Điều gì làm cho món Việt trở nên khác biệt? Có thể phải nói đến những loại gia vị tươi và nước mắm không mùi. Sự kết hợp này đóng vai trò quan trọng trong từng món ăn Việt Nam. Một số quan điểm cho rằng đồ

giữa gia vị, nhiệt độ, độ ngọt, và vị đắng – bí quyết ở đây là nước mắm. Bên cạnh đó là sự cân bằng âm – dương trong truyền thống ẩm thực Đông Nam Á; ngọt và mặn,

mát và nhiệt, tươi sống và lên men.

Đồ ăn miền Bắc chịu ảnh hưởng lớn bởi Trung Quốc với những món xào và mì nước. Càng đi về phía Nam sẽ càng thấy thêm sự pha trộn mùi vị của Thái Lan và Cam-pu-

chia. Khí hậu nhiệt đới ở miền Nam thích hợp cho việc phát triển thêm nhiều ruộng lúa, rừng dừa, cây mít và vườn cây gia vị. Điều đó góp phần làm đồ ăn miền Nam có

vị ngọt hơn hẳn: nước dùng phở ngọt ngào hơn, đường thốt nốt được sử dụng cho nhiều món ăn ngon và kem dừa dành để làm một số loại kẹo thông dụng.

Những loại trái cây chưa chín thì được xem như rau củ. Một quả đu đủ, xoài cứng và giòn hay một bông hoa chuối đều có thể trở thành một món gỏi thay vì chỉ sử dụng

rau xanh như thông thường. Trái cây chưa chín sẽ luôn có một ít vị chua, kết hợp hoàn hảo với nước mắm, ớt, tỏi, tôm khô và đậu phộng băm nhuyễn.

What makes Vietnamese food so special? It's the fresh herbs and a fish sauce that has no fragrance. The combinations play an important role in just about every dish in the Vietnamese cuisine. Some would call Vietnamese food simple, and it typically is, but never boring. Despite the varied landscape of Vietnam, the variety of food focuses on that balance of herbs, heat, sweetness, sourness, and bitterness - the secret being the fish sauce. As with other Southeast Asian cuisines, it's all about the yin and yang; the sweet and salty, the cooling and heating, the fresh and fermented. The food of the north is heavily influenced by China with its stir-fries and noodle-based soups. As you move south, there's more flavor-blending with nearby Thailand and Cambodia. The tropical climate down south also sustains more rice paddies, coconut groves, jackfruit trees, and herb gardens. The food in southern Vietnam is typically sweeter: sweeter broths for pho, more palm sugar used in savory dishes and those popular toffee-like coconut candies made with coconut cream. Unripe fruits are considered more like vegetables. Crispy and crunchy, a green papaya and mango or banana flower becomes the base for salads instead of leafy greens. The unripe fruit-meat is usually a little sour, pairing nicely with the fish sauce, chilli, garlic, dried shrimp and finely chopped peanuts.

Nước lọc Nhằm giảm thiểu việc vận chuyển chai nước gắn liền với việc xả khí thải C02 và chai nhựa, chúng tôi đã xây dựng nên Crystal Water Plant. Điều này cung cấp nước uống

tinh khiết cho toàn thể khách và nhân viên. Viện Pasteur ở thành phố Hồ Chí Mình đã xác định chất lượng an toàn của nước uống Crystal Water mỗi tháng một lần.

Mục tiêu của chúng tôi là mang đến nguồn nước uống và nấu ăn cho cộng đồng người dân địa phương trên đảo. Toàn bộ lợi nhuận thu về từ Crytal Water sẽ được gửi trực

Crystal water To avoid transportation of bottled water and the connected carbon dioxide emissions as well plastic waste we built our own Crystal Water plant. This provides clinically pure,

remineralized drinking water to all our guests and hosts. Institute Pasteur in Ho Chi Minh City ascertains our quality, safety and portability of Crystal Water once a month.

Our goal is to provide clean drinking and cooking water for the whole local community on this island. The entire profit from Crystal Water goes directly to this project. With your help in the

past, we have been able to build a Crystal Water supply plant for the local Con Dao primary school and the local hospital.

You are most welcome to visit the Crystal Water installation in our resort as well as in the Con Dao primary school.

THE OLD AND NEW WORLD WINE

Ancient stone cellars still hold dusty old bottles of wine infused with tradition and mysteriously enticing aromas, but now there appear new flavors made with innovative and youthful expression. France, Italy and Spain, the three largest wine-producing countries in

the world, originated and developed the traditional basis for wine-growing and wine making. Old World styles are usually earthier and drier and depend on structure and other factors to

make their wine style. Wine making is more of an art form and the resulting wine traditionally needs time to develop in the bottle and needs to be drunk with food.

New World wines (from the southern hemisphere and North America) such as those from

Chile and the U.S. are well known for their exciting "fruit-forward" style (with a prominent fruit flavor and bouquet) and many of the top 100 wines of the world are the new classics

from regions such as Marlborough (New Zealand), the Napa Valley (U.S.), Barossa (South Australia) and Stellenbosch (South Africa).

New World wines tend to emphasize fruit. They have challenged the traditional wine making methods employed by the Old World and produce wines which typically have up-front ripe and fruity flavors, and which can be drunk immediately, either on their own or with food. These countries encourage the fruitiness of their wine by picking the grapes at optimum

ripeness, keeping the grapes and grape must chilled and by using state of the art technology during fermentation and bottling. Perhaps the single biggest factor in the success of the New World has been improvements in irrigation technology, something that is prohibited in many

parts of the old winemaking world. This new use of science and technology horrifies the Old-World winemakers using traditional methods.

FRANCE

France and Wines are two inseperable elements. Though “new world” countries have made huge strides in recent times, when it comes to sheer quality, very few wines can match the consistent quality and complexity of the top French wines. Each major grape variety is represented with top quality examples from all over the country. From Alsace to Languedoc, each wine region is known for its distinguished wines France..the most important wine producing in the world,the country makes a very diverse renge of wine: very light rose wine in provence in the south, an area which also produves full bodied reds, predominantly white wine inn the Loire and Alsace: and strong classic red wines of Bordeaux, Burgundy, the Rhone and Champagne have exerted influence on every winemaker and producer in the world.

ITALY Wine has been produced in Italy for over 4000 years. In fact the ancient Greeks knew it as Oenotria, or land of the vines. In modern times, Italy is the biggest producer of wine in the world, with wine being produced almost all over the country from the Alpine regions such as Trentino and Alto Adige in the far north of the country, to Basilicata, Puglia and Sicily in the south and as such, the wines of Italy can be massively diverse in style

SPAIN Spain is now one of the most important wine regions in the world. One could be forgiven though for thinking that Spanish wine was only about Rioja. In fact, Spain has more land under vine than any other country in the world. A lot of wines made however are sold off, either in bulk to wholesalers, or to the Vinegar trade.

GERMANY Germany is slowly recovering from a mostly undeserved bad reputation, but now they produce some very unique new style wines, still in small quantities, and have consequently created a cult following for their high quality.

AUSTRIA Austria, a well respected wine growing region in Europe is not much known beyond Europe for its wines. Austria whites are dryer.Gruner Veltlirer and Riesling are the best known varietals from Austria. USA It was the Spanish who brought wine making to the United States, some 400 years or so ago. While grapes are grown and wines are made in almost all of the country’s 50 states, the best quality wines are produced in the 3 states that make up the Pacific coast, namely, Washington, Oregon and California.

ARGENTINA Argentina is the world’s fifth largest wine producer, and for 200 years, the Spanish, the Italians and more recently the French have been making wine there. However, a per capita domestic annual consumption of around 90 litres has long prevented Argentina from looking beyond its borders. Now, with a rash of new plantings of interesting varieties, such as Malbec, Cabernet and Bonarda, combined with a host of wine making talent from both at home and abroad, Argentinian wines have become some of the most exciting and interesting around. CHILE The image of neatly lined rows of vines grown around a lovely, historic, Spanish style winery with the backdrop of the snow-capped Andes Mountains has got to be one of the most breathtaking snapshots of wine production in the world. Much like the rest of the "New World", Chilean wines remained unknown to most of the world until the last 20, even 15 years. The Chilean wine industry has been phenomenally successful in a short amount of time, thanks to major quality improvements, investment, excellent growing conditions and an acquired reputation as a source of good-value, consistent wines. SOUTH AFRICA The legendary wine from Constantia became so highly regarded in Europe during the 19th century that it was bought in preference by the exiled Napoleon and Russian tsars, instead of Madeira, Tokaji, or even Sauternes. South Africa’s main wine producing areas are still concentrated in the southwest, spreading gradually north and eastward from Cape Town. AUSTRALIA “On the 24th of January two bunches of grapes were cut in the Governor’s garden from cuttings brought three years before from the Cape of Good Hope.” The year was 1791, the chronicler, Watkin Tench, and the site of the garden is now occupied by the Inter-Continental Hotel in Sydney’s Macquarie Street. Between 1820 and 1840 commercial viticulture was progressively established in New South Wales, Tasmania, Western Australia, Victoria and finally South Australia. As Australia has no native grape varieties, all vines grown in the country are imported from Europe. NEW ZEALAND The vineyards of New Zealand lie in between the 35 and 45 degre latitudes, the European equivalent of between Bordeaux and Southern Spain. Growing vines on the margins can have some spectacular results, notably Rieslings from the Mosel and Chardonnays from Chablis. Nevertheless it was not until the 1980’s that large scale plantings of quality varieties got underway. Muller Thurgau was replaced by Sauvignon Blanc and was planted on the dry gravelly river beds of Martinbourough and Marlbrough. Throughout the 1990’s, Pinot Noir vineyards sprouted in all parts of both the North and South islands, from Auckland to Central Otago.
