ON LOVING YOURSELF

Whenever I hear that phrase, I think of Stewart Smalley on Saturday Night Live in front of the mirror, saying

positive affi rmations like, “Gosh darn it, people like me.” Loving yourself sounds hokey if you practice it Smalley-style, but as Louise Hay mentions on page 15, it’s also the basis for a life in which you care and nourish yourself wholeheartedly. “Loving yourself is the founda-tion for living the life you want,” she says.

If we truly, mindfully, decided to love ourselves, we might just:

• Nourish our bodies with fresh, healthy, local foods wherever possible;

• Find a fi tness routine that is fun and engaging and make it a habit;

• Treat others the way we want to be treated;

• Stay informed about the latest information on health and vitality – and DO OUR OWN RESEARCH!

• Find medical practitioners that listen respectfully, and stay current with the latest research;

• Express love outwardly by giving time and resources to local charities;

• Try new things, meet new people and have new experiences that add variety and interest to life;

• Practice daily meditation to quiet the chattering monkey-mind. “Flip-switch” to positive thoughts when your head is telling you negative things.

• Look for beauty and happiness in everything, and live in the present. Dwelling on negatives from the past can lead to depression, while worrying about the future leads to anxiety.

• Create ourselves anew each day. Choose the best you with your thoughts, words and deeds.

“SADDLE UP”YOUR CHICKENS

Chicken Armor, based in Morrison, has reinvented the chicken saddle.

Chicken saddles are a protective device worn by the chicken like a vest. The saddle protects the backs of chickens during mating and molting while the predator eye-deterrents help reduce loss. “While the eye-deterrents are not 100% fool-proof, we’ve had good feedback from customers that

the deterrents have helped prevent loss to predators in their respective areas,” says Jill Bong, general manager of Chicken Armor. GMO Bill Denies Americans the Right to KnowCongressman Mike Pompeo (R), of Kansas, has introduced

bill HR 4432, the Safe and Accurate Food Labeling Act of 2014 which would ban states from passing genetically en-gineered food labeling laws and undo those already passed, making voluntary labeling the law of the land. The bill also allows companies to label products containing GMOs as “natural”. Healthy food advocates have dubbed it the “Denying Americans the Right to Know (DARK) Act.” The bill bans any mention of organic natural foods as being safer or better than their GMO counterparts and sets a strong burden of proof on organic small farms that wish to grow and market their products as GMO-free. If we don’t want to be kept in the dark about what we’re eating, Congress needs to protect our right to know if foods contain GMOs. While grassroots efforts to require labeling of GMOs are gaining momentum, Big Agriculture, the Grocery Manufacturers of America and biotech companies like Mon-santo are trying to block our right to know what’s in our food. The issue is critical and time-sensitive, so act now!

Ozone: the Magic of Oxygen The human body requires naturally-occurring oxygen to fuel a myriad of pro-

cesses taking place on a cellular level in our bodies every moment. In fact, the immune system regularly produces activated oxygen or “ozone” in defense of the body! What could be more “natural” than using oxygen to assist and pro-mote healing of the body? According to Ozone therapy in periodontics, Journal of Medicine and Life. 2012 Feb 22; 5(1): 59–67, Ozone is a unique combination of oxygen molecules referred to as “super oxygen” or activated oxygen. Ozone is usually considered synonymous with pollution, but that is because particulate matter in the air (pol-lution) becomes attached to oxygen molecules (ozone). The truth is that ozone is essential to the maintenance of our atmosphere – without it we would perish. This “super oxygen” layer balances, cleanses and protects the breathable air sur-rounding our planet. The same article discovered that ozone was very useful in reducing and elimi-nating viruses, fungi and acidic bacteria. Since many of the organisms harmful to humans are anaerobic (live without oxygen), ozone is the perfect treatment! Ozone can be used in various forms – gas, liquid and solid (gel). It breaks down rapidly and is absorbed by the body with no drug reactions, residual side effects or allergies. In addition to killing pathogens, it increases blood fl ow, stimulates the immune systems and accelerates the healing response on many levels! Dr. Scott Stewart of South Lakewood Dental can be reached at 303-988-4338. See ad page 18.

Meditation Minimizes Migraines Researchers from the Wake Forest School of Medi-

cine found that mindfulness meditation signifi cantly reduced the number and duration of migraines among 19 episodic migraine patients. Ten were given eight weeks of mindfulness classes with instructions for adding personal meditation in-between sessions. The other nine received typical migraine care.

Those in the meditation group experienced an average of 1.4 fewer migraines per month, which averaged nearly

three hours less than the ones experienced by those in the control group. Pain levels of the headaches reported by those in the meditation group averaged 1.3 points lower on a scale of one to 10.

Anyone Can Intern

You don’t have to be a college student to apply for an intern-

ship. Today, many college gradu-ates and working adults pursue internships to explore different ca-reer paths, network with others in a similar industry, and learn how to work better in teams. No matter your age, an intern-ship can teach valuable work skills that lead to a more fulfi ll-ing career. A recent Gallup Poll revealed that 56% of employed, recent college graduates who took part in applied internships are now involved in and enthusi-astic about their work. The benefi ts, however, may reach beyond practical job ex-perience. Non-traditional intern-ships, such as those in farming and spiritual living, enhance life skills and give individuals an opportunity to learn more about themselves. For example, a recent New York Times article stated that internships with organic farms are on the rise, partly due to the desire for social change. Elizabeth Fritzler is with Sunrise Ranch, which offers a Farm/Garden Internship and Full Self Emergence program. See ad page 8.

PHOTOTHERAPY REDUCES KNEE PAINResearch from Brazil’s Universidade Nove de Julho has confi rmed that pulsed lasers and LED therapy applied during treatment can signifi cantly reduce knee pain. The 86 patients that participated in the study were divided into two groups; one received 12 treatments using super-pulsed red laser and infrared LED phototherapy and the control (placebo) group received 12 treatments using non-therapeutic phototherapy instruments. The patients given therapeutic phototherapy reported feeling signifi cantly less pain, beginning with and continuing after the tenth treatment through a one-month follow-up visit, and showed improved quality of life compared with the study’s placebo group.

BUGS LINKED TO FACTORY FARM ANTIBIOTICSThe bacteria E. coli now causes 75 to 95

percent of all urinary tract infections, and research from Iowa State University has confi rmed that such occurrences are linked to factory farms that use antibiot-ics. The fi ndings support a study previous-ly completed by scientists from the Johns Hopkins University School of Medicine and George Washington University that shows a strain of antibiotic-resistant E. coli called ExPEC, an extra-intestinal pathogen, was genetically traceable to factory-farmed animals receiving certain antibiotics. The National Antimicrobial Resistance Monitoring System reports that 75 per-cent of chicken and turkey, 59 percent of ground beef and 40 percent of pork meats tested were contaminated with E. coli, and that the strains were predomi-nantly multi-drug resistant.

Low Magnesium Levels Linked to Kidney DiseaseA study from the Johns Hopkins Uni-

versity School of Medicine found that people with low levels of magne-sium in their blood have a signifi cantly greater risk of chronic kidney disease. The researchers correlated the blood levels of magnesium in 13,226 people ages 45 to 65 with the incidence of chronic kidney disease and end-stage renal disease among them. Subjects that had blood serum magnesium lev-els below what is generally considered the normal range (0.7–1 millimole per liter) were associated with a 58 per-cent increased risk of chronic kidney disease and a 139 percent increased risk of end-stage renal disease. Abnormally low levels of mag-nesium may result from a number of conditions, including inadequate intake of serum magnesium due to chronic diarrhea, malabsorption, alcoholism, chronic stress and the use of medications such as diuretics. Foods rich in magnesium include leafy greens, nuts and seeds, beans, whole grains, avocados, bananas and fi gs.

Frack AttackDrilling Poisons Both Water and Air Major concerns about hydraulic fracturing, or frack-ing, as a means of extracting natural gas have centered on how toxic fracking fl uids and methane injected into the ground can pollute water supplies. Now a new study published in the Journal of Environmen-tal Health attests how fracking adversely impacts air quality, too. Lead author David Carpenter, director of the Institute for Health and the Environ-ment at New York’s University at Albany, is concerned that fracking sites show po-tential to develop cancer clusters in years to come. The study found eight different poisonous chemicals in groundwater near wells and fracking sites throughout Arkan-sas, Colorado, Ohio, Pennsylvania and Wyoming at levels that exceeded federal limits, including levels of benzene and formaldehyde, both known carcinogens. Approximately half of the air samples Carpenter analyzed exceeded federally rec-ommended limits. Benzene levels were 35 to 770,000 times higher; hydrogen sulfi de levels were 90 to 60,000 times higher; and formaldehyde levels were 30 to 240 times above a theoretically safe threshold. “Can-cer has a long latency, so you’re not seeing an elevation in cancer in these communities [yet],” says Carpenter. “But fi ve, 10, 15 or more years from now, elevation in cancer incidence is almost certain to happen.”Source: Grist.org

Corn GuzzlerDownsides of EthanolEthanol, which makes up 10 per-cent of the gasoline available at fi lling stations, together with other biofuels made from crops, ap-peared to be a way to reduce reliance on fossil fuels. However, recent research shows that the federal government’s push to up production of corn-derived ethanol as a gasoline additive since the U.S. Renewable Fuels Standard was enacted in 2007 has instead expanded our national carbon footprint and contrib-uted to a range of other problems.

The nonprofi t Environmental Working Group warns that continued production of corn ethanol is both worse for the climate than gasoline and bad for farmers, the land and consumers. “It’s driving up food prices, straining agricultural markets, increasing competition for arable land and promot-ing conversion of uncultivated land to grow crops,” according to this watchdog organization. The U.S. Environmental Protection Agency is reportedly weighing a proposal to cut the amount of ethanol currently required by law to be blended into gasoline by 1.39 billion gallons, equivalent to taking 580,000 cars off the roads for a year. Researchers have been trying to develop greener forms of ethanol, but none are ready for market yet. For more information, visit epa.gov/otaq/fuels/renewablefuels.

The Earth DietLiana Werner-Gray on Simple Eating

by Lane Vail

Liana Werner-Gray, an Australian-born beauty queen, actress and en-vironmentalist, lectures worldwide

on healthy eating and is supported by a corps of nutrition coaches. Her book, The Earth Diet, describes a nature-based eating and lifestyle plan that has helped thousands realize greater vital-ity, harmony and peace.

How did you discover the Earth Diet? Six years ago, I was completely ad-dicted to junk food and chronically sick, tired, bloated and miserable. It wasn’t until I was diagnosed with a golf-ball-sized precancerous tumor that I decided to take a serious look at my life and make a change. I began to blog about my journey into self-healing through natural foods and my readers held me accountable to sticking with it. I also started creat-ing healthy recipes that delivered my favorite junk food fl avors so I didn’t feel deprived. Slowly, I stopped craving artifi cial junk foods and started craving natural versions of those fl avors. Within three months, the tumor disappeared. I had demonstrated that I could undo the damage of toxic junk food by restor-ing proper nutrition into my cells and knew that by going back to nature, I could experience healing. Now people from around the world have testifi ed that The Earth Diet has helped them heal ail-ments from A to Z.

Why is it important to defi ne our eating plan? Everyone on the planet is on a diet; it’s just a matter of which one. Are you on a junk food diet or a disorderly eating diet? Most people deprive themselves at some point and end up binging later.

Having a name for the lifestyle I wanted to live helped me commit to it. When you’re lost and disconnected from nature and your body, you need rules and guidelines. Day one, eat this; day two, eat that. The Earth Diet’s rules and guidelines helped me to break a disempowering addiction to junk food. After following the guidelines for a while, the whole lifestyle becomes natural and choices become easy.

How can busy people prepare and eat fresh foods more frequently? Try making a huge batch of smooth-ies or vegetable juice on a Sunday; put a few servings in the fridge and the rest in the freezer. Then, take one to work each day. Fresh is best, but a thawed frozen juice is better than nothing. Also, simplify eating. I grew up in Australia’s Outback, alongside aboriginal people that ate “mono foods”—singular, whole, raw foods sourced directly from nature, and they had slim, resilient and

healthy bodies. Eating mono foods gives the digestive system a break; we feel en-ergized because the body doesn’t have to break down a complicated meal. Try, for example, eating a watermelon for lunch or an avocado for dinner.

Name some foods we’d be surprised to read about in The Earth Diet.My readers especially enjoy the chicken nuggets, burgers, gluten-free cookie dough, cashew cheesecake and vegan ice cream. The raw chocolate balls are popular, made with just three ingre-dients: almonds or sunfl ower seeds ground into fl our, cacao powder and a favorite natural sweetener like maple syrup, honey or dates. Sometimes I add salt, mint, coconut or vanilla. I make a batch in 10 minutes and keep them in the freezer so I can have chocolate whenever I crave it.

Transforming the way we eat can be overwhelming; what are some simple fi rst steps for the novice?Lemon water is incredibly powerful. It’s high in vitamin C, so it boosts the im-mune system, and it’s energizing, alka-lizing and detoxifying. Just squeeze the juice of a lemon into two cups of water fi rst thing in the morning and drink. I also recommend eating a whole, raw, mono food in its natural state every day, like a banana, orange or strawberries. Eat something that hasn’t been sliced, diced, processed and packaged. Lastly, practice eating only when hun-gry and eat what you’re craving in the most natural way possible (for example, upgrading from conventional pizza to organic store-bought brands to raw homemade pizza). On Sunday I woke up and made a big brunch for friends; we had organic eggs, salsa, herbal tea and organic cookies. For dinner, I ate an avocado. That’s all I was craving, and it ended up balancing out my day. If you’re craving chocolate, there’s a reason. If you’re craving a smoothie for dinner, have one. You can both fulfi ll cravings and nourish and love your body at the same time.

Louise Hay on Loving Yourself

to Ageless Healthby S. Alison Chabonais

A renowned leader of the self-help movement from its early days, Louise Hay is celebrated world-

wide for teaching—by personal example and through her bestselling book, You Can Heal Your Life—how each of us can transform our mind, body and spirit by changing the way we think. Her positive philosophy has sparked an industry and her Hay House publishing group. Nourishing mind and body, loving life, learning and growing, giving back and moving ahead—these comprise Hay’s program for creating health, happiness and longevity. At 88, she continues to travel for business and pleasure, embracing vital, joy-fi lled days with a thankful smile. Her new book, Loving Yourself to Great Health, co-au-thored with Ahlea Khadro and Heather Dane, explains how she’s taking all she knows to the next level.

Why does fi rst applying love and forgiveness to yourself make a happy, healthy and long life possible?Loving yourself is the foundation for living the life you want. A healthy and happy life is rooted in self-love, and forgiveness is an act of self-love. It all comes down to how you think and treat yourself. What we give out we get back, so it all starts with us. Remember, no matter what the problem is, there is only one answer: loving yourself. Start with small steps and be gentle. If you start there, magical things will happen.

How do you manage to engage in a stream of loving affi rmations 24/7?Practice, practice, practice! Slowly, bit-by-bit, start each day with a loving act towards yourself. Loving affi rmations

and worrying about things take up the same amount of time; you still get the same things done along the way, but worrying creates stress, while affi rma-tions will brighten your life. It can be exhausting if you fi ght the shift and make it diffi cult. If you make kindness to yourself and others a simple part of everyday life, it isn’t exhausting at all.

What are some key elements to crafting a life experience that supports and nourishes ageless being? Choose thoughts that bring love into your life and laugh a lot. Say yes to life and the magic it brings. I trust that life will bring me exactly what I need, and part of that is realizing that I don’t need to know everything, because life brings me people like Ahlea and Heather. A third of our life is spent eat-ing, and it’s essential that we know the best way to do this. Start your day with water and an act of self-love. Eat real food; seasonal, organic, natural foods are a positive affi rmation to your body. Poop every day, fi guratively and liter-ally. Learn to listen to your body and its wisdom. Choose exercise that you love and that makes you feel good. Also, go on a media diet. Filter out from your consciousness any messages that say you are not good enough or that separate you from the beau-tiful and lovable person you are. Surround yourself with like-minded people that share good news and love to laugh.

The core belief founding your lifework is that every thought we have is creating our future. Is scientifi c research now supporting that?

When I began teaching people about affi rmations, there wasn’t any science to support it, but we knew it worked, and now studies verify that. I particular-ly love Bruce Lipton’s scientifi c research showing that we are not controlled by our genes because the genetic blueprint can be altered through positive changes in our beliefs. I hear reports every day of how peo-ple are healing their lives by changing their thoughts through cultivating self-love and personal affi rmations. They are seeing healing of autoimmune diseases, obesity, addictions, post-traumatic stress and many other so-called incurable ill-nesses. It’s amazing what happens when you are kind and loving to yourself.

What is your secret to aging gracefully through the years?It’s simple. It’s about getting your thoughts and food right and having fun along the way. If you are thinking positive thoughts but feeding yourself processed, unnatural or sugary foods, you are sending yourself mixed messages. Feed yourself nourish-ing foods and think loving thoughts. Any time you don’t know what else to do, focus on love. Loving yourself makes you feel good, and good health comes from feeling good.

Advertisements for antidepressants abound, yet a recent analysis in the Journal of the American Medical

Association found that the benefi ts of treat-ing mildly or moderately depressed indi-viduals with these drugs “may be minimal or nonexistent” compared with a placebo. Most physicians agree that at least part of the prevention of and recovery from depression can be addressed through diet. “Every molecule in the brain begins as food,” says Dr. Drew Ramsey, author of The Happiness Diet and assistant clinical professor of psychiatry at the Columbia University College of Physi-cians and Surgeons. “Food choice is the biggest puzzle piece patients have under their control.” Ramsey describes the modern Ameri-can diet as being overwhelmed with highly processed foods, refi ned carbo-hydrates, omega-6 fats and sugar. His food philosophy serves as an overall prescription for mental health: “Eat food that comes from farms and not factories; simple, recognizable human food.”

Registered Dietitian Kathie Swift, an integrative clinical nutritionist in Len-nox, Massachusetts, and author of The Swift Diet, agrees that food is powerful medicine. She recommends a balanced, fl exitarian diet founded on plants, but including high-quality, animal-sourced foods. Just shifting our processed-foods to whole-foods ratio yields an improved mood, Swift says, which continues to mo-tivate dietary change.

Prebiotic/Probiotic PotentialRecent science suggests a deeper mean-ing to the “gut feeling” adage. Bacteria in the gut and neurochemicals in the brain communicate intimately and bidirection-ally via the vagus nerve, explains Swift. Altering the gut’s microbial population, whether from chronic stress, antibiotic overuse or nutritional defi ciencies, can change brain chemistry and thereby infl u-ence mood, mental clarity and sleep, she says. In 2013, Canadian researchers altered both the neurochemicals and behavior in

mice by switching their intestinal micro-biota; anxious mice given the microbes of intrepid mice became braver, and vice versa. Another small study in the British Journal of Nutrition showed a decrease in depression and anxiety symptoms in volunteers taking probiotics for a month. Essentially, says Swift, “We have a brain in the belly,” which must be nourished by both prebiotics (soluble fi ber) and probiotics (fermented food). “Fiber is the quintessential substance to feed the lovely community of bugs in the gut,” says Swift, “while fermented foods interact with resident bacteria and give them a boost.” She recommends a variety of vegetables as a primary source of fi ber, especially legumes, along with fruits, nuts, cheese and the occasional gluten-free whole grain. Probiotic foods include fermented vegetables, kefi r, yogurt with live active cultures and apple cider vinegar.

B HappyMost psychiatric medications target feel-good neurotransmitters like serotonin, dopamine and norepinephrine, says Ramsey, but the body also manufactures these chemicals naturally during the meth-ylation cycle, a B-vitamin-dependent neu-

rological process. “B vitamins are super-stars of the brain,” Ramsey says. “Think of them as lubrication for the brain’s gears.” Folate, or vitamin B9 is particularly important to healthy nervous system functioning. A meta-analysis of 15,000 people reported in the Journal of Epi-demiology associated low folate with a higher risk of depression. Dark leafy greens like kale, spinach and Swiss chard are high in B vitamins, as are beets, eggs, lentils, beans and whole grains; helpful fruits include papaya, avocado and berries.

Omega-3s Please “It’s a horrible notion that fat is bad,” says Ramsey. Swift agrees, noting, “We need a major renovation and reeducation of this impor-tant neuro-nutrient.” The integrity of a neu-ron cell membrane, which Swift describes as “a beautiful and fl uid layer of lipids,” is crucial for brain health because it dictates communication among neurotransmitters. “The fat we eat becomes the fat of our cell membranes,” she says. “So nourish your membranes with adequate amounts of the right types of fat.” Long-chain omega-3s (DHA) doco-sahexaenoic acid and (EPA) eicosapen-

taenoic acid build and protect neurons, help prevent cognitive decline with age and can boost overall mood and mental performance, says Ramsey. A study in the Australian & New Zealand Journal of Psychiatry found that treating de-pressed patients with omega-3 EPA was as equally effective as Prozac. “DHA and EPA are the two most important fats for brain health on the planet, period,” states Ramsey. Foods rich in omega-3s include fatty seafood like salmon, mussels and oysters, plus sea vegetables, walnuts, fl axseed and grass-fed beef. For vegetar-ians and vegans, Ramsey recommends an algal DHA supplement. Focusing on feeding the brain doesn’t preclude staving off heart disease, obesity or diabetes. “Follow the rules of eating for brain health,” Ramsey says, “and you’ll also be slim, energized, focused and resil-ient.” It’s all a recipe for happiness.

For seasonal eaters, farm market shoppers and members of community

supported agriculture, vegetable greens have become a normal part of everyday diets. Recognized as the most nutrient-rich group of veggies, they deliver multiple benefi ts. Greens are a top source of vitamin K, essential to bone health, and are abundant in vitamins A, B (especially folic acid) and C. They deliver consid-erable antioxidants and chlorophyll, widely known to protect against cancer, and are anti-infl ammatory, according to Dr. Joel Fuhrman, a family physician in Flemington, New Jersey, who special-izes in nutritional medicine. Fuhrman notes, “The majority of calories in green vegetables, including leafy greens, come from protein, and this plant protein is packaged with ben-efi cial phytochemicals. They’re rich in folate and calcium, and contain small amounts of omega-3 fatty acids.” Hardy greens, like kale, chard and collards, are good sources of acces-sible calcium. Only about 30 percent of calcium from dairy products is absorbed, but according to Registered Dietitian Ginny Messina, “For certain leafy green vegetables, rates are consid-erably higher. We absorb between 50

and 60 percent of the calcium in cruciferous

leafy green vegetables like kale and turnip greens.” Tasty

and versatile, greens can add interest and value to every meal. Here’s how. Smoothies and juices. Spinach tastes so mild in smoothies and juices that we barely know it’s there. Kale and collards add a mild greens fl avor. A big handful or two of spinach or one or two good-size kale or col-lard leaves per serving is about right. Greens blend well with bananas, ap-ples, berries and pears. A high-speed blender is needed to break down kale and collards; a regular blender is suf-fi cient for spinach. An online search for “green smoothies” will turn up many recipes. Use “massaged” raw kale in salads. Rinse and spin-dry curly kale leaves stripped from their stems, and then chop into bite-sized pieces. Thinly slice the stems to add to another salad or lightly cooked vegetable dishes or simply discard. Place the cut kale in a serving bowl. Rub a little olive oil onto both palms and massage the kale for 45 to 60 seconds; it’ll soften up and turn bright green. Add other desired veggies and fruits and dress the mixture.

A favorite recipe entails tossing massaged kale with dried cranberries, toasted or raw cashew pieces, vegan mayonnaise and a little lemon juice. Massaged kale also goes well with avocados, apples, pears, Napa or red cabbage, carrots, pumpkin seeds and walnuts. It can alternatively be dressed in ordinary vinaigrette, sesame-ginger or tahini dressing. Add hardy greens to stir-fries. The best stir-fry greens are lacinato kale, collards or chard. Rinse and dry the leaves, and then strip them from the stems. Stack a few leaves and roll them up snugly from the narrow end. Slice thinly to make long, thin ribbons and then cut them once or twice across to shorten; adding thinly sliced stems is optional. Add the strips to the stir-fry toward the end of cooking. They blend well with broccoli, caulifl ower, car-rots, celery, bok choy, asparagus and green beans. Soy sauce, tamari and ginger add fl avor. Use leafy spring greens in salads. Look beyond lettuce to create invigorat-ing warm-weather salads. Use lots of peppery watercress (a nutritional super-star), baby bok choy, tender dandelion greens, tatsoi and mizuna (Japanese greens are increasingly available from farm markets). Combine with baby greens and sprouts, plus favorite salad veggies and fruits for a clean-tasting and cleansing repast. Learn to love bitter greens. Add variety to the meal repertoire with escarole, broccoli rabe and mustard greens. These mellow considerably with gentle braising or incorporation into soups and stews. Heat a little olive oil in a large, deep skillet or stir-fry pan; sauté chopped garlic and/or shallots to taste. Add washed and chopped greens, stir quickly to coat with the oil, and then add about a quarter cup of water or vegetable stock. Cover and cook until tender and wilted, about fi ve minutes. Traditional additions include raisins and toasted pine nuts, salt and pepper and a little apple cider vinegar.

Health foodies can step it up a bit by discovering how to make delicious

raw kale salads—sometimes referred to as massaged kale salads. Literally massag-ing this hardy green with olive oil, salad dressing or mashed avocado softens it for easier chewing, brightens the color and improves its fl avor. A favorite kind of kale for salads is curly green kale. Lacinato kale works well, too, as long as it isn’t too large and tough prior to massaging. Even when kale isn’t the main leafy green in a salad, adding a few prepared leaves can up the nutrient value of any kind of green, grain or pasta salad. For each of the following recipes, start with a medium bunch of kale (about eight ounces), or more or less to taste. Finish each salad with sea salt and freshly ground pepper, if preferred.

Southwestern-Flavored Kale SaladTo the massaged kale, add two or three medium-sized fresh ripe tomatoes, a peeled and diced avocado, one to two cups cooked or raw fresh corn kernels, some red bell pepper strips and optional chopped green or black olives. Flavor with freshly squeezed or bottled lime juice, a little olive oil and some chopped cilantro. To up the protein for a main dish, add some cooked or canned, drained and rinsed, black or pinto beans and then sprinkle pumpkin seeds over the top.

Mediterranean Kale SaladTo the massaged kale, add two or three medium-sized chopped fresh ripe toma-toes, strips of sun-dried tomato, plenty of bell pepper strips and chopped or whole cured black olives. For protein, add a cup or two of cooked or canned, drained and rinsed, chickpeas. Top with thinly sliced fresh basil leaves.

Kale and Avocado SaladAdd a peeled and diced avocado, plus thinly sliced red cabbage to taste, sliced carrots, diced yellow squash, halved red and/or yellow fresh grape toma-toes and sunfl ower or pumpkin seeds. Optionally, add a little more olive oil in addition to that used for massaging and some freshly squeezed or bottled lemon or lime juice.

Asian-Flavored Kale SaladMassage the kale with dark sesame oil instead of olive oil as an option. Add a medium-sized red bell pepper, cut into narrow slices, three stalks of bok choy with leaves, sliced (or one sliced baby bok choy) plus one or two thinly sliced scallions. Dress with a sesame-ginger dressing. Optional additions include some crushed toasted peanuts or ca-shews, steamed or boiled and chilled corn kernels and about four ounces of baked tofu, cut into narrow strips.

Our body’s hormones work like an orchestra. When one instru-ment is out of tune, the entire

production struggles to maintain har-mony. Each plays a part in infl uencing the others and determining how well the whole concert works. Fortunately, our body has masterful conductors, including the endocrine system, which coordinates all of the glands and the hormones they pro-duce. “Players” include the adrenal, hypothalamus, pancreas, pineal, pitu-itary, reproductive and thyroid/parathy-roid glands. “A healthy endocrine system is es-sential to making hormones in appro-priate amounts throughout our life,” says Theresa Dale, Ph.D., a naturopath-ic doctor who practices as a traditional naturopath and clinical nutritionist in Oxnard, California, and has authored Revitalizing Your Hormones. “For example, when the ovaries shut down after menopause, the adrenal glands continue producing progesterone and other essential hormones.” Dale, dean and founder of the California College of Natural Medicine, further assures that contrary to asser-tions from some conventional medicine reports, the body is able to produce necessary hormones throughout our entire life. Hormones function as chemical messengers that commute through the bloodstream as part of the information

superhighway that connects the brain to the DNA managers of the body’s cells. “Hormones communicate with chemicals produced by the brain called neurotransmitters, such as serotonin, dopamine and norepinephrine, which greatly infl uence energy levels, moods and other bodily functions such as moving memories from short- to long-term storage,” explains Dale. For 20 years, she has seen patients with critical hormonal imbalances respond to her recommended three-month, endocrine-rebuilding diet, com-prising three daily meals of steamed, sautéed and raw foods, fi sh, whole grains, legumes, seeds, nuts, fresh fruits and vegetables, plus two raw vegetable or seed snacks. The regimen strives to balance metabolism, cleanse the body, restore immune function and revitalize the endocrine system. Kokomo, Indiana, resident Sylvia Egel, national director of coaching and education for Metabolic Balance, a personalized nutrition plan to balance metabolism and hormones, optimize health and increase energy at any age, agrees that hormones can be restored and balanced via proper food selec-tions. “Our lifestyle and dietary choices strongly affect our metabolism and hormonal health, as do stress levels and sleep patterns. Eating at the wrong time, in the wrong place or in the

wrong order, and even poor combina-tions of healthy foods, can be almost as problematic as eating junk food,” says Egel. She also warns against snacking, emotional eating, eating on the go, skipping breakfast and waiting too long between meals. Diana Hoppe, author of Healthy Sex Drive, Healthy You, an obstetrician and gynecologist in San Diego, Cali-fornia, who leads clinical trials related to women’s health at the Pacifi c Coast Research Center, also sees fi rsthand how what we eat directly affects our hormones. She attests that our bodies need a balance of three macronutrients: carbohydrates, protein and fat. “But for 20 years, we have been advised to decrease fat intake in favor of fat-free options that have been detrimental to us, because we need fat to produce hormones and maintain healthy hor-mone function. Certain fatty acids and cholesterol serve as building blocks in hormone production and cellular function, especially the reproductive hormones of estrogen and testoster-one,” says Hoppe. Food can be medicine for hormones. One of the most important hormone-balancing fats is coconut oil, which heals skin, increases metabolism and supplies a quick source of energy. Egg yolks are a good source of choline and iodine, essential to the produc-tion of healthy thyroid hormones, plus are rich in vitamins A, D, E and B-complex vitamins. Avocados have lots of healthy fat that helps absorb and utilize nutrients. Nuts and seeds, olive oil and salmon are all rich in omega-3 essential fatty acids that help stabilize hormone levels. Eating the right foods and incorporating healthy fats into meals increases overall energy, reduces hormonal fl uctuations and helps us feel more balanced. Says Dale, “The majority of individu-als are surprised to learn that hormone health doesn’t depend on age, but rather on a complex of factors, like the air we breathe, the water we drink, the quality of our diet, good sleep and ad-equate exercise, plus the relative health of our relationships and emotional life—and that’s just for starters.”

Labels may vary, but results are what count. Whether called high-intensity intermittent exercise (HIIE), interval or

burst-style training, recent research proves that this form of exercise improves insulin levels. This is promising news for the estimated 50 million American adults that have abdominal obesity and are on the path toward metabolic dysfunction due to a high-sugar diet that causes spikes and crashes in blood sugar levels and eventu-ally contributes to insulin resistance. According to a recent study published in the Journal of Obesity, the benefi ts

of doing HIIE at least three times a week for two to six weeks include reduction of abdominal body fat, improved aerobic and anaerobic fi tness and lower levels of insulin resistance. In a separate study, Norwegian researchers examined the impact that different types of exercise programs had on individuals seeking to reverse meta-bolic dysfunction, an overall chemical imbalance largely attributed to insulin resistance. They concluded that despite producing similar effects on body weight and blood pressure, the aerobic interval

training group also showed greater im-provement in insulin sensitivity, aerobic capacity and high-density lipoprotein (HDL, or “good” cholesterol) than those performing continuous moderate exer-cise. They also exhibited lower blood glucose (sugar) levels. Another benefi cial HIIE characteristic is that it involves markedly fewer exercise repetitions and less training time. JJ Virgin, a fi tness and nutrition expert and author of The Virgin Diet, recommends incorpo-rating burst-style and resistance training for fast, lasting fat loss and improving insulin resistance. Best of all, you can do these exercises in minutes a day. “Burst exercise means working out in short intense bursts of 30 to 60 seconds, coupled with one to two minutes of active recovery time, moving at a lower intensity that allows you to catch your breath and lower your heart rate,” she explains. Two easy examples of this are sprinting to burst and then walking to recover, and running up stairs to burst, and then walk-ing down them to recover. “This should be repeated for a total of four to eight minutes of high-intensity bursts per session. Overall, this will take 20 to 30 minutes,” says Virgin. She notes that the increase in stress hormones that occurs during HIIE are counteracted by the simultane-ously raised levels of anabolic-building hormones. “Short bursts train the body in how to handle stress and recover. Repeated intense bursts raise the lactic acid level, which in turn raises growth hormone production and supports fat burning. The research is clear that the more intense the exercise, the bigger the metabolic benefi t is afterward.”

We’ve heard them time and time again: fi tness tips that guarantee we’ll meet our

goals if we follow them. The truth is that some can hurt more than help. Here are seven fi tness myths that are best to ignore. No pain, no gain. It’s true that what we put into our workout has a direct impact on results. However, this doesn’t mean workouts should be painful. If something hurts during exercise, try a different move instead that targets the same muscle group to see if the feeling persists; adjust the form in case improper execution is the culprit or give it a rest and return when ready. Muscle soreness can be expected after a tough workout and can persist for a day or two afterward. Try not to confuse soreness or the discomfort felt from fatigued muscles during a

workout with pain. In the presence of an injury, it’s often best to modify activities that contribute to the pain or refrain from workouts pending expert medical advice. “Working through the pain” might actually make things worse in the long run. Never exercise a sore muscle. Muscle soreness is a sign that the muscles are changing. It’s okay to feel sore for a day or two after a workout. If it appears that the body’s stability or ability to maintain proper form will be affected by the soreness, then wait another day. However, if soreness isn’t severe, working out may actually help to relieve it by warming the muscles and stimulating blood fl ow. A few good activity choices for sore muscles after lifting heavy weights the day before include light cardio, stretching, yoga and light resistance training.

Popular FitnessMYTHS

Seven Common Maxims that Can Cause Harm

by Leslie Perry Duffy

Lifting weights makes women look bulky. This couldn’t be further from the truth. Building big, bulky muscles requires testosterone—and lots of it. Men typically have 20 to 30 times more testosterone than women. For women, strength training is well-known to be key in toning and sculpting muscles, maintaining healthy joints and bones, boosting metabolism and even improving mood and confi dence. Don’t be afraid to pick up heavier weights. To lose a belly, crunch the abs. Yes, abdominal exercises strengthen the core muscles. However, if we carry a layer of fat on top of those muscles, the belly will remain. To lose a belly, continue regular ab work while focusing on cardio exercises, strength training moves for the whole body and eating properly. The best time to work out is in the morning. The best time to work out is whenever it fi ts into our schedule. The more exercise, the faster the results. Not true. When it comes to working out, an appropriate balance of hard work and rest is the best option. Overusing the body actually prevents muscles from growing, resulting in decreased strength, endurance and metabolism (i.e., caloric burn). Plus, becoming overly fatigued often leads to sloppy form, which may lead to injury. Listen to the body and rest at least one day a week or more if a break is needed. Reduce calorie intake to lose weight. The body needs enough fuel to function, especially if it is regularly working hard. Eating less is not always the answer to losing weight. If we’re not eating enough, the body may think it’s starving, which causes it to store fat instead of burning calories, so eating too infrequently or not enough can sabotage weight-loss efforts. Eating smaller, more frequent meals allows the body to metabolize calories more effectively.
