Welcome To the Country of All Delights !Leisurely strolls, recharging your batteries, pure enjoyment, discovering and tasting : these words are synonymous with holidays and a perfect definition of the Lake Geneva Region ( canton of Vaud ). Located in western Switzerland near France and between Lake Geneva and Lake Neuchâtel, the region holds a Mediterranean charm. This warm atmosphere can be perceived in the waterfront towns, such as Lausanne, Montreux and Yverdon-les-Bains, but also in the countryside and in the Alpine resorts Villars, Les Diablerets, Château-d’Oex and Leysin. The beauty of these locations attracts visitors from all around the world, including celebrity visitors : Charlie Chaplin to Vevey, Freddie Mercury to Montreux, Coco Chanel to Lausanne, Audrey Hepburn to Morges, to mention but the most famous ones. It is said that the tranquillity and the discretion of the region attracted them. Or is it the diversity characterising the region ? For here you can enjoy both terroir products and the most refined foods ; you can bathe with as much pleasure in a 5-star pool as in a refreshing lake ; you can explore the luxury boutiques in the main shopping streets and the charming little shops of talented craftspeople. Happiness through Food In this gourmet’s paradise, there are restaurants to suit every taste. Star-studded restau-rants, typical inns, world flavours or culinary adventures delight all taste buds. The Lake Geneva Region takes pride in being one of the world’s regions with the greatest number of star-studded chefs. Excellence, lightness, flavours, refinement and astonishment are on the menu of reputed restaurants, such as Benoît Violier’s Hôtel de Ville in Crissier, Stéphane Décoterd’s Pont de Brent near Montreux, Carlo Crisci’s Restaurant du Cerf in Cossonay, and many more. Delightful food can also be found in one of our countless inns - or “pintes” as they are called locally. For example around a delicious, cheese-based meal in a mountain restaurant. Feel like something more exotic ? All flavours of the world can be found here to take gourmets to faraway places. Not to mention places of exception able to transform any meal into a great moment : the many terraces offering a view of the lake and the surrounding mountains. Fun Shopping through Fun HuntingEven shopping is done at its own leisurely pace in the Lake Geneva Region. Far away from the stress of large shopping centres, people prefer to stroll from one boutique to another, salivate in front of chocolate shop windows and dream at the sight of luxury boutiques. In the historic centres of Lausanne, Vevey and Morges, the shopping streets have kept their century-old charm. Conviviality through Good WineIn the Lake Geneva Region, terroir rhymes with great wines. All the elements required for winegrowing are present here. Switzerland’s second most important winegrowing region harvests the grapes under eight appellations. Lavaux and its terraced vineyards, a UNESCO World Heritage Site, is the best-known Vaudois vineyard. Although each appellation has its own distinctive features, Chasselas remains the king of grapes. This dry white wine, ideal as an aperitif or with cheese and fish, is grown in nearly 70% of all vineyards. Among the reds, Gamay and Pinot Noir are the most popular. They can be tasted in the cellars of each village. Most winegrowers also sell their wines directly at the cellar. Each canton, each valley and nearly every village in Switzerland have developed their own cheese. Cheese is an institution in the country, be it soft or hard and made from cow’s, goat’s or sheep’s milk. As described in this gourmet itinerary, the Lake Geneva Region is one of the richest regions in

terms of diversity. Apart from Gruyère AOP, dozens of handmade products are matured daily by enthusiasts who are happy to explain the characteristics of Etivaz AOP, le Maréchal or Vacherin Mont-d’Or AOP. All these cheeses can be tasted in the region’s Alpine restau-rants and mountain chalets.

Mountain Cheeses from Joux Valley“Alpage” is the term used for meadows located above an altitude of 700 metres, where the cows feast on fresh grass throughout the summer season. The mountain flora gives their milk a distinctive flavour. Matured by meticulous profes-sionals, the milk is transformed into two AOP cheeses : Vacherin Mont-d’Or, a soft cheese wrapped into a spruce bark box, and Gruyère, a hard cheese that comes in three versions depending on maturation time, either as a young cheese with a fine flavour or as two older, more mature cheeses with a more spicy taste. Like all typical products, Vacherin Mont-d’Or AOP has its capital : Les Charbonnières. Located near Lake Joux, this small village houses the Museum of the Vacherin Mont-d’Or and hosts a festival dedicated to this tasty cheese on the last Saturday of September. Finally yet importantly, mountain Gruyère cheese reveals its secrets to fans on six mountain pastures in the Jura of the Lake Geneva Region during the Discovery Days held in July and August.

The Region of Payerne and Le MaréchalIn the 1990s, Jean-Michel Rapin created a hard cheese matured over six months with aromatic herbs. This cheesemaker from the Payerne region, a welcoming village dominated by a magnificent 11th century abbey church, gave the name of Maréchal to this cheese in remembrance of his ancestor who was a blacksmith and farrier. An interesting detail : the cows providing the milk are fed with flax seeds, which are rich in Omega 3, a component found in abundance in Le Maréchal.

The Treasures of Château-d’Oex/ Pays d’EnhautLocated above an altitude of 1,000 metres, this idyllic region is divided into three districts. It is the place of origin of three original and tasty cheeses. L’Etivaz, the first Swiss product to receive an AOP label, is a hard cheese traditionally made from raw milk in the traditional way in the moun-tain chalets. Tomme Fleurette, a delicate and savoury cheese, can be enjoyed as an aperitif or a dessert. Sapalet, an organic soft cheese made from sheep’s milk, is matured for a dozen days in the mountains. In the village of L’Etivaz, people celebrate the cheese of the same name. It is featured in the shop and the cellars of the House of

The Heart of MoudonBlessed with an intense cultural life and a rich heritage of splendid buildings, Moudon used to have its own cheese-making school. Since 2013, passionate cheesemakers have started producing local cheeses again. Although cheese fans will be sure to taste a Bourg Mignon or a Convive, the true local specialty is Cœur de Moudon, a soft and delicate cream cheese surrounded by a thin rind.

In Château-d’Oex, cheesemakers are busy throughout the year. Visitors can discover how cheese is made before enjoying it in a good fondue in the Restaurant Le Chalet, which can be reached with the Cheese Train from Montreux from December to April.

The Mountain Chalets of Les DiableretsDuring the winter, this Alpine resort wel-comes mostly fans of snow and extreme sports. In summer, visitors can enjoy a preserved natural environment and sublime scenery. Whatever the season, be sure to visit the Chalet d’Isenau, where Etivaz AOP is made, this hard cheese made over a log fire according to ancestral methods, or the mountain chalet La Marnèche offering a splendid view of the Ormonts valley.

One Vineyard, Eight App ellations

Covering more than 4,000 hectares of vineyard, the Lake Geneva Region is one of Switzerland’s most important winegrowing regions. The following card takes you on a discovery tour of its eight appellations of origin. Doubtlessly introduced by the Romans on the shores of Lake Geneva and in the Alps, growing vines was developed by the monks throughout the Middle Ages. During the Rennaissance, families of winegrowers continued the tradition their descendants remain very attached to. The emblematic grape is Chasselas. This tasty golden grape, which yields crystal-clear whites, is appreciated as an aperitif and as an accompaniment for a fera fi llet from the lake or a cheese dish.

Lavaux AOCDézaley and Calamin are the pearls of the vineyard, but Lavaux is the prestigious host. Its ancient terraces, preserved villag-es and dramatic beauty were included in the UNESCO World Heritage Programme in 2007. In this appellation covering 760 hectares, which derives its character from its three suns – the real sun shining in the sky, the sun refl ected in the lake and the one refl ected on the stone walls – mostly Chasselas is grown, but also red specialties, such as Plant Robert, Gamaret and Garanoir.

Chablais AOCRocky soil, sometimes created by former landslides, steep land, gusts of foehn and a tempestuous southerly wind : these are the elements shaping Chablais wines. These harsh conditions yield characteristic, full-bodied and racy vintages. Although Chasselas is dominant in Aigle and Yvorne, the three other communities of the appel-lation produce structured reds based on Pinot Noir, Merlot and Gamay, or more international varieties, such as Malbec and Syrah.

Côtes-de-l’Orbe AOCLocated in the heart of the Vaud coun-tryside, this appellation of 170 hectares specialises in making velvety reds and little known white wine specialties, such as delicate Pinot Blanc or exotic Doral. Spread around a score of bucolic villages, the vine plots take full advantage of the sunny exposure. Filled with a tasty juice, these grapes are transformed into silky Gamays, elegant Pinots, spicy Gamarets or robust Garanoirs.

Calamin Grand Cru AOCCalamin is one of the two Grand Cru ap-pelations of the Lavaux terraced vineyard. This small rectangle of nearly 16 hectares, i.e. 500 by 300 metres, is almost exclusive-ly grown with Chasselas. Calamin wines are little known by the public. They require a bit of time to reveal their character. Con-sidered flinty when young, they develop notes of caramel, aromas of chalk and a racy structure that greatly appeals to its fans.

La Côte AOCLocated between Morges and Nyon, the largest appellation of the Lake Geneva Re-gion covers over 2,000 hectares. Enjoying the beneficial effects of Lake Geneva and protected by the Jura hills, the gentle hills of La Côte play host to a great diversity of grape varieties. Enthusiastic winegrowers make fruity rosés, bright whites, delicate or spicy reds and sometimes even elegant sparkling wines that satisfy and surprise even the most discerning wine lovers.

Bonvillars AOCLocated in the north of the canton on the shores of Lake Neuchâtel, this small vine-yard of 190 hectares offers many different grape varieties. The appellation’s gently undulating hills play host to Chasselas, the king of white grapes in the Lake Geneva Region, Pinot Noir and Gamay, which yield fruity and elegant wines. There are also Swiss specialty wines, such as Gamaret or Garanoir that are often vinified as assem-blages and produce spicy, full-bodied and powerful wines.

Dézaley Grand Cru AOCDézaley is Lavaux’s flagship, stretching over 54 hectares at the heart of the ter-raced vineyard. These vines, which often grow on sheer slopes, have been turned into wine by generations of winegrowers. They have built and maintained the stone walls criss-crossing this region, which is a UNESCO World Heritage site. Chasselas is grown on 90% of the appellation. It takes on an aristocratic flavour here, which is not revealed immediately, but requires a few years of patience to express itself fully.

Vully AOCIn the smallest of the major Swiss wine regions, some twenty winemakers produce stylized wines influenced by the proximity of Lake Morat and Lake Neuchâtel. Al-though the classics Chasselas, Pinot Noir and Gamay remain dominant, Vully propos-es countless specialties, such as the very aromatic Traminer or the rare Freiburger. This little-known appellation straddling the cantons of Vaud and Fribourg has started to emerge as the pearl of Swiss vineyards over the last few years.

The vineyards of the Lake Geneva Region are located in striking scenery criss-crossed by educational paths. Bordering the hillsides, following the shores or cros-sing bucolic villages, the walks described in this itinerary endeavour to draw attention to the lesser-known aspects of viticulture. Didactic panels in several languages reveal

the diff erences between grape varieties, explain a winegrower’s work, highlight the fauna and explain the microclimates in detail. After their eff ort, gourmet hikers are sure to visit the village cellar to taste the wines of the vineyards they have just crossed.

The “Chablais” Vineyard TrailInfl uenced by a diff erent microclimate, Chablais is diff erent from the other vineyards in the Lake Geneva Region. Its white wines are mineral and its reds full of character. Its scenery, too, has plenty of personality : this is the Rhone Valley, the doorway to the Alps. The recent Vineyard Trail starts in Yvorne and leads to Lavey-les-Bains via Aigle. The Museum of Wine and Vine in Aigle Castle is simply a must. Permanent collections and temporary exhibitions explore practical aspects and general topics, such as ecology, biodiver-sity, wine festivals and art.

The “La Côte” Wine RouteCovering an area of 2,000 hectares, La Côte is Switzerland’s largest wine growing region off ering a marked path of more than 50 km in length. The unrestricted view of Lake Geneva, the Alps and Mont Blanc makes this famous vineyard trail unique. All along the way, winegrowers, farmers but also craftspeople and artists open their door to you, so you can catch a glimpse of

The Lavaux Terraced VineyardsBetween the earth and the sky, the trail of the Lavaux Terraced Vineyards winds its way along the vineyards and the lake. This vineyard is well known for its beautiful scenery and is a UNESCO World Heritage site thanks to man’s labour since the 12th century. This heritage site unravels before

you over the eleven kilometres separating Lutry from St-Saphorin. The fi rst is a medieval village and the second, one of the most beautiful Swiss villages, is recogniz-able by its 15th century church. Along the way, the Vinorama in Rivaz exhibits and serves more than 250 Lavaux wines. In the

basement, an award-winning documentary describes the life of a regional winemaker. If the beauty of this area makes you weak in the knees, board the Lavaux Express and the Lavaux Panoramic trains, both equipped with rubber tires.

Côtes-de-l’Orbe Vineyard StrollWeaving its way through this gently undulating valley, which produces the most characteristic wines in the Lake Geneva Region, a 35-km long marked trail is accessible to hikers and bikers. The main curiosity of this appellation : Middle of the World. This location, which is close to the village of Eclépens and the hill of Mormont, where winegrowing has been attested for a thousand years, marks the limit between the basins of the rivers Rhine and Rhone. Each raindrop falling to the north of this frontier will one day reach the North Sea, while the water on the other side embarks on its long journey to the Mediterranean.

Bonvillars Wine TrailDeparture from Place du Château in Grandson. The path follows the lakeshore and winds its way along welcoming beaches and preserved nature spots before reaching Concise and its languid port. History fans will be sure to visit the fortress and then go on to the field where, in 1476, Swiss soldiers confronted the armies of the Duke of Burgundy, Charles the Bold. Visi-tors will then cross winegrowing villages and carefully tended before the path leads them back to Grandson. La Maison des Terroirs in the centre of the village is the place to visit for a souvenir, a snack or wine tasting.

Vully Wine TrailVully is a small, dynamic vineyard above Lake Morat. It offers many assets des-cribed by Viny, the mascot of the wine trail forming a 4-km loop in the heart of the vineyards. Viny’s explanations are adapted to children and adults. Apart from describing winemaking from soil to wine, they will whet your appetite. Good news ! As producing aromatic whites and elegant reds is not sufficient, the region’s produ-cers always have a Vully Cake handy. This nourishing specialty, which comes either savoury or sweet, will definitely transform a simple stroll into an unforgettable gastro-nomical experience.

Gourmet foods, terroir and sensual delights

The north of the Lake Geneva Region is quite different from the Alps and the shores of Lake Geneva. It offers a charming land-scape of fertile plains and wooded hills. This region covered by vegetable crops and forests favoured the emergence of original terroir specialties presented in this “northern” itinerary. In the villages of the Jura and the plateau, thoroughness, the love of work well done and ingenuity are at the root of the specific expertise applied in the precision industry and in gastronomy. Although some cured meat types claim a millennial history, the Bonvillars truffle only became popular some ten years ago. However, all these products all proposed in the region’s restaurants and traditional inns (called “pintes”).

Amandine de Sainte-CroixThe Alpine meadows, the forests around Lake Geneva and the urban parks abound with diversified flora that attracts bees. Their honey, an essential element of the local gastronomy, is one of the two main ingredients (the other one being almonds) for Amandine de Sainte-Croix. This village in the Jura fiercely preserves another tradi-tion : the creation of automaton and music boxes. The finest specimens are exhibited in the museums of the region.

Truffles from BonvillarsAlthough there are several underground mushroom varieties that appreciate the Vaudois forests, the Burgundy truffle has found highly favourable climatic conditions around Bonvillars, which intends to be-come the country’s leading truffle region. Some hundred kilograms of this black dia-mond are sold at the end of autumn every year, at a dedicated market where you can taste truffle fondue and ice cream and discover the techniques of the “caveurs” (truffle hunters) and their dogs.

Bondelle from Lake NeuchâtelThis small-sized freshwater fish lives in the depths of the lake. The flesh of this member of the salmon family, which is also called fera, is delicate and tasty. Many restaurants in the Lake Geneva Region propose Bondelle, which is traditionally eaten smoked. The best way to taste this noble inhabitant of our lakes is the Bondelle Festival held in Concise and its surrounding villages in mid-August.

6IGP cabbage sausage from OrbeThis sausage often accompanies Papet Vaudois, a traditional dish made with leeks and potatoes. The basic ingredient of this sausage is smoked pork meat. Legend has it that this specialty was invented in Orbe in 879, when the Emperor’s court remained in the village for several weeks. Because of this prestigious host’s voracity, the village ran out of meat and part of the sausage meat was replaced by cooked cabbage.

Vully CakeVully is a small stretch of sunny land between the lakes of Neuchâtel and Morat and one of the region’s eight AOC vineyards. This region of water sports and hiking has developed a very rich gastronom-ic tradition exemplified by the Vully Cake. This round tart is available in two versions : savoury, dotted with bacon cubes and caraway seeds, and sweet, lavishly gar-nished with cream and sugar. It can be eat-en hot or cold and is proposed at all events in the region.

Boutefas, Saucisson Vaudois IGP and sausage from PayerneDuring the cheese manufacturing process, part of the milk is transformed into whey, or “petit lait” which the Vaudois farmers used to feed to the pigs rather than discard it. This habit has encouraged pig breeding and the creation of many cork-based specialties, such as Boutefas, a slightly smoked, thick sausage, Saucisson Vaudois IGP, which is flavoured with coriander, and Saucisson from Payerne, slightly more fatty than its Vaudois cousin and flavoured with lees.

The Lake Geneva Region has always been cosmopolitan and adept at absorbing out-side infl uences. This open-mindedness is refl ected in this itinerary dedicated to the gastronomy on the shores of Lake Geneva and its hinterland. Apart from various fi sh

specialties, there are delicacies with an exotic touch, such as bricelets originating from the Swiss German part, or Malakoff brought back from Crimea. Perch fi llets, fera tartar, Taillé au greubons, Vinzel cheese donuts or sesame fl ûtes all have

one thing in common : these delicacies, which are on the menu of all good restau-rants, are the ideal accompaniment of a Chasselas, the region’s emblematic white wine.

Lake Geneva Freshwater Fish Some thirty fish species live in central Europe’s largest lake, such as pike, carp, monkfish and trout. For gourmets, two of them are particularly interesting : perch and fera. All menu cards of the region’s restaurants list pan-fried perch fillets. Fera can be smoked, enjoyed raw or cooked in the oven. It remains the prerogative of restaurants specialising in regional food.

Bricelets and oils from Sévery, Morges RegionBricelets are a traditional Swiss specialty which exist in sweet and savoury versions. This thin crisp waffle can be enjoyed as an aperitif, a dessert or with a cup of coffee. Known since the end of the Middle Ages, bricelets are made according to many re-gional recipes. Accompanied by a bottle of cold-pressed walnut oil from Sévery, one of the few artisan oil mills still in service, they will make a highly appreciated souvenir.

Flûtes, Raisinée and Malakoff, Nyon RegionAll meals in the Lake Geneva Region start with an aperitif consisting of at least one glass of Chasselas and flûtes (butter puff pas-try sticks). In the region of Nyon, you will then be served Malakoffs, donuts made from four ingredients : cheese, eggs, white wine and kirsch. Dessert will be a cooked wine tart, made from fruit concentrate of apple and pear juice, which is also called raisinée and has nothing to do with the drink of Bacchus.

Taillé de Goumoens, Taillé aux Greubons and Pâté d’Etagnières, Echallens and Moudon RegionThese specialties are a growing success. The Pâté d’Etagnières, a meat and jelly pâté, is based on an ancient, secret recipe and made by two sisters living in the small vil-lage of Etagnières. The Taillé aux Greubons has been part of the Lake Geneva Region culinary heritage for centuries. It is available in several versions : as a savoury pastry gar-nished with greubons (small bacon cubes) or a leavened dough garnished with cream and sugar, called Taillé de Goumoens.

Bouchon vaudois from LausanneLike all large cosmopolitan cities, Lausanne offers its inhabitants a wide selection of res-taurants and cuisines. The Olympic capital has also maintained traditional specialties, which are more appreciated by foodies than by dieticians, such as the Bouchon Vaudois, a confectionary product that comes in the shape of a cork filled with almond praliné. This delicious specialty is sold in all choc-olate shops in Lausanne and will delight everyone with a sweet tooth.

Brebisane from PuidouxWhy not try an ewe milk-based ice cream for dessert ! In Lavaux, an artisan ice cream maker proposes “La Brebisane” ice creams made from ewe’s milk. These animals of Friesian breed live in a farm next to a crys-tal-clear lake. Their milk confers a creamy texture to these ice creams without added colouring agents or flavour enhancers. The available versions are “plain”, which is called “Fleur de Lait”, or combined with raspberry, vanilla, chocolate or coffee flavours.

Younger children will love the educational paths proposed by the House of Wheat and Bread in Echallens or by the Alimentarium in Vevey. Teenagers will

never forget an excursion to the depths of the Bex Salt Mines or to the summit of the Alps to the Kuklos revolving res-taurant. The young and not so young will enjoy a day of relaxation in one of the region’s spas.

1Thermal Centre in Yverdon-les-BainsThe water quality of the hot springs of Yverdon has been reputed for 1,500 years. The spa has four pools : three outdoors with a temperature of 34°C in winter and 28°C in summer. The spa offers jacuzzis, bubble baths and massage jets. Children are admitted from the age of three years, under adult supervision. On Wednesdays and Saturdays, youngsters below sixteen years of age can celebrate their birthday in this outstanding setting.

The House of Wheat and Bread in EchallensThis handicraft museum has its home in a village farm of 1790. It tells the fabulous history of bread in an amusing way and exhibits tools, costumes, mills, ovens and many other elements linked to agriculture, milling and baking. “Ti’Grain’s path”, a route punctuated by audiovisual anima-tions, is particularly suitable for children. You can also make your own braided bread in a bread lab called Ceres’s bakery. This didactic museum is also the starting point of the Wheat Trail. This theme trail covers about 37 kilometres and crosses fields and villages with farms, granaries and country-side gîtes.

The Alimentarium in VeveyFounded by the Nestlé Company, this food museum hosts a permanent exhibition on the theme : “cook, buy, eat and digest”. In the children’s section, which has been spe-cially designed for 4-12 year-olds, children can learn how to cook with the museum’s chef, explore a giant digestive tube and learn about dietetics in a fun way. Specific workshops - birthday, flavour and expertise, and scientific demonstrations - are also organised regularly. By 2016, visitors will be able to discover the history of Nestlé in the multinational’s historic buildings. On its 150 years of existence, the Vevey-based company will renovate the building, equip it with fun interactive installations and open it to the public.

The Kuklos Restaurant in LeysinLeysin is an Alpine resort situated at an altitude of 1,200 metres. The heart of the village is linked to the Kuklos, a revolving, panoramic restaurant. This attraction at an altitude of 2,048 metres performs a rotation of 360° within one hour and guar-antees a breathtaking view of the Matter-horn, Mont Blanc, Dents du Midi, Eiger and other Alpine peaks. A nearby didactic trail dedicated to renewable energies offers the possibility of a nice digestive walk.

The Bex Salt MinesThese mines have been in operation since 1684. Part of the fifty kilometres of galler-ies, wells and stairs of this underground maze is open to the public. The visit starts with an audiovisual presentation, which explains the extraction process of this precious mineral and the development of extraction techniques during the three centuries of existence. Visitors can then explore the depths of the mountain, either by train or on foot.

Thermal Centre in Lavey-les-BainsAt 62°C, the source of Lavey is the hottest in Switzerland. The spa built around this regenerative water consists of two pools totalling 1,600 square metres, complete with jacuzzis, hydrating jets, a counter-cur-rent system and bubbling waterbeds. The complex also offers a Nordic pavilion with a snow cave and sauna, an oriental room with a hammam and Turkish baths, as well as a relaxation room with chromotherapy.
