Vriende, Boere en Kliente,

Ons as Tomis Groep van Maatskappye vier vanjaar op 1 November met trots ons 20ste bestaansjaar.

Ons buig in nederigheid en dankbaarheid voor ons Skepper en gee aan Hom die lof, eer en dank vir die afgelope 20 jaar se prestasies, gesondheid, genade en suksesse. Sy seëninge oor hierdie tydperk was merkwaardig groot, soveel so, dat dit Tomis in staat gestel het om van ‘n beskeie 4-skaap-per-dag-onderneming te laat groei tot leiers en rolspelers in die Abattoirbedryf. Alle eer aan Hom!

Ons lewenslesse oor 20 jaar deel ek graag:- Dat integriteit, eerlikheid en etiese waardes die basis moet wees waarop jou besigheid gebou moet word.- Dat ons van die begin af besef het, sukses is nie om buitengewone prestasies te behaal nie, maar om die gewone dagtake met buitengewone toewyding te vervul.- Bou brûe in die lewe - indien jy brûe afbreek, sit jy later op ‘n eiland.- Dat die enigste plek waar sukses voor werk kom, in die woordeboek is!- Dat sukses ‘n reis is en nie ‘n bestemming nie,- Dat om die beste te wees ten opsigte van kwaliteit en diens, ononderhandelbaar in die vleisbedryf is.

Dat die volgende 4 fondasies vir ons gewerk het (in rangorde):1. Die liewe Heer se genade2. Uitstekende beplanning3. Uitstekende bestuur4. Uitstekende kontrole, (sonder kontrole het jy nie ‘n besigheid nie) en (om te meet is om te weet)

Graag wil ek drie bedankings doen aan kritiese rolspelers in die suksesse van Tomis oor diè 20 jaar:Eerstens wil ons eer en erkenning gee aan ons boere, wat oor die jare in Tomis geglo het en hulle lewende hawe aan ons toevertrou het om te slag en te bemark. Ons het deeglike begrip dat boere uitgelewer is aan die elemente van die natuur, waaronder hul hul lewende hawe, soms onder moeilike omstandighede en met moeite moet produseer. Dit is Tomis se ingesteldheid om boere se diere met dieselfde respek en deernis te hanteer, te slag en te bemark, as waarmee hulle die diere grootgemaak het. Ons is opreg dankbaar.

Ons leuse by Tomis is: ‘Living our dream!’ Hierdeur wil ons sê dat ons ‘n passie het vir wat ons doen, dat ons Tomis, met die Here se genade, nog verder wil uitbrei en holisties diversifiseer, ten einde ‘n beter en ‘n meer gesogte mark, asook ‘n beter prys vir die boer kan verseker vir die toekoms!

Ons by Tomis erken dat om te boer, die mees edele beroep op aarde is. Die boer met die liewe Heer se skepping, naamlik die grond, die plante wat in die grond groei en die diere wat daarop wei. ‘n Boer is dus 100% afhanklik van ons Heer se genade, vir reën op die regte tyd, om suksesvol te wees. Ons missie by Tomis is, om teen hierdie agtergrond altyd ons beste prys en diens aan ons boere te bied! Ons wil besigheid doen, om weer besigheid te doen.

Tweedens - die sirkel sal nie voltooi wees indien daar nie kettingwinkelgroepe, groothandelaars en dan die eindverbruiker was nie! - Instansies en mense wat glo dat die Tomis-handelsmerk sinoniem is net kwaliteit, rakleeftyd en goeie diens, oor ‘n periode van 20 jaar. Ons is opreg dankbaar dat julle in die Tomis-produk glo en vir jul getroue ondersteuning oor ‘n lang tydperk. Ons vertrou dat die produk vir julle net so goed gedoen het as vir ons en dat ons “vennootskappe” in die toekoms nog baie vrug sal dra. Nogmaals baie dankie!

Our company has certainly come a very long way from the days when we thought that selling meat was only about buying livestock, slaughtering and selling

it to whoever wanted to buy or who was interested in our product. I must admit: in 20 years things have certainly changed!

I do not know if it is that we have got wiser, whether industry has become more demanding or if the consumer’s need for safe and specific products has led to it all. What I do know is that things have definitely changed in the way we think and do things at TOMIS – and all for the best I believe!

Then: when we bought livestock we bought what we could; not thinking about breed, where it came from and to a certain extend what the quality was.Now: animals need traceability – what farms are they coming from? what breed is the animal? – is it going to be part of a branded program e.g. tomis angus Beef?what is the quality and weight of the animals? – are they suitable for slaughtering or do they need to go to tomis Sheep feedlot for finishing or some of the County Fair farms (with whom we have a working relationship) for backgrounding of cattle?

Then: when we slaughtered animals, we were selling lamb and beef carcasses. 10 to 20 lambs were slaughtered per day.Now: we are selling branded tomis lamb and tomis Beef; as well as supplying tender and tasty lamb nationally to the Spar Group and country reared lamb to Pick ‘n Pay. The abattoir slaughters up to 1500 lamb and 140 cattle per day

Then: our abattoir facility was simple and modest, refrigeration was done in 6m containers (secondhand). Now: we have a HACCP approved abattoir facility with ZA export certification. The whole facility is cooled to the right temperature, refrigeration is of the highest standard and carefully controlled and monitored. All our operations need to adhere to strict policies and procedures and the facility is regularly audited by independent auditors (FSA) and a 90% audit score is achieved.

Then: abattoir waste and the handling and treatment of wastewater, as well as feedlot waste(manure), was of little and no importance and was seen as a burden to the companyNow: with age comes wisdom and we now understand the importance of having a responsible outlook on the way we need to think about our environment and the responsibility we as industry have to protect our land and natural

resources. tomis edelkompos composts all its waste in a responsible and safe manner and sells it back to people understanding the benefits of giving back to the earth. All water utilized in our facilities are cleaned and treated at our new water treatment plant, where after it is safe to irrigate on the pastures, reused in the composting facility or safe to go back into natural river systems. We now understand that waste is a resource and valuable commodity and we will never stop striving for greener solutions!

Then: meat was cut and sold in a refurbished cow milking shed. A small outlet on the farm served the public and the rest of the meat was transported in bakkies to clients in the Cape Metropole.Now: a new meat cutting plant, tomis Meat Packers, has been built with state of the art modern equipment for cutting and packaging meat, as well processed products. Fifteen of our insulated and refrigerated trucks transport chilled products across the Western Cape on a daily basis. Big refrigerated trucks are contracted to transport lamb to all provinces in South Africa where tomis lamb are sold. tomis country Butchery recently opened on the farm, where the public comes and buys a big variety of fresh lamb and beef products of the highest quality and standards. This is a modern tray ready designed butchery.

Then: the Tomis Family consisted of 6 dedicated hardworking people Now: the Tomis Family has grown to a skilled workforce of 300 loyal people, sharing mutual goals and aspirations

When you are living your dream and enjoying the journey it all seems to come more natural – we are truly blessed to have such dedicated people in our Tomis Family, as well as our friends, suppliers and customers whom are willing to help us live our dream!

Ons is dankbaar vir die wyse waarop die Here vir ons gewys het hoe om Tomis Abattoir die afgelope 20 jaar te bestuur. Van die begin af het ons besef dat ons nie

hierdie besigheid op ons eie suksesvol kan laat funksioneer nie. Ons het die Abattoir en alles wat daarmee gepaardgaan, aan die Here opgedra en soos ons uitgebrei het, het ons krag, visie en wysheid gekry om die besigheid suksesvol te bedryf. Geen nuwe projek is aangepak alvorens ons nie bevestiging van Bo gekry het nie.

Ons is dankbaar teenoor die boere wat die vertroue in ons het, deur hulle diere vir Tomis te stuur vir slagting. Ons is almal dierelefhebbers by Tomis en ons behandel elke dier wat hier aankom met respek. Een van die redes hoekom dit vir my moeilik was om by die abattoirbedryf betrokke te raak, was juis my liefde vir diere. Ek wil graag my storie - hoe ek betrokke geraak het met julle deel.

Drie maande het alreeds verloop vandat Tommy Moolman my die eerste keer genader het om saam met hom ‘n Abattoir by Hermon te begin. Ek het vir leiding gebid. Die spesifieke aand skakel Tommy my en vra dat ek hom die volgende oggend moes laat weet of ek saam met hom in die besigheid sou tree, al dan nie. Tot en met daardie aand het ek nog geen antwoord ontvang nie. Daardie aand was ek weer op my knieë – ek het alles wat my hinder met Hom gedeel en gevra dat Hy tog daardie aand vir my n antwoord moes gee. Maar niks het gebeur nie en ek het tot die gevolgtrekking gekom dat dit nie vir my bedoel was om in die slagbesigheid betrokke te raak nie. Ek het ‘n rustigheid ervaar en sou die volgende oggend vir Tommy skakel, sodat hy vir hom ‘n ander geskikte vennoot moet soek.

Twee-uur die oggend word ek helder wakker en ek kon net nie weer aan die slaap raak nie. Later soek ek iets om te lees aangesien ek sommer gou vaak word as ek lees. Die enigste boek wat in my kamer is, is die Bybel wat langs my bed lê. (Onthou nou ek dink nie eers daaraan om ‘n antwoord in die Bybel te kry nie – dit is die laaste ding wat op my gedagtes is, inteendeel ek het klaar my besluit geneem. Al wat ek toe wou doen is slaap, want ek moes die volgende oggend werk.) Ek maak die Bybel oop en begin lees vanaf Deuteronomium 11 vers 8.

“Daarom, gehoorsaam elke gebod wat ek jou vandag gee sodat jy sterk kan wees om in te gaan en die land wat jy nou binnegaan, in besit te neem. As jy gehoorsaam is, sal jy ‘n lang lewe geniet in die land wat die Here aan jou voorouers en hulle nageslag gesweer het Hy aan hulle sou gee, ‘n land wat oorloop van melk en heuning. Die land wat jy nou binnegaan en in besit gaan neem, is nie soos Egipte vanwaar julle kom nie (onthou ek bly in Upington) Daar moes jy jou saad plant en met jou voet leivore maak om dit nat te lei soos in n groentetuin. Dit is n land met berge en valleie met baie reën wat van die hemel kom. Dit is n land waarvoor die Here jou God sorg. Dag vir dag, dwarsdeur die jaar, hou Hy sy oog op die land!

As julle al die gebooie wat ek vandag vir julle gee, noukeurig gehoorsaam, en as julle die Here julle God met hart en siel liefhet en Hom dien, sal Ek vir julle reën gee op die regte tyd sodat julle koring, druiwe vir wyn, en olywe vir olie kan oes (dit is juis die produkte van die Riebeeck Vallei) in die veld sal Ek weiding voorsien vir julle diere sodat julle oorgenoeg kan hê om te eet. So lê en lees ek verder om tog net aan die slaap te raak, maar vaak word, dit wil net nie kom nie!

Deuteronomium 12 vanaf vers 8

Julle moenie optree soos wat ons vandag hier maak, waar elkeen doen wat reg is in sy eie oë nie, want tot nou toe het julle nog nie gekom by die rusplek en erfdeel wat die Here jou God aan jou gee nie. Julle sal binnekort die Jordaanrivier oorsteek (ek het op die oewer van die Oranjerivier gebly) en gaan lewe in die land wat die Here julle

God aan julle as ‘n besondere besitting gee. Daar sal Hy julle rus gee van al julle vyande rondom julle en julle veilig laat woon. Daar is die plek wat die Here julle God uitgekies het vir die eer van sy Naam. Dit is die plek waarheen julle alles moet bring soos beveel is: brandoffers, ander offers, tiendes, julle gawes en julle gelofte-offers. Daar moet julle saam met julle kinders en julle werknemers in die teenwoordigheid van die Here julle God feesvier. Onthou die Leviete wat in julle dorpe woon, want hulle het nie ‘n deel van die land as hulle eie ontvang nie. Wees versigtig om nie jou brandoffers sommer op enige plek te offer nie. Jy mag jou brandoffer net op die plek bring wat die Here binne die gebied van een van jou stamme sal kies. Daar moet jy jou brandoffer bring en alles doen wat jou beveel is.

Maar julle mag diere vir hulle vleis slag in enige dorp waar ook al, net soos wat julle nou maak met ribbokke en takbokke. Julle mag soveel diere eet soos wat die Here julle God vir julle gee. Almal van julle, rein of onrein, mag die vleis eet. Die enigste beperking is dat julle nie van die bloed mag eet nie. Julle moet dit soos water op die grond uitgooi…”

Skielik besef ek dat God vir my deur middel van die Bybel die antwoord waarna ek so naarstigtelik gesoek het, op n wonderbaarlike wyse beantwoord het. Ek lees alles n tweede keer stadig deur. Ek kyk na die kaart van Palestina, die plek waarnatoe ons moet gaan is tot op die naam vir my uitgespel… HERMON! ... ek weet ek het n hoofstuk van my lewe afgesluit en daar wag n groot uitdaging op ons.

God belowe vir ons n land van melk en heuning – maar dit gaan nie vanself kom nie – ons sal moet werk om die melk en heuning te kry – neem byvoorbeeld n bytjie – hy maak heuning - maar dit kom nie vanself nie – God gee vir hom al die bestanddele, die wysheid en die krag om die heuning te maak – maar dan moet hy werk om die eindproduk te kry. Dieselfde gaan vir ons geld!

Ons is dankbaar teenoor almal wat ons op die pad gehelp het en nog steeds help. Alles wat ons het is ‘n geskenk van God. Ons loof en prys Hom vir sy goedheid – vir die voorreg om in hierdie pragtige omgewing te bly en om werk te kan skep vir al hierdie pragtige mense met wie ons die voorreg het om elke dag te kan werk!

Ons kyk met dankbaarheid terug na die verlede. Ons tel ons seëninge wat ons so mildelik van Bo ontvang. Ons is dankbaar vir vandag en ons kyk vol hoop na die toekoms met ons oë gerig op Hom wat weereens vir ons die wysheid en die leiding sal gee om hierdie besigheid van krag tot krag te laat gaan.

My betrokkenheid by Tomis is nie 20 jaar nie so ek kan nie oor die geskiedenis van 20 jaar skryf nie. Om die waarheid te sê, kan ek onthou dat ek Isabelle

en Tommy en ‘n jonkgetroude Laurie gedurende Augustus 1998 in hulle sitkamer hier op Vorentoe, saam met Herman Gerryts ( wat steeds hulle ouditeur is ) ontmoet het. Daar het my verbintenis begin, eers op ‘n baie ongereelde basis van so een maal elke twee weke en al meer gereeld soos die besigheid gegroei het.

Gedurende 2009 het ek voltyds by die Groep (ja, toe was dit reeds ‘n groep van besighede) aangesluit, aangesien ‘n voltydse pos toe ‘n vereiste geword weens die groei in die besigheid.

Ek is seker dat almal reeds weet dat TOMIS die akroniem is vir Tommy (TOM) en Isabelle (IS). Daar is egter ook ‘n ander verduideliking vir die naam TOMIS.

t - staan vir taai of “tough”( soos die Engelsman sou sê). Daar is nie so-iets soos “ek kan nie”, of “nee, dit is te moeilik” nie sulke uitdrukkings bestaan nie in ons woordeskat nie. o - staan vir ondernemingsgees. Dit is een van die dinge wat Tomis van ander abattoirs onderskei en dit is die konstante soeke na vernuwing en nuwe idees hoe om bestaande praktyke op ‘n ander manier te doen.

M - is waarmee die woord mededingend begin. Die van u wat al met of Tommy of Laurie te doen gehad het, of in onderhandelinge of in kompetisie was, sal weet dit is nie maklik nie, hulle moet die beste wees.

i - in hoofletters is inisiatief, en dit gaan hand aan hand met ondernemingsgees. Vele inisiatiewe is al gedoen, soos die nuwe Tomeka finasieringstelsel wat in samewerking met Meadow en Kaap Agri gedoen word. Dit word net as voorbeeld genoem en daar is heelwat ander in die pyplyn.

S - staan vir samewerking . Tommy glo daaraan dat ‘n mens moet leef en laat leef, moenie alles vir jouself neem nie, deel met jou verskaffer. Bied die boer ‘n billike prys aan dat hy ‘n goeie bestaan kan maak en betaal hom goed, dan lewer hy weer vir jou en so trek Tomis en die boer albei voordeel uit die verhouding.

In die tydperk wat ek hier betrokke is, het ek gesien hoe die werf fisies verander, hoe die geboue verander, hoe die padoppervlakte geplavei word, wat ‘n dramatiese verbetering was. Die administratiewe personeel het eers in ‘n kamer in die huis gewerk tot elkeen het vandag sy eie kantoor. Daar was eers een rekenaar, tot nou ‘n netwerk van rekenaars. Ek sien nog die klein slaghuis tot waar ‘n groot nuwe verwerkingsaanleg nou staan.

Ek was deel van die beplanning van die beesabattoir - toe daar aanvanklik vyf partye betrokke was om die beesabattoir te bou. Vier van hulle het kleinkoppie getrek en Tomis het besluit dat ons dit alleen gaan doen en die nuwe slagpale is middel 2009 geopen. As ‘n mens vra wanneer gaan daar opgehou word om te bou, dan kry jy baie antwoorde, van “as ons klaar gebou is”, tot “ek weet nie”. Ek dink solank daar sement en stene is, sal Tomis bou, die werf is nog groot en die planne is baie.

Dit is nie ‘n maklike bedryf om in te wees nie om ‘n sukses daarvan te maak, is nog minder maklik. Indien dit was, sou daar baie meer abattoirs gewees het. Daar is nog, uit ‘n administratiewe oogpunt, baie uitdagings, veral met al die uitbreidings en groei wat beplan word. Uitdagings was egter nog altyd iets waarop Tomis floreer het.

Wat hou die toekoms in? Daar is reeds verskeie planne op die tafel, party reeds in ‘n implimenteringsstadium en ander nog aan die ander kant van die horison. Maar met die ou wysheid van “eendag maak mag” sal dit tot suksesvolle uitvoering gebring word.

nd Tomis Abattoir is in 1994 gestig deur Tommy Moolman en Isabelle Terblanche (nou Moolman) op die plaas

Vorentoe, naby Hermon in die Boland, Wes-Kaap. Die plaas is gekies vir sy goeie geografiese ligging ten opsigte van toegangsroetes tot die Kaap sowel as die nabyheid van verskeie afslaerondernemings.

Tommy was voorheen werksaam as ‘n dorperstoet-bestuurder naby Kenhardt en Isabelle die nasionale skakelbeampte vir Veekos in Upington. Hulle voorliefde vir en kennis van die bedryf het hulle genoop om die nuwe uitdaging te aanvaar om die slagpale met ‘n klein slaghuis te begin. Die naam Tomis is gevorm deur die kombinasie van TOM vir Tommy en IS vir Isabelle. In 1998 het Isabelle se seun, Laurie Terblanche, by hulle aangesluit en later mede-eienaar van die Tomis Groep geword.

Die maatskappy het klein begin met slegs agt werknemers en die doel was om vleis so goedkoop moontlik direk van die slagpale na die huisvrou te voorsien. Kwaliteit, diens en eerlikheid was egter nooit onderhandelbaar nie en gou het die vraag na produkte toegeneem.

Met lojale ondersteuning van produsenteboere, sowel as verskeie vleisondernemings en kettingwinkels het Tomis gegroei tot ‘n onderneming wat vandag as ‘n markleier in die bedryf beskou word. Tomis het tans ook meer as 250 werkers.

Tomis is ‘n familiebesigheid met talle familielede in beheer van afdelings. Tomis bestaan uit 6 afdelings, naamlik: Tomis Skaap Abattoir, Tomis Bees Abattoir, Tomis Edel Kompos, Tomis Voerkrale asook Tomis Meat Packers en Tomis Afval aanleg.

Dit was een van die maatskappy se doelstellings om TOMIS LAM as ‘n handelsmerk in die mark te vestig deur topgehalte lamkarkasse konsekwent aan sy kliënte te verskaf. Die Tomis Groep is opreg trots daarop om te kan sê dat hierdie doelwit wel bereik is en dat TOMIS LAM algemeen as die beste lam in die Wes-Kaap beskou word.

Tomis Voerkraal is in 2004 begin om boere die geleentheid te gee om hulle skraal lammers, wat nog nie markgereed is nie, te bemark. Lammers kan nou by die voerkraal afgerond word voor bemarking en die voerkraal speel ‘n rol in die voorsieningsketting.

In 2008 is Tomis Bees Abattoir geopen. Die Bees Abattoir kan tot 140 bees per dag slag en gee ook groothandelaars die kans om hul bees op kontrakbasis by Tomis Bees Abattoir te slag.

Na baie innovasie om op ‘n omgewingsvriendelike, groen manier van afval ontslae te raak, is Tomis Edel Kompos in 2008 gestig. Tomis Edel kompos verkoop nou kwaliteit organiese kompos aan plase en in die landboubedryf.

In 2010 is Tomis Skaap Abattoir opgegradeer tot ‘n baie hoë HACCP standaard abattoir wat, tot 1800 lam/skaap per dag kan slag. Kwaliteitskontrole van ons produkte word verseker deur streng kontrolemaatreëls, soos voorgeskryf deur Die Wet op Vleishigiëne, gereelde HAS oudits deur die Departement van Landbou, sowel as FSA.

Tomis Afval aanleg is in 2011 begin. Alle afval word met die hand skoongemaak en geen kunsmatige chemikalieë word gebruik in die skoonmaakproses nie.

Tomis Meat Packers en Country Butchery is in 2012 geopen. Ons is baie trots op ons nuwe verwerkingsaanleg van topgehalte. Tomis Country Butchery is oop vir die publiek met verskeie fantastiese vleisprodukte.

The Tomis Group has become a company who embraces the challenges of an ever changing industrial

environment. New environmental legislation and changing abattoir regulations have forced abattoirs to seek

alternative measures for handling their waste and to rethink existing disposal practices.

Tomis was one of the first abattoirs in the country striving to use composting as a green solution for its abattoir

waste. It has always been understood that it would only be possible if the waste streams were carefully controlled,

the composting plant properly managed and the correct policies, procedures and methods were followed. With

proper control measures in place, the Department of Agriculture and Environmental Affairs were eventually willing

to discuss the possibility and later accepted the practice. It is now used as one of the preferred methods of

handling abattoir waste (if done correctly and in accordance with strict guidelines set forward by the Red Meat

Abattoir Association and Department of Agriculture).

At Tomis Edelkompos a good quality organic compost is made and is used by farmers, vegetable growers,

landscaping companies and gardeners.

In both abattoirs a lot of hot water is needed and the rising cost of electricity has made it clear that alternatives

were needed to save electricity (energy) and to help cut

cost of electricity bills. The use of heat exchange pumps

have helped to heat water needed for the new meat

packaging plant. The heat that comes from compressors

of cold rooms is utilized to heat water that is needed in

the plant. A huge saving is achieved and a lot of electricity

is saved.

The water that is used in the plant is cleaned after usage and made safe in the new water treatment plant-to-be

reused on our pastures for irrigation, in our composting process or to return safely to the natural river system.

Water resources are important and we need to protect it, use it wisely and recycle where possible.

A recycling project on the farm is used where plastics, papers and glass are separated before being disposed of.

This ensures that we do our part in helping to save our planet.

In our office we use paper that is made from bamboo. As bamboo is a sustainable resource, we might save a few

trees in the process. We encourage our personnel to reuse paper and to print as little as possible to save paper.

A lot of investigation and research has already been done on the possibility of producing biogas for electricity

generation and water heating at our plant. This is an ongoing process and we believe that this and biofuel will be

viable and sustainable solutions for the future.

Our search for greener solutions are ongoing and we believe that if everybody is willing to sacrifice and make

lifestyle changes, we can all help to save and preserve our planet.

Tomis Voerkraal is begin met die einddoel in gedagte: Ons by Tomis glo onomwonde dat die voerkraal ‘n baie

belangrike rol in ‘n holistiese abattoir konsep speel.

Wat ons hiermee bedoel, is dat ‘n abattoir NIE op sy eie doeltreffend en suksesvol kan funksioneer nie, met

ander woorde, ‘n suksesvolle abattoir moet ook ’n voerkraal, sowel as ander newe-aanlegte bedryf, nl: ‘n

komposteringsaanleg waar pensmis, kraalmis, afkeurings en bloed tot ‘n “GROEN” produk (kompos) verwerk

word; ‘n afvalskoonmaakaanleg om waarde tot die vyfde kwart toe te kan toevoeg; ‘n velle-aanleg waar

skaapvelle gesout word ten einde ‘n beter produk te lewer sodat die beste prys vir die velle beding kan word; ‘n

vleisverwekingsaanleg om waarde tot die vleisketting te voeg! Dit is maar om enkele aspekte van ‘n holistiese

benadering uit te lig.

Tomis Voerkraal moet funksioneer as buffer in ‘n erg skommelende mark, ten opsigte van vraag en aanbod.

Met ander woorde, gedurende die besige produksieseisoen, wanneer die markaanvraag vereis dat ons 1500

lammers op byvoorbeeld ‘n Maandag moet slag, dan kan ons dit gemaklik vanaf Tomis Voerkraal trek. Die voerkraal

verseker dus ‘n kalmerende effek op pryse en speel ‘n belangrike rol ten opsigte van die aankoop en voorsiening

van lewende hawe aan die abattoir.

Tomis Voerkraal bied die versekering dat die Tomis Groep beheer het oor kwalitet, karkasmassa, vetverspreiding

en gradering van lamkarkasse, bv: Indien ‘n sekere winkelgroep bv 500 lammers soek wat spesifiek 20kg weeg

en ‘n A2 gradering moet hê, dan kan Tomis die lammers vanaf die voerkraal trek wat 100% aan die spesifikasies

voldoen en ons klient so gelukkig hou.

Een van die fondasies van die Tomis Groep is: “Om te meet is om te weet”

By Tomis Voerkraal word alles gemeet: gemiddelde daaglikse gewigstoename van diere, voeromsetverhoudings,

gemiddelde daaglikse kraalkoste, uitslagpersentasie van diere, finansieringskostes, ens. Die streng toepassing

van die meet beginsel help ons om ons oog op die bal te hou in ‘n bedryf waar kontrole van absolute belang is.

Tomis Voerkraal is vir die boer ‘n “Eenstop–besigheid”, waar hy die geleentheid het om, behalwe vir sy markgereed

diere, ook sy diere wat nog afgerond moet word, lewendig oor die skaal te kan verkoop!

Om af te sluit, ‘n voerkraal is natuurlik ‘n hoë risiko, hoë omset, lae winsmarge besigheid, waar hoë voerpryse

absoluut geen spasie vir foute toelaat nie. Ons bly egter positief oor die toekoms en glo dat voedselsekerheid al

meer belangrik sal word en het daarom besluit om verder te investeer in Tomis Voerkraal. Ons beoog om die kraal

uit te brei van ’n 10 000- tot ‘n 15 000- diere-eenheid.

Baie dankie aan Meadow Voere, James Barry en sy span, en veral Nols Hanekom vir die rol wat hulle in die sukses

van Tomis Voerkraal speel. Nols hanteer Tomis Abattoir asof hy in diens van die groep is en dra altyd ons belange

‘n Geskiedkundige gebeurtenis het einde Januarie 2013 plaasgevind by Tomis Abattoir. Tomis, Meadow en Kaap Agri het ‘n samewerkingsooreenkoms gesluit, waar die drie maatskappye met nuwe idees die skaap-en beesmark wil uitbrei tot almal se voordeel. Dit sluit die produsent ook in. Sonder die produsent sal die ooreenkoms nie werk nie. Die produsent speel ‘n baie belangrike rol in die hele proses.

Daar is besluit dat die jaar 2013 eers klein begin word. Die groeipyne van die samewerkingsooreenkoms moet mooi uitgesorteer word sodat die finale produk wat aan boere bekend gestel gaan word, vlot kan verloop.

In beginsel is daar 3 tipes produksielenings vir produsente om van te kies nl:1. ‘n 12 maande Tomeka produksielening vir veemedisyne, voere, oorplaatjies en weegkostes.2. ‘n 12 maande Tomeka produksielening vir spekulasie tydens die groenseisoen op “medics”. Dit behels die aankoop van diere, veemedisyne, voere, oorplaatjies en weegkostes.3. ‘n 36 maande Tomeka vestigingslening vir die aankoop van skaapooikuddes, veemedisyne, voere, oorplaatjies en weegkostes.

Om te kwalifiseer vir enige van die 3 lenings moet ‘n produsent aansoek doen vir krediet by Kaap Agri. Tomis moet ‘n verhouding met die kliënt kan opbou of reeds in plek hê. Die diere moet aan Tomis gelewer word en daar word ‘n kontrak gesluit tussen Tomis en die produsent. Die produsent moet ook ‘n goeie boer wees wat met diere kan boer en dit verstaan. Meadow sal waar nodig die nodige aanbevelings doen en van die voere verskaf.

Let wel: daar streng voorwaardes is aangaande die konsep en ‘n produsent moet eers goedgekeur word voordat hy mag begin.

Dit is ‘n unieke konsep waarby die produsent kan baat by vind. Die ondersteuningsnetwerk vir die produsent is in plek en sal help om voedselsekuriteit te verseker.

The newly upgraded abattoir has the capacity to slaughter 1800 lamb/sheep a day. Throughout the facility HACCP standards are adhered to

and great care is taken to maintain the best animal welfare practices as possible. Temple Grandin design principles, as well as other advanced technology, are used in the holding pens and aim to minimalize stress on animals. A strict code of conduct, regarding animal welfare, is followed by well trained staff.

In order to ensure the best possible fresh product with an optimal shelf life, Tomis Abattoir maintains a cold chain, starting from the slaughter floor and ending at the retail outlet.

TOMIS LAMB is a well-known quality brand recognized by wholesalers, butchers and retailers for its superior build, conformation, quality of slaughter, shelf life and tenderness.

Tomis Abattoir is the national supplier of lamb to the Spar Group and sells quality lamb under the Tender and Tasty brand. Country Reared lamb is also sold to Pick ‘n Pay in the Western Cape. Supplier farmers, who support this program, look after the wellbeing of animals from the farm to the abattoir. Good responsible farming practices, as prescribed by Pick ‘n Pay guidelines, must be followed and farms are regularly audited to ensure compliance. No growth hormones or stimulants are used in the raising of animals and animal welfare is of utmost importance. The rest of this supplier chain is also monitored and independently audited by SAMIC according to strict HAS principles and guidelines. Regular product testing is also done by independent laboratories to ensure compliance with all relevant guidelines.

ir Tomis Beef Abattoir opened its doors in 2009. The abattoir was built as a result of the closure of Maitland Abattoir in 2007 and a subsequent

lack of slaughter capacity in the Western Cape.

This abattoir has a capacity to slaughter 140 cattle a day and is separately operated from the sheep abattoir. Both abattoirs share some of the cold rooms, dispatch- and personnel facilities.

The same high standards and guiding principles are followed in both abattoirs. Traceability systems are in place in both, identifying carcasses from farm to the customer with an Abaserv barcode system with all the

necessary information about the product and its source. Traceability systems are of great importance when certain characteristics need to be verified i.e. brand, specie of animal, source, etc. Traceability is also of vital importance for recall procedures.

Independent inspectors and meat classifiers are used in both abattoirs. IMQAS are contracted for this service. SAMIC coordinates all meat classifiers to ensure that they are up to the prescribed standard and the Department of Agriculture inspects and coordinate all meat- and health inspectors, as well as the facility, to ensure compliance with relevant abattoir legislation.

Both abattoirs are also independently audited by SAFSIS to evaluate the standard of the facility and its’ procedures and policies. Tomis achieved a very high rating in this audit. A ZA audit was also recently done and approval granted for both abattoirs.

Tomis Beef Abattoir is also busy with exciting new projects to ensure better consistency in the supply of beef to its customers as well starting the Tomis Angus Beef project where Angus beef will be sourced and a variety of value added products sold under the brand.

tomis angus Beef

We have decided to launch our own brand of Angus Beef as a result of the growing number of

requests to stock this breed of cattle. We plan to buy and stock Angus cattle from various farmers

in our surrounding areas. Some of the animals will go to farms where they will be electronically tagged

and made market ready. Other animals will go to a feedlot for finishing. Some animals will go directly to

Tomis Beef Abattoir.

All carcasses will be tagged and marked as Angus Beef and taken to Tomis Meat Packers for further

processing. A wide range of branded Tomis Angus Beef products will be made, e.g. various steak cuts,

mince, burgers, sausage etc. These products will then be sold to the various tray ready retail stores that

we are currently supplying, as well as other franchise groups whom have shown interest in the product.

Tomis Country Butchery will also stock the range of Angus beef products at the farm and restaurants will

be able to buy directly from our meat packaging plant. We believe that this iniative will have a positive

effect on various Angus breeders and farmers whom have put in a lot of effort to produce quality animals

over the years.

We want to make it clear that we do not intend to discriminate against any other breeds of cattle and will

continue to buy and support other breeds.

A new, modern meat cutting and processing plant recently opened its doors at Tomis - with the aim to supply a bigger and better variety of value add products to the market.

The plant is currently supplying products to Spar and Pick ‘n Pay “tray ready stores”, where products are packed at Tomis and sold in these retail outlets. Mehrenbos Vleis recently opened its doors in Wolseley and all lamb and beef products sold are supplied by Tomis in the tray ready format. Kaap Agri will also be selling Tomis meat products in their stores soon.

Other markets that are targeted are butcheries, hostels, catering companies, restaurants and the housewife. Tomis Meat Packers also supply Tomis Country Butchery that was opened on the farm with quality fresh products. This butchery is open to the public and sells a huge variety of meat products as well as other refreshments at very good prices.

The plant debones lamb and beef carcasses and sell these to the various wholesale and retail outlets. New equipment and technology are used to cut and pack lamb primals for the Spar Group, Lamb is sold in a primal format nationally under the Spar “Tender and Tasty” brand. Beef is also sold in the primal format. New methods of packaging have made it possible to extend the shelf life of fresh lamb to 21 days and soon even a longer shelf life will be achieved.

Export markets will also be targeted as the company is an export approved facility with ZA status.

Products that are produced are lamb and beef cuts, various types of sausages and burgers, mince, biltong and droëwors and various other fresh meat delicacies.

The Tomis Group has been appointed the honour of being the national lamb supplier of the Spar Tender and Tasty brand. The Tender and Tasty Spar house brand is synonymous with the best quality meat products that they can source.

This achievement is not something that has come easy. At Tomis we have always focused on producing the best quality fresh lamb possible and giving our customers the best product with the best shelf life. In 20 years we have never sold lamb – we have always sold Tomis Lamb!

Living this ethos has helped us to stay focused on our brand, what is important to our brand and how to achieve and maintain the best quality. The Spar Group has recognized this and we have subsequently joined hands in a new and exciting venture. Tomis lamb are cut into primal cuts, cryovacked at Tomis Meat Packers, transported to various Spar Distribution Centres across the country and sold as Tender and Tasty lamb into various Spar stores.

New consumer protection legislation has forced retailers to ensure that their customers are supplied with the best quality products that adhere to strict standards of food safety. At Tomis we are serious about food safety and follow strict policies and procedures in our HAS program. In our recent FSA audit the facility achieved a 90% audit score.

During the process of composting, microorganisms break down organic matter and produce carbon dioxide, water, heat, and humus,

the relatively stable organic end product. Under optimal conditions, composting proceeds through three phases:

1. the mesophilic, or moderate-temperature phase, which lasts for a couple of days, the2. thermophilic, or high-temperature phase, which can last from a few days to several months,3. and finally, a cooling and maturation phase.

Different communities of microorganisms predominate during the various composting phases. Initial decomposition is carried out by mesophilic microorganisms, which rapidly break down the soluble, readily degradable compounds. The heat they produce causes the compost temperature to rapidly rise.

tomis does the rest of the work

Various different organic by products (animal remains, egg shells, fruit pulp) which contain all the nutrients - nitrogen, phosphorous, potassium which are needed by the decomposers to make a mature and humus rich product called compost. The by products are mixed with a bulking agent (kraal manure, chicken litter, woodchips) which together ensure an organic rich material high in macro- and micro-nutrients (calcium, sulphur, magnesium, iron and zinc) to replenish the soil.

The mixed products are placed into a biopile for effective aerobic aeration. Now the high activities of the decomposers raise the temperature to around 70-750C to ensure a hygienic and safe product. These high temperatures are similar to the principle of pasteurization of milk and eliminate pathogens (disease causing bacteria and viruses) and seeds making the final material safe to handle. These high temperatures and decomposer activities are optimized, and continuously monitored, by regular turning of the biopile and last for around 21 days

After all this hectic activity the immature compost is allowed to stabilize or as it is normally called “cured”. This is a very important stage, often skipped over to increase production rates. During this time the compost gets darker and starts to get an earthy smell. Now most of the valuable products of compost are formed humic acids. Therefore, at Tomis great care is taken of the compost during this process and sufficient time given for it to mature completely. This is verified by testing for nutrient value, moisture, pH and metals content, and then only made available for re-sale.
