Greek cuisine "Briam"(ratatouille in the oven)

Servings: 6Preparation time: 15 minutesCooking time: 45 minutes

ingredients: 4 aubergines 4 courgettes 4 large potatoes 4 ripe tomatoes and tight 4 cloves garlic 2 tablespoons chopped mint 2 tablespoons chopped basil 2 tablespoons chopped parsley 1 cup. olive oil 1 cup. water salt freshly ground pepper

Directions:Preheat oven to 200 C in air and resistors . After you wash and clean the vegetables , cut the eggplant into 6 pieces , the zuccini at 6 ( like large bites ) , 4.5 cm ( will shorten cooking ) , at 4 tomatoes and potatoes as aubergines , at 6 . Put vegetables tossed in a deep pan 34 or 36 cm Grind the garlic with olive oil in a blender and pour the food , salt and pepper and sprinkle with herbs .Mix by hand or with two spoons . Pour water (do not think it is not enough,the vegetables will pour their own liquids too ) . Place the pan in the preheated oven and bake 40-45 in the first half hour , covered ,then opened.The briam is a dish served warm or at room temperature . Accompany it with a nice slice of crispy bread .
