You mayalready be familiar with using a similar product,but do please take time to read theseinstructions they have been written to ensureyou get the very best from your purchase.

    Safety is ImportantTo ensure your safety and the safety of others,please ensure you read the Safety Instructionsbefore you operate this product. Keep thisinformation in a safe place for future reference.

    Safety InstructionsRead all the instructions in the manual andfollow them carefully!

    1. Do not touch any of the appliances hot surfaces,Use oven cloths! The bread making machineis very hot after baking.

    2. Never dip the connection cable or the appliancein water or any other liquid.

    3. Keep your eye on the appliance when childrenaround! Unplug the appliance if it is not beingused and before cleaning it. Before removingsingle parts of the appliance let it cool down.

    4. Never use the appliance with a defectiveconnection cable, after malfunctions or if theappliance happen to be damaged in any waywhatsoever! In these cases have the CustomerService check and repair it if necessary. Nevertry to repair it yourself. The warranty is void inthis latter case.

    5. The use of accesories not recommended bythe manufacturer can cause damage. Use theappliance exclusively for the envisagedpurposes.

    6. Lay the appliance firmly on the counter to avoidthat it falls off during kneading of a thick dough.This is especially important when using thepreprogram function and the appilance is notbeing watched. In the case of extremely smoothcounters the appliance should be placed on athin rubber mat to avoid any risk of falling.

    7. The bread making machine must be kept at adistance of at least 10 cm from other objectswhen it is working. The appliance can be usedonly indoors.

    8. Make sure that the power cable does not touchany hot surface and that it does not hang overa table edge thus avoiding, for example thatchildren may grab it.

    9. Never place the appliance either on or near agas or electrical stove top or a oven.

    10. Pay great attention when handling the applianceespecially when it is full of hot liquids!

    11. Never remove the baking tin while the applianceis still working.

    12. Do not fill the baking tin with an amount ofingredients greater than that required by therecipe! If this should happen, bread will notbake evenly or the dough will overflow. Followthe instructions carefully.

    13. Metal foils or other materials must not be putinside the appliance as these may cause a fireor a short circuit!

    14. Never cover the appliance with towels or othermaterials during use! The heat and steam mustbe free to escape. Danger of fire if the applianceis covered with flammable materials or comesin contact with curtains, etc.

    15. Before trying to bake a given type of breadovernight, try to recipe first while keeping aneye on it to make sure that the doses ofingredients are correct, heat the dough is nottoo thick or thin that the quantity is too muchand the hence risk is overflowing.

    16. The appliance has a heat-insulated cool touchhousing. The metal part become hot duringuse. Leave the appliance to cool before puttingit away.

    CONTROL PANEL1. DISPLAY

    This displays signals when the appliance isready for use. It corresponds to the normalprogram.1 3:25 appears on the display.The 1specifies which program has beenchosen and the 3:25 is the length of theprogram. The position of two markingsshows the degree of browning that has beenselected and the weight. The basic settingafter switching the appliance on is superiorweight and medium browning level.duringoperation the course of the program can beread on the display. As the programproceeds the digits of the set time willdecrease progressively. Other parts of theprogramme such as the timer, heating,kneading, pause, rising baking, keepingwarm and programme end are also shownin the display.

    2. START / STOP keyTo start and stop the program. As soon asthe START/STOP key pressed, the pointsof the time value start to blink. Use theSTART/STOP key to stop the program inany moment. Keep the key pressed until asignal beep is heard. The starting positionof the aforementioned start program appearson the screen. If you want to use a differentprogramme, please select this using theMENU buton before starting the programme.

    3. TIMER keysThe following programs can be started withthe timer: NORMAL (1), FRENCH (2),WHOLE WHEAT (3), SWEET BREAD (4)and DOUGH (7). The hours and minutesafter which the preparation should be startedneed to be added to the relevant basic timefor the specific program plus 1 hour ofwarning time (after the end of the bakingprocess).The maximum time delay is 12hours and 58 minutes per programme.Example:It is 8.30 p.m. and the bread must be readyfor the next morning by 7.00 a.m., i.e, in 10

    hours and 30 minutes.Press the TIME keyuntil 10.30 appears,that is to say the timebetween now (8.30 p.m.) and when thebread must be ready.When working with the timing function neveruse perishable ingredients such as milk,eggs, fruit, yogurt, onions, etc. !

    4. COLOR keyThe desired browning level is set with thiskey: LIGHT-MEDIUM-DARK

    Bread Baking Machine FunctionsBuzzer functionThe buzzer goes off.

    - When pressing all the program keys;- During the second kneading cycle of the

    NORMAL, WHOLE WHEAT, SWEETBREAD, programs to signal that the cereals,fruit, nuts or other ingredients can be added.

    - When the end of the program is reached.

    During the warning phase at the end of thebaking procedure the acoustic signal ringsseveral times.

    Repeat functionIf there is a brief power cut of cup toapproximately seven minutes theprogramme position is stored and themachine can continue from this positionwhen power is restored. This is possibleonly if the program was stopped before thekneading phase was reached.Otherwiseyou will have to start from the beginning.

    Safety functionsIf the temperature of the appliance is stiltoo high for a new program after using theappliance previously, E 01 will appear onthe display when pressing start again andan acoustic signal is given. If this is thecase, press the START/STOP key until theE 01 messagee is deleted and the basicsetting appears on the display. Removethe container and wait until the appliancehas cooled.

    The BAKING program can be startedimmediately even when the appliance isstil hot.

    BREAD BAKING MACHINE PROGRAMPHASES

    1. Insert the baking tinPlace the non-stick coated baking tin exactly

    in the middle of the base inside the bakingspace. When the baking tin is pressedlightly in the centre the fixing device locksinto place. To remove the baking tin pullw,th medium force on its carrying handle.

    Caution!The handle is hot after baking. Pleaseuse an oven cloth or similar item.

    2. Put the ingredientsThe ingredients must be put into the bakingtin, the order specified in the relevant recipe.

    3. Select programSelect the desired program with theSELECTON key. Choose the levelcorresponding to the selected program.Then select the desired degree of browning.Use the TIME key to set the time when theprogram is to be started. Press theSTART/STOP key.

    4. Mix and knead the doughThe bread baking machine mixes andkneads the automatically until it reachesthe right consistency.

    5. Leave the dough to riseAfter the last kneading cycle the breadbaking machine is heated to the optimaltemperature for the rising of the dough.

    6. BakingThe bread baking machine sets the bakingtemperature and time automatically. If thebread is too light at the end of the bakingprogram, use the BAKING program to letit brown more. To do so, press theSTART/STOP key, then select the BAKINGprogram and start. When the desireddegree of baking has been reached, stopthe process.

    7. WarmingOnce the baking is over, the buzzer goesoff to signal that the bread can be removed.The 1 hour warming time starts immediately.(Except dough menu.)

    8.End of the program phasesNow remove the baking tin using an ovencloth, turn it over and if the loaf does notfall out onto the grid immediately-turn thekneading mechanim backwards andforwards a few times from underneath untilthe breadd falls out. If the kneading hookbecomes stuck in the bread, move it slightlyupwards so that you can see the positionof the propeller. The use a knife to cut alongthe propeller. You can easily remove thekneading hook.

    Baking can be stopped at any time bypressing the START/STOP button. At thesame time a sound is heard and controllamp goes off.

    Heating the appliance to make the doughriseThe heating is switched only if the roomtemperature is lower than 25C.If the roomtemperature is above 25C the ingredientsare already at the right temperature andthere is no need for pre-heating. For thefirst and second rising the room temperaturemust be above 25C or high enough tomake the dough rise without extra heating.

    Cleaning and MaintenanceBefore using the appliance for the first timewash the bread making machines bakingtin (never dip in the water) with a milddetergent and clean the kneading parts.

    It is highly recommended to coat the newbaking tin and the kneading pegs with heatresistant Grease before using them for thefirst time and let them heat in the oven forabout 10 minutes. Once these have cooleddown clean away (polish) the grease fromthe baking tin with a sheet of paper towel.This operation is to be performed to protectthe non-stick coating.Operation can berepeated from time to time.After use always leave the appliance tocool before cleaning it or putting it away. It

    takes about half an hour for the applianceto cool and to be ready again for bakingand kneading.

    Before cleaning pull out the plug and leavetha appliance to cool. Use a mild detergent.Never use chemical cleaning agents,gasoline, oven cleaners or any detergentthat can scratch or ruin the coating.

    Remove all the ingredients and crumb fromthe lid, casing and baking compartmentwith a moist towel. Never dip the appliancein water nor fill the baking compartmentwith water! For easy cleaning the lid canbe removed by positioning it vertically andpulling it out.

    Wipe the out side of the baking tin with amoist towel. The inside of the tin can bewashed with some detergent liquid. Do notleave it too long dipped in water.

    Both the kneading pegs and drive shaftneeds to be cleaned immediately after use.If the kneading pegs remain in the tin, itbecomes difficult to remove themafterwards. In this case fill the containerwith warm water and leave it to rest for 30minutes. Then remove the kneading pegs.

    The baking tin has a nonstick coating. Donot use metal objects that can scratch thesurface when cleaning it. It is normal thatthe color of coating changes over the courseof time. This change does not after iteffecitveness in any way whatsoever.

    Before putting the appliance away forstoreage, make sure that it is perfectly cooland dry. Put the appliance away with thelid closed.

    Questions & Answers on BakingThe bread sticks to the container afterbakingLeave the bread to cool for about 10 minuteesafter baking-turn the container upside down.If necessary move the kneading peg shaftback and forth. Grease the kneading pegsbefore baking.

    How do you avoid forming of holes inbread owing to the presence of thekneading pegs

    You can remove the kneading pegs with yourfingers coverd with flour before leaving thedough to rise for the last time. Depending onthe program the display must stil show a totaltime of approx. 1:30 hours. If you do not wishto do so, remove the hook after baking. Ifyou proceed with caution, you can avoid theforming of a large hole.

    The dough spills over when it is left to riseThis happens in particular when wheat flouris used owing its greater content of gluten.

    Remedy:a) Reduce the amount of flour and adjust the

    amounts of the other ingredients. When thebread is ready, It will still have a large volume.

    b) Spread a tablespoon of heated liquefiedmargarine on the flour.

    The bread rises and spills over anywaya) If a V-shaped ditch forms in the middle of the

    bread, the flour does not have enough gluten.This means that the wheat contains too littleprotein. It happpens during especially rainysummers) or that the flour is too moist.Remedy:add one tablespoon of wheat gluten for 500gof wheat.

    b) If the bread has a tunnel shape in the middle,the possible cause can be one of thefollowing:

    - The water temperature was too high;- Too much water used;- The flour was poor in gluten- Draft caused by opening the lid while baking.

    When can the lid of the bread bakingmachine be opened during the baking?Generally speaking, it is always possiblewhile the kneading is underway. During thisphase small quantities of flourr or liquid canstil be added.If the bread must have particular aspect afterbaking, proceed as follows before the last

    rising phase (Depending on the program thedisplay must stil mount to a total timeofapprocimately 1:30 hours.) open the lid withcaution and shortly and carve the bread crustwhile it is forming with a sharp pre-heatedknifeiscatter cereals on it or spread a mixtureof potato flour and water on the crust to giveit a glossy finish. This is the last time that thelid can be opened, otherwise the bread willgo down in the middle.

    Remarks on the Recipes1. Ingredients

    Since each ingredients plays a specific rolefor the succesful baking of the bread, themeasuring is just as important as the order inwhich the ingredients are added.

    - The most important ingredients like the liquid,flour, salt, sugar and yeast (either dr yor freshyeast can be used) affect the successfuloutcome of the preparation of the dough andthe bread. Always use the right quantities inthe right proportion.

    - Use lukewarm ingredients if the dough needsto be prepared imediately. If you wish to setthe program phase timing function, it isadvisable to use cold ingredients to avoid thatthe yeast starts to rise too early.

    - Margarine, butter and milk affect the flavor ofthe bread.

    - Sugar can be reduced by 20% to make thecrust lighter and thinner without affecting thesuccessful outcome of the baking. If you prefer

    a softer and lighter crust replace the sugarwith honey.

    - Gluten which is produced in the flour duringthe kneading provides for the structure of thebread. The ideal flour mixture is composed of40% wholemeal flour and 60%of white flour.

    - If you would like to bake wholemeal breadwith a low proportion of wheat gluten it mayalso be necessary to knead the bread byhand. See also the section Questions onBaking.

    - If you wish to add cereals grains, leave themto soak overnight. Reduce the quantity of flourand the liquid.(up to 1/5 less)

    - Leaven is dispensible with rye flour. It containsmilk anda acetobacteria that make the breadlighter and ferment thoroughly. You can makeyour own leaven but it takes time. For thisreason concentrated leaven powder is usedin the recipes below. The powder is sold in15g packets (for 1 kg of flour).Follow theinstructions given in the recipes(1/2, 3/4 or 1packet).If less leaven that requested is usedthe bread will crumble.

    - If leaven powders with a different concentration(100g packet for 1 kg of flour) are used, thequantity of flour must be reduced by 80g fora 1kg of flour.

    - Liquid leaven sold in bags is also availableand it is suitable for use. Follow the dosesspecified on the package. Fill the measuringbeaker with the liquid leaven and top it up withthe other liquid ingredients in the right dosesas specified in the recipe.

    - Wheat leaven which often comes dry improvesthe workability of the dough, the freshnesssand the taste. It is milder that rye leaven.

    - Use either the NORMAL or WHOLEWHEATprogram when baking leavened bread.

    - Baking ferment can used to replace the leaven.The only difference is in the taste. It is fit tobe used in the bread baking machine.

    - Wheat bran is added to the dough f yo wantparticularly light bread rich in roughage. Useon tablespoon for 500g of flour and increasethe quantity of liquid by 1/2 tablespoon.

    - Wheat gluten is a natural additive obtainedfrom wheat proteins. It makes the bread lighterand more voluminous. The bread falls in morerarely and it is more easily digestible. Theeffect can be easily appreciated when bakingwholemeal and other bakery products madeof home-milled flour.

    2. Adapting the doses.If the doses need to be increased or reduced,make sure that the proprtions of the originalrecipe are maintained. To obtain a perfectresult, the basic rules below for the adaptinggof the ingredient doses must be following:

    - Liquids / flour: the dough ought to be soft(not too soft) and easy to knead withoutbecoming stringy. A ball can be obtained bykneading it lightly. This is not the case withheavy doughs like rye wholemeal or cerealbread. Check the dough five minutes afte thekneading. If it is to moist, add some four untilthe dough has reached the right consistency.If the dough is tto dry add a spoonful of waterat a time during the kneading.

    - Replacing liquids: when using ingredientscontaining liquids in a recipe (e.g. curd cheese,yogurt, etc.), the required amount of liquidmust be reduced. When using egs beat themin the measurring beaker and fill it with theother required liquid to the envisaged amount.If you are living in aplace located at a highaltitude (more than 750m) the dough risesfaster. The yeast can be reduced in thesecases by 1/2 to 1/4 of a teaspoon toproportionally reduce its rising.The same istrue of places with particularly soft water.

    3. Adding and measuring the ingredients andquanities

    - Always put in first the liquid and the yeastat the end. To avoid that the yeast acts toofast (in particular when using the timingfunction), contact between the yeast andthe liquid must be avoided.

    - When measuring use the same measuringunits, that is to say use either the measuringspoon supplied with the bread baking machineor a spoon used in your home when therecipes require doses measured intablespoons and teaspoons.

    - The measures in grams must be weighedprecisely.

    - For the milimeter indications you can use thesupplied measuring beaker which has agraduated scale of 30 to 300 ml.

    - Fruit, nuts or cereal ingredients. If you wishto add other ingredients, you can do so inspecific programs (see the Program PhaseTiming table), when you hear the acqoustic

    signal. If you add the ingredients too early,theywill be crushed during the kneading.

    4. Recipes for the Pane Deluxe AutomaticBread Baking MachineThe following recipes are for various breadsizes. The total weight of the ingredients shouldnot exceed 900 grams.If no levels are specified in the recipe, it meansthat they are not envisaged in the proposedprograms and that both small and largequantities cn be used.

    5. Bread weights and volumes- In the following recipes you will find exact

    indications regarding the bread weight. Youllsee that the weight of pure white bread is lessthan that of wholemeal bread. This dependson the fact that white flour raises more andhence limits need to be posed.

    - Despite the precise weight indications theremay be slight differences. The actual breadweight depends much on the air humidity ofthe room at the moment of the preparation.

    - All breads with a substantial portion of wheatreach a large volume and exceed the containeredge after the last rising in the case of thehighest weight class. But the bread does notspill over. The part of the bread outside thetin is more easilyy browned compared to thebread in the tin.

    6. Baking results- The result of the baking depends on the on

    site conditions (soft water-high air humidity-high altitude-consistency of the ingredients,etc.)Therefore, the recipe indications arereference points which can be adopted. If onerecipe or another does not go straight the firsttime, do not let yourself be discouraged. Tryto find thee cause and try it again by varyingthe proportions.

    - If the bread is too pale after baking, you canleave it to Brown with the baking program.

    - It is recommended to bake a test bread beforeactually setting the timing function for useovenight so that you can maket he necessarychange if necessary.
