กลน – Smell Molecules

- กลน คอ โมเลกลทหลดออกมาจากสงตางๆ แลวระเหยอยในอากาศ

โดยมากมน าหนกนอยกวา 300 ดาลตน

- มหลากชอเรยก odorant, aroma, fragrance, flavor, VOCs

(volatile organic compounds)

- โมเลกลกลนลอยเขาไปเกาะกบเซนเซอรรบกลน (โปรตน) ในจมก

มนษย ท าใหเรารบรกลน

- กลนมผลตอรสชาตอาหาร (flavor) ประมาณ 80% ทเหลออก 20%

เกดจากลน

- กลนในอาหารสวนใหญเปน VOCs กลมตางๆ เชน esters, amines,

alcohols, aldehydes, ketones, carboxylic, thiols เปนตน

-Olfactory system ระบบรบรกลน ท าใหสตวเลยงลกดวยนม อยรอด

จากยคไดโนเสาร

- ธรรมชาตยกความส าคญใหระบบรบรกลน โดยใชจโนม 1-3% ส าหรบ

เกบพนธกรรมของระบบน

- ใชบอกแหลงอาหาร อนตราย ศตร สารพษ เนอค ความรก และ ความ

บนเทงเรงใจ

- มนษยมเซนเซอรรบกลนประมาณ 40 ลานตว กระตายม 100 ลานตว

สนขมประมาณ 220 ลานตว

- เซนเซอรรบกลนในจมกมนษย อาจรบรกลนไดถง 1 ลานลานชนด แต

มนษยทฝกดแลวจะจดจ ากลนได 10,000 ชนด

(1) ระบบน ากลน ซงจะควบคมการไหลของกลน พากลนไป

ยงเซนเซอรกลน เทยบไดกบจมก

(2) เซนเซอรเคม (Chemical Sensors) เทยบไดกบ

เซนเซอรดมกลนทเปนโมเลกลโปรตน ในจมกมนษย
