Cách đây hơn 2500 năm, đại danh y Hippocrates nói “Thức ăn là thuốc, thuốc là thức ăn - Let food be thy medicine and medicine be thy food”.
Thực phẩm cũng như phạm trù dược phẩm rơi vào tình trạng khó phân biệt ở thế kỷ 19.
Đầu thế kỷ 20, với sự phát hiện các hợp chất thiết yếu và vitamin để làm giảm bệnh tật.
Những năm 1970s, những vấn đề như suy dinh dưỡng, nghèo đói và thừa dinh dưỡng (béo phì), dẫn đến hướng dẫn của cơ quan y tế cộng đồng: Tất cả những nghiên cứu khoa học, chính sách nhà nước đều nhấn mạnh nên dùng thực phẩm ít acid béo bão hòa, dùng nhiều rau quả, ngũ cốc để hạn chế bệnh tật.

Từ đó, các nhà khoa học bắt đầu nghiên cứu các hợp chất chức năng trong thực phẩm (thực vật = phytochemicals, động vật = zoochemicals)
Đến những năm 1990s, sự kết hợp giữa khoa học và thị trường thương mại tạo nên xu hướng phát triển thực phẩm để tăng cường sức khỏe cộng đồng mà ngày nay chúng ta được biết là thực phẩm chức năng.

Khái niệm: Thực phẩm chức năng (TPCN) là thực phẩm dùng để hỗ trợ chức năng của các bộ phận trong cơ thể người, có tác dụng dinh dưỡng, tạo cho cơ thể tình trạng thoải mái, tăng sức đề kháng và giảm bớt nguy cơ gây bệnh” (A food can be regarded as ‘functional’ if it is satisfactorily demonstrated to affect beneficially one or more target functions in the body, beyond adequate nutrition, in a way that improves health and well-being or reduces the risk of disease).
Dựa trên khái niệm này, ta có TPCN là: Thực phẩm tự nhiên Thực phẩm có thêm vào các hợp chất hữu ích, hoặc đã loại trừ các
độc tố Thực phẩm thiên nhiên mà có một hoặc một vài hợp chất trong nó
thay đổi do quá trình chế biến,…

TPCN xuất hiện đầu tiên ở Nhật vào những năm đầu thập niên 80. Sau đó phát triển ở thị trường Mỹ và cộng đồng Châu Âu.

Tía tô (Perilla frutescens) là cây thường niên ngắn ngày được trồng chủ yếu ở các quốc gia châu Á.
Ngoài mục đích sử dụng như là rau gia vị, ăn sống; lá tía tô còn được sử dụng như dược thảo ở các quốc gia Trung Quốc, Nhật, Hàn, Ấn Độ, và Việt Nam.
Trong những thập niên gần đây, lá tía tô được các nhà khoa học Trung Quốc, Nhật Bản nghiên cứu, sử dụng để phòng ngừa, chữa dị ứng, các chứng viêm.

Rosmarinic acid (α-o-caffeoyl-3, 4-dihydroxyphenol lactic acid), a polyphenolic phytochemical, exists in a variety of medicinal species within the plant genus Lamiaceae, such a basil, sage, rosemary, mint, and Perilla frutescens (Takano et al., 2003).
Rosmarinic acid have many anti-activities, such as antiinflammation, antiallergy, antimicrobiology, antidepressive-like and antioxidant.
Ueda and Yamazaki have reported that the overproduction of tumor necrosis factor- α (TNF- α) was suppress by orally administering a perilla leaf extract (2001).

The authors enrolled 30 patients aged 21 to 53 years with mild seasonal allergic rhino-conjunctivitis (SAR) to Japanese cedar (Cryptomeria japonica) pollen.
Ten patients each were randomized to the rosmarinic acid (200 mg) group, the rosmarinic acid (50 mg) group, and to the placebo group.
For 21 days, each patient took tablets daily after breakfast.

Extract of Perilla frutescens enriched for rosmarinic acid can be an effective intervention for patients with mild SAR that may act through inhibition of polymorphonuclear leukocytes.
According to Ueda and Yamazaki (2001), perilla leaf extract can improve human atopic dermatitis with a record of about 70%.
