INTRODUCTION
“Do you like potato chips?” – I’ve asked a lot of people I met and
most of the answers were “YES”. What about you?
If you say “Yes”, I want to know that: Do you know whether
potato chips are good or not for your health? How do people make them in
the factories? How were potato chips invented?.... I think just a few of you
know the answers. We often eat anything we like but know very little
about it.
Nowadays, we think that potato chip is a popular snack food in the
world. In Vietnam, it’s getting more and more popular. That is the reason
we make this report about potato chips - to give you some information
about potato chips – a delicious snack food. In the report, we’ll mention
some information about: the history, the advantages and disadvantages of
potato chip, and specially the manufacture of potato chip,….so that you
can wonder how much potato chips you should eat a day or at least, get
something new about potato chips.
POTATO CHIPI- THE INVENTION (THE HISTORY OF DEVELOPMENT)
1. The inventor: George Crum
- Criteria: first to invent.
- Birth: 1822, Saratoga Lake, New
York.
- Death: 1914, Saratoga Lake, New
York.
- Nationality: American.
2. The situation:
According to snack food folklore,
the potato chip was invented in 1853
by a chef named George Crum at a
restaurant called Moon's Lake House
in Saratoga Spring, New York.
Angered when a customer returned
his French fried potatoes to the
kitchen for being too thick, Crum
sarcastically shaved them paper thin,
fried them to a crisp and sent the
plate back out. The customer,
whoever he was, and others around
him, loved the thin potatoes. After
that, potato chip was developed and
become more and more popular in all
over the world.
3. Milestones:

gian về thức ăn nhanh thì khoai tây

khi một khách hàng cho khứ hồi đĩa
khoai tây chiên của mình trở lại nhà
bếp vì cho rằng những lát khoai tây quá
dày. Một cách chế nhạo, Crum cắt
chúng mỏng như tờ giấy và cho mang
đĩa khoai tây trở lại bàn. Thật bất ngờ,
người khách ban nãy, và cả những
người xung quanh ông ta nữa, rất thích
những lát khoai tây mỏng này. Sau sự
kiện này, chip khoai tây bắt đầu được
phát triển và ngày càng trở nên phổ
biến trên toàn thế giới.

II- THE MANUFACTURE OF POTATO CHIP
1.Preparation:
When the potatoes arrive at the
plant, they are examined and tasted for
quality. A half dozen or so buckets are
randomly filled. Some are punched
with holes in their cores so that they
can be tracked through the cooking
process. The potatoes are examined for
green edges and blemishes. The pile of
defective potatoes is weighed; if the
weight exceeds a company's preset
allowance, the entire truckload can be
rejected.
The potatoes move along a
conveyer belt to the various stages of
manufacturing. The conveyer belts are
powered by gentle vibrations to keep
breakage to a minimum.

belt to the automatic peeling machine.
After they have been peeled, the
potatoes are washed with cold water.
2.Slicing:
The potatoes pass through a
revolving impaler/presser that cuts
them into paper-thin slices, between
0.066-0.072 in (1.7-1.85 mm) in
thickness. Straight blades produce
regular chips while rippled blades
produce ridged potato chips.
The slices fall into a second cold-
water wash that removes the starch
released when the potatoes are cut.
Some manufacturers, who market their
chips as natural, do not wash the starch
off the potatoes.
3.Color treatment:
If the potatoes need to be
chemically treated to enhance their
color, it is done at this stage. The
potato slices are immersed in a solution
that has been adjusted for pH,
hardness, and mineral content.
4.Frying and salting:
The slices pass under air jets that
remove excess water as they flow into

Potatoes arrive daily at
manufacturing plants. After they are
checked for quality, they are stored at a
constant temperature unfil they are
processed into potato chips. Some
manufacturers treat the potatoes with
chemicals to improve the color of the
final product. To make the chips,
potatoes are fried in either corn oil,
cottonseed oil, or a blend of vegetable
oils. Flake salt rather than crystal salt is
used to season the chips.
Potato chips that are to be flavored
pass through a drum filled with the
desired powdered seasonings.
5.Cooling and sorting:
At the end of the trough, a wire
mesh belt pulls out the hot chips. As
the chips move along the mesh
conveyer belt, excess oil is drained off
and the chips begin to cool. They then
move under an optical sorter that picks
out any burnt slices and removes them

6.Packing:
The chips are conveyed to a
packaging machine with a scale. As the
pre-set weight of chips is measured, a
metal detector checks the chips once
more for any foreign matter such as
metal pieces that could have come with
the potatoes or been picked up in the
frying process.
The bags flow down from a roll.
A central processing unit (CPU) code
on the bag tells the machine how many
chips should be released into the bag.
As the bag forms, (heat seals the top of
the filled bag and seals the bottom of
the next bag simultaneously) gates
open and allow the proper amount of
chips to fall into the bag.
The filling process must be
accomplished without letting an
overabundance of air into the bag,
while also preventing the chips from
breaking. Many manufacturers use
nitrogen to fill the space in the bags.
The sealed bags are conveyed to a
collator and hand-packed into cartons.
Some companies pack potato
chips in IO cans of various sizes. The
chips flow down a chute into the cans.

Potato chip is one of the most popular
snack foods in the world. Potatoes
themselves naturally contain nutritional
values which are important to human
proteins, potatoes also contain a large
number of inorganic salts, such as
phosphorus, iron, carotene, 16 kinds of
nutrients and vitamins. However, after the
processing phase (deep fried oil at high
temperatures), most of its nutritional values
disappeared. However we can’t deny the
fiber components in potato chips. It’s an
ideal power temporary supply.

Khoai tây chíp là một trong những thực
phẩm ăn nhẹ phổ biến nhất thế giới. Bản
thân khoai tây tự nhiên chứa các giá trị
quan trọng đối với protein của con người,
khoai tây còn chứa một số lượng lớn các
muối vô cơ như phốt pho, sắt, carotene, 16
loại chất dinh dưỡng và vitamin. Tuy
nhiên, sau giai đoạn chế biến (chiên ngập
dầu ở nhiệt độ cao) thì các giá trị dinh
dưỡng kia không còn nữa. Mặc dù vậy ta
không thể phủ nhận thành phần chất xơ và
là nguồn cung cấp năng lượng tạm thời lý
tưởng của chip khoai tây.

The harmfulness of potato chips:
- Eating potato chips every day can cause
prone type 2 diabetes and obesity.
A 35g packet of potato chips contains
about 2.5 teaspoons of oil. So, it takes us
one year to absorb about 5 liters of oil if
using it every day. Salt contained in potato
chip can affect kidney function while sugar
in that snack food can cause diabetes. .

dẫn đến đầy bụng, chán ăn.
IV- THE TREND OF DEVELOPMENT IN THE FUTURE
The viability of potato chip products
Potato chip originated from the United
States over a century ago. George Crum -
an Indian kitchen-helper just wanted to
rouse the others by processing an odd food
but accidentally it really conquers the
world.
In different countries, the "taste" of
potato chip is different. In British, French,
Switzerland, potatoes chips is saltier; in
Denmark potato chips with scent is more
popular; Hungarian like to mix potato chips
with cheese, but German prefer to mix it

Chip khoai tây bắt nguồn từ nước Mỹ
cách đây trên 1 thế kỷ. George Crum-một
người phụ bếp da đỏ chỉ vì muốn chọc tức

sau này đã thực sự chinh phục thế giới.
Ở mỗi quốc gia khác nhau thì cái "gu" của
chíp khoai tây cũng khác nhau. Anh, Pháp,
Thuỵ Sĩ thích vị mặn, Đan Mạch thì phải
có thêm mùi hành, Hungari thì phải trộn
thêm pho mát. Còn ở Đức thì chíp khoai
tây phải trộn thêm xốt Thái chua - cay.

In Vietnam, the potato chip is popular
nowadays. One of the most famous
companies is Vietnamese PEPSICO.
High-class Potato Snack Poca is known as
a result of a long-term investment program
of Vietnamese PEPSICO in which the
snack was made from fresh potatoes
cultivated in Vietnam to ensure the flavor,
nutrition and freshness of the products.
Being planned in 2005, up to March 2006
Vietnamese PEPSICO has cooperated with
the Institute of Agricultural Science and
Technology in South Vietnam and the
Research Center of Potatoes, Vegetables
and Flowers in Dalat to develop potato
races used for industrial processing in Lam
Dong province.

At the moment, besides the development of
potato chip products of Vietnamese

Tại Việt Nam, các sản phẩm chip khoai
tây đã không còn lạ lẫm nữa. Công ty đi
đầu phải nhắc tới PEPSICO Việt Nam.
Snack Khoai tây Poca cao cấp là kết

V- THE CRIPT OF THE VIDEO
They say chips were invented when
someone sent back his fried potatoes
complaining the slices were too thick, the
insulted chef cut them paper thin and fried
them to a crisp. So pride, not necessity, was
the mother of this invention.
Potato chips have soon become the
consummate snack food. They have to be
made with fresh potatoes no more than
twenty-four hours old. Otherwise, the chips
will have black spots.
After a brushing machine removes the dirt,
the potatoes travel along a water channel to
a peeler. They’re tumbled around and
around against a peeler and race of rollers
until the skins come off. This machine can
peel twelve thousand pounds of potatoes
per hour.
Next stop a machine that separates the
potatoes by sizes. The small ones
fall below to be rinsed. The large ones stay
on top to be cut. Then they fall down to the
rinser, too. Next, the potatoes go through
slicers. The slicer’s blades are adjustable.

lại phía trên và bị cắt ra. Sau đó, chúng
cũng rơi xuống sàn rửa phía dưới. Kế tiếp,

They take corn flower and mix it with
water. An extrusion machine forces the
mixture through round holes when a snack-
like stream comes out the other end, a knife
cut them into pieces. The heat in the
machine then causes the flower in those
pieces to explode creating slightly curl
pops. They spray those pops with a mixture
of canola oil, powder cheese and natural
colorings; a revolving drum mixes it all
together.
Back in the chip’s department, they spray
the potato chips with powder seasonings
with simulating flavors just as barbecue or
salt and vinegar. The next machine
separates and weighs the portion to be
packaged. The chips are dropped into bags
that are then heat sealed. It’s taken about 50
minutes to go from raw potato to potato
chips. How lot longer than it takes to eat
them?
