lay-zeh) is definitely ‘sipping wine’ as is Eiswein (ICE-wine) — very sweet.

Auslese(OUSE-lay-zeh) comes from selected picked grapes thatare allowed to stay on the vine longer to obtain moresugar. The resulting wine is a little sweet to the taste.

MadeiraWhen our Declaration of Independence was signed in1776 the document was toasted not with Bordeaux or

Burgundy, but with Madeira.

Madeira was the beverage of choice of many of theworld’s connoisseurs during the 18th and 19th

centuries but diseases and pests devastated the islandin the late 19th century almost ending the productionof fine Madeira. If you wanted to taste the best 150-or 200-year-old table wine (perhaps an 1832 Lafite

Rothschild, for example), you would pay from $5,000to $40,000 for the bottle and once you opened thebottle, you would have to drink it quickly before it

faded away.

On the other hand, you can enjoy a sip from a bottleof fine after-dinner Madeira a day for a year and the

wine will be just as tasty the last sip as the first — andyou would probably find more flavor in the Madeira.

Unlike table wines, the older ‘sipping wines’ likeMadeiras get, the richer they become.

MuscatAmong the least known dessert wines of the world arethe Muscatel de Setubals (pronounced se TOO bal) ofPortugal. Grown and made in sandy soils fit almostonly forcactus, these wines improve with age for a

hundred years and more, becoming dark red, mellow,and elegant. They seem to lead dual lives. When

young, they have strong acidity and medium fruit, andmake nice table wines. But because they are high inalcohol, they take a long time to age, and become

sweeter, fruitier, and fuller as they get older. The best(and oldest) are indeed very good.
