Kids can take part in the excitement of a traditional Easter Egg Hunt around the hotel and decorate their own painted eggs. They can also join us in the hotel’s organic garden to plant spring seedlings. That’s not to mention a dedicated Buffet Corner, and a visit from JING’s friendly Easter Clown.

The JING Easter Buffet will be served from 11.30am to 3pm on Sunday, 8 April 2012. It is priced at RMB 358+15%, including free flowing red and white wines, fresh juices and soft drinks; or RMB 488+15% with the addition of free flowing Champagne. The Children’s Buffet (for ages 5 to 12 years) is priced at RMB 176+15%, including all Easter activities and free-flowing fresh juices and soft drinks.

Throughout April, JING's daily dinner buffet experience will take on a Japanese theme. Light, healthy and exquisitely presented,

Japanese cuisine is adored around the world for its fresh flavours and high-quality ingredients.

During the Japanese Food Festival – served from 5:30pm to 10pm between 1-30 April, 2012 – JING's signature buffet extravaganza will feature a variety of Japan’s most popular dishes. These treats will be prepared to perfection by our specialist Japanese Chefs at the restaurant’s open theatre kitchens.

Diners can choose from Japanese favourites like Takoyaki (octopus dumplings) and Seafood Chawanmushi (seafood egg custard). The famous Tonkatsu deep fried pork with a sweet dipping sauce will also be served up, fresh and crispy from the fryer.

A choice selection of premium Sashimi will be freshly sliced for guests, while expert Chefs will be rolling top-quality Sushi. The sushi selection spans traditional flavours as well as contemporary variations, such as the Spicy Tuna Roll, Philadelphia Roll and California Roll. A range of authentic Japanese Soup Noodles will also be available, featuring sliced pork, beef and salmon, plus fresh vegetables and tofu in a delicious savoury soup.

The Japanese Food Festival buffet dinner at JING is priced at RMB 288+15% per person. Buffet diners will also receive a complimentary gourmet Japanese Welcome Platter for every table. A Chef's Signature a la carte menu of Japanese specialities is available during April, too.

From the rich green-yellow pressed olive oils added liberally to many dishes, to the tasty black and green fruits themselves, olives are fantastic eaten alone or added to savoury and sweet dishes. The intense flavour is even a perfect addition to a martini cocktail.

Our Mediterranean steakhouse Riva is serving a special Olive Tasting Menu for the entire month of April. Our hotel Executive Chef Joshua Nudd and Riva Sous Chef de Cuisine Roy Zhong have created a menu featuring five different olive varieties, including kalamata, black and green olives. Try main dishes such as Black Olive Crusted Yellow Fin Tuna Loin with Tarragon Aioli, and side dishes like Olives Stuffed with Bell Peppers. For dessert, a delightful Ricotta and Lemon Rosemary Cake is served with Olive Oil Ice Cream, made from the finest Olitalia olive oil from Italy.

The Olive Tasting Menu is priced at RMB 488+15%. An additional RMB 100 gets you two olive-martini cocktails. Each of the olive dishes is also available on the a la carte menu.

As a take-home treat, bottles of homemade olive oil infused with various herbs and spices will be available for purchase at Riva during April. Priced at RMB 258+15%, they make ideal culinary gifts.

Fans of innovative Chinese dining should not miss the special promotion at Ah Yat Abalone Chinese restaurant from 1 to 30 June. Fruit is

rarely featured in Chinese cuisine, but our Master Chef Heung is pushing creative boundaries and incorporating fresh, seasonal fruits in a selection of inspired contemporary Chinese dishes. Bringing new taste sensations to Chinese gourmands, Ah Yat’s special Fruit Fusion dishes will employ almost a dozen different cooking styles and flavour combinations.

Among the must-try fruit dishes are Braised Spare Ribs with Fresh Orange and Cointreau. This indulgent dish pairs silky slow-braised spare ribs with the tartness of fresh orange, finished with orange-flavoured Cointreau liqueur. Deep Fried Scallops Coated with Mashed Shrimp and Pear combines the lightness of seafood in a crunchy deep-fried shell, offset with fresh pear for a refreshing kick. Sauteed Prawns with Salted Egg in a Dragon Fruit is a truly impressive visual feast.

restaurant embarks on a gourmet tour through Spain and Italy. These two sunny European countries boast tasty, robust culinary heritages showcasing the bounty of the Mediterranean Sea and the vibrant flavours of their sun-drenched lands.

Starting in May, JING presents los sabores únicos de España – the unique flavours of Spain. During the promotion, Chefs at the restaurant’s open theatre kitchens will be serving up authentic Spanish delights like Gazpacho, Fresh Salads, and an entire station devoted to premium Spanish Hams, including the famous Jamon Iberico. These will be freshly sliced from the hock for each guest. Different varieties of Paella, a classic Spanish rice dish made with fresh seafood, meats, vegetables and herbs, will also be specially prepared. Be sure to try the Churros y Chocolate, a popular Spanish dessert comprising tasty fried doughnuts dipped in rich melted chocolate. Wines from across Spain will

In June, our gourmet tour visits Italy. Highlights include Italian Antipasti, Salamis and Parma Hams, plus speciality pastas, such as Ravioli with Tomato, Fontina Cheese and Basil. Tiramisu, Cassata and other classic Italian desserts make sweet endings.

During Friday and Saturday evenings throughout May and June, the barbecue on JING’s outdoor terrace will be fired up, grilling premium steaks and Mediterranean accompaniments under the stars.

The Spanish Dinner Buffet will be served between 5:30pm and 10pm from 1-31 May, and the Italian Dinner Buffet will be served between 5:30pm and 10pm from 1-30 June. Both are priced at RMB 288+15% per person.

May is Rhubarb Month at Riva. The health-giving stalks are in season and their terrific-tart flavour will add a gourmet tang to

a selection of chef-created dishes, desserts and cocktails on Riva’s Mediterranean menu.

While rhubarb has traditionally been used in China for medicinal purposes, in Western countries its subtle flavour and high content of vitamins, calcium and antioxidants has made it a popular everyday ingredient, particularly for baking and stewing.

From 1 to 31 May, Riva chefs will be creating signature savoury and sweet dishes highlighting fresh rhubarb. A must-try is Foie Gras with Rhubarb, blending the rich creaminess of foie gras with the delicate tartness of the rhubarb. Executive Chef Joshua has also been crafting homemade Rhubarb Pâte de Fruits. These exquisite soft French sweets are available to take home.

Pastry Chef Alan. The Rhubarb Crumble is a particular highlight, served in its own

Tell us about your culinary background.I’ve worked as a Pastry Chef for 16 years – 15 of those at the Peninsula Beijing before coming to Suzhou.

What made you decide to be a Pastry Chef?It was quite by accident! I studied Chinese Cuisine at culinary school, but when it came time to gain experience through an internship I was placed in the pastry department. I started by carrying the flour and weighing ingredients. In my private time, I began trying to make cakes according to the master chef ’s recipes. It was then that I began to fall in love with pastry, which is regarded as the easiest and the hardest of the culinary arts.

Why did you decide to come to Suzhou? The Director of F&B at InterContinental Suzhou is a former colleague of mine from Beijing. We knew each other when I was just starting out in the hotel’s pastry kitchen. He’s an inspiring leader and I decided to come to Suzhou and work with him.

How would you describe your culinary style?As a Pastry Chef, I always insist on using the finest ingredients and following every detailed step in order to make the most authentic desserts. Also, because pastry must look as spectacular as it tastes, I strive to push the creative boundaries and pursue the art of beauty. How do you unwind after a busy shift?I like to listen to Beijing opera, collect watches and take photos. Every day after work I will listen to Beijing opera to relax myself and loosen up.

What is your favourite dish?I like the Suzhou delicacy Sheng Jian Bao (pan-fried buns stuffed with pork), and tiramisu is my favourite dessert.

跟我们讲讲你的厨师经历吧。我已经在饼房工作了16年,其中15年是在北京王府半岛酒店。

你是如何决定成为饼房厨师的呢?这其实纯属意外,在学校的时候我是学热菜的,意外被安排到饼房工作。 从很无聊的搬面粉,称量各种食材的小弟做起,利用休息时间,凭着给师傅打下手看到的制作方法开始尝试西点制作,于是就越来越喜欢这个被称为世界上最简单但也是最难的烹饪艺术。

你为什么决定来苏州?酒店餐饮总监Nabin与我在北京一起共事过,当时我只是个饼房小弟,没想到在苏州又遇到他,感觉非常亲切,于是我就决定来苏州和他一起工作。

Ingredients for custard 蛋奶糊配料:

·3 each egg yolk 3个鸡蛋黄·140 gm milk 140克牛奶·18 gm butter 18克黄油·18 gm cake flour 18克蛋糕面粉

Ingredients for meringue 蛋白霜配料:

·3 each egg white 3个鸡蛋白 ·40 gm sugar 40克糖·15 gm corn starch 15克 玉米粉

Method 制作方法:

·Pre-heat oven at 180℃. 将烤箱预热至180摄氏度。

·Prepare extra butter and a baking dish. Coat the inside of baking dish with butter. 准备一个烤盘和额外的黄油,将黄油均匀的抹 在烤盘内部。

Custard 蛋奶糊:

·Melt the butter and mix with flour and egg yolks in a mixing bowl. 将之前准备好的黄油融化,在搅拌碗中将其与 面粉和蛋黄拌匀。

·Heat up the milk and pour it into the mixture while stirring. 将加热的牛奶边搅拌边倒入混合物中。

Meringue 蛋白霜:

·Mix the sugar and corn starch in a mixing bowl. 将糖和玉米粉在碗里搅拌均匀

·In a clean and dry bowl, whisk the egg whites to soft peaks, and gradually add the sugar and corn starch mix. 在一个清洁干燥的碗中,将蛋白打至中性发 泡,然后逐渐加入糖和玉米粉的混合物。

·Continue to whisk until the peaks are stiff and glossy. 然后继续打至粘稠。
