Easy Recipe: Frittata
8(ish) Beaten Eggs
Splash of milk
2 tbsp olive oil
Variety of diced/chopped vegetables: kale, spinach, red
onion, colourful peppers, boiled potatoes.
In a bowl beat eggs with milk, set aside. Heat
oil in pan. Add chopped vegetables and sautéuntil soft. Add egg mixture to pan and mix
quickly. Keep on heat until egg is just set.
Finish cooking
frittata under a
broiler until top
is golden brown
and the eggs are
cooked through.
Easy Variation:
Add cooked
sausages to pan
before adding eggs.
