Inocuidad de Alimentos Irradiados…

•La inocuidad es el factor mas importante. – Ya la inocuidad esta bien establecida (de hecho hay

acuerdo unanime entre la communidad cientifica).

•Sin embargo, de vez en cuando hay preguntas.

•Es muy importante que estemos comodos con los estudios y procesos que han determinados las conclusiones sobre la inocuidad y salubridad de alimentos irradiados.

These two approaches complement each other and together constitute an extremely powerful paradigm for determination of toxicity in foods.

Metodo Funcional (Functional approach)– Estudios de alimentacion usando varios tipos de animales de

laboratorio (Feeding studies, using several species of test animals) • Para determinar la existencia de toxicidad manifestado como un

perjuicio funcional (Presence of toxicity revealed as a functional impairment)

• Plazo corto, plazo largo/ una variedad de indicadores de la situacion de salud (Short term, long term / Variety of indicators of health status)

– Pruebras en vitro (In vitro tests)• Ames, y otros (and others)

– Epidemiologicos/Epidemiological• Datos derivados de pruebas con humanas son escasos (Data for

Resultados de la aproximacion quimica

•Aproximadamente 100 productos radioliticos se han identificado en carnes irradiadas.

– La mayoria son identicos a compuestos naturalmente presentes en alimentos.

– Las concetraciones en general estan en rango de ppb , a dosis de hasta 60 kGy.

•Estos datos fueron formalmente evaluados por un comite especial de expertos, extraido de la Federacion de Sociedades Americanas para la Biologia Experimental (FASEB)

– Informe AD-A045716 (1977, Supplement in 1979).

harbour levels of glycoalkaloids which are lethal to humans. Similarly, cultivars resistant to insects can have very high levels of these compounds.

genotoxic Cocoa powder is ~2 % theobromine. Humans may consume

hundreds of mg per day.

Estimate that human dietary intake of "nature's pesticides" is likely

Una perspectiva del mundo nuestro…(after Ames et al)

•Approximatente la mitad de todos los quimicos que han estado investigados (ambos sinteticos y natural) resultan positivas en pruebas con ratas para la carcinogenicidad.

•Favor en cuenta que en una taza de café.. ……

– Hay mas que 1000 quimicas…– De ellos solamente 22 han sidos investigados

para la carcinogenicidad…– De aquellos, 17 son carcinogenes

• Hay 10 mgm de carcinogenes (naturales) dentro de una taza de café. Esta cantidad de carcinogenes es mas que una persona consume de residuos de pesticidas durante un ano completo.

Entonces, por que estamos vivos todavia?

•Las pruebas se llevan acabo con dosis muy altas de un agente de prueba.

•La exposicion humana es generalmente muy baja.•Afortunadamente para nosotros las pruebas con

dosis altas no son buenas predictoras del comportamiento con dosis bajas. O sea el problema no es con el café, si con las pruebas con altas dosis.

– Muchas sustancias son letales a muy altas dosis, y son perjudiciales a altas dosis…pero pueden ser beneficiosas a dosis bajas.

Segun Dr. Borsa:“In this context any compound present at ppb levels in irradiated foods, on a background of natural carcinogens and mutagens present at ppm or higher levels in different foods, is unlikely to be of any toxicological significance.”

Resumen de Dr. Barna Barna, J. 1979. Compilation of bioassay data on the wholesomeness

of irradiated food items. Acta Alimentaria 8(3):205-315

Mas que 1200 estudios pubicados han sido compilado y revisada.

Conclusiones de Dr. Barna:“ Los efectos stimulativo y adverso sobre el

consumo de alimentos iradiados no son consistente, unambiguo ni reproducible.

Tampoco, los efectos especificos relativo a cualquier grupo de comidas o dosis de irradiacion no puedan ser.” (Neither can specific effects be related to any given food, group or level of radiation dose.”

i.e. any ‘effects’ observed most probably represent random variations in the measurements (comment by Dr. Borsa)

ESTUDIO RALTECHObjectivo:

– Determinar la inocuidad y salubridad de carne de pollo esterilizada por irradiación.

Características del Estudio/Background:– Comenzó en 1976 y durór 7 años– US ARMY Medical Department / más tarde trasferida al USDA– Costó 8 millones de dólares– 20 investigaciones separados que examinaron los efectos del

consumo de carne de pollo esterilizada por irradiación, con rspecto a:

• Calidad nutricional• Teratogénesis• Carcinogénesis• Reproducción• Toxicidad genética• Toxicidad general

– Especies estudiadas: perros, ratas, ratones, hamsters, conejos, moscas de las frutas.

• Magnitud del esfuerzo• Se emplearon 230.000 pollos enfriados eviscerados/

300.000 kg de carne de pollo.• Involucró a muchos laboratorios e investigadores

Toxicidad Genética

• Se usaron cuatro (4) pruebas:– Prueba Ames (Salmonella typhimurium)– Mutaciones letales recesivas

ligadas/relacionanadas a genes del sexo( Drosophila melanogaster)

– Translocación hereditaria para identificar mutaciones (ratas)

– Mutaciones letales dominantes (Dominant lethal mutations (ratas)

Conclusión:Las cuatro pruebas confirmaron que no había ninguna actividad mutagénica resultante de la carne de pollo irradiada

Favor de notar que las dosis de irradiacion usadas en esas pruebas fueron alrededor de 20 veces más poderosas que las utilizadas para pasteurizar carnes de vaca y de pollo.

Genotoxicity of 2-dodecylcyclobutanone (2-DCB)

• Public Citizen, an anti-technology group cites recent European research to make claims that are not scientifically supported.

• In the study, rats were fed extremely high levels of chemicals that are found in trace amounts in irradiated foods.

• Public Citizen misrepresents the findings and attempts to use the research to indict the safety of irradiated food, despite the explicit warning of the study's authors not to do so.

The European study's author, Dr. Henry Delincee of the Federal Research Center for Nutrition in Karlsruhe, Germany, says:

• "Public Citizen uses my research as evidence in their allegations against food irradiation.

• However, this obvious case of producing distrust among consumers regarding irradiated food in school lunches puzzles me.

• The statements of Public Citizen are excessively alarmist. This case is founded on mere allegations and not on scientific arguments."

USDA 2-DCB Conclusions• 2-DCB did not induce mutations or genomic

rearrangements in three separate genotoxicity assays.

• Irradiated foods, which contained 2-DCB, did not cause tumors (cancer) in rats, mice, dogs, and

rabbits in multigenerational feeding studies.1

• Hundreds of toxicology studies, over a 45 year period, and review of those studies by international regulatory agencies, affirm that irradiated foods do not cause cancer.2

Irradiated Meat: To Your Health

E. coli outbreaks kill. Irradiated meat doesn't. So belly up to the burger bar at stores that sell it.

Editorial Opinion (December 4, 2002)

The risks of irradiation are only "unknown" because, after years of study, scientists haven't found any. Weigh that against the known risks of contracting bacterial illnesses.
