    Dear Residents and Tenants,

I am glad to have this opportunity to meet you here! My name is Dehlia Jiang and I am responsible for the Administration Department and the General Manager's office. I have been working at Shanghai Centre for 13 years. The first five years of which were in the HR Department. Over the past decade, I’ve learned a lot from my experienced colleagues and professional supervisors.

Two years ago, our General Manager, Byron Kan, assigned me a new task – to create a platform to improve our quality service. It was a challenge to me then, and still is now! To start, we have established a Quality of Service Committee, consisting of representatives from each department. We meet on a regular basis to brainstorm new ideas and to evaluate our newly-implemented initiatives.

Over the past years we have received many compliments from our residents and tenants, and this is very encouraging for the whole team! But aside from your appreciation letters and compliments, we also warmly welcome your constructive suggestions and feedback to help us make a step forward every day.

Shanghai Centre is well-known in town not only because of its location, unique design and wide range of amenities, but also for its fine services. I feel proud of working here and will strive to make each of you proud of living here, as well – together we can create a wonderful “Life at Your Doorstep”.

Just as the leaves on the trees begin to change color, signaling the start of a new season, fall is sure to be right around the corner as soon as you start seeing boxes of mooncakes in shops, bakeries and hotels around town. The traditional Chinese mooncake is the very symbol of Mid-Autumn Festival, with it’s puffy round shape and bright yellow egg yolk a metaphor of the Harvest Moon of the autumn equinox, on the 15th day of the eighth lunar month.

A popular legend has it that mooncakes first became associated with Mid-Autumn Festival when they were used by the Han people to smuggle in secret plans for a rebellion against the Mongol invaders in the 14th century. These days, mooncakes are obligatory gifts to friends, business associates and family, served in bright red boxes sometimes so ornate you might mistake them for edible crown jewels. Known as yue bing in Chinese, they’re about as close to traditional Chinese culture as you can get – on par, you might say, with turkey and stuffing for Americans at Thanksgiving, or to eating jiao zi at the Chinese New Year.

Not surprisingly then, there’s a relatively strict code

    Cover Story

for what a mooncake should be, both in terms of shape (usually round and about the size of the palm of your hand, though rectangular mooncakes are also acceptable) and ingredients (thin pastry shell with lotus paste filling and a salted duck egg yolk -- or perhaps taro, coconut, or red bean, and for those impartial to sweets, meat filling).

Yet over the past decade, as cross-culturalization has swept across China, the tradition of the mooncake has taken some very modern twists, rather conspicuously inspired by Western tastes. This includes chocolate-covered mooncakes, jelly mooncakes, and mooncakes catering to the newfound love-affair between Chinese people and ice cream.

While some Chinese no doubt see these creations as an aberration of the traditional mooncake, others find them as titillating as Mandarin Hip Hop and chic fusion restaurants. For foreigners living in China, particularly those not overly excited by the idea of a salted duck egg for dessert, Westernized mooncakes might serve as a platform to enjoying this very Chinese delicacy – a sort of happy medium, you might say.

But what’s certain is that as modern Chinese tastes and health habits are starting to change, so too is the yue bing.

Recently, I sat down with Melissa Zhan to discuss these changes over a tasty warm canelé (more on that later…). Melissa is herself symbolic of modern Chinese fusion. Educated in Marseille, she speaks fluent French and English with a strong French accent. Marketing Manager of Paul Bakery, Melissa and her French colleague Hadrian Vesseron tell me the story of Paul’s own unique contribution to the evolution of the mooncake, intriguingly called “Flavor of the Moon.”

Based on a recipe for a traditional French pastry called the canelé, native to the port city of Bordeaux, “Flavor of the Moon” is a beautiful marriage of French and Chinese cuisine – a puffy French pasty made in the shape of a mooncake, with a delicious filling of rum, egg yolk and spices, served either warm or room temperature, with coffee, tea, wine or champagne. But alors, they insist, ceci n’est pas un mooncake! (This is not a Mooncake!)

traditions, so we prefer not to call it a mooncake, but rather ‘Flavor of the Moon,’” Hadrian says. Of course! Leave it to the French to hold culinary tradition utterly sacred. In fact, legend has it that the canelé were first made by Catholic nuns, and that in 1663, canelé makers petitioned the King of France to be recognized as an official pastry guild. To this day, canelé are a popular treat for the French, eaten any time of day, not unlike a pain au chocolat or a croissant. The taste might be described as similar to flan, light and fluffy, with a caramelized shell, and thoroughly delicious!

While Hadrian argues that (by French standards) it is not a very fattening dessert, Melissa points out that it’s arguably more health-conscious because Paul uses no preservatives, unlike traditional mooncakes, which come wrapped individually in plastic and last about three weeks.

“Chinese people, and especially Shanghainese, like new things,” Melissa says. “So since we introduced Flavor of the Moon last year, it’s been very successful. I think local people know the name Paul as a luxury bakery, so they are quite happy to receive them as gifts.” The Flavor of the Moon comes in six varieties: Traditional Rum, Valrhona Chocolate, Valley Raisin, Kirsch, Cinnamon, and Green Tea.

You don’t even have to sacrifice the exquisite packaging, as Flavor of the Moon comes in a stylish box that is, you guessed it, “Bordeaux Red.”

Never one to miss out on improving a classic, Starbucks also offers some interesting modern twists on the mooncake, with daring recipes such as chocolate covered mooncakes, ice cream mooncakes with raspberry filling, hazelnut, coffee, and green tea flavors.

But traditionalists take heart. If all these fancy new Westernized takes on the beloved mooncake aren’t quite your cup of tea, the Portman Ritz-Carlton’s

    Theater

“Hollywood to Broadway” is a musical revue that explores all the facets of American Musical Theatre and the many ways it can be shared with a live audience. From the classic movie musicals of the 1920’s and 1930’s to modern day Broadway spectacles, “Hollywood to Broadway” showcases the evolution of musical theatre through the decades. Along the way, we’ll visit the Vaudeville stage, a cabaret, a big band swing club, a television performance variety show, a rock concert and get an inside glimpse of the Broadway audition process that culminates in a show-stopping Broadway finale.

The revue follows the path of a wide-eyed ingénue as she leaves the glamorous movie studios of Hollywood and travels to NYC with dreams of being a Broadway star. We all share her first exciting moments on the bustling streets of NYC. We’ll see her fall in love with a suave, sophisticated New Yorker and

end up with a broken heart. Our ingénue works her way from job to job, in clubs, cabarets and dance halls until she finally gets her big break in the chorus on Broadway. Following in classic American Musical Theatre tradition, she has to take over for the show’s star and leads the full company in a triumphant starring debut on Broadway!
