TM TT LUN VNHin nay, ch xanh c tiu th rng ri trn th gii bi v ch l mt ngun thc phm cha nhiu cc cht c li cho c th chng ta. Do , chng ti tin hnh nghin cu qu trnh kh caffeine trn l ch ti nguyn liu trong cng ngh sn xut ch xanh. Phng php chng ti chn l kh caffeine bng phng php Swiss water. Phng php ny da trn nguyn tc s dng mt dung mi hu c cho qu trnh kh caffeine. Theo Katx (1987), nhng yu cu khi chn mt dung mi cho qu trnh kh caffeine l kh nng ha tan chn lc vi caffeine, tnh an ton, gi c, d dng tch dung mi ra khi nguyn liu, d thu hi dung mi, khng c v an ton vi mi trng. 1.6.1.2 Phng php thc hinQuy trnh kh caffeine trong ch bng dung mi c bt u bng qu trnh dit men, lm sch v lm m l ch. Cc qu trnh ny c thc hin bng cch xng hi vo l ch. L ch ti c lm ho v chuyn vo thit b trch ly. Dng hi nhit 110c c dn truyn vo thit b trch ly t pha di ca thit b. L ch sau khi c lm m vi dng hi s c b mt l d thm thu hn v caffeine c trch ly d dng khi dung mi tip xc vi caffeine. Dng hi i qua thit b trch ly trong khong 0.5 gi.
