Cover: Kiyomizu-dera Temple (Kyoto)In Japan, the feeling of spring has come with the scent of the ume (plum) blossoms in the air, soon to be replaced by the sight of cherry blossoms. The Japanese archipelago is covered in colorful flowers and fresh greenery, a refreshing wind begins to blow and the sun starts to become warmer and brighter day by day. It is the perfect time for a day trip out of the city, an outing to take in the natural beauty of spring.

Jill arrived from the UK today. Her rst destination was Tōkyō Station where she was supposed to meet her friend. Highway buses are one option to get to Tōkyō Station from Narita Airport, but the railway is more reliable without making you worry about a trac jam when you have an appointment for meeting someone. Especially, N’EX oers you direct access to major stations including Tōkyō, Shibuya, Shinjuku and Ikebukuro stations with no transfer.

Jill checked her seat number before sitting. The seat was comfort-able with a spacious seat pitch. Each car has a large luggage storage space with dial locks, which made us feel safe. Jill found it conve-nient that all seats were equipped with outlets: you can charge your phone and use your computer. The train took her to Tōkyō Station in around 1 hour while she was comfortably relaxing herself.

It took about 1 hour to get to Tōkyō Station. The fare was only 1,500 yen (for adult)! We found it was about the half of the regular adult fare for an Ordinary Car reserved seat. This amazing price is applied even to more distant destinations such as Yokohama. Jill did not hesitate to buy one. She just showed her passport to get a ticket. It was quick and easy!

In January 2014, East Japan Railway Company (JR East) started selling the N’EX TOKYO Direct Ticket (One-way), which are available only to foreign nationals visiting Japan. This one-way ticket is a great way to save on Ordi-nary Car reserved seats on the Narita Express (N’EX) from Narita Airport to the Tokyo metropolitan area. Together with Jill, a tourist from the UK, we tried and tested this system to see if it is really as convenient as advertised.

Around Hachioji Station

JR Hachioji Station and Keio Hachioji Station are surrounded by build-ings that house lots of shops that cater to young people. Walk down Nishi-Hoshasen You Road and you will fi nd Nakamachi/Kurobei district, a remnant of the hanamachi (geisha district) of the old-time Hachioji, which once boasted of its textile industry. Some old buildings of geisha houses still remain along Koshu Kaido Highway. You can purchase ties and scarves made of Hachioji fabric at Beneck, a shop directly managed by Hachioji Textile Industrial Association. You can also fi nd several his-toric Japanese sweets shops in the area. Th e Hachioji Station area is spot-ted with historical sites such as Koyasu Shrine and Ichimori Otori Shrine where Tori no Ichi (Rooster day fair) is held in November every year.

Hachioji ramen comes with a rich, soy sauce based soup with chopped onions for topping. A recent underground boom among local people is pan-katsu, deep-fried battered bread. A new place of interest recently opened at the South Exit of JR Hachioji Station is Tsumami to Okazu no Meitengai Hachioji Roman Chika (the underground food court for nib-bles and dishes). Th is food court with a nostalgic atmosphere is designed using the “streetscape” representation of the 1960s. One of the Hachioji’s specialty sweets, Miyako Manju, is a small, fl at bun stuff ed with navy bean paste.

In front of Hachioji Station, there are lots of anime-related shops such as Animate. Ryoho-ji Temple is a Buddhist temple attracting otaku (geek) people as a “moe-temple,” or enthralling temple. You can fi nd moe sign-boards and moe statues. Moe goods also can be purchased.

Tokyo Kokeshi is a pretty doll known for its large head and small face. It is carved out of one piece of wood using a special technique. You can ex-perience painting a doll (by appointment 0426-22-2978, Japanese only).

Go Go Greg! vol.2

I happened to be one of the lucky people invited by the Ehime Prefectural Government to take a guided tour of the Shimanami Kaido area, a stretch of islands connecting Japan’s mainland with

the large island of Shikoku. Th ese islands had been mostly left alone to the few local townsmen and fi shermen that lived on them until about fi fteen years ago, when bridges were built to connect them together and create a roadway across the inland sea. Ehime is the part of Shikoku connected to the bridges, which is why they were the ones to take me and a bunch of international reporters on a tour of the area.

Th e timing of the free ride was that at the end of October, the local authorities were organizing a cycling event running across the whole Shimanami Kaido, with more than 3,000 bikers signed up in advance. Th e idea was to show us how great Shimanami is for cycling, and all the attractions the region has for bikers who want to take their time and explore around.

On our fi rst day, we got taken on a drive around Matsuyama, the largest city in Ehime. We stopped at the famous Matsuyama Castle

Greg from N.Y. will report on various experiences in Japan. In episode two,he visited Shimanami Kaido in western Japan.

along the way, took a quick walk around and checked in at a hotel close to Dogo Onsen, one of the oldest hot springs in the country, and also known as one of the inspirations for Studio Ghibli’s ani-mated fi lm “Spirited Away.” Locals line up to get in here at six in the morning, which I ended up doing the next day too, only because I was too tired to get in at night.

After my bath, we got back on the bus and headed off to the bike event, which ended up going down in the pouring rain and cold. Apparently, only 1,200 people showed up to ride, which was pretty good considering how bad the weather was. Th e local staff did their best to make things easier for visitors, trucking in a huge amount of

wooden planks to set on the sand (Th e race started by the bridge, on a beach-like area, which basically turned into mud). Th ere was a ton of help-ers working stalls, selling local products and running around dressed as mascots, which made you feel bad it couldn’t have been a sunny day. Th e highways were closed down so that bikers could enjoy racing on the main roads in the center of the bridges, which is why there wasn’t a rain date planned, apparently. Hopefully, they’ll have one next year, to make sure there’s a high turnout.

For the next couple of days, we got to try out cycling ourselves and see some sights on the islands. Because this area barely got any visitors at all before the bridges were built, towns here still have a feudal age feel. Mitarai is especially known as a scenic town, and the odd movie gets shot there now and then. Some other attractions, like the Hirayama Ikuo Museum of Art and various Buddhist and Shinto temples, are popular with locals and worth checking out if you like these kind of things.

Our tour ended in Onomichi in Hiroshima Prefecture, on the other side of the inland sea. We got to eat some Hiroshima Yaki (Hiroshiima-style okonomiyaki), basically fried pancakes with noodles inside them. Th ey taste about a million times better than they sound. Th e Shimanami area kind of fi ts that description. If you want to fi nd out what’s it’s like, you’ll have to take your bike over and try it yourself!

Shimanami Kaido is a road that runs between Imabari (Ehime Pref.) and Onomichi (Hiroshima Pref.), connecting a string of islands. It is famous for its cycling road that crosses over the ocean. There are 14 spots to rent bicycles along the path and you can return them at any of these locations as well.

Hokkaido is an island awash with natural splendor, located at the north end of the Japanese archipelago. As

Hokkaido is remote from the center of the coun-try, it possesses various unique cultural elements. There are several large lakes in Hokkaido in-cluding Lake Akan, which is located in the east-ern part of the island and is famous as a habitat for marimo, or moss balls which is designated as a Special Natural Monument. Akanko Onsen hot springs can be found on the south bank of the lake. This onsen was already being used by the Ainu, an indigenous people of Japan, when explorer Takeshiro Matsuura made a survey of the area in 1858. Hot spring types here include both simple onsen and sulfur onsen.

On the south side of the lake, there are two shopping streets with many hotels and inns that fea-

ture various styles of onsen such as open-air baths, handbaths and footbaths. These facilities can offer Japanese pond smelt freshly fished at Lake Akan and other fresh local seafood to guests, thanks to their close proximity to the port of Kushiro. Ainu Kotan Village, an Ainu village created for tourists at the west end of the onsen district, features Ainu folk crafts and dance performances for visitors to enjoy. There are complimentary shuttle buses con-necting hotels, the Visitor Center, and Ainu Kotan Village in the onsen district.

You can enjoy leisure sports around the great nature of Lake Akan. Anglers from all over the nation come to fish and admire the fantastic scenery. Many climb Mt. Oakan-dake and Mt. Meakan-dake, known as two of Japan’s 100 finest mountains. Further attractions include canoeing on the lake and rafting on the Akan River, and at night, the beautiful starry sky is a highlight. Skiing and snowboarding are popu-lar during the cold season.

Nikujaga (Simmered meat and potatoes)Ingredients (serves 4)200 g sliced beef 3 potatoes

(in the case of new potatoes, 6-10 potatoes)1 onionSnow peas

4 tbsp sake3 tbsp sugar4 tbsp soy sauce2 tbsp mirin

(sweet cooking rice wine)

Cooking directions:1. Wash, peel and cut the potatoes into slightly larger than bite-sized pieces. When using new potatoes, a scrub brush is

recommended for washing and scraping the skin, and peeling is not necessary.2. Put the potatoes in a pan and cover with water and boil for about 6 minutes. Poke with a bamboo skewer and stop cooking

when they are 70% cooked. Keep the water and set the potatoes aside in a strainer.3. While the potatoes are cooking, cut the onion in half lengthwise, then cut into 2-cm width wedges and separate the layers.

4. Roughly wash the pan used in #2 above, add sake, sugar, soy sauce, and mirin and mix. Add the beef and stir. Cook over a medium heat. When the meat has browned, add the onions. Cover with a lid and steam for 2 minutes.

5. Add the potatoes and 1 cup of the water saved in #2 above, cover with a drop lid (otoshibuta) and cover with a lid. Cook for about 10 minutes. Be sure to rotate the potatoes so they absorb the flavor evenly. When they begin to crumble, remove the lid, cook down over a high heat.

6.Arrange on a dish with the boiled snow peas.

Tips- For nikujaga, beef is usually used in the Kansai region and pork in the Kanto region.

Other ingredients, such as carrots and shirataki noodles, are also used.- In this recipe, the potatoes are pre-cooked and so making dashi is not necessary.

It takes less cooking time than recipes in which ingredients are fried before simmering. - Remove the potato buds (eyes) using the edge of the knife blade near the handle.

Instructor: Kazuko KarasawaI learned cooking from my parents, who ran a Japanese restaurant, and my grandmother, who lived to be 100 years old. As a housewife, I’ve been cooking for 20 years. I like cooking everyday, taking care of my family’s health.

Happy to make Japanese cuisine. This is my first experience to cook and eat nikujaga. I want to make this for my hus-band. After learning this today, I’m confident! (Jill from the UK)

Poke with a bamboo skewer and check them cooked.

Stir with chopsticks making

sure the beef is untangled.

Use a sheet of parchment paper on

top as a drop lid.Remove the

strings from the peas before boiling.

If made with superior

Japanese beef, the taste is even more

delicious!

Cover the ingre-dients for simmering

in less water. As a substitute for a wooden drop lid, aluminum foil or parchment paper can be

used. Be sure to make some holes in it.

what is Otoshibuta ?

Because it is traditionally a home-cooked dish, different recipes for nikujaga depend on the family. This time

we introduce a recipe in which the ingredients are not fried before simmering and take a shorter cooking time.

Rail 鐵路Japan is covered in a rail network that reaches to almost every corner of the archipelago. Most are owned and run by the Japan Railway (JR) system and the world famous “Shinkansen” bullet train is of course one of the fastest and most enjoyable forms of land transport anywhere – the distance between Tokyo and Osaka being covered in just 2hrs 30 mins on the fastest line.

主要有JR(Japan Railway Co., Ltd., 日本旅客鐵路)運行著,在這當

Japan Rail PassJapan Rail Pass allows you to use the whole JR system (including the Shinkansen) but is only sold outside Japan. 28,300 yen gets you a full 7 day ticket (adults).

For more info, check the Japan Rail Pass website:詳情請看JAPAN RAIL PASS的網站 www.japanrailpass.net

Bus 巴士 Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than travel-ing by plane or train but do take longer and can be aff ected by traffi c jams at busy times of the day or night.Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recom-mend you ask drivers to remind you of where you must disem-bark prior to setting off .

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fi xed rate of 710 yen (in Tokyo) for the fi rst two kilometers. The rate system is shown inside the taxi and receipts can be issued. In urban areas, you can usually pay by credit card for a taxi. If credit cards are accepted, a taxi has a sticker showing this on the window.

In big cities, such as Tokyo and Osaka, the under and over ground train system is well organized and highly effi cient accessing any and all parts of the cities. To avoid wasting time lining up for tickets and working out how to use the machines in diff erent stations, it is highly recommended to purchase pre-paid cards.

If planning to stay in Japan for a longer period why not try us-ing IC cards?
