your mind for years to come! I strongly recom-mend considering bali as a vacation while in South korea, as flying with Air Asia from Seoul or busan is relatively cheap if booked early, as they are a low budget airline. There is something amazing to be enjoyed in bali Island for everyone!

발리 여행은 진정 잊지 못할 경험이 되었다.수 많은 풍경, 스펙터클했던 일몰, “원숭이숲”에서 매우 가까운 거리에서 사진을 찍었던 야생원숭이 등등. 그 동안 원했던 여름 휴가에 대한 모든 것을 즐기게 해 주었다. 발리에는 해변 외에도 볼 게 많으며 다른 동남아시아 관광지보다 조금 더 멀지만 앞으로 수년간 남아있을 추억을 얻게 될 것이라고 장담한다. 한국에서 지내는 동안에 발리에 꼭 가라고 추천하고 싶은 서울이나 부산에서 출발하는 에어 아시아는 저가 항공이라 조기 예약하면 무척이나 저렴하다. 발리에는 개개인의 취향에 따라 즐길 수 있는 멋진 것들이 있다!

Last month, I shared an article about my trip to kyoto over the Chuseok holidays. It was a lovely few days in the city, but we had a couple more things we wanted to accomplish before leaving Japan. We left kyoto in the early afternoon, and it didn’t take long before we found ourselves in the middle of Osaka. With a little help from a local citizen, we located our hotel, dropped our bags off at the front desk, and set off to tick a few more things off our to-do list.지난 달에 필자는 추석 동안 다녀온 교토 여행기를 여러분과 나눠보았다. 교토에서 몇 일간 행복한 시간을 보냈지만 일본을 떠나기 전에 몇 가지 더 해보고 싶었던 것이 있었다. 이른 오후에 교토를 떠났는데 오사카 한 중심에 도착하기까지는 오랜 시간이 걸리지 않았다. 현지 사람들의 도움을 조금 받아서 호텔을 찾았고, 프론트 데스크에 짐을 맡기고 꼭 해야 할 리스트에 있는 것을 해보기 위해 호텔을 나섰다.

first and foremost - food! We immediately grabbed some takoyaki from a local vendor and headed off to find the glorious kuromon Ichiba Market. We got turned around a couple times before Google Maps found us, but we eventually arrived at the market in time for a late-lunch. While there, we sampled some kobe beef, medium fatty tuna, and tempura fish. The food was absolutely fantastic! The market is an excel-lent place to sample some of Japan’s popular foods without having to order (and pay for) full dishes.다른 그 무엇보다도 바로 음식! 바로 길거리 포장마차에 있는 타코야끼부터 사서 쿠로몬 시장을 찾으러 나섰다.구글맵을 이용하기 이전에 이리저리 돌았지만 결국에 늦은 점심시간대쯤 시장에 도착했다. 시장에 있는 동안 고베 쇠고기, 참치 중뱃살, 생선 튀김 등을 시식했다. 음식은 전부 매우 맛있었다! 구로바 시장은 일본에서 인기있는 음식을 정식으로 돈 주고 많이 사먹지 않아도 다양하게 맛볼 수있는 최고의 장소이다!

Once we had our fill, we headed off to Osaka Castle. We chose to take a taxi to the Castle as we were all starting to drag our feet. It was gorgeous - definitely a must-see while you are in Osaka! We didn’t pay to go in, but got a few snacks (some more takoyaki), relaxed in the sun, and enjoyed the scenery.배가 좀 채워지자 오사카성으로 발걸음을 했다. 발이 점점 무거워져서 성까지 택시를 타고 가기로 했다. 성을 매우 멋진 곳이었다. 오사카에 간다면 반드시 봐야하는 곳이었다! 내부를 보러 들어가지는 않고 대신에 간식을 좀 더 사고(타코야끼를 좀 더 사고), 햇빛 아래 느긋하게 있으며 풍경을 즐겼다.

After visiting the castle the castle, we checked in to the hotel and headed to Dotonbori to visit Don Quijote before dinner. We met up with some friends and went on the hunt for Okonomiyaki. It was my first time eating it and I was really happy with what I ordered (beef and acorn jelly).

성 다음에 또 성을 보고 나서 호텔에 체크인을 하고, 저녁을 먹기 전에 돈키호테에 가기 위해 도톤보리로 향했다. 몇 명의 친구들과 만나서 오코노미야끼를 먹으러 갔다. 처음으로 먹었는데 내가 주문한 음식에(쇠고기와 도토리묵이 들어간 오코노미야끼) 정말 만족했다.

The next morning, we headed to Osaka Airport bright and early and did some shopping before catching our flight home. Looking back on our trip, I’d definitely go back to Japan on a long weekend, but do only one city; two was just way too much. Many of my friends said that I would fall in love with Japan and they were right--I can’t wait to go back for Chuseok this year!

그 다음 날 아침 일찍 오사카 공항으로 가서 비행기를 타기 전에 쇼핑을 좀 했다. 그 여행을 되돌아보자면 좀 더 긴 휴가를 얻었을 때 반드시 일본으로 다시 여행을 갈 것이지만 한 번에 한 도시만 갈 것이다. 두 개의 도시는 정말 벅찼다. 많은 친구들이 내가 일본을 매우 좋아하게 될 것이라고 했는데 친구들 말이 맞았다. 올해 추석에 다시 가려니 정말 기다릴 수가 없다.

Here in korea a pumpkin is called a hobak (pronounced ho-bawk). They are different from their western cousins in that the outside is green and the texture when cooked is a bit more pasty and slightly drier, as opposed to stringy and juicy. They are kind of like sugar pumpkins back home but… less sweet. It doesn’t sound like I’m selling you on them much but they really are delicious and so versatile! koreans typically use them in savoury dishes but they work well both ways and can easily replace (orange?) pumpkin in recipes. best of all, hobak come in all different sizes which means if you’re like me, and have a tiny fridge and freezer, it is super convenient to buy smaller pumpkins that you can cook and freeze easily. yippee!

한국의 호박은 “호박”이라고 발음한다. 서양의 호박과는 좀 다른데 밖은 초록색이고 요리했을 때의 질갑은 좀 더 으깬 듯한 느낌에 더 건조한 편이다. 섬유질이 많고 즙이 좀 있는 것과는 반대로 말이다. 우리나라에서 흔히 보던 슈가 펌프킨과 좀 비슷하지만 덜 달다. 이 한국 호박을 그다지 추천하지 않는 듯한 느낌이 들 수도 있다. 하지만 한국 호박은 정말 맛있고 다양한 요리에 사용할 수 있다. 한국인들은 보통 짭짤한 음식에 호박을 사용하는데 어떤 식의 요리에도 사용하고 레시피에서 (주황색?) 서양 호박을 대체할 수 있다. 가장 좋은 점은 여러분이 원하는 대로 다양한 크기의 호박이 있다는 것이다. 즉 호박을 좋아하고 작은 냉장고를 가지고 있다면 더 작은 크기의 호박을 사서 쉽게 얼릴 수도 있는 것이다.

Here is my method for preparing them to use in your fa-vourite recipes ̂ ^

1. Wash your pumpkin and start by making 5 or 6 cuts starting about an inch or so from the stem outward. Make sure you’re cutting downward through the rind! This will make 5 or 6 wedges

2. Now, cut around the stem at a slant and remove it.

3. Now simply break apart your pumpkin, scoop out the seeds and cut into 2 inch pieces.

4. Coat roasting pan with a few teaspoons of grapeseed oil (or any mild flavoured oil) and roast your pumpkin! If you are using a toaster oven (like me and many others in korea) set your oven to the highest temperature.

5. Roast until the pumpkin is soft and you can pierce each piece through easily with a fork. for me this takes about 20 minutes.

6. Let pumpkin cool on the roasting pan and scoop out into a blender or food processor (discarding the green rind.) Process for a couple of minutes until smooth. I prefer my pumpkin to still taste like fresh pumpkin and so I don’t like processing it to the point that it’s too smooth and similar to the canned product. you can of course mash with a fork or potato masher but for the sake of pure laziness I prefer to use my processor.

여기 레시피에서 사용할 수 있도록 호박을 준비하는 나만의 비법을 소개한다.

1. 호박을 씻고 5~6차례 약 3 cm 정도로 줄기에서 바깥쪽으로 호박에 칼집을 넣어준다. 껍질을 완전히 통과해서 아래로 잘라야 한다. 이 것으로 5~6개의 웨지 모양의 호박 조각이 나온다.2. 이제 줄기 주위로 칼집을 넣어 잘라낸다.3. 호박을 웨지 조각으로 분리하고 씨를 발라낸 후 웨지 조각을 5cm 정도로 잘라낸다.4. 후라이팬에 포도씨유(약한 풍미를 가진 어떤 다른 기름도 괜찮다.)를 조금 두르고 호박을 굽는다. (필자나 한국의 다른 많은 외국인들처럼)토스트 오븐을 사용해도 된다. 가장 높은 온도에 맞춰서 사용해라.5. 호박이 말랑해질 때까지 굽고 포크로 찍었을 때 부드럽게 들어갈 정도로 되어야 한다. 이 정도로 될 때까지 필요했던 시간은 20분이었다.6. 후라이팬에서 호박을 식히고 블렌더나 분쇄기에 넣는다. (초록색 껍질 부분은 미리 제거한다.) 호박이 모두 갈릴 때까지 기계를 작동시키다. 개인적으로는 여전히 신선한 맛이 나도록 하는 게 좋아서 완전히 갈지는 않고 통조림 안의 호박처럼 갈았다. 포크로 뭉개도 되지만 필자는 너무 게으르기에 그냥 분쇄기를 이용했다.

** The fresh pumpkin will last a few days in the fridge but I prefer to freeze it so I have the freedom to use it at any time. I measure 1/2 cup into plastic bags so I know how much is there when I defrost it.** 막 갈은 호박은 냉장고에 몇 일 놔둬도 괜찮지만 얼리는 것을 추천하다. 그러면 언제든지 원할 때에 사용할 수 있다. 필자는 1/2컵으로 계량하여 플라스틱 백에 넣어서 필요할 때 알맞은 양을 녹여서 사용했다.

Now that we have fresh pureed pumpkin let’s use it! Pumpkin lattes are almost impossible to find in korea. Starbucks here doesn’t include them in their seasonal menu but the home-made version is far more delicious anyway so I encourage you to make your own!이제 신선한 호박 퓨레가 만들어졌으니 사용해 보자. 호박 라떼는 한국에서 찾아보기가 거의 불가능하다. 한국 스타벅스의 시즌 메뉴에도 없지만 집에서 만드는 것이 어쨌든 훨씬 더 맛있다. 그래서 직접 만들어 보기를 권한다.

This latte is topped with homemade coconut whipped cream, which you should assemble before you make your latte. There are many recipes out there for this, but I’ll share with you what I like to do! first you need to chill your can of coconut milk overnight in the fridge. Of the brands I’ve tried here, this one is my favourite. (photo 7)이 라떼는 직접 만든 코코넛 휘핑 크림이 올려져 있다. 라떼를 만들기 전에 만들어 두어야 한다. 코코넛 휘핑 크림을 만드는 다양한 레시피가 있는데 나만의 비법을 소개하고자 한다. 먼저 코코넛 밀크 캔을 하룻밤 동안 냉장고에 넣고 차갑게 한다. 여기서 사용했던 브랜드는 필자가 가장 선호하는 브랜드 중 하나이다. (그림 7)

Once chilled, scoop out the hard cream into a large bowl. Add the powdered sugar and vanilla. The vanilla is essential to change the flavour of the cream so don’t exclude it! It’s best to use beaters to mix the cream but a whisk works fine too. Just mix until there are no clumps. you won’t get stiff peaks but coconut milk behaves differently from regular cream anyway and we don’t need peak-y cream for our lattes! (photo 8)코코넛 밀크가 차가워 지면 큰 그릇에 단단한 크림을 퍼낸다. 슈가 파우더와 바닐라를 넣는다. 바닐라는 크림의 맛을 결정하는 가장 중요한 요소이니 반드시 넣어야 한다! 크림을 섞는데 젓개를 사용하는 것이 가장 좋지만 거품기도 괜찮다. 덩어리가 지지 않을 때까지 섞는다. 거품에 뿔이 서지는 않을 것이지만 코코넛 밀크는 보통의 크림과는 다르다. 라떼에 뿔이 서는 단단한 크림이 필요하지는 않다. Set aside cream in the fridge. It will thicken more as it cools.냉장고에 크림을 둔다. 더 차가워질수록 크림은 더 단단해 진다.

Now on to the lattes! Heat your almond milk over med-low heat, whisking continuously. To get a foam going, tilt your pot and whisk just above your burner. I find the most effective way to get a good foam is to whisk up and down. Once warm, add the cinnamon and nutmeg. Continue to whisk for 1-2 minutes and once a decent foam has started, add your pumpkin and maple syrup. Now whisk like crazy and foam it up! Increase the heat slightly to get more foam. Continue to whisk for another 1-2 minutes until the mixture has foamed up to your liking and starts to gently boil.

이제 라떼를 만들 차례이다. 아몬드 우유를 중불에 데우고 계속 저어준다. 거품을 계속 유지하기 위해서는 냄비를 기울여서 불 바로 위에서 저어준다. 거품을 만들기 위해 가장 효과적인 방법은 위 아래로 저어주는 것이다. 우유가 데워지면 시나몬과 넛맥을 넣는다. 계속해서 1-2분간 저어주면 제대로 된 거품이 생기기 시작한다. 호박 퓨레와 메이플 시럽을 넣는다. 이제 정말 미친 듯이 우유를 저으면 거품이 마구 생긴다. 더 많은 거품을 만들기 위해 불을 살짝 높이자. 라떼에 원하는 만큼 거품이 생길 때까지 또 1-2분 정도 더 젓고 나면 불을 낮춰 끓인다.

Pour your coffee or espresso in a mug and add vanilla. Hold-ing back the foam at first with a spoon, pour the latte over the coffee. Now scoop on the foam and add a few dollops of coconut whipped cream and a pinch of nutmeg. The end result is a creamy and satisfying latte that is delicious without the coffee too (ha) so you can make it both ways to drink any time of day or night. Enjoy! Think of this artsy street as the “Insa-dong” of Daegu. As you walk along, you’ll see art galleries, studios and antique shops. you can stop in shops to buy art or just to browse through the incredible work of local artists. While you can enjoy exhibitions throughout the year, this street is particularly busy every October with the bongsan Art festival. Another highlight of this area is the bongsan Culture and Art Hall where you can catch some performances and small-scale exhibitions.

The late kim kwang-suk, a famous korean folk sing-er-songwriter who was popular in the 1980s, is still admired by many korean music lovers today. you can definitely feel the love for the late artist as you stroll down the 350 meter long street that was designed to remember and honor him. The walls of this street are plastered with murals of kim and you can hear his mu-sic faintly playing as you stroll along. On the weekends, you can visit a flea market here and there are also sev-eral famous restaurants in the area such as Daehan News, Two bbul, Pic&iq (picnic), Percent, barazi, Ga-jok and Laura’s Mill.

Parking buildingThe eight story parking ramp is located between Dong-san shopping district and sector two. There are two entrances and the ramp can hold 660 cars. It costs 500 won to park for 30 min-utes with a 250 won charge for each additional ten minutes of parking. you can pay at an automated machine on the first floor. Credit cards and transportation cards are accepted.

Parking lotThere are two sections that hold up to 350 cars. It can hold 60 cars in the Dongsan shopping district and 50 cars in the base-ment of each of the five additional sectors.

ATMyou can find them at various places around Seomun market. There is also one located on the first floor of the parking ramp.

Information CenterIt is located right next to the entrance of the parking ramp. you will see a sign that says, “Information Center”. Inside, you can collect all the information you need about tourist destinations in Daegu as well as more information about Seomun Market.

1. Most stores close around six or seven p.m. (It varies by store and some may be open later)2. bring cash! These vendors do not accept credit cards. So hit the ATM before you shop here.3. Compare prices at different shops. There are many vendors that sell similar products here so shop around and consider your options before buying.4. Restrooms are located at the top of each sector or between floors.

Established in the Goryeo Dynasty, Seomun market was one of the three major markets during the Joseon dynasty. After the korean War, a large linen and cotton wholesale and retail market was created. The textile industry is the traditional industry of Daegu. Seomun market is a lively place for locals and tourists alike that truly showcases an original part of Daegu culture. you can find an assortment of food as well as affordable, well-made market goods.

Dongsan Shopping Districtyou can find dishes and flatware in the basement. On the first floor, you can find baby goods, children’s clothing and many more household items. On the second floor and above, you’ll find cute clothing for a reasonable price.

Distrcit OneThe first floor sells linen and silk fabrics, and the second floor sells korean made clothing and luxury bedding. This spot is vis-ited by koreans of all ages taking a look at the colorful, luxurious fabrics.

District TwoThis building burned down in 2005 but was recentlyrebuilt and revived with a brand new facility. In the basement, you can grab a bite to eat. They sell things like strawberry cakes, pork belly, Jajangmyeon, Mon-na-ni Tteok-bokki and grilled bul-gogi. The first floor is retail and clothing and the third and fourth floors sell fabric. This spot is always popular for Daegu locals, but receives an influx of foreign shoppers in October buying fab-ric for Halloween costumes.

District fourDistrict four is a general store. On the first floor, you will find a random mix of tuxedos, garments, crafts and traditional korean souvenirs. you can buy silk fabrics and bedding on the second floor.

District fiveIt’s located at the outer corner of Seomun market but is always packed with people. On the first floor, you’ll see shoppers buying dishes either for commercial use or for their own homes. The second floor sells clothing.

AJin Shopping DistrictThis place is ideal for artists and designers, “Home-fashion” crafts and it sells hand-made clothing. Along the streets of this district, you can find various tools and materials such as buttons, feathers, ribbons, zippers and laces. “Mending Street” is lined up and down with sewing machines and seamstresses and tailors who have been sewing for over ten years – another special feature of the Jin Shopping District.

Myungpoom PlazaMyungpoom Plaza is a fashion center located in Seomun mar-ket. The first floor sells jewelry, accessories, imported goods, shoes, dishes and baby goods. The second and third floors sell underwear and women’s clothing. This is a one-stop shop plaza with a little bit of everything

Dried Sea food DistrictThe dried sea food district of Seomun Market sells dried fruits, nuts and (of course) an uncountable amount of dried sea food. In fact, 60 to 70 percent of all dried foods sold in Daegu are sold here. An added bonus is that you can buy the goods for about 20 or 30 percent cheaper here than you can at the market. To get here, walk past the arched structure and you will see it on your left.
