The night of September 15th, on the eve of Mexican Independence Day, the whole na-tion joins together for a “Viva Mexico” remembering the historical figure of Miguel Hidalgo. A traditional Mexican celebration includes mariachi, fireworks, traditional clothing and, of course, plenty of delicious food!

Originally from the state of Puebla, Chile en Nogada is the star of a Mexican celebration, and here in Los Cabos it’s prepared particularly well at Mi Casa Restaurant. Traditionally, it consists of ground pork with dried fruit and is served with white sauce made with walnuts and cream. This dish represents the colors of the Mexican flag: green chile, white sauce and red pomegranate seeds that are used as a final touch.

Mole is a truly representative dish of the Mexican cuisine, and at Los Tres Gal-

los Restaurant the recipe goes back at least a couple of generations.

It takes around five hours to prepare this lavish sauce that includes a great variety of chil-ies, plantains, apples, cinnamon

and other 30 ingredients. It is usu-ally served with chicken, rice and black

refried beans. A feast for the palate!

Antonina Luján, better known as Doña Nina, has been selling tamales on the main square in San Jose for over 19 years. Originally from the state of Oaxa-ca, she’s earned the respect of the community thanks to the quality of her traditional tamales. Try rajas con queso (green peppers and cheese), carne en salsa roja (beef in red sauce) pollo en salsa verde (chicken in green sauce) or elote (sweet corn). For an extra kick, the homemade signature sauce is a must.

TOSTADAS

Mexican tostadas are a delicious and practical meal or snack. The preparation begins with a crispy tortilla on top of which you spread some refried beans, add chicken or meat, sour cream, shredded lettuce and requesón cheese. You can also add toppings of your choice such as spicy red or green sauce, pickled onions or pico de gallo. Try the tostadas on San José main square, they are simply delicious!

ESQUITES

One of the most popular Mexican street foods is esquite. Made with boiled corn kernels and lay-ered with mayonnaise, cotija cheese, and chili, this is a traditional all-time favorite. Don Crisóstomo Hernández, originally from Huatulco in the state of Oaxaca has been serving esquites from his cart in San Jose for over a decade.

Take Measurements. Measure the backsplash area, find the center of the room’s focal point along the backsplash and make a mark at the location. Hold the level along the mark, make sure it’s straight and draw a line.

Apply Mastic. Using the notched trowel, start applying mastic to the wall at the center line. Only ap-ply enough mastic for eight tiles so it doesn’t dry out.

Set the Bottom Tiles. Set the first tile at the bot-tom of your vertical centerline to the right side of the line. Leave just enough space between the tile and the countertop for a bead of caulk. Press the tile firmly against the mastic and then continue working from the centerline out. Place tile spacers to make sure the joints are uniform.

Cut. Once you reach an area like a switch box or near the cabinets, measure the area and mark the tile. Cut it using either a wet saw or a score-and-snap tile cutting tool.

Grout. Let the mastic dry overnight. Mix the grout according to the manufacturer’s instructions, then smear it in a diagonal sweeping motion across the tiles using a rubber grout float.

Clean. Once the grout has been applied, clean the wall with a sponge and water. Wipe it in a diagonal motion to avoid pulling the grout out of the joints. Wait 1 hour. Then, buff the tiles with a clean soft tow-el to remove the haze that developed on the surface.

How did you become involved in tHe fasHion world and wHere did your interest in Handbag design come from?I studied Marketing and Business Adminis-tration. However, while living in France, my home country, I worked with Louis Vuitton for a while. Later, when I started working with my husband, Eduardo Sánchez, in his jewelry busi-ness I decided to create a collection of handbags as a complementary line to his jewelry. In fact, in each one of my handbags I incorporate a coin which is the symbol of the Eduardo Sán-chez brand, a quality guarantee. I started from scratch in March 2013.

wHo and wHat is your inspiration?My inspiration is the contemporary wom-an who likes fashion and stays on top of current trends. Mexico and the Baja are also the inspiration for my new Fall-

Winter 2014-2015 Collection. It’s called “The stars over the Mexican Desert”. Each handbag will be named after a star. This is my way of representing the beauty of Mexico and what’s around us in each one of my creations.

wHat materials do you use in your designs?I use sheep and boa skin that I bring from France as well as antique coins. All my bags have interior lining and I make all of them by hand here in my studio. They are exclusive designs and there’s only one of each model. The two styles I make are handbag and clutch.

wHere can we find your Handbags?For the moment only at Eduardo Sán-chez shop at Flora Farm and online.

wHat’s your view of los cabos as a place to start a business?I think Los Cabos is a land of unlim-ited business opportunities. There are plenty of ideas that can be developed into successful business ventures either for the tourist of local markets. Los Ca-bos is noble but in order to succeed as an entrepreneur my advice is to work hard, be disciplined, patient and persistent,

because business takes time. You should also have a good customer service policy in place and have a clear vision for your company.

tell us How you ended up in los cabos?I used to come here on vacation. On one of those trips I met my now husband. At that time I studied in Barcelona and Eduardo in Italy and that’s how the love story began. Af-ter his time in Europe, he came back to Los Cabos and I followed nearly four years ago. We got married in France a few months ago.

Querido Gregory:

Ya eres el orgulloso dueño de un iPhone. Eres un chico de 13 años bueno y respon-sable y te mereces este regalo. Pero al aceptarlo, también aceptas las reglas y condiciones. Espero que entiendas que es mi deber educar y formar a un joven sano que pueda funcionar en el mundo y coexistir con la tecnología, sin ser regido por ella. Si no cumples con las siguientes condiciones, dejarás de ser propietario del iPhone.

1. Yo siempre sabré la contraseña.

2. Si suena el teléfono, contesta. Di ‘hola’. Sé educado. Contesta siempre, siempre, la llamada de mamá y papá.

3. Entrega el teléfono a mamá o a papá a las 7:30pm durante los días de escuela y a las 9:00pm durante el fin de semana. Permanecerá apagado toda la noche y se volverá a prender a las 7:30 de la mañana. Si no llamarías al teléfono fijo de alguien, porque pueden responder sus padres, tampoco llames o envíes mensajes de texto al celular. Respeta a las otras familias como te gustaría que nos respetaran a nosotros.

4. No te llevarás el iPhone al colegio. Habla con tus amigos en persona. Esta habilidad te ayudará durante toda tu vida.

5. Si el iPhone se cae, se golpea o se estropea, tú eres el responsable. Por lo tanto, asumirás los costos de la reparación. Para ello, ahorra dinero de tu cumpleaños o realiza otros trabajos: corta el césped o cuida niños. Si pasa, tendrás que estar preparado.

6. No uses el iPhone para mentir, hacer tonterías o engañar a otras personas. No te involucres en conversaciones que sean dañinas o dolorosas para los demás.

7. No envíes mensajes, correos electrónicos o digas nada a través del iPhone que no dirías en persona.

8. Nada de pornografía. Busca en la red solo información que compartirías abiertamente conmigo. Si tienes alguna duda sobre algo, pregúntale a una persona. De preferencia, a tu padre o a mí.

9. Apágalo o ponlo en silencio cuando te encuentres en lugares públicos. Especialmente en restaurantes, en el cine o mientras hablas con otra persona. No eres una persona maleducada, no dejes que el iPhone cambie eso.

10..No envíes ni recibas imágenes íntimas tuyas ni de otras personas. No te rías. Algún día

Si estás preocupado por la ‘adicción’ de tus hijos al uso de nuevas tecnologías, y cómo esto afecta a la dinámica familiar, no te preocupes, no estás solo. Existen algunas maneras, particularmente creativas y efectivas, con las que puedes tomar el control de la situación. Un ejemplo es el caso de Janell Burley Hof-mann, madre de cinco hijos y escritora exitosa quien, al regalarle su primer iPhone a su hijo Gregory de 13 años, lo hizo con un CONTRATO.

One idea that seems particularly cre-ative AND effective is how Janell Burley Hofmann, a young mother of five and successful author, approached the issue when her thirteen-year-old son, Gregory, got his first iPhone. 11. No tomes millones de fotos o vídeos. No hay necesidad de documentar todo. Vive tus propias experiencias. Quedarán guardadas en tu memoria para toda la vida.

4. It does not go to school with you. Have a conversation with the people you text in person. It’s a life skill.

5. If it falls into the toilet, smashes on the ground, or vanishes into thin air, you are responsible for the replacement costs or repairs. Mow a lawn, babysit, stash some birthday money. It will happen, you should be prepared.

6. Do not use this technology to lie, fool, or deceive another human being. Do not involve yourself in conversations that are hurtful to others.

7. Do not text, email, or say anything through this device you would not say in person.

8. No porn. Search the web for information you would openly share with me. If you have a question about anything, ask a person-preferably me or your father.

9. Turn it off, silence it, put it away in public. Especially in a restaurant, at the movies, or while speaking with another human being. You are not a rude person; do not allow the iPhone to change that.

10. Do not send or receive pictures of your private parts or anyone else’s private parts. Don’t laugh. Someday you will be tempted to do this despite your high intelligence. It is risky and could ruin your teenage/college/adult life. It is always a bad idea. Cyberspace is vast and more powerful than you. And it is hard to make anything of this magnitude disappear-ncluding a bad reputation.

11. Don’t take a zillion pictures and videos. There is no need to document everything. Live your experiences. They will be stored in your memory for eternity.

12. Leave your phone at home sometimes and feel safe and secure in that decision. It is not alive or an extension of you. Learn to live without it. Be bigger and more powerful than FOMO-fear of missing out.

13. Play a game with words or puzzles or brain teasers every now and then.

14. Keep your eyes up. See the world happening around you. Stare out a window. Listen to the birds. Take a walk. Talk to a stranger. Wonder without googling.

If you’re waiting for an important call, mention it in advance and be quick when you answer it. Then turn off your phone and put it away.

follow up. If you request quotes or information from several companies or service providers, respond to all of them, not only the one you picked. Out of courtesy, thank the person for their time and say you decided to go with another offer at this time. It only takes 30 seconds and makes a world of a difference in how you are perceived.
