    Gurgaon known as "City of Malls" is situated in National CapitalRegion, of India, to the South of New Delhi and to the west of

    Faridabad. Gurgaon is one of the fastest developing districts in

    Haryana.

    Gurgaon City is 10 kms away from Indira Gandhi International

    Airport, Delhi. With opening of flyovers on National Highway Number

    8 time distance between Delhi and Gurgaon has been reduced. Delhi

    Metro is coming up soon in Gurgaon.

    Gurgaon has a large number of big and small size Industries, many

    of which are ancillaries of Maruti Auto and other large companies. A

    HUDA has set up about 27 urban estates out of which Sector 14 is the

    History of GurgaonGurgaon district is situated in NCR of Delhi, the capital of India. It is just10 kms away from Indira Gandhi International Airport, Delhi. The districtderived its name from the name of Guru Dronacharya; the village wasgiven as gurudakshina to him by his students; the Pandavas and hence itcame to be known as Guru-gram, which in course of time got distorted to

    Gurgaon. Thus the district has been existence since the times ofMahabharata. The district is surrounded by Delhi & Rajasthan.

    It is said that Yudhishtar, the eldest brother among the Pandavas, gavethis village to his guru, Dronacharya, whose tank still exists on the west

    side of the Railway Road. Actual village "GURGAON" is about 1.5 km.away from Gurgaon town, where the temple of SHEETLA MATA, attractsdevotees in large numbers on every Monday and Tuesday.

    During Akbar's reign, the district fell within the subas of Delhi and Agra,and comprised, wholly or partly, the sikars of Delhi, Rewari, Suhar Pahariand Tijara. With the decay of the Mughal empire, it remained in adisturbed state as a consequence of fighting between the neighboringchiefs till 1803 AD when most of it came under the British rule through theTreaty of Surji Arjungaon with Sindhia. The town was first occupied by the

    cavalry unit posted to watch the army of Begum Samru of Sirdhana,whose principal cantonment was in the village Jharsa, 1.5 km. to thesouth-east of the town.

    The civil offices were removed from Bharawas (tehsil Rewari) in 1821 AD,when the British frontier advanced through the acquisition of the Ajmerterritory.

    The district was divided into parganas by Britishes, various parganaswere given to petty chiefs and granted as jagirs in lieu of military services

    rendered by them. These jagirs were gradually resumed and came underthe direct management of the British; the last of the important changestook place in 1836 AD. There after, the district remained unchanged untilthe 1857 uprising. In 1858 AD It was transferred from the North WesternProvinces to Punjab. In 1861, the district was rearranged into five tehsilsGurgaon, F.P.Jhirka, Nuh, Palwal & Rewari.

    In the composition of the District since the beginning of the 20th centuryvarious changes have occurred.

    1901-1911: No change took place during this decade.

    1911-1921: Ballabgarh was one of the three tehsils comprising the thenDelhi district. A part of this tehsil was transferred to the Gurgaon district in1912. This was formed into the new sixth Tehsils of the district with thesame name viz. Ballabhgarh.

    1921-1931: No changes occurred during this decade.

    1931-1941: Minor changes occurred between Gurgaon district and UttarPradesh due to riverain action.

    1941-51: Under the Provinces and States Order 1950, 9 villages of thedistrict including Shahjahanpur were transferred to Rajasthan, whereasthe district gained with merger of Pataudi State and the transfer of it of 2villages from Rajasthan and 78 villages from PEPSU.

    1951-61:There was no change in the boundary of the district during thisdecade.

    1961-71:There was no change in the boundary of the district during thisdecade.

    1972- : Rewari Tehsil was excluded from the Gurgaon district andincluded in the Mahendergarh district.

    1974-: Thirty four villages were excluded from Palwal Tehsil.

    On 15th August, 1979 , Gurgaon district was further divided to form anew district Faridabad in which tehsils of Ballabgarh and Palwal, ofGurgaon District were

    GURGAON (Tehsil Gurgaon)

    The headquarters of the district of the same name, Gurgaontown, having an altitude of 229 meters, lies at a distance of 32km from Delhi on Delhi Bikaner railway in 28 28' 0" NorthLatitude and 77 01' 43" East Longitude. The town was firstoccupied by cavalry unit posted to watch the army of BegumSamru of Sirdhana, whose principal cantonment was at thevillage of Jharsa, 1.5 km to the south east of the town. Theprincipal buildings of interest include Cawn Sarai, NehruStadium and Kamla Nehru Park. About 1.0 km away from theGurgaon town is a village by the same name which is known farand wide for its temple of[SHEETLA MATA ](1 km from busstand) where a fair is held every Monday and Tuesday. MataSheetla known to be wife of Guru Dronacharya. Every yearduring the month of March and July, a fair is held. People fromevery part of nation visit to this religious temple. Administrationis provided all type of assistance to public/people in terms oftheir lodging,boarding, travelling arrangement.

    Dhankot :

    It lies 11 km west of Gurgaon on Gurgaon - Farrukhnagar Road.Tradition has it that milk was supplied from this place to GuruDronacharya and his pupils at Gurugram (Gurgaon). It is alsoidentified as Thullkottiha ( of the Buddhist literature) and wasvisited by Lord Buddha

    Saiyad:

    It lies 3 km west of Gurgaon on Gurgaon Dharampur road.

    Traditionally, the site is believed to be the residential place of

    Guru Dronacharya and his pupils. The site has yielded Painted

    Grey Ware and late medieval remains.

    Ata: It is situated 5 kms east of Sohna on Sohna Hathin road. Ithad been an important center of art and architecture in the timeof Gurjara-Pratiharas. Two beautiful icons-one representing UmaMaheshvara seated on Nandi of early medieval period and other

    representing Adinath of medieval period.

    Malab:

    Situated 5 km south of Nuh on Gurgaon Alwar road, the villagecontains one of the highest mounds in the region. A coin ofKanishka, some coins of late Kushanas and a number of coins ofMuslim rulers have been found at the site.

    Sanghel:

    It is situated 13 km east south of Nuh on Nuh Hodal road. It isone the highest mounds in the district. It has yielded PaintedGrey Ware, early historic wares and late medieval remains.

    Ujina:

    It lies 10 km east of Nuh on Nuh Hodal road. The village isknown for its lake. The mound has yielded Painted Grey Wareand early historic wares. The stone sculptures located at the site

    represent Varaha and Nrsimha of medieval period, and Lakshmiof late medieval period.

    Sheetala Devi Temple

    This famous Hindu temple is located one and a half kilometers

    in the suburbs of Gurgaon near a pond.

    Sultanpur Lake Bird Sanctuary

    Ten Km from Gurgaon and 42 km from Delhi, the place is a

    haven for bird lovers. It is a find of Peter Jackson, the world

    famous authority on bird

    This town having an altitude of 230 meters is situated on the

    highway from Gurgaon to Alwar, 24 km from Gurgaon and 56

    km from Delhi.

    Damdama Lake

    This department in a hotel is responsible for the cleanliness,

    maintenance and aesthetic upkeep of the hotel. The role of housekeeping is to

    Restaurant do have stale of the art kitchens in their premises, Where

    food items are prepared, following a fixed menu to serve the customers. Most

    restaurant are also equipped with infrastructure facilities, table settings, dining

    halls of various sizes to cater to needs of small gatherings to grandiose banquet to

    suit customer demands and all above.

    TYPE OF MENU

    There are different type of menu are:

    A La CARTE

    In an A La Carte menu there is a wide choice of dishes and each item is

    priced individually. More service skill is required and a lot of equipment is

    needed. This menu is planned according to time, season and climate. The food is

    kept in a semi prepared form and cooking is done as and when the order is

    received, the portion size is large. This type of menu is very popular.

    CYCLIC MENU In case of a cyclic menu, the menu are repeated in a weekly or monthly

    basis. While planning it the seasonal availability and price or kept in mind.

    TABLE THE HOTE

    There is no choice or limited choice available. The guests had to pay for alldishes whether he has consumed a particular dish or not.

    TYPES OF SERVICE

    ENGLISH SERVICE

    This service is also known as Silver service. The waiter brings plates and

    dishes to the sideboard, place a plate before each guest at his own cover presents

    the main dish to the host or guests and then passes round the table serving each

    customer.

    FRENCH SERVICE

    The fundamental element of French service is that it gives is that it gives

    guests, the opportunity to help themselves to the dishes.

    AMERICAN SERVICE

    The American service invokes pre-plating and the pre-setting of tables with

    silver needed throughout the meal. Plated food is brought by waiter from the

    kitchen on a tray which is then placed before the guests.

    restaurants where silver service cannot be given. Service is much faster and calls

    for fewer staff.

    Mise-en place the French term means to putting in place is

    Side stations should be stacked with sufficient covers for resetting the

    restaurant after the first sitting is over.

    Cruet sets should be cleaned and filled on a daily basis.

    Sauce bottles should be filled and the necks and tops of the bottles

    wiped clean.

    Butter, condiments and accompaniments for service should kept ready

    for use when needed.

    2) Mise-en-scene

    It means to prepare the environment of the outlet before service in

    order to make it pleasant, comfortable, safe and hygienic.

    It consider following steps:

    Carpets are well brushed or hovered.

    All tables and chairs are serviceable.

    Table lights or other sales material are presentable.

    Exchange dirty linen for fresh linen.

    problem for the housekeeping department.

    Suggestion

    Giving strong instruction to the front office department about giving the correct

    information.

    3. Problem

    The staff of the F&B Service are not cooperative. Some times the guest face the

    problem.

    Suggestion

    The F&B Manager should take step against staff.
