    1. Gii thiu chung v bnh pizza

    1.1. Lch s pht trin

    Trc ht l ngun gc ca tn gi "pizza". T pie m chng ta bit khng phi mang ngha l mt ming bnh, cng khng phi tng trng cho hnh dng ca n. M pie c lin quan n magpie (chim chch cho).     2. Nguyn liu:

    Gliadin v glutenin tng th cng gp phn tng n ca bnh. tng cht lng gluten khi no bt c th b sung cc cht oxi ha nh: acid ascorbic,

    kali bromat, ngc li nhng cht kh s lm gim cht lng gluten.

    2.2. Ph mai cng Trong sn xut pizza thng s dng hai loi ph mai cng/ bn cng l: Mozzarella

    cheese v Cheddar cheese. Ph mai Mozzarella l mt loi ph mai ti thng dng thng c s dng lm nhn pizza, nng cng bnh m hoc ch bin cng cc mn m . T l Mozzarella cheese v Cheddar cheese l 80:20 (khong 120 g/pizza)

    chua. Men p v men kh c sn xut t nh my chuyn sn xut nm men. Men lng v men chua thng c chun b ngay trong nh my sn xut bnh m. nc ta, cc x nghip sn xut bnh m thng dng cc dng men kh nhp ca nc ngoi, mt s x nghip t chun b c men lng, cn men chua th khng dng.

    2.5. Ph gia Nc: tc nhn ho do NaCl: to v, lm cht gluten, tc ng ln VSV v enzyme trong bt nho ng: to v, mu sc v c cht cho nm men Bt sa gy: to v, mu sc, m pH

    Tc nhn oxy ho (KBrO3, (NH4)2S2O8, acid ascorbic): tng th tch v xp ca bnh, tng trng, lm cht mng glutenLiu lng : 0,001-0,005%
