Ingredients
1 cup rice ¼ cup toor dal 2 tbsp ghee 1 tsp mustard seeds 1 dried red chilli pinch asafoetida / hing 1 clove garlic 2 tbsp sambar powder turmeric powder ¼ tbsp jaggery 1 tsp red chilli powder lemon sized tamarind salt to taste 1 tomato 1 potato 1 onion 10 green beans 1 carrot few curry leaves
Instructions1. pressure cook 1 cup rice and ¼ toor dal with 4 cups of water for 5 whistle. when the pressure
settles down on its own, open the lid and gently fluff the rice and lentils.2. sambar rice goes really well with papad and curd rice. you can serve it with pickle.3. chop all the vegetables into medium size as shown in below image. here I have used potato,
onion, carrot, beans, tomato and garlic. you can add almost any kind of vegetables in sambar rice. drumstick is also commonly added in sambar rice recipe.
4. heat 2 tbsp ghee in the pan and add mustard seeds, curry leaves, dried red chilli, asafoetida (hing) and let it crackle.
5. now saute the chopped garlic for few seconds.6. then add chopped onions and let them cook for sometime.7. add chopped tomato and cook for 1 minute.8. finally add all the vegetables of your choice and let them cook for sometime.9. add tamarind water, jaggery and salt. stir well and cook for 5 minutes so that all the vegetables
get nicely cooked.10. once the vegetables are cooked add sambar powder and chilli powder cook till the masala blends
well.11. add the boiled rice and toor dal into the sambar and cook for 5 minutes on low flame.
12. adjust the spice and check for salt.13. sambar rice is now ready. serve it with papad, curd and pickle.

11. add the boiled rice and toor dal into the sambar and cook for 5 minutes
on low flame.
12. adjust the spice and check for salt and consistency. add water if
required and boil for 2 more minutes.
13. sambar rice is now ready. serve it with papad, curd and pickle.
notes:
do not overcook the rice. gently fluff the rice and lentils once you open
the cooker.
make sure your vegetables are cooked well before you add sambar
powder.
adjust the consistency according to your choice.
refrigerate leftover sambar rice and microwave it the next day. it
enhances the taste of your sambar rice.
add ghee on top of sambar rice while serving. it gives you extra flavour.
