    wonderful aroma is waftingthrough downtown, its quite

    possibly from the new Double Bar-rel Smokehouse, located in the Lin-

    coln Brand Feeds Building on Lin-coln Boulevard.

    Summer is barbecue season andnow we have a couple of friendlyneighbors who can cook it upTexas style and have your orderready for pick-up or for you toenjoy at the restaurant.

    Linda Ellis and Monte Lokeymoved here with their three sons inJanuary.

    Lokey has been in the restaurantbusiness for 20 years. The couple

    moved to Lincoln and saw a needfor this type of restaurant.

    This has been a lifelong dreamof Montes, Ellis said.

    Lokey is from Texas and wanted

    to bring traditional Texas barbe-cue to the area.

    Its Gulf Coast cuisine, Lokeysaid. We even serve the mealswith white bread, pickles and

    onions, which are traditionalaccompaniments.

    Ninety-five percent of TheDouble Barrel Smokehousesmenu items are homemade.From its sauces, seasonings,breads, and desserts, therestaurant owners want toensure that each patron walksaway with a wonderful, familyfriendly, dining experience.

    Brisket, Angus steak burgers andribs are just a few of the staples on

    the menu.The food is pretty dang tasty,

    according to Lokey, and he invitescustomers to come in for the spe-cials.

    According to old black-and-white movies and TV shows, dads wereborn in the waiting rooms of hospitals.

    Pacing the floor, as the men were dressed in their suits and ties, theyanxiously awaited the new arrival.

    It was nearly unheard of for a man to be in the delivery room; theexpectant mother often wasnt conscious during childbirth. Expectantfathers were not equipped with Lamaze coaching classes but solelywith a handful of cigars to pass out when the nurse came out and said,Congratulations, you have a son/daughter.

    Oh, how times have changed!If you look up the word father, you will

    find a plethora of definitions. Some of the

    definitions mention natural relation,birth and paternity.

    But to me, the most accurate is onefrom Oxfords Dictionary: A man whogives care and protection to someone.

    As Fathers Day approaches, I wanted torecognize all dads and to acknowledgethat having a child through adoption is noless a miracle than giving birth to a child.

    Individuals decide to adopt for a varietyof reasons but the only one that matters isthe desire to love a child who wants to beloved by a parent.

    Whether its domestic, international,open or closed adoption, each circum-stance is unique and laws are different ineach state and country.

    I have seen first-hand what it is like for acouple when they adopt a child that theyhave been longing for. I know couples whohave had open adoptions locally, as wellas couples who have adopted internationally.

    The one universal constant is the joy of becoming a parent,regardless of how the child is brought into that family.

    In the old movie, Yours, Mine and Ours, Lucille Balls and Henry

    Fondas characters ended up adopting each others children.Because of a very special man who fell in love with my grand-mother and her young son, this story will remind you that adop-tions also happen within families already formed.

    In 1942, shortly after Grandma Wanda married her second hus-band, Luther Allen Smith (Smitty) legally adopted my dad. Dadsays he doesnt remember much about the process because he wasonly about 7. However, I had to smile when dad told me that hedoes remember thinking that because his original last name wasBailey, and then it became Smith, he was going to have to go to the

    What an amazing man he must have been. His actionsof adopting my dad and serving our country show

    what a selfless and loving heart he had.

    end of all the school lines.Dont you just love the log-ic of kids?

    I remember grandmatelling me about how thejudge asked my dad if hewanted Smitty to be hisdad. Grandma told thestory with so much joy asshe said that my dadresponded Yes, I wanthim to be my dad.

    I never met my grandfa-ther. After he marriedgrandma, she becamepregnant with my uncle

    and then Smitty was sentto fight in World War II.Just months after myuncle was born in 1944,Smitty was killed in Italy.

    Ive read some of theoverseas letters that Smit-ty wrote to my dad. Read-ing those letters, youknew it was a dad writingto his son; there was nostepson moniker or tonein those letters.

    In one of the letters,Smitty referenced somecameos that he sent hometo grandma. Those are thesame cameos that she hadmounted into a necklacefor each of the grand-daughters when we grad-uated high school and itssomething I will alwayscherish.

    I just reread the letters

    this morning and couldnthelp but become teary asalmost every letter endedwith coming home to hisfamily and signed, love,Daddy.

    I grew up knowing thatmy dad was raised with-out a father, but when Ilook at these letters, Imreminded that he brieflyhad a dad who loved himvery much and whom he

    loved.As I sit here finishing

    this article, I find it fittingthat Im doing it onMemorial Day. I only

    know bits and pieces ofSmitty stories my

    grandmother told mebefore her passing 20years ago, and someretold by my parents.

    However, I know thatmy grandfather was aman who was kind, lov-ing and selfless, whoadored his family andsacrificed for his coun-try.

    When I visited mycousin a few daysbefore Memorial Day, Iwas looking at mygrandfathers PurpleHeart and thinkingabout how proud hewould be of both ofhis sons and theirfamilies.

    My cousins, siblingsand I never knew ourgrandfather but weare forever tied

    together. The least ofwhich is the name ofSmith but the great-est is thatwe arefamily!

    One of the cameos that

    my grandfather sent home before he was killedin action. Grandma had one mounted for each of

    her granddaughters when we graduated highschool. Its a priceless heirloom that will be in our

    family for generations.

    A V-Mail Easter greeting that mygrandfather sent to my dad. He alwaysreferred to my dad as his son and I love

    how he signed his letters, Love, Daddy.

    I grew up knowing

    Wilson made MothersDay an official U.S. hol-iday, President RichardNixon must have feltthat dads time hadfinally come.

    Nixon signed into lawthat the third Saturday ofJune is to be dedicated tothe dads in our lives.

    Dad may want to goout and enjoy a day offun so preparing dinnerahead of time might besomething you want tothink about. It can behot in June so here are acouple of recipes that

    will keep your timein the kitchen to aminimum. French dipsandwiches with arefreshing watermelonsalad sounds like theperfect meal on a hotday, and a meal thatdad is sure to enjoy.

    Slow cooker French dip(serves 9)

    4 lbs. rump roast 10.5 oz can of beef broth 10.5 oz can of condensed French onion soup 12 oz can or bottle of beer French rolls 2 T butter

    1. Trim excess fat from the roast and place in a slow cooker. Add the broth, soupand beer. Cook on low for approximately 7 hours.

    2. Heat either the oven or barbecue to 350 degrees.

    3. Split rolls and spread with butter. Bake 10 minutes or until heated through.

    4.Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.

    Watermelon and mint salad 1 (5-pound) watermelon 1 Vidalia or other sweet onion 1/4 cup red wine vinegar

    salt and pepper 1/2 cup extra-virgin olive oil 2 tablespoons chopped fresh mint 4 ounces feta cheese, crumbled (optional) 6 whole mint sprigs

    1.Cut the flesh from the melon and cut into bite-sizepieces, removing and discarding the seeds, and setaside. Peel and slice the onion into rings.

    2. In a small bowl, combine the vinegar, salt, pepper,and whisk until salt is dissolved. Slowly whisk in theolive oil, a few drops at a time. Add in the choppedmint, taste and adjust seasonings.

    3. In a large bowl, combine the melon, onion and feta.Pour the dressing over the melon mixture and tossgently until everything is coated and evenly mixed.Garnish with mint sprigs.

    4.To serve, divide salad among individual plates andgarnish with mint leaves.

    Today, there are probablyvery few residents whodont have some sort of

    camera laying around theirhouse. Whether its with a pointand shoot or a cell phone, giv-ing the kids some photographyprojects (more than selfies) is afun way to keep their imagina-tions going all summer long,bringing the family together

    and showing them that photo-graphs have a tremendousimportance in our lives.

    The scope of photographyhas changed drastically in thelast dozen years.

    When I was introduced tophotography in high school, itwas unlike anything I had everexperienced. I fell in love withit in the darkroom where Icould put a blank piece ofpaper under the enlarger and,

    within minutes, would have aphotograph. It was like magicand I was hooked for life!

    Today, kids dont seem to beas enchanted by aspects likethat because technology hasimpressed them with moresophisticated items. What weonce thought to be almost sci-ence fiction are now part of oureveryday lives.

    Kids of all ages can benefit

    from the following projects andmaybe theyll see how magical,and important, photographyreally is.

    Show the kids what photography is all about

    SCAVENGER HUNT

    Send the kids out on a photo scavenger hunt. It canbe around the house, yard or neighborhood. Givethem the criteria ... photograph subjects that startwith a certain letter, certain colors or shapes. For theolder kids, you can even get them to photographsubjects that actually look like letters. If you wantto keep their geometry skills going, get them tophotograph something with intersecting lines,converging lines, parallel lines or using rectanglesin compositions to teach them the Rule of Thirds(a basic rule in photography composition).

    LEARNING THE BASICS AS A FAMILY

    Everyone enjoys taking photos but dont always understand why they likeor dont like a certain look or how they can achieve a certain effect.

    When I was introduced to photography in the late 70s, it was all about learningabout apertures, shutter speeds, film speed and how to achieve properly

    exposed photos (among hundreds of other skills).Today, with cameras being automatic, most hobbyists dont feel the need tolearn the basics but techniques are always still important. Its difficult to goas a family to a photography class, so when the kids are tucked into bed andyou have some down time, research some photography techniques that willmake you appear like Ansel Adams to your kids. That will make photographingeven the most mundane items that much more fun.Here are a few techniques you can learn about and then teach the kids:

    negative space backlighting leading lines window light

    Go out with the kids on a photo excursion day and practice thesetechniques. It will build great memories, get them to observe more carefully

    and with a unique perspective, and give you all an activity you can enjoytogether.

    SHOW AND TELL

    Little kids love to doshow and tell atschool so give them theopportunity to do showand tell with theirphotography.

    Photography is likeabstract painting; youmay not see somethingin a photograph untilthe creator points it outto you.

    Its also a good teachingmoment for them. Ifthey take a photo thatis out of focus becausethey were too close,this will give you anopportunity to explain

    to them about beingthe right distance fromtheir subject.

    SELF-PORTRAIT

    CHALLENGE

    Heres a challenge foryour older child and onethat you can actually useas a self-esteem lesson.

    The Project 52 is onewhere you take anassigned photo once aweek for a year. For yoursummer project, youcould do a variation of itand call it Project 12.

    Take a portrait of anotherfamily member once aweek over the summer,using different lightingconditions, using different cameras (you could evenmake a pinhole camera) or from different angles.

    Specify one week that everyone has to photographthemselves, capturing a trait they like best aboutthemselves. They could photograph themselves witha pet if theyre good with animals. If they like workingwith kids, they could photograph themselves doingsomething fun with a group of children.

    Whats important is to get them to look at subjectswith a unique perspective and to look for the goodabout themselves and others, instead of what theydislike.

    By spending the summer taking photos with yourkids, the time you spend together will be price-less. You can help them realize that photography

    is so much more than selfies and that waiting for theright moment to capture a special moment is better

    than capturing just anything. Who knows? Maybe oneof the photos you take this summer will be a prizedpossession they eventually show their grandchildrenwhen talking about the summer you introduced themto photography.

    With the current drought situation, California farmshave had to make some changes and that meansthe local Farmers Markets will be affected.

    While some farms have had to cut back, farms suchas Salle Orchards are able to plant some new crops.

    We are looking at expanding our row crops becauseother farmers have had to cut back, Salle Orchards

    owner Billie Jean Salle said. We have increased ourland by farming on adjacent properties and we are onwell water so were fine.

    In addition to being at some of the area Farmers Mar-kets, Salle Orchards now has a farm stand that is open.The stand is located at 3947 Wheatland Road and isthree miles off Highway 65.

    In addition to featuring crops grown at the orchard,the stand will also sell products from other local farms.

    he Lincoln AreaChamber of Com-merce has had a busy

    spring and, as we launchtoward summer, manyexciting activities areahead of us.

    However, the year hascertainly had its chal-lenges.

    We are sad to hear thattwo high-profile business-es are leaving Lincoln:Staples and Mimis.

    While there are manyrumors floating around asto why they are leaving, itis an unfortunate fact thatboth companies are cut-ting costs to become morecompetitive in their indus-try and Lincoln is caughtup in that because we arestill a small market.

    The good news is thatnew homes are selling inLincoln and many otherretailers are doing well sothe future is brighter.

    Economic development

    efforts are becoming morefocused and efforts areunderway to continueworking on getting newbusinesses in our area.

    The Nelson Laneexpansion is under con-struction and that shouldresult in the AirportIndustrial area becoming

    more attractive, due tothe improved ingressavailable to the airportand industrial park. Citystaff has done an excel-lent job getting that proj-ect moving forward andwe thank them for theirefforts.

    The Shoppers Expo

    had more than 40 partici-pants and we thank thosewho attended for theircommitment to thisannual event. It was avery hot day so traffic wasdown from previous yearsbut it was still a successfulevent.

    Speaking of events, the

    downtown Farmers Mar-ket runs June 12 throughAug. 28 from 5 to 8 p.m.Thursday nights in down-town Lincoln, BeermannPlaza. Food, live band,lots of fun each week.

    The chambers annualgolf tournament will beheld Friday morning, July25 at Lincoln Hills GolfCourse. Always a funevent and we will havelunch after the scramble

    Hyperthermia, heatstroke, heat prostra-tion - what is it and

    what can I do?Hyperthermia is defined

    as an abnormally-elevatedcore body temperature.

    Dogs and cats corebody temperatures runhigher than humans. Theirnormal ranges from 99 to102 degrees Fahrenheit.

    With an especially nerv-ous or painful pet, the coretemperature can rise to

    103 degrees.However, anytime atemperature is higher thannormal, the cause needsto be identified.

    Living in the Sacramen-to area, we have all wit-nessed the random pet leftin a hot car and the devas-tating results that occur ina very short time.

    Once our outdoor tem-peratures reach 70

    degrees, pets should nolonger be left in cars, even

    with the windows rolled

    down.Additionally, exercising

    a pet on an especiallywarm, humid day or beingleft in a yard withoutshade and water can result

    in core body temperaturesfast approaching 105degrees. This becomes atrue emergency.

    Some other causes ofhyperthermia can include:

    Exposure to toxinssuch as mushrooms, snailbait, marijuana andhashish.

    Brachycephalicbreeds, such as pugs,Boston terriers and bull-

    dogs, can develop life-threatening elevations incore body temperatures

    quickly, due to theirreduced ability to pant.

    Older Labrador retriev-

    ers that have significantlaryngeal paralysis (a roar-ing sound in the back of

    the throat) have the sameinability to move air effec-tively in the pharynx tocool the body down.

    Prolonged seizures Obesity Eclampsia (low calci-

    um levels).Initially, a pet may just

    appear restless but thenmay become distressed.They might drool exces-sively, be unsteady andhave unusually coloredgums - bright red or bluish

    purple. Eventually, if thecause is not identified, thepet can seizure and die.

    Ideally, immediate vet-erinary care should beobtained while slowly low-ering the pets core tem-perature with wet, cooltowels.

    If possible, have air

    moving across the wetareas of the pet.

    Try to offer fresh, coolwater to the pet but do notforce consumption.

    Do not use ice or exces-sively cold water on thepet as it will cause otherissues in the process.

    Even with immediateintervention, the pet mayrequire extensive hospital-ization and transfusions tocounter the damage tomultiple organ systems.

    A hyperthermic petneeds to be seen by a vet-erinarian as soon as possi-ble. It is a true emergency.
