How will you be spending SG50?50 years of nation building for Singapore will culminate in our much-anticipated golden jubilee celebrations this weekend – Weekender finds out how various Singaporeans are celebrating our nation’s 50th

Of course, Singapore’s 50th birthday is much more than discounts and freebies. It’s all about who we are and how far we’ve come! We find out how local Singaporeans from different walks of life will be celebrating our golden jubilee.

What Will you be doing on the Sg50 Weekend?I have a few activities for my 70th birthday, and I’d like to catch the parade on TV. I’ll also be spending time with my father, who is 100 years old!

hoW have you been celebrating Sg50 So far?Some of my friends have booked [me] to cycle as a way of celebrating SG50. I’m also conceptualising a programme for cycling with special needs children and the elderly. It will be in honour of my mother, who passed away last year at 95 years old.

What do you love moSt about Singapore?From my childhood days until now, Singapore has been home to me…

I think Singapore is much more stabilised now, too. Healthcare is something we elderly are especially happy with. I feel more secure and at ease here. What we have, compared to nearby countries, is very good.

What hopeS do you have for Singapore and SingaporeanS?We should all indulge in a healthier lifestyle. It’s something I encourage for the elderly – be physically active.

The youths also need to manage their time to include more physical activities, like walking and exercising. Take the stairs and do some light exercises instead of taking lifts all the time.

And I believe our youths need to look more out of the box, and learn from others overseas.

What Will you be doing on the Sg50 Weekend?I’ll definitely be in Singapore, hanging out with friends and going around East Coast to catch the fireworks.

hoW have you been celebrating Sg50 So far?I participated in the National Gallery’s SG50 Portraits of the People – I sketched myself into a portrait and it went into the walkway from the new National Gallery City Hall.

I also brought my German cousins to the Zoo, taking advantage of the free entry!

What do you love moSt about Singapore?Security – that can’t be beaten. I like to take long walks and runs, so the fact that we can go out at any time of the day and be quite confident we’re going to be safe is very reassuring.

This is also where my friends and family are, so it’ll always be special to me.

What hopeS do you have for Singapore and SingaporeanS?I want the country to always be progressive without losing sight of traditions and history. We should preserve the heritage and history in buildings. It’s nice to have monuments that speak for our history.

What Will you be doing on the Sg50 Weekend?On Aug 9 itself, we will catch the parade on TV and throw a mini-party. We might go for the free Cable Car Joyrides on Aug 10 – it’ll be our first ride as a family.

hoW have you been celebrating Sg50 So far?My whole family has signed up for the free ActiveSG membership and have been using it frequently at the swimming complex. We also took advantage of the great promotions at the zoo and Gardens by the Bay.

What do you love moSt about Singapore?I feel really grateful to have my kids in Singapore. I particularly like how Singapore’s strong education system provides ‘tough love’ for its students to aim higher.

What hopeS do you have for Singapore and SingaporeanS?I wish that Singaporeans can grow to be more appreciative of our country. My dream for Singapore is that it will continue to develop into a better and stronger nation for future generations.

What Will you be doing on the Sg50 Weekend?I’ll probably be going for an evening picnic at the Botanic Gardens, then heading to Marina Barrage to catch the fireworks.

hoW have you been celebrating Sg50 So far? It was fun participating in some of the cultural fringe activities at Esplanade and museums. I also especially enjoyed the photo wall graffiti at Rochor Centre.

What do you love moSt about Singapore?The convenience, definitely, and how there’s always so much good food to explore; both restaurants and hawker food included.

What hopeS do you have for Singapore and SingaporeanS?I hope that Singaporeans will be more open to accepting differences and embracing arts and culture, on top of just shopping and eating out on weekends.

I also wish that Singapore will continue to prosper economically so that everyone can have a better city to live in.

hoW have you been celebrating Sg50 So far?I took part in the SG50 50km for 50 days events. Even though it was very hard to complete, I’m grateful for the cheers I received that made it easier.

What do you love moSt about Singapore?I love how Singapore is a place with no gender discrimination. Also, being a county with very good security, I am able to go out with my friends ‘til late at night.

What hopeS do you have for Singapore and SingaporeanS?I wish that Singaporeans could return to the kampong days, when everyone was more friendly and approachable. Also, I hope that Singaporeans will be more willing to smile at one another, to make someone else’s day better.

Stefanie Sun: Of national duty & SG50 babiesWill Singaporean queen of Mandopop Stefanie Sun be producing more than just songs for our nation’s SG50 jubilee?

With international fame and millions of albums sold, Stefanie Sun is no stranger to most Singaporeans. Nonetheless, the Mandopop star has been busy with her concerts over the past year and a half, promoting her latest album, Kepler.

Earlier this month, the 36-year-old returned home to perform alongside local rapper Shigga Shay. Their song, titled “Simply, Love”, wrapped up the hour-long Sing, Love concert held at the Coliseum at Hard Rock Hotel, in celebration of Singapore’s 50th birthday.

I caught Stefanie after her performance to find out more about what SG50 holds for her, as well as her family plans.

What’s your favourite memory of singapore? Growing up, I remember things like mamak stalls, playing with five stones – I’m revealing my age, but it’s okay lah – and sweating a lot because of the lack of air conditioning.

of the budding local singers, Which are your favourite?I just met The Sam Willows and I thought, “Wow, they’re so good looking!” They have a very big following, and they have very good commercial songs.

I also really like Shigga Shay. I think it’s usually easier for artistes with a unique style to break into the market.

the local english music industry is groWing. do you envision yourself releasing any more english songs?I grew up listening to a lot of English songs. When I first started [singing], that was not a feasible option.

I think it’s good now that the youngsters are more vocal and it’s so easy to reach a lot of people with social media. I will consider it – never say never!

What Was the most difficult thing about Working on sing, love?It had been difficult lah… There were some struggles. I have my Taiwan way of doing things, and Ruth Ling [the executive producer] has worked a lot with local bands.

Emotionally, to be able to work with veteran (songwriter) Liang Wern Fook was exciting and scary at the same time. I wasn’t sure how it was going to work out. But I kind of felt like it was something that had to be done, and it was a good initiative.

your music video for sing, love featured you cutting your husband’s hair. have you ever done that in real life?[Laughs] I recently cut my son’s hair. When I was done, I had to call my hairstylist.

“Can I please, please go to your house now? Can you please salvage this head?” It was early, about 10am.

Even my husband, who’s usually very encouraging to me, asked if anyone could fix it. It was that bad – but I really tried my best!

hoW are you getting used to being a mom?I feel like I’m still adjusting to the role of being a mother. It surprises me how overwhelming it can be sometimes.

What’s the hardest part about being a Working mom, With your career?My roles in life are divided into extremes. As a singer, I have to put myself first – everything is about me. But as a mother, I don’t have time to think about myself. I have to think about my son all the time.

I wish I had more time to experience both fully. My energy is stretched between two very different places, and it can get tiring.

Will you be taking a rest to spend more time With your family?Absolutely, that is my plan. I’m really looking forward to it, because my Kepler concerts have been running for one and a half years – 26 shows.

I’m both sad and happy to end it, [but] I feel like I just need to stop for a while and do other things first – including for my family and myself.

What else can fans look forWard to?There is an ongoing recording [I’m involved in]. There are also a lot of collaborations, like movies – I’m not acting ah, I’m just singing – then there’s Sing 50 as well, and the National Day Parade too.

This year is a year of national duty lah. [laughs]

does this “national duty” include any plans for another kid?[Laughs] I don’t think I’ll be in time for the jubilee package! And, to be frank, I do not have any plans for a second one. I’m still getting used to being a mom!

Manchester United vs Tottenham: Marquee clash in Premier League opening

The English Premier League finally begins and is set for a roaring start with new football stars and exciting match-ups

Arsenal’s FA Community Shield win against Chelsea last Sunday – in which Arsene Wenger finally overcame Jose Mourinho – gave it the early season spotlight. But Arsenal’s North London rival, Tottenham Hotspur, can steal the attention on the opening weekend of the 2015-2016 English Premier League season.

Tottenham travels to Manchester United in the pick of the first matches. Circling rumours about the potential transfer of former Spurs forward Gareth Bale from Real Madrid to the

Red Devils will add intrigue to this match at Old Trafford.

The clash between last year’s fourth- and fifth-placed sides – the marquee game of the opening weekend – will see Louis van Gaal’s new look United try to unsettle Mauricio Pochettino’s side. Spurs do not have major changes from last season other than at the back, where 26-year-old Toby Alderweireld has signed from Atletico Madrid after excelling on loan at Southampton last season.

The United faithful, though, will be eagerly awaiting the first glimpse of new signings Memphis Depay, Bastian Schweinsteiger, Morgan Schneiderlin and Matteo Darmian in the Premier League. And there could very well

be lumps in their throats when new signing Sergio Romero takes his place between the posts, replacing the magnificent David de Gea who is on his way to the Bernebeu.

United, bolstered by the money from the sale of Bale’s former Real Madrid teammate Angel di Maria to Paris Saint-German, is said to have launched an aggressive bid for the Welshman and three of his teammates. The 13-time Premier League winners lost 2-0 to the French champions in the last game of their US tour.

Overall, van Gaal’s men gave a good account of themselves, defeating Barcelona 3-1, with Wayne Rooney on target. Depay opened his account for the Red Devils during their 3-1 win against Major League Soccer (MLS) side San Jose Earthquakes. He has also linked up well with Rooney.

United fans will be hoping the duo can combine against Spurs to lethal effect, while the North Londoners will rely heavily on star striker Harry Kane.

This looks set to be a comfortable victory for United, with the new signings keen to impress. Prediction: Manchester Utd 3-1 Tottenham stoke City vs LiverpooLLiverpool face a big challenge with a Sunday trip to the Britannia Stadium, where they were thumped 6-1 on the final day of last season to give departing captain Steven Gerrard a farewell to forget.

Somehow Brendan Rodgers kept his job, despite a miserable sixth place finish. He will have no excuses for a similar result in 2015-2016, especially after an unprecedented summer spending spree.

Although winger Raheem Sterling moved to Manchester City, the Reds have brought in a host of reinforcements, including seasoned players such as midfielder James Milner, defender Nathaniel Clyne and striker Christian Benteke.

Milner settled in seamlessly during the pre-season and was one of the better performers on the Australian and Asian tour, even when the Reds were held to a shock 1-1 draw by a Malaysia XI.

Stoke did enough in last month’s Barclays Asia Trophy in Singapore, to show that it is likely to secure another mid-table finish.

This game, which is likely to feature ex-Liverpool striker Peter Crouch who has a habit of scoring against his old club, should be entertaining.

Prediction: Stoke 2-2 Liverpool West bromWiCh ALbion vs mAnChester CityManchester City’s pre-season has been less than perfect. City, having won the 2013-2014 Premier League title, suffered heavy defeats to VfB Stuggart (4-2 in Germany) and Real Madrid (4-1 in Australia) in addition to the draw against Roma.

The Citizens face an away trip to West Bromwich Albion on Monday night. This is a potential early banana skin.

They haven’t significantly added to their squad and will again rely heavily on Sergio Aguero, David Silva and Yaya Toure.

Manuel Pellegrini is likely to find himself out of a job if City isn’t in the top two come October. The Chilean will be keen to prove the doubters wrong, who say he has run out of ideas and inspiration.

The Baggies will fancy their chances of an upset, but City should have enough quality to get all three points. Prediction: WBA 1-2 Manchester City CheLseA vs sWAnseA CityDon’t read too much into Chelsea’s loss to Arsenal in last Sunday’s Community Shield. Let’s not forget that David Moyes won the Community Shield in his first official match in charge of Manchester United a couple of years ago – and we know how that ended.

The Blues should tick along nicely this season, even with John Terry turning 35 this year and with Didier Drogba having left to spend his twilight playing years in the MLS.

Expect Mourinho to get the best out of Radamel Falcao, who was a flop at United. The Colombian could well be a perfect alternative to the brutish Diego Costa.

This should be a Stamford Bridge cakewalk against a pretty-passing Welsh side that will concede twice in the first half. Prediction: Chelsea 3-0 Swansea ArsenAL vs West hAm unitedIt has taken Monsieur Wenger 14 attempts to get the best of Senhor Mourinho but Arsenal has finally done it, having won the FA Community Shield for the second time in two years last Sunday.

The Gunners have a settled look to their squad, though they are slightly deficient in both central defence and midfield. They’ll be hoping incumbents Per Mertesacker, Laurent Koscielny and Francis Coquelin have injury-free campaigns.

The title is probably still beyond them but expect another top three finish, another domestic Cup and a better run in Europe.

A London derby at home to start with shouldn’t give them too many problems. Prediction: Arsenal 2-0 West Ham

Two S.League matches take centre stage this SG50 long weekend – and the spotlight shines on a young Japanese star

There are only two Great Eastern Yeo’s S.League games over the National Day long weekend – Balestier Khalsa will host Hougang United while defending champions Warriors FC will go head to head against a resurgent Tampines Rovers side at the Choa Chu Kang Stadium on Friday.

RISING StaR fRom the laNd of the RISING SuN While it is easy to single out Balestier’s Croatian hitman Miroslav Kristic as the man to watch with eight league goals so far this season, Hougang United’s Yuki Uchiyama has done a tremendous job despite his tender age of 20.

Not many Singaporeans know that the young Japanese right-back is actually on loan from J.League side Consadole Sapporo, which has a slew of Japanese stars such as former Arsenal midfielder Junichi Inamoto and Shinji Ono on its books.

His steady performances in the Hougang United defence have rarely been spoken about, as the limelight continues to be hogged by the attackers in the team. However, another solid outing against the Tigers at Toa Payoh Stadium will bring him one step closer to his dream of donning the Samurai Blues jersey, having already done so at the youth levels so far.

Balestier has enough firepower to grab all three points on home soil but don’t expect a blowout win against Uchiyama & Co.

Prediction: Balestier Khalsa 2-1 Hougang Utd

touGh fIGht expected betweeN waRRIoRS & StaGSOver at the Choa Chu Kang Stadium, Warriors FC will be desperate to maintain its title defence. But Tampines Rovers, having found its rhythm of late, will be no pushovers.

The Warriors will be banking on Argentinian striker Nicholas Velez, who will be hoping to give his side a farewell gift with a win over Tampines. The Argentine is playing his last few matches for the 2014 S.League winners before he leaves to join Northeast United in the Indian Super League at the end of the month.

Over in the Stags camp, Mateo Roskam cannot be accorded too much time and space as the Croatian forward is in the form of his life, with four goals in the last three matches.

There is too much at stake in this match and a high-scoring draw will be the likely outcome.

Will Fantastic Four

History has shown that film remakes tend to have it rough. After all, the new movie will always be compared to the original, or the

previous one.Moreover, how many times can we see

the same battles being fought and the same – albeit awesome – superpowers being thrown around?

This newest Fantastic Four film follows 2005’s Fantastic Four and 2007’s Fantastic Four: Rise of the Silver Surfer but with significant differences. The previous two starred big-name actors such as Chris Evans and Jessica Alba and this new incarnation, or reboot, already has much to go up against.

After viewing the trailer for this new Marvel film, I’m inclined to believe that the new Fantastic Four has great promise that’s worth banking on.

Reinventing MaRvel’s Oldest supeRheROesDid you know that the Fantastic Four is Marvel’s original superhero team and longest-running comic? Well, now you do.

Nevertheless, this upcoming film dis-regards all of the long-standing history. Before any diehard Marvel fan dashes for a pitchfork or hanging noose, consider that this retelling might actually be quite refreshing.

Instead of the original story that featured scientific experts on a near-fatal mission to outer space, this present tale now follows four college-aged youths who are teleported to an alternate and dangerous universe, which irreversibly alters their physical forms.

This seems to be a great chance to explore

not only the strength of youth but also the sobering reality of new responsibilities that have now landed upon them.

I just hope that it doesn’t veer into the territory of bad college jokes and reckless abandon.

QuestiOnable Casting?One challenge with working against many remakes is the introduction of new faces to already established and popular roles. Alba pretty successfully translated the attractive figure of Susan Storm from comic to screen, and owned the role in her unique way, while Evans portrayed a very convincing Johnny Storm.

One commenter on the new movie’s YouTube trailer wrote, “I can’t take any of the new actors seriously.”

Another one expressed confusion at the new Johnny Storm, who is now portrayed by African-American actor Michael B Jordan (of Friday Night Lights

and That Awkward Moment).The decision to cast Evans as Marvel

hero Captain America – which is in conflict with his previous role as Johnny Storm – was what spurred this change. The movie audience may not be so open to this.

Reed Richards, or Mr Fantastic, will be played by Miles Teller (Footloose); Susan Storm will be played by Kate Mara (“House of Cards”); and Ben Grimm, or The Thing, by Jamie Bell (Billy Elliot, King Kong).

This new casting is a hang-up that Fantastic Four fans have already been very vocal about. Whether this present Fantastic Four cast is a class act remains to be seen.

Old FRiends & new eneMiesThis reboot will also introduce The Mole Man, a supervillain in the original Fantastic Four comic series from way back in 1961. Played by Tim Blake Nelson (O Brother, Where Art Thou?), the Mole Man a is a nuclear engineer

who fell into a massive subterranean cave and was blinded by the highly-reflective diamond deposits there.

Of course, it’s uncertain whether the Mole Man we’ll see will have the same background as the original character, since the key story has already been altered. What we do know is that he’ll be fighting against the Fantastic Four alongside Doctor Doom (played by Toby Kebbell from Dawn of the Planet of the Apes) and Dr Franklin Storm (Reg E Cathey of “The Wire”).

With so many new elements in this reboot, it seems like Fantastic Four is worth a watch. Still, one can’t help feeling short-changed by the transition from Silver Surfer to Mole Man.

Still, who knows – these characters may be critical to the upcoming Marvel ‘Civil War’ movie. You might as well get comfortable with them now.

Makan nation: Celebrating our nation’s food Culture

Singapore iS world-famouS for itS food culture but which local diSheS define uS or are the moSt popular?

You can’t truly call yourself Singaporean unless you’re familiar with the best of our local dishes, or unless you develop a strong craving for them after not having them for a while.

As we celebrate our nation’s 50th birthday this National Day weekend, Weekender also celebrates our deeply-entrenched food culture. We are, after all, a makan nation!

Whichever your favourite dish is, be it chicken rice, chilli crab or something else, we highlight five hawker favourites that define us or have become emblems of our Singaporean identity.

Rojak“Rojak”, meaning “mixture” in Malay, is a wild mix of different ingredients. The variety of rojak differs between ethnic groups in the style, sauce and food items.

The Chinese or Malay version usually comprises tossed turnip, cucumber, tau pok (fried bean curd) eu char kway (youtiao), bean sprouts and pineapple. Sometimes other fruits are added. This toothsome salad

is drenched in hei gor (shrimp paste) and topped with chopped roasted peanuts.

The Indian rojak has an array of items (mostly deep fried) that you can choose from, with a sauce served separately in a bowl. Whichever version you prefer, rojak is a very Singaporean dish as it’s also reflective of different ethnicities coming together in the melting pot that is Singapore. This makes sharing rojak with family and friends even more apt.

Must Have WithLong toothpicks or satay sticks to eat Chinese or Malay rojak, and a bowl of spicy gravy to complement Indian rojak.

Roti PRataRoti Prata originates from an Indian staple and has become a type of food that most Singaporeans can’t get enough of. If you don’t already know, roti prata is made from dough and ghee, and resembles flat bread.

Most Singaporeans like it crispy and kosong (with nothing inside) or with telur (egg), though some may choose to add bawang (onions) or even to have more ‘exotic’ filling such as mushroom-cheese, banana or ice cream. Other variations include tissue prata, in a conical shape and

very crispy, and prata bomb, a fluffy prata with margarine and sugar between the layers of dough.

The Indian mamak is also an icon, with his skill in slapping and flipping the dough.

Must Have With Every Singaporean son (or daughter) knows that it should be accompanied with tasty curry that’s not too watery.

Hainanese CHiCken RiCe Hainanese Chicken Rice is a popular go-to dish for many Singaporeans, and a must-try for visitors. In fact, most foreigners who’ve been to Singapore will state chicken rice as one of the main things they recall.

Nonetheless, while the dish is perhaps ubiquitous, a good version is not easy to find. The chicken needs to be tender and tasty and the rice needs to be well-cooked with chicken stock.

Must Have With Thick soy sauce and the particular type of chilli sauce that’s served with chicken rice, with lime and finely-ground ginger.

A typical bowl of laksa includes cockles, tau pok, bean sprouts, prawns, fish cake and thick rice vermicelli (cu mi fen). The best part is the fragrant and flavourful gravy, with a sprinkling of laksa leaf (or Vietnamese coriander).

Must Have With A spoon and no chopsticks (the traditional way) and a bib if possible (or it may splash and stain your top).

CHiLLi CRab Chilli crab is undoubtedly Singapore’s greatest culinary invention (and very possibly our national dish). Some say that this famous dish had humble beginnings, all the way back in the 1950s, when Madam Cher from Roland Restaurant decided to cook her dinner differently.

She stir-fried her crabs in tomato sauce and added chilli to balance the dish, resulting in a surprisingly sweet yet tangy and spicy sauce. Chilli Crab has since evolved into the most shiok (satisfying) and renowned dish that Singapore has to offer.

Must Have With Deep-fried mantou (plain Chinese buns) to mop up all the irresistible gravy!

Flying Dutchman’s new F&B venture takes flight The recently-launched Flyboyz, a new bistro and bar by The Flying Dutchman and entertainer Chris Henson, is the only Singaporean-owned F&B establishment on Bintan

When the ferry docked at Lagoi Bay, I was not only excited about this trip to Bintan but also the chance to meet Mark van Cuylenberg, “The Flying Dutchman”, whose radio shows I’d always listened to in the morning.

Now, I was among the first to check out Flyboyz, his new bistro and bar – and the only Singaporean-owned food and beverage establishment on the island – jointly started with Chris Henson. Henson is also a familiar face, having been host, entertainer, businessman and TV actor.

faMiLY-friEndLY BiStroFlyboyz is a three-storey establishment comprising a restaurant with a diner concept, a music bar playing retro hits, and an open-sky lounge serving Cuban-inspired cocktails under the stars.

Henson said, “I’ve always been a fan of the beach bar concept with an open and relaxed atmosphere, and wanted to open

one with a distinct style that would appeal to Singaporeans as well as tourists.”

The Flyboyz Bistro on the ground floor has a mission to never let anyone leave hungry, and its enormous portions are testament to this. The garlic bread, burger buns and honey mustard are homemade, and among the standouts.

The star of the kitchen is possibly its 18-inch rendang pizza, which boasts a unique sweetness in its meat.

ScEnic rooftop dininGFlyboyz has struck gold with its amazing location. You’ll be completely captivated when the sun starts to set and it becomes a pink-orange yolk slowly descending the citrus sky into the ocean.

The best point to catch this mesmerising view is at the al fresco rooftop lounge of Flyboyz, named “Cuba”. Patrons can enjoy jazz music handpicked personally by the showbiz veterans.

The Corned Beef Cutlet I had was delightful and the Mexican Mountain (salsa, cheese and

chips) was addictive. Mangrove Madness, a green-coloured juice drink – apparently made with mustard greens, spinach, orange juice and pineapple juice – was my favourite. It was cooling and not too sweet.

WorMS for dESSErt?If you dare, take on the Bintan ‘worms’. The more squeamish members of my party had a problem with the appearance of this dessert. But after finding out that they aren’t worms but gelatine noodles in chocolate ‘soil’, many of us proceeded to slurp down several portions.

After dinner, we headed to Hoobar on Level 2. Boom Shakalaka, said to be Riau’s best reggae band, also performs retro music from the ‘70s to the ‘90s.

I certainly had a ‘fly’ time at Flyboyz.

For most Singaporeans, our knowledge of the Portuguese is limited to the explorers we’ve read about in our history books, such as Vasco da Gama and Ferdinand Magellan, or to the Portuguese egg tart. Prepare to enter a new world of discovery in design and taste.

Stunning interiorS & rich traditionBoca, the first authentic Portuguese rest-aurant in Singapore, sits in a row of pretty conservation shophouses. With each step I took inside, my anticipation grew. A flock of black swallows in formations of elegant swirls greeted me from the walls. What magical abode have I entered?

It was later explained that the 700 birds in all, peppered throughout the restaurant, are national icons of Portugal. Year after year, these birds migrate to the European country to nest with life-long companions and are synonymous with family, loyalty and love.

To complete the traditional Portuguese theme, the establishment is dressed in blue and white, with images of palm trees lining the walls near the windows on the second floor, calling to mind a breezy, balmy setting.

With such grandeur and beauty, it’s not surprising to learn that the interiors of Boca’s three floors were designed by Gracinha Viterbo of the internationally-renowned Viterbo Interior Design company. All the furniture, décor and light fixtures were curated and imported from Portugal.

Punchy FlavourS From the PortugueSe PaletteLikewise, Boca serves traditional Portuguese dishes using specially-imported ingredients from the “fatherland”. My first foray into authentic Portuguese cuisine began with entradas, or starters.

To me, the best among these was the Flamed Chorizo ($36). Brought in from Portugal, the plump sausage is flambéed as it is served atop an earthen vessel. It certainly is a feast for the senses.

The Açorda de Camarão (Shrimp Porridge) is a warm, wholesome bowl of comfort food that suits the Asian palette. There is also a version with bacalhau (dried and salted cod), a Portuguese staple.

Açorda is a bread-based casserole. Boca’s chefs age their homemade bread for two days before immersing it in bacalhau or shrimp stock, for intense flavour. It is then transferred into a pot to simmer (while stirred) over a low flame until the bread takes on the consistency of porridge.

The Coffee Steak ($48) – 200g Australian tenderloin grilled medium rare and covered in coffee sauce comprising an espresso shot with mustard, cream and a dash of cognac – is another signature dish. To match the heavenly flavours (and fragrance) it is complemented with rice cooked with almond, garlic, onion, herbs and a dollop of butter.

taking away Sweet memorieSTo accompany the food, we were served award-winning wines such as the Soalheiro, Vinho Verde 2015, which won the Gold Medal and “Best of Show” at ProWein 2015 in Germany, and the Quinta do Vallado Tawny Port, 20 Years, which won the Silver Medal in the International Wine Challenge 2004. Boca has more than 50 wines and spirits

from Portugal, and its sommelier is available to assist with recommendations.

There are too many treasures on this gastronomic voyage, and the dessert is another. The Floating Island ($15) comprises an egg white quenelle ‘cloud’ that rests upon vanilla custard dusted with cinnamon and layered with passion fruit coulis.

This artistic dessert is crowned with a delicately-spun sugar nest. It appears as though the swallows conspired to spin this delightful creation.

Nonetheless, the Authentic Portuguese Egg Tart (Pastéis de Nata, $4.50) is in high demand. Singaporeans would be surprised at both the appearance and texture of Boca’s traditional version.

Creamy egg custard is baked in a flaky puff pastry and finished off in the broiler to achieve a subtle charred surface. Unlike the Macau-style tart we’re more familiar with, it is then dusted with cinnamon and icing sugar. The flavours and textures come together to delight the mouth.

Boca’s chefs only produce about 20 a day, so pre-order if you’d like to take them home.

New routes from ChiNa’s high-speed railway will briNg travellers to some of the CouNtry’s most sCeNiC destiNatioNs

Last month, China Railway introduced new high-speed train routes that will bring travellers to some of the country’s most popular tourist destinations.

For most, the highlight of these routes, which start from Shanghai, Beijing, Hangzhou or Guangzhou, will be their end point — Huang Shan, or the Yellow Mountains.

While travelling times to Huang Shan may seem long to some — it is a 4½- and 7-hour ride from Shanghai and Guangzhou respectively, for example — these routes are also dotted with other attractions well worth seeing, and all can be done as weekend getaways.

1 Huang Shan’s beautiful combination of craggy rock faces, lingering clouds and clustered pines make a remarkable Chinese landscape, and has been artistically

which are over 1,000m high, creating a gorgeous jumble of scenic vistas in the southern province of Anhui, including twisted pines clinging to stony spires and fresh mountain springs.

3 Wuyi Shan (Mount Wuyi) is a UNESCO World Heritage site, listed for its remarkable biodiversity and cultural value.

The area is home to rare species including clouded leopards, giant salamanders and swallowtail butterflies. It also features nearly 100 archaeological sites, including ancient Taoist, Buddhist and Confucian temples.

4 Located just outside Shangrao in Jiangxi Province, Sanqing Shan (Mount Sanqing) is also on UNESCO’s World Heritage list and has been described as one of

China’s top five most beautiful mountains. The mountain was named after three of its peaks, which are

said to resemble Taoist spirits, and combines many unique qualities, including tranquil surroundings and dramatic clouds, that make Chinese landscapes so memorable.

In fact, Sanqing Shan has been called an outdoor Taoist museum for its ancient temples, bridges and tombs, including the 1,600-year-old Sanqing Palace. The surrounding Sanqing Shan National Park has an astonishing array of flora and fauna, as well as many distinct scenic areas and gardens.

Christmas all year round

Enjoy red crab migration, bountiful marine life and even sambal kangkong on this Australian island that once belonged to Singapore

Australia’s Christmas Island, had, once upon a time, belonged to Singapore, when the little red dot was under British rule. However, the island was handed over to the Australians, at their request in 1957, for a price of £2.9 million ($6.1 million), the estimated value of the island’s phosphate.

The island, so named because it was discovered on Christmas Day, has much more to offer than just phosphate — it also has a unique ecosystem, pristine white beaches and many diving opportunities.

Crabby PartyThe red crabs are perhaps what Christmas Island is most famous for, but there are occasionally rare orange and purple crustaceans spotted on the island.

Crab breeding is synchronised island-wide and baby crabs usually spawn in the months of November and December. Female crabs migrate towards the sea and release their eggs after performing an adorable and amusing “shimmy” dance. Roads are often closed to protect the crabs migrating across the island so watch out when you drive.

Christmas Island is also a hotspot for bird watching, with over hundreds of species including seven land birds that are endemic to the island, such as the Christmas Island Thrush and the Abbott’s Booby.

Natural WoNderlaNdFor those who enjoy snorkelling, the drop off from the island is said to be incredible at 3,000m, with many people swimming out to enjoy the thrill.

Thundercliff is a sea cavern that you absolutely must visit if you go on a dive. Marine life flourishes in this sea cavern and many photographers flock here to capture it on camera. The West White Beach Cave is another marvellous diving site, home to corals of a myriad of colours.

The Grotto is a unique romantic retreat for couples that you won’t want to miss if you’re heading to Christmas Island with your partner. A mini cave with a mix of sea and pool water, it is lit up at night with candles for an experience like no other.

GettiNG thereChristmas Island is located in the Indian Ocean, south of Jakarta, Indonesia. Flights to the island are available from Perth and Jakarta (www.christmas.net.au/plan-your-trip/flights.html). Some cruises also do pass by and stop over at Christmas Island.

To celebrate our country’s golden jubilee, Jetstar has featured 50 faces of everyday citizens on its A320 aircraft

The next time you fly on Jetstar, you could literally come face to face with a “hero” who has made our country proud.

To commemorate Singapore’s golden jubilee, the budget carrier has featured 50 faces of everyday Singaporeans on its A320 aircraft.

Half of these are unsung heroes who quietly offer their time and effort to help others.

They include active volunteer Cindy Wee, who dedicates her time to caring for the elderly, and Mr Mohamed Ridhuan bin Ahmad, a firefighter at Changi Airport.

Their faces are included alongside 25 other overseas-based Singaporeans on the livery, following a four-month nomination campaign by the airline.

Designed by local artist Michael Ng, the livery comes in a distinctive bright, whimsical, pop art style and takes its inspiration from the black-naped oriole bird, a common garden bird in Singapore.

“Our city was built off the back of a nation determined to survive and succeed, and to me, the oriole bird represents the determination, strength and dynamism of our people over the last 50 years,” he said.

FLIGHTS OF FANCYJetstar Asia was the latest carrier to announce its special SG50 livery, following Singapore Airlines and Scoot.

In May, Singapore Airlines (SIA) announced that two Airbus A380s would carry a special livery featuring a large Singapore flag-themed design on the fuselage.

The special A380s, which are already in operation, will serve routes like Beijing, Hong Kong and London until the end of 2015.

One of the planes will also be involved in the National Day Parade (NDP) aerial flypast on Aug 9.

Last month, Scoot also launched its SG50 livery, but to heavy criticism.

The plane, named Maju-lah, was painted with red balloons featuring the names of homegrown companies. It also had cartoon drawings of the Merlion and the airline’s crew members wishing Singapore a happy birthday.

However, many netizens had criticised the livery for the lack of aesthetics in its design.

Jetstar’s SG50 plane took its first flight to Bangkok on Jul 30 and will be flown on Jetstar’s routes for the next six months.
