This June Dairy Month, Wisconsin Milk Marketing Board (WMMB) is commem-orating the holiday with the Dairy Days of Summer campaign. At the heart of the campaign is a jam-packed, interactive calendar

WMMB. “We want to make it easy for everyone to fi nd events to enjoy. From visit-ing a local cheese tasting to heading out to the farm for breakfast – we have activities that appeal to any age.”

Wisconsinites can look forward to special Dairy Days such as Cheese Curd Day and Beer and Cheese Day, as well as a listing of dairy-themed festivals such as Sparta Butter Fest and Madison’s Cows on the Concourse. Wisconsin retailers and restaurants are also participating, o� ering opportunities for sampling, along with special menus and deals, at locations through-out the state. can also search by date, loca-tion and event type.

The site also features the popular dairy farm breakfast locator map which is search-able by date or location. More than 35 farms across Wisconsin will welcome the public to their breakfast tables during the month of June.

Pork Tenderloin with Blue Cheese Mushroom SauceIngredients❏ 1 1/2 pounds pork tenderloin❏ Sea salt and cracked pepper to taste❏ 2 teaspoons fresh rosemary leaves, chopped❏ 4 tablespoons butter, divided❏ 1/4 cup shallots, minced❏ 2 cups mushrooms*, sliced❏ 1 1/4 cups Wisconsin Blue Cheese, crumbled, divided❏ Pinch cayenne pepper

DirectionsGenerously season tenderloin with salt, pepper and rosemary. Grill the tenderloin over direct medium heat**, with the grill lid closed, about 15 to 20 minutes, turning every 5 minutes, until meat reaches an internal temperature of 150°F-155°F.Meanwhile, melt 2 tablespoons butter in skillet over medium heat. Add shallots and mushrooms and sauté until tender, adding additional butter as needed. Add 1 cup Blue Cheese and remaining butter; stir until smooth and slightly thickened. Add cayenne pepper, to taste.Remove tenderloin from grill and let rest 5 minutes, then slice. Pour sauce over slices and sprinkle with remaining Blue Cheese.

*Any variety of mushrooms or a mixture can be used (oyster, shitake, baby portabella, crimini, etc.).**To roast the tenderloin, preheat oven to 425°F. Place tenderloin on roasting pan in oven and roast 12 to 15 minutes, until meat reaches an internal temperature of 150°F-155°F. Remove from oven and let rest 5 minutes before slicing.

Wisconsin’s Favorite Mac & CheeseIngredients❏ 1/2 cup onions, minced❏ 3 tablespoons butter, divided❏ 2 teaspoons prepared mustard❏ 1 16-ounce container Wisconsin Cheddar Cold Pack Cheese❏ 1/2 cup milk❏ 1/8 teaspoon pepper❏ 1 8-ounce package elbow macaroni, cooked and drained❏ 1 bunch broccoli, cut into fl orets, cooked in boiling water for 3 minutes, drained❏ 1/3 cup crushed saltine crackers

DirectionsPreheat oven to 375°F. In 3-quart saucepan, cook onions in 2 tablespoons butter over medium heat 3 minutes. Stir in mustard. Add cheese, milk and pepper. Stir until cheese melts and mixture is smooth. Stir in macaroni; spoon half into buttered 2- to 3-quart casserole. Arrange broccoli evenly and top with remaining macaroni mixture. Melt remaining tablespoon of butter; toss with cracker crumbs in small bowl. Sprinkle crumbs over casserole. Bake for 25 to 30 minutes until bubbly and browned.*

Fizzy Lemon SlushyIngredients❏ 1 cup water❏ 1 cup sugar❏ 3/4 cup fresh lemon juice (4-5 lemons)❏ 1 cup fresh strawberries, cleaned and sliced, divided❏ 1 cup fresh raspberries, divided❏ 2 cups milk❏ 2 cups club soda, chilled

DirectionsIn saucepan, combine water and sugar. Cook over medium heat until sugar dissolves. Pour into 13x9x2-inch glass baking dish. Add lemon juice; stir. Purée 1/2 cup strawberries and 1/2 cup raspberries in food processor or blender; add to lemon mixture, mix well. Stir in milk,* cover with plastic wrap; freeze 15 min. Remove from freezer and scrape ice crystals with spoon. Return to freezer for 15 min.; remove and scrape ice crystals. Continue this process, scraping every 15 min. until mixture reaches desired thickness, about 1 hour. Divide remaining berries among 4 glasses. Add 1/2 cup soda, top with slushy mixture. Stir slightly; serve immediately.

*Don’t be alarmed if milk curdles slightly.*Let stand 10 minutes before serving.

Chipotle Chicken TostadasIngredients❏ 1 cup plain yogurt❏ 1 16-ounce jar chipotle salsa, divided❏ 1 pound boneless, skinless chicken breasts❏ 1 1/2 cups fresh corn kernels, cooked and cooled, or frozen corn, thawed and divided❏ Salt and pepper to taste❏ 1 can (14.5 ounces) black beans, drained, rinsed❏ Juice of 1 lime❏ 8 corn tostadas❏ Boston lettuce leaves, torn❏ 1 1/2 cups (6 ounces) Wisconsin Cheddar Cheese, shredded

DirectionsStir yogurt and 1 cup salsa in medium skillet. Add chicken and 1/2 cup corn, cook over medium-high heat until chicken is cooked. Simmer sauce 10 more min., until reduced to 1 1/2 cups. Meanwhile, remove one breast to bowl. Use two forks to shred; repeat with remaining breasts. Keep warm until sauce is reduced. Toss sauce and chicken together. Season with salt and pepper.Meanwhile, place beans in small saucepan, add 1/4 cup water, cook over medium heat until warm. Stir, pressing beans against pan to smash. Season with lime juice, salt and pepper. In small bowl, combine remaining salsa and corn. To assemble, spread tostadas with beans, top with chicken, lettuce and cheese. Garnish with additional yogurt and salsa.

Cherries and CreamIngredients❏ 1 sheet frozen pu� pastry, thawed❏ 1/4 cup sugar❏ 1/2 teaspoon cinnamon❏ 1 pound tart red cherries*❏ 1 tablespoon cornstarch❏ 1/2 teaspoon vanilla extract❏ 4 scoops vanilla ice cream

DirectionsPreheat oven to 350°F. On fl oured surface, roll dough into 12”x12” square. Cut in half both ways to yield four squares. Tear 4 sheets of foil each 12-inches long and form into 4 balls. Place balls on baking sheet; fl atten bottom slightly, spray top with cooking spray. Drape each with pastry square. Bake 10 min., then invert bowls and remove foil. Bake until pastry pu� s and dries, about 5 min. In small bowl, mix sugar and cinnamon; sprinkle over pastry bowls while hot.Meanwhile, combine cherries, 1/2 cup juice,* and cornstarch in skillet. Simmer over medium heat until thick-ened, 2 to 3 min. Stir in extract. To assemble, place pastry bowl on plate or bowl, fi ll with scoop of ice cream, ladle warm cherries over top.

*If using frozen cherries, thaw and reserve 1/2 cup juice. If using fresh cherries, substitute 1/2 cup orange juice for cherry juice.

Wisconsin Cheddar Cheese Curdswith Roasted Tomato CoulisIngredientsCoulis:❏ 1 ounce fresh oregano sprigs❏ 1 ounce fresh thyme sprigs plus 1 tablespoon chopped❏ 1 ounce fresh cilantro sprigs❏ 1/2 ounce fresh parsley sprigs❏ 8 medium tomatoes, cored❏ 1 head garlic, split❏ 3 tablespoons olive oil, divided

Curds:❏ 2 cups Panko breadcrumbs❏ 2 teaspoons corn starch❏ 1 tsp. ground cayenne pepper❏ 1 cup all-purpose fl our❏ 4 eggs, well beaten❏ 1 lb. cheese curds, 1 to 1½ inch❏ Vegetable oil for deep frying

To Complete the Recipe:❏ 1 cup fresh parsley sprigs❏ Salt and pepper, to taste

DirectionsFor the coulis, soak sprigs of herbs in cold water 20 minutes. Prepare the grill. Drizzle tomatoes and garlic with 1 tablespoon of olive oil. Make a circular bed of the herbs on the grill. Arrange tomatoes and garlic in a pyramid on top of the herbs. Invert a large bowl, or cover with large piece of foil to seal in the heat. Grill 30 minutes or until tomatoes are roasted and slightly charred, and garlic is just so� ening. Remove from grill.Squeeze the garlic cloves out of their skins into a saucepan. Add

tomatoes and remaining 2 tablespoons olive oil. Simmer for 15 minutes, removing the tomato skin that rises to top. Pass the mixture through a food mill or process in a food processor. Season to taste with salt and pepper. Place in an ice bath to cool.For the curds, combine breadcrumbs, cornstarch, cayenne, 1 tablespoon chopped thyme in the food processor. Process until breadcrumbs are fi nely ground. Place in a pie plate. Pour the beaten eggs into another pie plate

and the fl our in a third pie plate. Dredge the cheese curds in fl our, then egg, and fi nally the bread crumb mixture. Place cheese curds on a baking sheet, and set in the freezer for 20 minutes.Heat 3 inches oil to 365° to 375°F. Fry the parsley leaves until crisp; drain on paper towels. Fry the cheese curds in batches until crisp and warmed all the way through. Season with salt and pepper.To serve, spoon the crisp curds onto the fried parsley. Top with the coulis.

Hosts for this year’s Breakfast on the Farm say they hope guests will not only have fun at the event, but learn something, too.

The 23rd annual Breakfast on the Farm — sponsored by Manitowoc County Dairy Promotion Committee, the Manitowoc County Farm Bureau and the Wisconsin Milk Marketing Board — is sched-uled for June 10 at Greendale Dairy in Kiel.

“I hope (visitors) can see modern-day agriculture and experience something that we experience every day,” said Nic Schoenberger, one of the farm’s owners. “It’s a family farm, but it’s also a business.”

Roger Manke, marketing chair of the Dairy Promotion Committee, said about 140

lished about 150 years ago and has been owned by the same family ever since. Greendale Dairy was formed in 2004 when Schoenberger, his wife, Christine, and brother-in-law, Mike Schuler, bought the farm from Mike and Christine’s parents, and aunt and uncle.

Greendale Dairy currently

milks 560 cows, raises 455 heif-ers and farms about 1,100 acres of crops.

“We’re honored to be hosts, but obviously is only a small part of the breakfast. All we have to do is clean our house,” Schoenberger said. “The Dairy Promotion and Farm Bureau ’c9 those are the people who should be getting recognized. They make the breakfast.”

Food for thoughtBreakfast on the Farm hosts looking to teach visitors about agriculture

volunteers will be helping with the event, which is expected to draw up to 5,000 people.

“I think Breakfast on the Farm is quite the get-together between the urban person and the rural community, between the farmer and the consumer,” he said. “It’s an educational thing for the young people to see what a farm is about and where milk comes from.”

noon June 10 at Greendale Dairy, 9605 Greendale Road, Kiel. Directional signs will be posted.

» Cost is $7 for adults, $4 for children ages 5 to 10, and free for children 4 or younger.

» The breakfast menu includes a ham and cheese omelet, sausage, variety of cheeses, yogurt, cinnamon bread and donut holes, milk, orange juice and co� ee, and ice cream sundaes.

Activities at Breakfast on the Farm will include children’s games, a kiddy tractor pull and guided walking farm tours, with the option for physically disabled individuals to take tours on a golf cart.

“The reason we chose to do a walking tour vs. riding on

wagons is, for us when we go to Breakfast on the Farm, we like to see things,” Schoenberger said. “We just fi gured taking a walk, taking your time and getting the chance to see every-thing was important. And being able to see what goes on inside some of those barns.”

Wisconsin Blue &Cottage Cheese Onion DipIngredients❏ 2 tablespoons butter❏ 1 tablespoon olive oil❏ 1/2 cup shallots, thinly sliced❏ 1 tablespoon apple cider vinegar❏ 1 1/2 cups cottage cheese❏ 1 cup (8 oz.) Wisconsin Blue Cheese❏ 2 teaspoons fresh tarragon, chopped❏ 2 to 3 tablespoons milk❏ Salt and pepper, to taste❏ 1/4 cup sun-dried tomatoes, chopped (optional)

DirectionsIn medium saucepan, over high heat, heat butter and olive oil. Add onions and shallots; stir 2-3 minutes. Reduce heat to low; cook 18 minutes more, stirring occasionally. Add vinegar; cook 2 minutes more, until onions are golden brown; cool. In food processor or blender, purée cottage cheese until smooth. Add Blue Cheese, onions, tarragon and milk; pulse to desired consistency. Season with salt and pepper. Stir in sun-dried tomatoes, if desired. Serve with fresh vegetables and crackers. Refrigerate le� over dip up to 3 days.

DirectionsIn a small bowl, combine salsa, chiles and taco seasoning; let stand 5 minutes. Butter one side of each slice of bread. Spread salsa mixture on the non-buttered side of 4 slices of bread; top with 1/4 cup Wisconsin Queso Quesadilla Cheese. Wisconsin Cheese Garden LasagnaIngredients❏ 1/4 cup (2 ounces) butter❏ 2 cloves garlic, minced❏ 1 cup each asparagus, zucchini, green onions, yellow squash and red pepper, diced❏ 6 ounces portobello mushrooms, chopped❏ 2 cups Roma tomatoes, diced❏ 2 cups baby spinach leaves, diced❏ 1/4 cup fresh basil leaves, chopped❏ 1 tablespoon fresh oregano leaves, chopped❏ 1/4 cup balsamic vinegar❏ 2 cups (15 ounces) Wisconsin Ricotta Cheese❏ 1 cup (4 ounces) Wisconsin Parmesan Cheese, grated and divided❏ 1 egg, beaten❏ 1/2 teaspoon salt and pepper❏ 12 no-cook lasagna noodles❏ 2 cups (8 ounces) Wisconsin Mozzarella Cheese, shredded and divided❏ 1 cup (4 ounces) Wisconsin Smoked Provolone Cheese, shredded and divided

DirectionsPreheat oven to 350°F. Butter bottom of 13x9x2-inch pan. Melt 1/4 cup butter in skillet over medium heat. Add garlic and sauté, 1 to 2 minutes. Add asparagus, zucchini, onions, squash, red pepper, mushrooms, tomatoes and spinach; sauté stirring frequently, 4 to 5 minutes. Stir in

basil, oregano and vinegar; set aside. In bowl, stir together Ricotta, 1/2 cup Parmesan, egg, salt and pepper; set aside.Place layer of noodles (4 noodles) on bottom of prepared pan. Spread 1/2 Ricotta mixture over noodles, top with 1/3 vegetable mixture, 3/4 cup Mozzarella and 1/2 cup

Provolone. Repeat with noodles, remaining Ricotta mixture, 1/3 vegetable mixture, 3/4 cup Mozzarella and remaining Provolone. Top with noodles, remaining vegetable mixture, Mozzarella and Parmesan. Bake 35 to 45 minutes. Let stand 5 to 10 minutes; serve.

Rhubarb Cheese Pie

Ingredients❏ 2 eggs❏ 1 tablespoon fl our❏ 3 cups fresh rhubarb, cut into 1/2-inch pieces❏ 1 cup, plus 2 tablespoons sugar, divided❏ 1 10-inch prepared graham cracker crust❏ 8 ounces cream cheese, so� ened❏ 1 1/2 cups (12 ounces) sour cream, divided❏ 1 tablespoon, plus 1 teaspoon vanilla, divided

DirectionsPreheat oven to 350°F. Combine rhubarb, 1/2 cup sugar and fl our in a non-stick skillet. Cook over medium heat until sugar melts. Pour into bottom of prepared pie crust.Meanwhile, beat together cream cheese, 1/2 cup sour cream and 1/2 cup sugar until fl u� y. Add eggs, one at a time, and 1 tbsp. vanilla until blended. Pour over rhubarb layer. Bake for 30 min. or until pu� ed and golden. Combine remaining sour cream, sugar and vanilla; spread over hot pie. Set on a wire rack to cool slightly; cover and refrigerate before serving.

DirectionsGrill or roast tomatoes and pepper on foil-lined pan (grill 10-15 min., or roast 20 min. at 425°F); set aside to cool. Meanwhile, with blender or food processor running, drop in garlic clove and mince; turn o� . Add cottage cheese and one peeled avocado; purée until smooth. Mash remaining avocado in a medium bowl. Stir puréed avocado mixture, cooled roasted vegetables, lime juice, hot sauce and salt and pepper into the mashed avocado. Serve with corn tortilla chips or jicama sticks.
