aLS JoHanneS baur im JaHr 1838 Sein HoteL «baur» eröffnete, läutete er damit den Übergang vom traditionellen Gasthofwesen zur modernen Hotelindustrie ein. Stellten frühere Reisende keine allzu grossen Ansprüche an ihre Unterkunft, änderte sich dies spätestens mit dem Siegeszug der Eisenbahn. der «neuzeitliche» Reisende war ungleich anspruchs-voller als seine Vorgänger, die in Landauern und Kutschen anreisten, jetzt gab man sich nur noch mit dem neuesten und Besten zufrieden. im Laufe der Jahre entwickelt sich aus dem Herbergswesen ein neuer industriezweig, der unter dem namen «Hotellerie» zu einer der wichtigsten Branchen der Schweizer Volkswirtschaft avancierte.

nach der Volkserhebung im Jahre 1830 gelang es den siegreichen demokraten und Liberalen die politische Vorherrschaft in Zürich zu übernehmen. im Rahmen der angestrebten Erweiterung beschloss man zusam-men mit Bürgern und Kaufmannschaft die alten wehranlagen aus dem 17. Jahrhundert abzureissen. Schon 1833 begann man mit der Abtragung der alten Schanzen. Auf den freigewordenen flächen setzte sofort eine rege Bautätigkeit ein und drei jahre später zählte man bereits 500 gleichzeitig begonnene

When Johannes Baur opened his hotel «Baur» in 1838, he was in effect heralding the tran-sition from traditional inns and guesthouses to the modern hotel industry. Travelers in the past had not been too fussy about the accommodation that await-ed them. That, however, all changed with the triumph of the railroad. «Modern» travelers were far more demanding than their predecessors, who had custom-arily arrived in horse-drawn carriages. All of a sudden, only the newest and best was good enough. Over the years, the tradition of hostelry thus sprouted a new branch, referred to as «hoteliery», that grew to become one of the most important lines of business in the Swiss economy.

Following the uprising of 1830, the victorious Democrats and Liberals became the dominant politi-cal power in Zurich. Ever keen to expand, the city, its populace and the merchant classes decided to tear down Zurich‘s 17th-century fortifications. Workmen began carting away the old redoubts as early as 1833; and the prime building land freed up in this way became a hive of activity. Three years on, the official count numbered 500 new construction projects all in progress concurrently. Though many private clients

neubauten. neben den vielen privaten Bauherren sorgte vor allem der öffentliche Sektor für diesen frü-hen Boom, an erster Stelle ist hier die Münsterbrücke zu erwähnen, die dem Stadtbild noch heute zur Zierde gereicht. Gleichzeitig wurden der Münsterhof und der neumarkt (heute Paradeplatz) durch eine breite Strasse miteinander verbunden, an deren Südseite ein stattliches Postgebäude (heute Zentralhof) errichtet wurde. durch die enorme Bedeutung, die diesem Gebäude seinerzeit zukam, verschob sich das städtische Zentrum gleichsam über nacht vom rech-ten auf das linke Limmatufer. Schon träumten einige Entrepreneure, unter ihnen Johannes Baur, von einem Boulevard, der den fröschengraben ersetzen sollte, doch bis zur Entstehung der Bahnhofstrasse war es noch einige Jahrzehnte hin.

Johannes Baur war in den 1820er Jahren als Bäckergeselle aus dem österreichischen Vorarlberg nach Zürich gekommen, um hier 1830 die Speisewirtschaft «Zum Kirschbaum» zu betreiben. Klug, fleissig, umgänglich und gewandt, verfolgte er mit offenen Augen alles, was um ihn vor sich ging, lebte sich in die Verhältnisse Zürichs ein und schloss in seiner wirtschaft viele wichtige Bekanntschaften. Zusammen mit dem jungen und talentierten

naturally got involved, it was the public sector in par-ticular that drove this early boom. The resultant Münster Bridge, for example, graces the city land-scape to this day. At the same time, a broad new road-way created a link between the Münsterhof and the Neumarkt (now the Paradeplatz), while an imposing post office building (now the «Zentralhof») was erect-ed on the road‘s south side. Such was the import of this stately edifice that Zurich‘s fulcrum effectively shifted overnight from the right bank of the Limmat to the left bank. Eager entrepreneurs – among them Johannes Baur – already envisaged a grand boulevard to replace the Fröschengraben fortification trench. Several decades would elapse, however, before the Bahnhofstrasse finally took shape.

In the 1820s, Johannes Baur, a baker by trade, returned from Vorarlberg, Austria, to run the «Zum Kirschbaum» inn in Zurich. Intelligent, amiable, hard-working and adroit, Baur kept a keen eye on the developments unfolding around him, familiarized himself with how Zurich ticks and, in his hostelry, made many important new acquaintances. Together with talented young architect Daniel Pfister, he finally set about planning his first hotel right opposite the new post office. The «Mercantile Committee» quickly

Architekten daniel Pfister macht er sich schliesslich daran, gegenüber der neuen Post sein erstes Hotel zu planen. Schnell erhält er die Zustimmung des «Kaufmännischen Ausschusses» und der Bau kann beginnen – mit drei Auflagen: das Hotel soll äusser-lich dem neuen Postgebäude entsprechen, es dabei keinesfalls überragen und es muss zur gleichen Zeit bezugsbereit sein.

nach einigen Anstrengungen standen dem Bauherren schliesslich 257‘000 alte Schweizer franken zur Verfügung und am 24. dezember 1838 machte sich Johannes Baur mit der Eröffnung seines Hotels ein besonderes weihnachtsgeschenk.

Am vierten Tag nach der Eröffnung zählte die Gästeliste gerade einmal 11 Personen. Auch damals stellte ein Luxushotel bereits Anforderungen an die Geldbörse und einige Traditionsgasthöfe waren bei den Reisenden weiterhin sehr beliebt. doch schon bald sprach sich der neuzeitliche Luxus des Hotel Baur in ganz Europa herum und sie kamen aus aller Herren Länder um hier zu nächtigen. daran änderte auch der Zwischenfall vom 6. September 1839 nichts, als tausende gläubige Zürcher bewaffnet und Psalmen singend vor dem Hotel den Aufstand probten. Beim anschliessenden

granted its approval and cleared the way for construc-tion work to begin – on three conditions: The hotel had to reflect the same style as the new post office building; on no account was it to be taller than the latter; and it must be ready to open at the same time. A concerted effort ultimately placed 257,000 old Swiss francs at Baur‘s disposal. Thus it was that, on December 24, 1838, Johannes Baur gave himself a very special Christmas present: the opening of his first hotel.

On its fourth day in business, the guest list numbered a grand total of eleven people. Even in those days, a luxury hotel was not easy on the wallet; and several traditional guesthouses retained their popularity among travelers. Very soon, however, word of the modern standard of luxury offered by the Hotel Baur spread throughout Europe. From then on, people came from far and wide to spend the night here. An incident on September 6, 1839, when thousands of devout locals, armed and singing songs, tried their hand at revolution right outside the hotel did nothing to dampen travelers‘ enthusiasm. In the ensuing skir-mish with government troops, 30 people were injured or lost their lives. In the 1840s, the Hotel Baur undis-putedly became the top address in Zurich. Nobility

das Hotel Baur wird in den 1840er Jahren zur unan-gefochten ersten Adresse der Stadt. nicht nur die Adligen aus Europa steigen ab, auch die in der Schweiz akkreditierten Botschafter auswärtiger Mächte machen das Baur zu ihrer temporären Residenz. ihnen folgen die Künstler, allen voran franz Liszt.

der Erfolg macht Johannes Baur mutig, und im Jahr 1844 eröffnet er sein zweites Hotel, der nahe See steht Pate bei der namensfindung und so entsteht das Baur au Lac. Zunächst eher eine Pension für inkogni-to reisende Gäste entwickelt sich auch dieses Projekt schnell zu einem Erfolg und wird im Lauf der Jahre zu einem eigenständigen Hotel ausgebaut.

from across the length and breadth of Europe sojourned here. Foreign ambassadors dispatched to Switzerland made the Baur their temporary abode. And artists too followed suit, with Franz Liszt leading the way.

Emboldened by his success, Johannes Baur opened his second hotel in 1844. The nearby lake lent its name to the venture as the Baur au Lac came into being. Initially more of a boarding house for guests traveling incognito, this project too quickly emerged as a huge success and, over the years, gradually expanded to become an independent hotel.

In 1859, Johannes Baur had a hand in the writing of world history. The Battle of Solferino had gone badly for the Austrians, with the result that Franz Josef I and Napoleon III signed a ceasefire agreement in Villafranca. Yet the peace treaty on which the cease-fire was based was actually hammered out in Zurich. The French, Austrian and Sardinian envoys arrived on August 6. The conference proper began on August 8, after Zurich‘s local government had staged an official welcome on the intervening day. The Austrians and French lodged at the Baur au Lac, the Sardinians at the Baur en Ville. Quite apart from doing a roaring trade (the negotiations dragged on from August 8 to November 10), Johannes Baur thus had the satisfac-tion of welcoming every participant in the conference as his guest. Negotiations for the «Peace of Zurich», in which the fate of Venice played a major role, took place at the Baur en Ville. Other than the officials involved in the proceedings, the only person permit-ted to enter the conference room was Johannes Baur.

Hence, political correspondents bombarded him with all kinds of questions, touching on themes such as the future of Venice. Intelligent and quick-witted as ever,

spielte, fanden im Baur en Ville statt. der einzige aus-ser den Offiziellen, der den Konferenzsaal betreten durfte, war Johannes Baur.

dies war denn auch der Grund, weshalb er von den politischen Berichterstattern mit fragen aller Art, so auch über die Zukunft Venedigs, geradezu bestürmt wurde. Klug und witzig antwortete er, von Venedig wisse er nichts, aber soviel sei sicher, dass sein Landsitz «Venedigli», auf dem eine beträchtliche Hypothek lastete, nach Ablauf der Konferenz abbe-zahlt sei.

in der nächsten Umgebung des Baur en Ville war es Ende der 1850er Jahre zu einer Veränderung gekom-men, als an Stelle des stattlichen Bürkli‘schen Herrensitzes «zum Tiefenhof», ein gewaltiger nutzbau, der heutige «Tiefenhof» erstand, dessen günstigst gelegene Ecke sich der kluge Zuckerbäcker david Sprüngli rechtzeitig zu sichern wusste. Gerade so wie Johannes Baur war auch david Sprüngli zuvor an der Marktgasse sesshaft und betrieb der Baurschen Speisewirtschaft gegenüber eine Conditorei. Und gerade so wenig wie Baur hatte Sprüngli seinen Schritt zu bedauern. Aus der kleinen Conditorei ist im Laufe der Jahrzehnte ein Grossbetrieb geworden, der

In the immediate vicinity of the Baur en Ville, a change came about at the end of the 1850s when the stately Bürkli manor «Zum Tiefenhof» was replaced by a towering utilitarian edifice, the «Tiefenhof» that still stands to this day. At the same time, smart confec-tioner David Sprüngli was quick to get his hands on the best corner of the new building. Like Johannes Baur, Sprüngli too had previously inhabited the Marktgasse, running a confectionery opposite Baur‘s restaurant. Another similarity with Baur was that Sprüngli too never had reason to regret his move. Over the decades, his small confectioner‘s shop grew to become a major enterprise. Sprüngli‘s «läckerli» cookies alone earned the company a reputation that extends far beyond the borders of Switzerland.

Johannes Baur and his son Commander Theodor Baur, the later owner of the Baur au Lac, received a special kind of accolade in 1859. Baur Sr. had been in posses-sion of land tenure in Zurich since May 25, 1836,

allein schon seinen «Züri-Läckerli» einen Ruf zu ver-danken hat, der weit über die Grenzen des Landes hinaus geht.

Eine Auszeichnung besonderer Art kam Johannes Baur und seinem Sohn Kommandant Theodor Baur, dem nachmaligen inhaber des Baur au Lac, im Jahre 1859 zu. Obwohl Johannes Baur seit dem 25. Mai 1836 das zürcherische Landrecht besass, somit Schweizer und Zürcher Kantonsbürger war, besass er lediglich das Gemeindebürgerrecht von Rheinau. Um das Bürgerrecht der Stadt Zürich scheint er sich nie beworben zu haben. nun aber erhielten Vater und Sohn das stadtzürcher Bürgerrecht geschenkt, eine wohlverdiente Ehre, wenn man bedenkt, welch her-vorragenden Anteil beide an der mächtigen Entwicklung Zürichs zur fremdenstadt genommen hatten. im Jahr 1860 wurden Vater und Sohn gleich-zeitig in die Zunft «zur waag» aufgenommen und traten damit in engere Beziehungen zu der alteinge-sessenen Bürgerschaft.

which made him a citizen of both Switzerland and the Canton of Zurich. However, he only had communal citizenship of Rheinau. Apparently, he had quite sim-ply never bothered to apply for the right of citizenship in the city of Zurich. Now, however, precisely this citi-zenship was bestowed as a gift on father and son alike – a thoroughly deserved honor, considering the out-standing service the two had rendered to Zurich‘s dynamic emergence as a destination for visitors. In 1860, father and son were thus accepted in the guild «Zur Waag» – and suddenly found themselves able to forge closer relationships with the city‘s gentry and elders.

Three years later, the now 67 year-old decided to with-draw from the active running of his business. The time was ripe for Baur and his wife to retire to the idyllic beauty of «Venedigli», the couple‘s country home. «Retirement» being a relative term in Johannes Baur‘s case, however: Attached to a sizeable farm, Baur‘s rural abode opened up a new line of work, given that vegetable crops from his land were intended exclu-sively for his two hotels. The tireless worker died only three years later, on November 24, 1865, having bare-ly reached the age of 70. His wife Anna, née Anna Knechtli von Hottingen, followed him two years later.

Among the waiters at the Baur en Ville, one young German, from Gedern near Darmstadt, had been serv-ing the hotel‘s guests since the end of the 1840s. Christof Ziesing‘s eager diligence and confident man-ner had quickly caught the eye of his employer, with the result that the handsome, professional young man rose to the rank of head waiter. Yet such was his poise and assurance in any and every situation that Johannes Baur increasingly began to see him as his deputy. Ziesing had clearly got into Baur‘s good books; and Baur‘s daughter had equally clearly taken a liking to the charming, intelligent young man. The energetic daughter of the landlord therefore did not hesitate to marry the head waiter who was two years her junior – a decision she, too, never had cause to regret, and a decision that established Ziesing as the new proprietor.

The road ahead of Christof Ziesing may have been much smoother than it had been for his father-in-law. Notwithstanding, the new man at the helm spared him-

Unter den Kellnern des Hotels Baur en Ville befand sich seit Ende der 1840er Jahre ein junger Hesse, Christof Ziesing aus Gedern bei darmstadt, der sich durch seinen Eifer und durch sein gewandtes Auftreten alsbald die Gunst seines Prinzipals erworben hatte. Aus dem hübsch gewachsenen, gut repräsentierenden jungen Manne wurde später ein Oberkellner, der sich mit den Verhältnissen derart gut zu anrrangieren wus-

ste, dass ihn Johannes Baur mehr und mehr als seinen Stellvertreter betrachtete. Aber nicht nur bei seinem Chef, auch bei dessen Tochter hatte der charmante, kluge Ziesing einen Stein im Brett. Ohne Zögern ent-schloss sich denn auch die sehr energische wirtstochter, den um zwei Jahre jüngeren Oberkellner zu heiraten, ein Schritt, den sie nicht zu bedauern hatte.

wenn schon Christof Ziesing seinen weg ungleich geebneter vor sich fand, als dies bei seinem Schwiegervater der fall war, scheute er keine Mühe und auch keine Kosten, um sein Hotel auf der Höhe zu halten. denn abgesehen von dem von seinem Schwager Theodor erstklassig geführten Baur au Lac waren verschiedene Konkurrenten erwachsen. dennoch vermochte das Baur en Ville seine Stellung zu behaupten.

die Entstehung der Erfolgsgeschichte «Bahnhofstrasse», die zu erleben Johannes Baur versagt blieb, kam sei-nem Schwiegersohn Ziesing zugute. An Stelle der heutigen Prachtstrasse befand sich bis zum Jahre 1864 ein traulicher Stadtgraben, der seinen namen – fröschegraben – seinen Bewohnern verdankte. Zu beiden Seiten dieses, von einem schmalen fahrstreifen begleiteten Grabens, standen inmitten grosser Gartenanlagen behäbige Patrizierhäuser, deren Besitzer es sich leisten konnten, den Gang der dinge ruhig abzuwarten. der eigentliche Schöpfer des grosszügigen Projekts, das seine Krönung später in den Quaianlagen erhielt, war Stadtingenieur dr. med.

And both trouble and expense were the order of the day: Quite apart from the Baur au Lac, so excellently run by his brother-in-law Theodor, a number of other competitors were springing up too. The Baur en Ville nevertheless managed to defend its position.

Johannes Baur did not live to see the beginnings of the Bahnhofstrasse‘s success story, but his son-in-law did. Until 1864, a sleepy little urban canal – dubbed Fröschegraben (the «Frog Canal») after its inhabitants – filled the site today occupied by the magnificent boulevard. A narrow strip of road ran parallel to the canal, while rather dated patrician houses in spacious grounds lined either side. The owners of said houses had the wealth and the leisure to unhurriedly wait for events to run their course. Civil engineer (and medical doctor) Arnold Bürkli was the brains behind this major project, the crowning glory of which would ultimately be the attractive quayside. The transition from canal to street – and above all the leap from street to busy boulevard – took time, however. The first person who took up the challenge to erect a modern commercial and residential facility on the newly built street was visionary businessman and photographer Johannes Ganz, whom it is therefore fair to identify as the pioneer of the Bahnhofstrasse. A start had thus been made; and Ziesing had the satisfaction of seeing the market value of his hotel double in the space of a few years. Completely free of

h.c. Arnold Bürkli. Bei alledem vollzog sich der Übergang vom Graben zur Strasse, zumal aber von der Strasse zum belebten Boulevard, nicht allzu rasch. der erste, der es wagte, an der neuerstellten Strasse ein modernes Geschäfts- und wohnhaus zu bauen, war der weitsichtige Geschäftsmann und Photograph Johannes Ganz, der füglich als der Pionier der Bahnhofstrasse zu bezeichnen ist. Ein Anfang war nun gemacht und Ziesing blieb die Genugtuung, dass sich der Verkehrswert seines Hotels wenige Jahre später verdoppelt hatte. Gänzlich schuldenfrei verkaufte er dasselbe im Jahre 1872 um den Betrag von fr. 950‘000 an ein Konsortium und bezog mit seiner familie das neu erstellte Schläpfer-Eschersche Haus, in dem ihm noch 16 schöne Jahre der Musse beschieden waren. Er starb am 16. September 1888 im Alter von 57 Jahren.

damit endete die Ära der familie Baur im Savoy. das Hotel wechselt in den kommenden Jahrzehnten öfter den Besitzer, mal sind es Konsortien auf der Suche nach Spekulationsgewinnen, mal sind es engagierte Hoteliers, wie die familien Brunner und Schwarz.

debt, he sold it to a consortium for the sum of CHF 950,000 in 1872. Ziesing and his family moved into the new Schläpfer-Eschersche building, where they enjoyed 16 more happy years of life and leisure. He died on September 16, 1888, aged 57.

Thus ended the era of Baur family ownership at the Savoy. In the decades that followed, the hotel frequently changed hands. Consortiums stepped in, ever eager for speculative gains. At other times, dyed-in-the-wool hoteliers such as the Brunner and Schwarz families took the reins. Ultimately, ownership was transferred to a stock corporation. Schweizerische Kreditanstalt (now Credit Suisse) acquired a stake in 1925 and steadily ramped up its holding in the years that followed. In the 1970s, the Savoy underwent a spectacular redevelopment. To preserve the building‘s traditional appearance, the façade was removed more or less stone by stone. The hotel was rebuilt from the ground up. Expert craftsmen then lovingly reconstructed the façade, ensuring that the Paradeplatz retained its architec- tural figurehead.

Since 1985, Manfred and Christina Hörger have suf-fused the Savoy Baur en Ville with their own very personal style. Thanks to their efforts, the Savoy has carved out a regular slot among the ranks of Switzerland‘s leading luxury hotels. Investments in the millions have been channeled into renovating the Restaurant Baur and the Savoy Bar en Ville – the place to meet in the heart of the city. The magnificent ball-room has been given a fresh face, the lobby com-pletely redesigned. And, by mid-2011, the exhaustive modernization of all rooms and suites too has been completed.

Schliesslich geht der Besitz in eine Aktiengesellschaft über. Ab 1925 steigt die Schweizerische Kreditanstalt, heute Credit Suisse ein, die ihr Engagement in den folgejahren stetig ausbaut. in den 1970er Jahren erlebte das Savoy eine spektakuläre Rekonstruktion. Um das traditionelle Erscheinungsbild zu erhalten wurde die fassade Stück für Stück abgetragen, dann wurde das Hotel von Grund auf neu gebaut. Schliess-lich stellten die Handwerker die fassade wieder her und der Paradeplatz behielt sein architektonisches Aushängeschild.

Seit 1985 prägen Manfred und Christina Hörger das Savoy Baur en Ville mit ihrem sehr persönlichen Stil. ihnen ist es gelungen, das Savoy stabil in der Riege der führenden Schweizer Luxushotels zu etablieren. Millionen-investitionen flossen in die Renovation des Restaurant Baur und die Savoy Bar en Ville, den Treffpunkt im Herzen der Stadt schlechthin. der herr-schaftliche festsaal wurde aufgefrischt und die Halle gar vollkommen neu gestaltet. Mitte 2011 kam die komplette Erneuerung sämtlicher Zimmer und Suiten zum Abschluss.
