Sn phm bn ra ngy cng nhiu v ch bin tinh ch hn, ccngnhnngsn, chbinthysnngycng chim v th trong nn kinh t x hi.cbitvi ngnhchbinthysn, snphmsau ch bin phi c cp ng c th bo qun trong thi gian di. Do pht trin c ngnh ny th cng ngh lnh ng vai tr rt quan trng vi ngnh trng by v bn hng ti cc trung tm thng mi, siu th. Trong phm vi hot ng bnh thng c h 100C th cc phn ng sinh ho gim xung 1/2 1/3, khi h xung thp s lm c ch cc hot ng v sinh l ca vi khun cng nh nm men. - Di tc dng ca nhit thp, nc trong ng vt thu sn b ng bng lm c th ng vt b mt nc, vi khun thiu nc nn gim pht trin v c khi cn b tiu dit.
