Homelessness andhunger is, unfortu-nately, the way of life

for many. It doesnt justhappen around the holi-days, yet more assistanceseems to become avail-

able this time of year.Lincoln has many resi-

dents and businesses whowant to help those inneed and the tradition ofoffering holiday meals forthose less fortunate con-tinues this season.

The Salt Mine will offerits annual feast the daybefore Thanksgiving. Afull lunch will be served atnoon and volunteers areasked to be at The SaltMine at 10 a.m. Thosewanting to assist areencouraged to contactThe Salt Mine prior to theevent, but walk-in volun-teers are also welcome

that morning.If interested in helping

make a great meal forthose who are less fortu-nate, you can volunteer tocook, wash dishes andclean up at The SaltMines meal.

For anyone who needsassistance with providinga home-cooked Thanks-giving meal for their fam-ily on Nov. 28, The SaltMine will give boxes thatcontain a turkey, stuffing,potatoes, pumpkin pie,veggies and rolls. Anyoneinterested can apply for aThanksgiving box duringthe food closet's normalhours from 10 a.m. tonoon Tuesdays through

Fridays. The boxes will behanded out on Nov. 26

but The Salt Mine's BlakeLong stresses that resi-dents need to apply priorto that date.

We need lots ofThanksgiving food. Inprevious years, Safewayhas had specials whereshoppers can get turkeysat a reduced price. Weencourage people to buyextra and bring it to thefood closet, Long said.

become part of the community.We tried various things butGod told us that we needed tohelp homeless families so westarted a food bank, KateCouchman said.

Starting a nonprofit was notas daunting as it could be, sinceMike Couchman is getting hisPh.D in nonprofit organiza-tions.

The couple came up with theidea to have an online food

bank and feed-a-family.org wasborn. Those who want to offerassistance may go online tohelp a specific family or todonate to the general fund.

Although the organization isin its infancy, the couple saidthat this is going to be the newwave of food banks. Food can'tspoil, people dont have to wait

in line and donors can selectspecific families.

The Couchmans want tooffer assistance statewide with-in a year and their long-rangegoal is to work with familiesnationwide.

Once applicants apply, Kate

calls them and an online gro-cery store order is made to havefood delivered to the appli-cants homes.

All those who apply are keptanonymous.

So far, all the applicants havebeen southern Californians but

the Couchmans want Lincolnresidents and other NorthernCalifornians to apply.

Although Mike Couchman isin Afghanistan, he maintainsthe site while his wife talks tofamilies, places orders anddeals with any other personal

correspondence.The one thing I want people

to know about our program isthat we genuinely want to bringour members of the communi-ty closer to those in need. There

are more working families whostruggle to put food on thetable than I had ever imag-ined, Mike Couchman said.The only way my wife and Icould manage such a programand be effective just so hap-pened to be one of the mostefficient as well. I hope thisprogram takes our nation bystorm, allowing our people ameans to rebuild those whohave been torn down, where a

helping hand will make all thedifference in someones life.

business, McClure said that hewanted a nostalgic name thatrepresented consistent service

and would make people feelgood. With customer servicebeing the benchmark of the oldmilkman who would visit one'sdoorstep while offering a famil-iar face every day, McClure feltthat the name Milkmanwould relay the image he want-ed.

McClure has dreamt of own-ing this building for some time.

I would sit at Old Town Pizzaand look at the building, Lin-

colns new business ownerexplained. I felt sorry for thebuilding because it was just sit-ting there, aging.

McClure, a Lincoln residentfor the past seven years, wantsto help the core of downtownLincoln get beautiful.

Since January, McClure hascollaborated with contractorMike Larson to create a breath-takingly unique addition to Lin-colns downtown.

There has been much talkaround town in recent weeks asto what this business actually is.As you walk into the building,you will quickly see that it is notyour average office space.

Just inside the front door isthe inviting bar recentlyinstalled. McClure used muchforesight when designing thespace. While Milkman currentlyresides in the space, McClure is

also open to holding smallevents.McClure's long-range goal is

to have Milkman expand into a

larger space, while retainingthis space as a supper club.

The character of this space is

retained in the original archi-tecture, yet also in the vintageupdates that Larson installed.Whether it's the hand-painted

murals, repurposing parts ofthe original structure or addinga modern flair to the renova-

tions, every square foot of thisnew space has somethingthat is appealing.

One of the more striking

areas is the Sun Records label.McClure envisions having aJohnny Cash impersonator per-form in front of the custom-painted wall.

Married to his high schoolsweetheart and the father offour kids, all of whom attendLincoln schools, McClure wants

downtown Lincoln to succeedand is excited about being partof the community. McClure iseager for Lincolnites to knowthat he welcomes inquiries to

thriving business. FotosMarket, at 561 5th St., hasbeen a staple of down-

town Lincoln for the past36 years.

Not only has Fotos received a

new owner but its also receiv-ing a facelift.Bhatti showed off the new

beverage cases and said thatthe stores layout is going tomake a lot more sense.

That layout includes similaritems displayed together, moregrocery lines to be added andalcohol being sold.

By the holidays, Bhatti hopesto move the fruit and vegetablecase and to have new display

cases for the deli counter.As you can see, the store is

not closing. Its expandingactually, Bhatti said.

Although Fotopoulos retired,his employees are still at themarket to greet regular cus-tomers as well as patrons visit-ing for the first time.

We want this to be a store

that supports the community,Bhatti said.

Sixty percent of repeat cus-tomers have shopped at themarket for 30 years or more,according to the new storeowner.

Just as Fotopoulos used to

great his customers by name,Bhatti wants to learn eachshoppers names as well.

George did a heck of a goodjob and Sunny is doing a goodjob, said Fotos employee PeterSorenson. They both havetheir own way of doing things

but both those ways are goodfor the store.

Bhatti is no stranger to beinga business owner. Owningrestaurants and a grocery store,Bhatti understands thenuances of the food businessand looks forward to making

an even bigger success ofFotos.

With Fotos three-and-a -halfdecade reputation, coupledwith Bhatti's many years ofexperience in the grocery busi-ness, Fotos should continuebeing a downtown staple.

HARVEST SALAD2 cups farro, rinsed and drained2 teaspoons fine-grain sea salt5 cups water (or stock)3 cups butternut squash, cut into 1/2-inch

dice1 large red onion cut into 1/8ths1 tablespoon fresh thyme, minced3 tablespoons olive oil1 tablespoon balsamic vinegar1 cup sliced and toasted almonds3 tablespoons toasted walnut oil (or more

olive oil)1/4 cup dried cranberries

Preheat oven to 375.Combine the farro, salt and water in

a large pot over medium heat. Coverand simmer, stirring occasionally, untilthe farro is tender, 45 minutes to anhour (if using semi-pearled faro, youcan reduce the time by half). Don'tovercook because you don't want it tobe mushy. You still want it to retain

some of its consistency. Remove fromheat, drain any excess water and setaside.

While the farro is cooking, toss thesquash, onion and thyme with the oliveoil, balsamic vinegar and a couple bigpinches of salt on a jelly roll pan/cookiesheet. Arrange in a single layer andplace in the oven for about 20 minutes.Toss the squash and onions every 5 to 7minutes to get browning on multiplesides. Remove from the oven, let cool abit and mince just 1/2 of the red onions.

In a large bowl, gently toss every-

thing with the toasted walnut oil (orolive oil). Taste and add a bit of salt ifnecessary. Serve family-style in a simplebowl or on a platter garnished withadditional nuts and cranberries. Youmay also serve this with cheese as agarnish.

This makes 6 to 8 servings and isexcellent as a cold salad or a heatedside dish.

Apple Cranberry Crunchis something Ive beenmaking for about 20 years.One year, when we werehaving Thanksgiving withmy husbands family, mysister-in-law, Debbie (yes,having two Debbie Brownsin the family did get con-fusing!), made a dish that

has been on our holidaytable ever since. This deli-cious side dish is some-thing that can be made asan accompaniment or as adessert (or if you ask myoldest daughter, it tastesgreat for breakfast as youhead out for your BlackFriday shopping).

I have varied theamount of sugar over the

years so it can be adjustedbased on your preferences.A new recipe that Ive

come across recently isgreat with any meal and

you don't have to waituntil Thanksgiving to put iton your table.

Additionally, dependingon the season, you cansubstitute the butternutsquash for sweet potatoes,mushroom, zucchini or

even grape tomatoes.This salad is great right

out of the refrigerator or atroom temperature.

for hoshigaki, the traditionalJapanese method of drying thatproduces a sweet, flavor- con-centrated delicacy.

Those two (varieties) areastringent until they are verysoft, he said. You can treatthem to remove the astringencybut it doesnt seem right. Whenthey are really soft, they are real-ly tasty.

While the fruit is still on thetree, its important to closelymonitor the color to harvestthem at just the right time.

If you pick them when

theyre orange, they take only afew days to ripen. But if they arestill yellow or greenish, it maytake a month or two, heexplained.

The fuyu variety is the mostpopular and the one most likelyto be available in supermarkets.

Four varieties at the orchardare known as chocolate per-

simmons. One of those, the cof-fee cake, remains astringent ifnot pollinated.

The other three varieties youcan eat and they are not astrin-gent, Kuratomi said.

That includes the maru.If it is round in shape, it is

usually sweet, he said. If it is

oblong in shape, it is usuallyastringent. The roundnesscomes from seeds inside thatare growing. They push out andform the fruit.

The tsurunoko, anotherchocolate variety, needs to bepollinated.

It is the same color as a

maru that nice orange colorversus yellow, Kuratomi said.But the main difference is thatit is oblong, so if you dont knowyour varieties, walking aroundin an orchard you might pick amaru that would be astringent,but this chocolate is sweet.

The hyakume is sometimes

known as a cinnamon varietybecause when you cut it open, itcan be spotted.

Kuratomi treats the hyakumeswith vodka to bring out thesweetness.

This one we actually like topick when it is still green andstarting to fade a little, justbefore it goes yellow, heexplained. Thats when wethink the flesh is going to be thebest and handle the alcoholtreatment.

After we pick them, we clipthe stems and put a plastic bagin the box so that when we lineup the persimmons, its paddedso they wont roll over.

The next step is to put vodkain a condiment bottle and drib-ble three or four drops on thestem end of each fruit.

This particular persimmonhas a natural dish at the top, hesaid. The vodka sits in that lit-tle basin really nicely. We sealup the bag, tie it and keep it atroom temperature for a week.

Sometimes a persimmon willturn completely brown. But thatdoesnt mean it has gone bad. Itis simply the variety, he said.

Twin Peaks Orchards in New-castle has its own process forremoving the pucker fromhyakume persimmons, alsoknown as amagaki.

The Enriquez family has beenmaking the special amagaki formore than 35 years, orchardsco-owner Sheila Enriquez said.

Before that, my stepdad wasmaking it, too, she said.Thereare so many variables. Wealways learn something everysingle year.

Weather can be a big factor in

the quality of the fruit.Its almost like playing Russ-ian roulette every year,Enriquez said.

Twin Peaks also growshachiya and fuyu varieties andsells at farmers markets andWhole Foods.

At Otow Orchard, fall meanshoshigaki time. The key is start-

ing with fruit that is ripe enoughwithout being soft to end upwith very good flavor and high

sugar content.Right now, in this kind of(warm) weather, we can pro-duce something in about fourweeks, Kuratomi said. Oncewinter sets in, it will take six toeight weeks. We dont useheat just fans.

The persimmons hang on bigracks and are squeezed or mas-

saged every three or four days.They only stay outside for

one week and then we put them

indoors, he said. This year theworst part is it is too hot. I dontlike to dry them this fast.

The end result is highlysought after by connoisseurs.

The flavor is not terriblyintense, Kuratomi said. It hasall the subtleties.

He continues to produceHoshigaki to keep the tradition

alive.You know the art is going to

be lost if you dont keep it up

and see others picking it up, hesaid.Over the years he has trained

others in the art of hoshigakiand some of those former stu-dents are now producing itthemselves.

We have actually taughtsomeone who takes his pro-duce to the Santa Monica mar-

ket in Los Angeles, he said.Hoshigaki has a long shelf life.

When frozen, it will last at leasta year.

We put it in a Ziploc bag andvacuum seal it to prevent dehy-dration, Kuratomi said. I thinkoccasionally we have some thatkept a couple of years. We sellout, so after a year it is all goneanyway.

Persimmons work well inmany recipes and are excellentfor chutney and preserves, hesaid.

The Kuratomis stock a coupleof persimmon cookbooks,including local author JeanBrines Perfectly Persimmon.

Persimmon trees are closelylinked to Japanese culture, butthey also have deep roots inother areas of the world.

The Greeks called the per-simmon the fruit of the gods,Kuratomi said. The (persim-mons) were a lot more wide-spread than they are today inthe United States.
